Smokehouse Catering Company has grown tremendously since its opening in 2018. Owner Keith Johnson always knew he would have to move his operation to a more updated facility in the future.
space isn’t technically bigger than the current building, it does allow for more opportunities. “We will have indoor seating for about 88 people,” Johnson says. “Guests will come
in and be able to see all the meats, sides and desserts in a style similar to Shapiro’s. We won’t have servers because it’s been so hard for everyone to find staffing. We’ll also offer beer and wine for dine-in guests.” The menu will include daily specials created by Executive Chef Chip Huckaby. “He’s one of the top chefs here in the midwest but also nationwide,” Johnson says. “He has a ton of experience here in central Indiana as well. He’s worked with different companies out at the Speedway and the State Fairgrounds. We plan to do steaks to order on the weekends.”
“We’re located in the old Walker’s Eggs building, and it’s pretty outdated,” Johnson says. “It was never really zoned for commercial use, but we were sort of grandfathered in there. We knew this wasn’t our long-term home. We wanted to find a space that allowed for us to also offer walk-in dining.” The new home of Smokehouse Catering Company is located at 1140 North State Road 135 in Greenwood. The open-concept kitchen allows eaters to see what they are having for dinner before receiving it. “We’re still going to do our Smokehouse
offerings like ribs, smoked ham, pork and chicken, along with our sides like macaroni and cheese, collard greens, sweet-corn casserole and mashed potatoes.”
Johnson will continue the carry-out and catering business while managing the indoor dining. “We have grown so much with our

“I grew up here and I have kids in the school system here,” he says. “I like to give back to our local schools, churches and organizations. I think it’s paramount to keep local donation dollars back into the local area. We have donated food to all kinds of different things.”

Tyson Barrett, co-owner of the new Crumbl Cookies location in Greenwood, firmly believes in the saying, “If it isn’t broke, don’t fix it.”
Many of the Crumbl Cookies stores in Indiana and across the nation have been a huge hit. It isn’t uncommon to see long lines out the door with eager customers waiting to get a taste of the delicious cookies. Many of the customers can also be seen with smiles on their faces.
When he opened his Crumbl Cookies store on the south side, he wanted the cookies to be exactly the same as they have been at his other popular locations.
“We wanted to really stick with what has made us successful at all of our other locations,” Barrett says. “We know that our customers have been extremely happy

with our cookies in the slim pink boxes.” Barrett, a Crumbl Cookie franchisee, adds that the level of excitement about the store opening was overwhelming in the best possible way. “We had quite a few people asking us when we were going to open our Greenwood store,” Barrett says. “They were asking us about it for several weeks leading up to our opening. That’s a great

telling their families and friends about us, and that is what has helped us grow. We have great and loyal customers.” Barrett says the franchise was started by cousins Sawyer Hemsley and Jason McGowan. They opened their first Crumbl Cookies in Logan, Utah.

Barrett says his curbside pickup, takeout and delivery services have all helped the business grow. Barrett co-owns the Indiana businesses with his brother, Chad Barrett. Their other popular stores are located in Indianapolis, Fishers, and Bloomington. “What it all comes down to is the taste of the cookies,” Barrett says. “That’s what has kept people coming to all of our stores, and that is what will make the Greenwood store a success. People are

ouis Schlegel started Schlegel Greenhouse in 1972, having relocated from the Cleveland area where his family had been involved in the greenhouse business for many years. Louis and his wife had eight children, all of whom helped out around the property. “If you didn’t have a job, you had a job,” says Louis’s son Paul, who was 14 when his dad launched the greenhouse. Paul always appreciated the transformative nature of the greenhouse business. “Taking a little seed and turning it into something desirable is an amazing miracle,” Paul says. In 1979 he joined his father in running the greenhouse, and in 1995 he purchased his dad’s interest in the business. He now runs the greenhouse, and his sons Caleb and Zach are heavily involved (Caleb on the business side and Zach as a grower). They, too, began helping out at an early age. “Back in the day we had cardboard boxes we had to build like little flats,” Paul says. “I’d

“If you compare this to candy bars or car washes, these students are making twice what they are paying,” Caleb says. In 2010 Schlegel Greenhouse grew between 5,000 and 10,000 mums. This past year, they grew 80,000 mums and had to bring in 20,000 more to cover all the orders. “We like forming relationships with local organizations that are trying to benefit people in one way or other,” Caleb says. Just a few years ago, Anderson was one of the Center Grove students selling Schlegel’s plants for her show choir fundraiser. Now she owns 40 houseplants of her own and is the houseplant sales manager at Schlegel’s Greenhouse. “That’s an awesome cycle,” Paul says. Anderson maintains that it feels good to nurture something every day. She’s not the
only one who feels that way. The Schlegels have noticed a renewed interest in plant material and gardening since the start of the pandemic, particularly by millennials. Paul says prior to the spring of 2020, many members of the 30-and-under generation had little interest in plants.
“They simply weren’t purchasing plants or engaging in the outdoors, but the pandemic opened their eyes,” Paul says. “Now they’ve seen where plants enhance their life.” Fifty years ago, the greenhouse started out with 12,000 square feet and has grown to 150,000 square feet, and that doesn’t count

