huy’s Tex Mex, an Austin-based restaurant chain specializing in Southern Texas and Mexico influenced cuisine, recently opened its latest location on the Northside in July. The new Chuy’s in Carmel is one of the latest installations for the franchise and will become the second Indy area location alongside Chuy’s in Noblesville. The new location is sure to draw those from the Zionsville community as well based on its proximity to the town. “Our vision is not to be the biggest, but to be the best,” says Russell Burns, Chuy’s Carmel operating manager. “We want to be really good at what we want to do, and we want to have a great family atmosphere in each local restaurant. We want to run the restaurant like we own it and be the face of the community. Our founders and our executives understand that they are not the face of Chuy’s, but Noblesville, Carmel and our management and leadership teams in the markets are the faces to those communities.” Originally founded in 1982 in Austin, Texas, Chuy’s has made a name for itself across the country as a chain of unique, quality Tex-Mex restaurants offering fresh meals at a reasonable price. Adhering to the mantra of, “If you’ve seen one Chuy’s, you’ve seen one Chuy’s,” each Chuy’s manages to find its own unique personality and flavor, despite there being more than 100 locations nationwide, through eclectic decorations, individualized restaurant layout and local community involvement initiatives. Along with the currently existing Noblesville location, the new Chuy’s in Carmel is excited to offer made-from-scratch Tex-Mex dishes, signature margaritas and fresh meal options to the greater Indianapolis area. Aside from providing quality food and drinks, Chuy’s prides itself on partnering with multiple charities and nonprofits around the country to better the community and give back to the people of cities they are in. Traditionally, each Chuy’s location will partner with a local nonprofit prior to its grand opening to establish a relationship and will then have various fundraising initiatives and promotions to benefit each organization,
and Chuy’s Carmel is no exception. Coming alongside the St. Vincent Foundation, Chuy’s Carmel will be working to raise money and support for Peyton Manning Children’s Hospital in Indianapolis through initiatives in the grand opening festivities, with much of the profits made during opening celebrations going to the hospital. “Our company has a heart for kids. The founders started that way, and it’s one of the reasons I came on board in the first place,” Burns says. “Not only can we get involved
in the community and do good works, but we’re expected to. We’re partnering with Peyton Manning Children’s Hospital here, and we’ve already raised some money for them by doing events and by selling t-shirts with proceeds going to them.” Along with the work they have already done, Chuy’s had several events planned during the opening weekend to further benefit the children’s hospital, as well as a number of fun grand opening elements that customers enjoyed.

Grabbing a beer and dinner before seeing a movie is not out of the ordinary, but doing both activities at the same time is. Flix Brewhouse, located at 2206 East 116th Street in Carmel, makes it possible. The combination cinema-eatery recently marked its four-year anniversary in Carmel. As guests walk into the industrial-looking building, they enter a spacious lobby with multiple tables. Microbrewing systems and
beer tanks are visible behind the second story glass walls above a bar area. So, is Flix Brewhouse a movie theater or a brewery? “That’s a really good question,” says Ronald Hahn, general manager of Flix Brewhouse since it opened in April of 2015. “I do see it as a movie theater first, but one that brews beer and offers cinema-dining with food that’s actually made in our kitchen.”

The preshow isn’t just previews, it’s tailored with clips from like movies that will enhance the upcoming show. It’s always fresh and people want to see it. We also have a loyalty program called The Circle in which people can earn Flix Rewards. Servers greet them by name because they reserved their seat when they were logged into their account.” Family-friendly Flix Brewhouse airs current first run Hollywood films and also offers some themed series. Flix Fanfest features
films with older titles, often with a special menu and souvenir. Chick Flix evenings are tailored for ladies’ night out and usually feature select bottles of wine at half price. During the summer, Flix Junior features family films for only $2 each Wednesday. In addition, auditoriums can be rented out for private group events. “People tell me the beer and food exceed their expectations,” Hahn adds. “We have six core beers that we brew ourselves plus seasonal ones available. Some have actually won awards. We have guest taps for Indiana breweries, and every Monday night we offer

