As a senior at Carmel High School, Hannah Pedersen completed a research project on the effects of dental anxiety on a child’s oral health. After surveying elementary students, Pedersen discovered a connection. Kids who had dental anxiety didn’t know as much about oral hygiene and had poorer oral health. While working at a dentist’s office throughout the last few summers, she noticed a lot of patients have dental anxiety. Two years ago Pedersen had the idea of creating a storybook called “Will I Survive the Dentist?” to help them. “I wanted it to tell a really great story that’s heartfelt, but also educational,” she says. “I wanted it to have a plot that children of all ages could understand. I have really high hopes that this will help a lot of families - not only children, but parents too. I think for parents it can be really difficult to navigate that

first visit.” As a child, Pedersen says dental anxiety was very prominent in her own life as she navigated dental issues. “I thought back to what would have helped, and I’ve found that interactive experiences are the best way for me to learn or deal with something,” she says. “Being able to have that tangible item in your hands on your way to the dentist or even in the dental office, I think, is really beneficial. Kids can flip through the pages, become intrigued and learn something.”

Pedersen is now a senior at Indiana University studying biology on the predental track. “Will I Survive the Dentist?” came out in September. She recently returned to her elementary school, Cherry Tree Elementary, to read her book to students in kindergarten through fifth grade. “Every grade level had a different reaction,” she says. “It was really interesting to see how the progression turned from kindergarteners who were still terrified of the dentist to fifth graders who were saying the orthodontist is more terrifying now.” Pedersen says the younger kids were intrigued by the story itself, while the older kids asked questions about the process of writing a book and becoming an author. What started as an idea on a whiteboard has developed into a successful restaurant business with two locations - Salt on Mass, and the newly opened Salt at Geist.

With seven years of hard work and dedication, the team at Salt has brought a fine-dining experience to Indianapolis. Like many businesses, the pandemic significantly impacted CONNECT the restaurant. However, with perseverance and grace, Salt on Mass continues to thrive, and John Bales, co-owner of Salt, feels fortunate to have the opportunity to open a second location. Upon entering Salt at Geist, located in Fishers, guests immediately notice the coastal chic ambience. The restaurant team members pride themselves on creating unique experiences for every visitor. The atmosphere may get them in the door, but the food is what keeps the guests coming back. Salt prioritizes menu items that come from fresh, sustainable food sources. Although Salt at Geist is in the middle of the Midwest, their chefs pay great attention to providing an authentic sea-to-table and farm-to-table menu. The menu is comprised of seafood, pasta, steak and chicken options. Be sure to keep an eye out for off-the-dock features, made with the freshest seasonal catches flown in daily. Some crowd-favorite menu items include the Jumbo Lump Crab

Cakes, Salt Sashimi Plate, Chilean Sea Bass, Lobster Mac and Cheese, and Filet Mignon topped with Maine Lobster Oscar. One of the main differences between the downtown location and Salt at Geist is the addition of sushi to the Geist menu. The Salt & Sea and Salmon Rolls have been a huge hit with Geist guests. Besides a delicious selection of food, Salt at Geist’s menu also offers an extensive wine and spirits list, as well as desserts. The folks at Salt at Geist are constantly looking to keep things evolving at the restaurant. Since opening, they have enjoyed adding new and exciting options for guests. Live music has been added, and guests can now book the private dining room and share the Salt experience with gift card promotions. They will soon launch Salt ELITE, a wine and beverage club with exclusive dining perks. Lastly, guests will soon be able to enjoy Salt at Geist breakfast, with classic breakfast plates and seafood-inspired brunch options, starting in December. With the opening of the new restaurant and all the changes they have been implementing, the Salt at Geist team couldn’t be happier to be at Geist and in Hamilton County. “Hamilton County has been abundantly welcoming to our newest location,” Bales says. “We love meeting our neighbors and look forward to exploring how we can get involved and best serve our community inside and outside of the restaurant.” Reservations are not required but strongly recommended. JEN BUBP IS HELPING TO SHAPE AND MOLD THE CITY FOR THE BETTER AS CARMEL ARTS COUNCIL PRESIDENT Story and Photography Provided