Paul is pleased with how the business has evolved, and he recognizes that none of it would be possible without his team, which includes his Burmese employees who are loyal, talented and kind. “They are the sweetest bunch of people I have ever come across,” Paul says. He mentions one woman who came to the United States in 2008 with her newborn and three other children after having just lost her husband. She didn’t speak English and had never gone to school. Life was hard, but she was eager to get to work. “She comes in here every day with the biggest smile on her face,” says Paul, who is touched by the tremendous impact his Burmese employees have had on his life. “Honestly, that’s the most significant part of my story.”

Each holiday season Schlegel Greenhouse sells approximately 20,000 poinsettias. Because they are photo sensitive, they must have short days in order to bloom. They won’t bloom in houses with artificial light. The main factor to keep in mind when caring for poinsettias is to not overwater them. If it comes in a basket or pot cover, take it out, water it, leave it in the sink, let it drain, then put the pot cover back on. “If you do that, it will last and last,” Paul says. “Overwatering a plant will kill it in two days.”

What is it about the holidays that just screams cookies? Can you imagine the holidays without thinking about all the different cookies out there at the same time? They go hand in hand. There’s no holiday without them. By the time you have gone to holiday parties, visited family, participated in a cookie swap, or just decided to leave some out for Santa, you’ve made your fair share and have probably eaten quite a few too. Making holiday cookies each year is a great family tradition for lots of people. Many people put this on their holiday or winter bucket lists. One of the best parts of this tradition is that if you do it as a family, you can watch the kids grow into their roles more and more each year. Traditions don’t have to be complicated. Actually, it’s better if some traditions are simple so they can easily be replicated year after year. There are so many cookies out there to choose from that baking together each year can be exactly the same or completely different. The good news is that holiday cookies don’t have to be fancy. The best part about baking around the holidays is that the cookies are homemade and baked with love. That said, for the cookies to turn out good enough to share with friends and
family without embarrassment, you do need the right supplies and recipes. Our favorite cookies to make around the holidays are classic, decorated sugar cookies. These are the perfect cookies to make with the kiddos because they are fairly simple and, obviously, sweet. Did you know that sugar cookies have been around since the mid 1700s? They are believed to have been created by German Protestant settlers in Nazareth, Pennsylvania, and were originally known as Nazareth cookies. We also like making chocolate chip cookies (which date back to 1938) and gingerbread cookies (which date back to Queen Elizabeth I during the 16th century), but it’s always fun to add in some new recipes. The holiday baking tradition continues this year as we will be in the kitchen taking on typical cutout sugar cookies, and trying some new ones like Santa’s trash cookies and holiday fudge. With so many easy sugar cookie recipes out there, here’s a different type of cookie recipe to try by yourself or with your loved ones. These Santa’s trash cookies have plenty of flavor to satisfy salty and sweet cravings. Can you really pass up cookies with potato chips in them?

SANTA’S TRASH COOKIES What you’ll need: • 14 tablespoons unsalted butter, room temperature • ½ cup granulated sugar • ½ cup brown sugar • 1 large egg • 2 ¼ cups all-purpose flour • 1 teaspoon baking soda (make sure it’s not expired) • ¼ teaspoon salt • ⅓ cup crushed potato chips • ⅓ cup crushed pretzels • ½ cup mini white chocolate Reese’s Cups • ½ cup mini chocolate Reese’s Cups • ⅓ cup milk or semi-sweet chocolate chips • ½ cup M&M’s (I used red, green and blue) • ⅓ cup white chocolate chips • ¼ cup sprinkles of choice • Sprinkles of flaky sea salt for tops of cookies First, preheat your oven to 350 degrees and line two baking sheets with parchment paper.
until they are combined, then set aside. With a mixer, cream the butter and sugars together in a large bowl until light and fluffy, usually about one to three minutes. Once the mixture turns pale yellow and has a light fluffy texture, it’s done. Make sure to not over-cream the mixture. Then, beat in an egg until it’s combined. Next, add in the dry ingredients with the wet until they are combined. It will be very thick. After that’s combined, add in the pretzels, potato chips, M&M’s, Reese’s Cups, chocolate chips and sprinkles, and mix together gently. Using a cookie scoop, scoop your dough balls onto your sheets with parchment paper and slightly press them down. Before putting into the oven, sprinkle lightly with sea salt. If you’d like, you can add additional pretzels, chips, candies and sprinkles to the tops of the cookies for a little extra pizzazz. If you prefer the cookies to be thicker, don’t press down as much. Bake until the edges are just starting to get golden, usually about seven to eight minutes. Remove from the oven and let cool two to three minutes before transferring to a cooling rack to cool completely. Happy holidays from our kitchen to yours!