We also serve wine and, before the end of the year, we will have an updated selection of cocktails. “In 2015, the company chose Carmel as the location of its third Flix Brewhouse in the nation. INDIANA STATE FAIR RETURNS AUGUST 2-18 WITH NEW THEME, FOOD & FAMILY FUN Writer / Samantha Kupiainen Photography provided
Three of the most highly anticipated weeks in Indiana are almost here — the Indiana State Fair. The Indiana State Fair runs from Friday, August 2, through Sunday, August 18. This year’s theme, Heroes in the Heartland,
which is presented by the Indiana Donor Network, salutes the countless Hoosiers who keep our country safe and make residents proud. Those heroes include farmers, first responders, educators, members of the Armed forces and cultural heroes as well. “The theme is always really important because it helps us develop all the activation atCarmel.com / AUGUST 2019 / CARMEL MAGAZINE / 13
and all the programming from year to year, from fair to fair,” says Sharon Smith, Director of Communications for the Indiana State Fair Commission. Smith adds that when planning the state fair, it was important that it aligned well with an organization or business that really complimented the Heroes of the Heartland theme, such as the Indiana Donor Network.
“The theme serves as a touchpoint to so many individuals and organizations and has such a broad appeal, again, with the balance between superheroes and cultural heroes,” Smith says. “It will touch a lot of Hoosiers and a lot of lives, and that’s why we selected that particular theme.” In addition to a new theme, the fair also has a wide selection of new features for guests to enjoy. “We’re bringing back the Big Top Circus, which was wildly popular last year,” Smith says. “It’s returning with new acts, though we will be bringing back Bello Nock, who is a kind of comic daredevil. He was extremely popular last year. I think people will be happy to see him back again.” Other new amenities include a $5 fast pass for reserved seating at the Big Top. It will allow folks to have premium seating, so they won’t have to wait in line for first-come, first-served seating. However, free seating will also be offered for those who won’t wish to pay and are able to wait. Another new feature this year is a popular trend from across the country — goat yoga. Sixty-minute sessions will be offered at 9 a.m., 10:30 a.m., 1:30 p.m. and 3 p.m. Folks can register on the Indiana State Fair website for one of the $20 sessions. Also returning this year is Animal Town, which features eight different barnyard animals from 9 a.m. - 9 p.m. each day of the fair. It’s located east of the Hoosier Lottery Grandstand next to the Communications Building. “It was very popular last year,” Smith says. “It allowed folks to get up close and personal with barnyard animals and learn about them. Animal Town makes it a lot more user-friendly to get up close and personal with a variety of animals and learn all about them in a user-friendly way. can take in at your leisure.” The Indiana State Fair also has new menu items. For Smith, her favorite part of the fair is its food. “We always offer some crazy, whacky and always delicious kind of extraordinary food item,” Smith says. Some new items include the Indiana Pork BBQ Split, which is offered by Indiana Pork Producers. The menu item is served just like a banana split — three scoops of pulled pork, macaroni and cheese, and coleslaw all served on top of a baked potato.