The Carmel Arts Council just celebrated its 30th anniversary by holding a successful fundraiser in partnership with Feinstein's at Hotel Carmichael. The longtime arts group’s former executive director was Doreen Squire Ficara, who passed away in 2016. She was known for big ideas and making sure they became reality. She worked tirelessly to gain Carmel the distinction of having the World's Smallest Children's Art Gallery, officially recognized by Guinness World Records in 1999. So it seems fitting to introduce you to the new president of the Carmel Arts Council, who has literally jumped in “Doreen-style” after being a member for just six months. Jen Bubp comes to the Carmel Arts Council with qualifications and experience that are already breathing new life into the organization, whose mission is to encourage and promote the arts for all ages through its leadership as well as financial and volunteer support, in order to nourish a vibrant culture in the Carmel community. She is

the chair of the Carmel High School art department. Prior to joining the council, Bubp stepped up and led her students through a collaborative project with the City of Carmel and the Carmel Parks and Recreation Department to cover the walls of two Monon Trail tunnels with beautiful murals. The tunnel under City Center Drive was the first, and multiple students pitched their vision for a work of art depicting music. Caroline Hammonds’ design was chosen by the Carmel Public Art Committee and the work began. Instead of handing out paintbrushes and paint to her students, Bubp knew she had to solve a few problems first, including how to complete the project with the amount of time students could devote, how not to close the tunnel, and how to keep students safe and not be on ladders and scaffolding. She teamed up with creative strategist JohnMichael Polley, and they devised a system to use vinyl wrap as wallpaper for portions of the mural that were out of reach for

students. The rest of the project involved blank pieces of wrap that students could then paint on, with the entire mural easy to care for and long lasting. Bubp and a new group of students then tackled the 116th Street tunnel. “Adding art to these tunnels is an easy way to bring art and beauty to the citizens of Carmel,” Bubp says. “It brings me joy.” Emily Garnes’ design was chosen for the second tunnel, and now Bubp believes it is time to expand the work of her students in more places throughout Carmel. “Collaboration is my theme, and I want to create partnerships with other artists and galleries to enhance the offerings of the World’s Smallest Children’s Art Gallery,” she says. “We will continue to raise money for student scholarships and showcase the talents of our local artists.” As Doreen would have wanted, the Carmel Arts Council is in hands that can creatively mold and shape the future.

In the heart of downtown Indianapolis, where the streets were bustling and came alive, stood Roselyn Bakery, the cornerstone of cherished memories and traditions. Roselyn Bakery extended far beyond the taste of its treats. It became part of the fabric of Hoosier life, weaving its way into the tapestry of the communities it surrounded. The bakery, which opened in 1943 at 2205 North Meridian Street, had a quaint storefront adorned with the iconic Rosie Roselyn sign. The image

of Rosie that perched proudly atop the bakery signs became synonymous with the warmth and familiarity the bakery exuded - a symbol of nostalgia that each customer carried in their hearts. The Roselyn sign was designed with an iconic “V” for the victory of World War II. The aroma of freshly baked goods wafted through the air, luring passersby in downtown Indianapolis with the promise of indulgent delights. From the beloved Sweetheart Coffee Cake to the irresistible Danish Dandies, each confection was crafted with

the utmost care, bearing the signature touch of the Clark family's cherished recipes that drew people from every corner of town. People would stop into the bakery in the morning to buy doughnuts to share with their staff at work, or just to pick up a piece of Dutch apple pie, cherry pie or butter rum cake. As the winter chill would settle over the city each year, the familiar scent of the bakery mingled with the crisp air, giving a sense of holiday spirit and cheer. Families would flock to Roselyn’s doors for the bakery’s holiday goodies that lined its glass cases. The holidays were always the most popular times at the bakery. People would always stop in and pick up holiday cookies for school and parties. From the bakery’s delicate, spicy Gingerbread Cookies to the anticipated Christmas tree lighting tradition on Indianapolis’ Monument Circle, Roselyn became a staple of the Christmas season. Roselyn picked the child to light the world’s largest Christmas tree every year. It’s estimated that they gave away 1.2 million gingerbread men over the span of 25 years during the holiday season. The absence of those whimsical bakery buildings, once scattered throughout central Indiana, left behind a sense of longing. But amidst the memories of the past, the essence of Roselyn Bakery still lingers, tucked away in the timeless moments that many people still reminisce over - the simple joys of a morning coffee paired with a Roselyn treat, or the excitement of picking out a special birthday cake adorned with frosting and love. Roselyn was famous for baking and designing the best birthday and wedding cakes in the city. When anyone had a special occasion and needed a cake, they turned to Roselyn. Though the physical structures may have disappeared, the legacy of Roselyn Bakery endures, carried forth by the sweetness of its recipes that continue to grace the shelves of local supermarkets. Roselyn Bakery remains a cherished chapter in the story of Indiana, a heartfelt bakery that left an indelible mark on the lives of many. They have been missed by all but not forgotten. Listed below are a few of the beloved recipes that Roselyn Bakery was known for.