That’s a great way to experience the fair. Use $2 Tuesday to go around and sample some things, not just the food and activities. You can come back another day and focus more on what you really love.” The Indiana State Fair runs from Friday, August 2 through Sunday, August 18. When patrons walk through the French doors of the Cake Bake Shop Carmel, located on the upper deck of the Carmel City Center, it’s evident that the fairy-like cottage space is like nothing else in town — just ask its owner, Gwendolyn Rogers. The combination bakery, bar and restaurant opened on July 1 after more than two years of planning. Rogers designed her new location to resemble that of the Cake Bake Shop Broad Ripple, which is located in Broad Ripple Village. However, the full-
service bar is exclusive to Cake Bake Shop Carmel. Its Broad Ripple location still has its usual beer and wine license and sells a lot of champagne. “I designed the whole exterior of the building to resemble a little bit with what Broad Ripple is, so it’s still a white house and it’s got French doors,” Rogers says. “So, it has that warm, homey feeling. I’ve taken a very large space and separated it into different rooms with different ceiling heights to create a home kind of experience. It’s very similar to Broad Ripple — it’s just a little bit different. And it’s prettier!” 16 / CARMEL MAGAZINE / AUGUST 2019 / atCarmel.com
TRANSPORT TO PARIS Rogers designed her new Cake Bake Shop location to resemble that of Vienna or Paris. She also ensured it was spacious and could accommodate more people, as reservations are booked up weeks in advance at her Broad Ripple location. The 154-seat Carmel shop is nearly triple the size of its Broad Ripple location, which can seat only 36 patrons. “The tables are bigger, and it’s just a lot more spacious,” Rogers says. “The seating is more comfortable, and it’s just beautiful. You’re
not crammed in sitting next to someone else. You feel like you’re in Vienna or you feel like you’re in Paris. You sit on the outdoor covered patio with the fountain and the flowers and it’s just beautiful. There is nothing like it anywhere.” Rogers was heavily involved in its design and construction and truly made it her own. “I wanted to design my own space,” Rogers says. “I didn’t want to go into an existing building. This was a brand-new building that was just going under construction before I even started with the design. I wanted to just build it from the ground up because I knew exactly what I wanted, and I knew exactly what I wanted it to look like. It was a lot easier to do that with a brand-new construction situation.”
DAILY MENU In addition to a bigger space and lengthier alcohol selection, Cake Bake Shop Carmel also features an extended menu. “We’ve got beautiful signature cocktails,” Rogers adds. “We have gumbo that I’ve been making for 25 years because I’m from New Orleans.” The new location is run by award-winning chef, Dan Nichols, who was previously with Quaff ON! Bloomington. Other menu options include Crab Cake with Rémoulade, a homemade fresh blue lump crab meat lightly breaded with panko crumbs, sautéed in olive oil and clarified butter, Pasta Puttanesca, freshly chopped tomatoes, garlic, capers, Kalamata olives, anchovies, roasted eggplant, sun-dried tomatoes and basil, tossed in spaghetti pasta and Filet Au Poivre, a seared 12-ounce filet mignon sautéed with crushed black peppercorns, cognac, rosemary, basil, garlic, shallots, green peppercorns and heavy cream. It’s menu also features salmon, a ground sirloin burger and ice cream that is made fresh every morning. Also exclusive to its Carmel location is a chocolate fountain. “We have a chocolate fountain machine that literally just spits out melted chocolate all day long. We fill up little cups and top it with whipped cream,” Rogers says.
PASSING IT TO THE PUBLIC After completing her two-year project, Rogers describes opening Cake Bake Shop Carmel to the public as a relief. “It was a relief, and what I mean by that is I’ve been working on it for so long that it was such an incredible feeling to finally have that underneath me and I finally accomplished that,” Rogers says. “I wouldn’t say you’re ever finished because I think it’s an ongoing process all the time. Just to be able to open the doors and to be able to have guests come in through the front door and enjoy what you’ve been working on for so long is so rewarding. It’s so gratifying to make people happy and to see them all come in with smiles on their faces is just the best reward ever. It’s nice to pass it off to the public.” As for its hours, the shop has the same hours as its Broad Ripple location. However, it’s subject to change. “If there are events, we’ll definitely stay open longer,” Rogers says. “I’m going to start the same as my Broad Ripple hours and just kind of see what the crowd is like in Carmel because I’ve never had a business there before. If it’s busier, we’ll stay open and if it’s not we’ll stick to our original hours.” The Cake Bake Shop - Carmel is located at 800 S. Rangeline Road. The shop is open from 10 a.m. - 8 p.m. Monday through Wednesday, and from 10 a.m. - 10 p.m. Thursday through Saturday. expensive and messy for a classroom setting. In addition, children receive more attention. Roberson notes how the attention helps both advanced and struggling students. “We’ve had students that were at a different level than what we were prepared for, but we shift pretty fast,” she says. “You learn to do that when you’re a teacher.” As far as adult classes, Donnelly says, “believe it or not, there’s not a lot of difference.” Adult students often feel self-conscious and worried about their creations. The lessons often teach adults that practice makes perfect, and it’s important to enjoy the processes of creation, not just the end result. Looking to the future, Donnelly and Roberson hope to continue offering both quality classes and summer camps. While not everybody who signs up for the class become the next Picasso, they still find community and the joy of a new skill. “We’re educators, so we’re not really happy unless you walk out the door knowing more than you did when you walked in,” Roberson says. Located in the retail portion of Village of West Clay at 12702 Meeting House Road, bustling and popular Danny Boy Beer Works lends an energy to the surrounding businesses. For many, the industrial-looking establishment has become the place of choice to grab a beer or cocktail and some barbecue. The area has not always enjoyed the commerce it does today. In 2012, when Kevin “KP” Paul, already the owner of Carmel’s Brockway Pub, decided to build the Tank 13 Building to house a brewpub, many people were surprised. “We were looking at several different areas such as Fountain Square, Zionsville and downtown Indianapolis when we met with

They convinced us that what the district needed was a good anchor and they allowed us to construct a stand-alone building in what we considered was the best spot.”

“I’m an Irish kid from Corktown in Detroit,” he says. “Prior to moving to Carmel, Lainie and I traveled all over Europe, including England and Ireland. I was influenced by the European style pubs we encountered there.”

Monarch Beverage Company and Southern Glazer’s Wine and Spirits distribute their offerings to bars and package stores. The brewery has expanded to include locations in Bloomington, South Bend and St. Clair, Michigan.
up pints of Guinness and traditional pub food. However, while traveling in Europe, Paul had dreamed of owning his own brewpub. Intrigued with the idea of producing his own beer, he started brewing at home in 2010. “I got with my buddy Prescott Sanders who also brewed beer at home. By the end of the year we had four different beers: Training Day which became our flagship brew, Miss Ginger Witte Urban Wheat, a popular blend of citrus and ginger, a seasonal Black IPA and Mac Daddy which came from a recipe that my father had once used,” Paul says. “Lainie said, ‘Let’s get licensed and sell it.’ So, we did and we began distributing it.” When the demand for the brews exceeded what his space could produce, Paul realized he needed a larger facility and Danny Boy Beer Works came into being. The name was a nod to his Irish upbringing and the Tank 13 building which houses the brewhouse was modeled
after a firehouse he admired in South Boston. He partnered with Patrick Mullen to bring Patrick’s Smokehouse Kitchen inside the brewhouse. Guests sitting amongst the huge tanks in the oversized brewpub can munch on smoked brisket, ribs and other menu items while quaffing down beer that was made right there. “It’s based on a traditional U.K. style pub but with a west coast spin,” he says. “The number 13 has always seemed to show up at different points in my life so it had to be part of the building’s name. We have a lot of fun naming brews such as Take Me to Church and Holy Water which are both stouts. In 2017, we began to distill spirits and our Buddha Vodka, Sons of London Gin and Bucket List Rye Whisky have all done very well.” Daily specials and an ever-changing calendar of events keep thing lively. Mondays are Mexican themed with special prices for food items and drinks such as house margaritas or grapefruit spritzers. Tuesdays are reserved for trivia and might include taco and growler specials. The themes for other days of the week vary and alternate. They have featured muscle car nights or bagpipers and include a price break for selected beverages and edibles. “We always have three huge special events every year,” Paul says. “We celebrate All 28 / CARMEL MAGAZINE / AUGUST 2019 / atCarmel.com