FRESH DANISH DOUGH

Recipe makes 4 to 5 coffee cakes or 2 to 2 ½ Danishes. • Begin 5 hours or up to 3 days ahead. • Grind ¼ of a whole small orange and ⅛ of a whole small lemon (including the rind) until the largest piece is the size of a pinhead. • In a large bowl, combine 1 ½ cups chilled water, 2 whole eggs, 3 ⅛ cups bread flour, 1 ½ cups all-purpose flour, 2 ¾ tablespoons milk powder, 2 ½ teaspoons salt, ½ cup shortening, ½ cup sugar, 7 drops yellow food coloring, 3 tablespoons of yeast and 1 ⅓ cups butter. • Mix with dough hooks until well-incorporated. Do not over mix.

SWEETHEART COFFEE CAKES

Recipe calls for fresh Danish dough. • Preheat oven to 350 degrees. • Roll out the dough onto a well-floured surface into a 12-by-30-inch rectangle ¾ inches thick. • Spread the sweetheart filing across the entire dough piece except for the last half inch. • Roll the dough piece into a log, brushing excess flour off the dough while rolling. Cut the roll into 10-inch logs. • Fold the log in half. Cut both top and bottom logs in half from the folded end to 2 inches from the cut lines. • Pull the top portion forward and allow the side of the log to fall, straddling the bottom log. • Press out the heart shape with hands to a thickness of 1 inch. Place sweetheart streusel on top. Place onto a parchment-paper-lined cookie sheet. Cover with a damp towel and let rise in a warm place until it has doubled, about 1 hour. Place into the oven and bake for 15 minutes or until golden brown. Let cool on pan. Once cooled, cover the entire coffee cake with butterscotch icing. Makes 3 to 4 coffee cakes.

With a 5-inch-long cutter, cut out men, re-roll trimmings and cut more cookies. With a spatula, place ½ inch apart on a cookie sheet. • Bake at 360 degrees for 8 minutes or until browned. Then, with a spatula, remove cookies to racks to cool. Decorate as desired.

Nancy Chance has been helping the community of Hamilton County for as long as she can remember. As a lifelong community member with a love for giving back, she and other committee members found themselves wanting to help the county as construction and expansions began growing the town in the late ‘70s and early ‘80s. As the area grew, the group realized that someone would need to manage the nonprofits that would be established in Hamilton County. Thus, Good Samaritan Network, Inc. (GSN) was born. “The whole premise that this idea revolved around was duplication of service,” Chance explains. “We didn’t want a lot of nonprofits all doing the same thing. We wanted highquality services and robust programming from the 501(c)(3)s, to be able to help the entire county.”

GSN has two different approaches for their services: direct and indirect. Direct services include a multitude of assistive opportunities for underserved or at-risk individuals and families in Hamilton County. These services can include emergency or crisis intervention, for housing and utility assistance, food insecurities, car repairs, medical and prescription assistance, as well as educational opportunities for improving individual independence. GSN provides direct care when clients have nowhere else to turn.

The network’s indirect services are designed to routinely communicate with the underserved and at-risk Hamilton County residents, and local nonprofits. This includes providing trainings, tools and resources, coordinating primary community-related events, and ensuring efficiency between GSN is a network of nonprofits in Hamilton nonprofits and clients. County, led by Chance, and is considered a facilitator between services in the Since 1995, GSN has developed a robust community. Chance credits the network with why this organization is so successful. “I’m only one piece of the pie,” she says. “It takes every agency, pantry, clinic, etcetera, to work together efficiently to meet the needs of our community, and they do a spectacular job.” Holiday Assistance has become one of GSN’s signature services. This program is made possible by the generous donations of Hamilton County residents, agencies, nonprofits, businesses and churches. “Forty-three years ago, the Carmel and Noblesville fire and police departments

actually encouraged me to start a Hamilton County holiday project,” Chance says. “They’ve been helping me with this project ever since.” Holiday Assistance is able to reach over 46,000 people annually for Thanksgiving and Christmas, including holiday meals, clothing and gifts. “It’s a really important program for our community,” Chance says. “This program makes it possible for some families to have a holiday.” GSN is located on 13053 Parkside Drive in Fishers.
