LOCAL FRENCH BAKERY SERVES MAGNIFIQUE DELICACIES

A pinch of purpose, a dash of determination, tablespoons of talent and a heap of hard work is the unique recipe for success of Le Croissant French Bakery.

The aroma of fresh-from-the-oven delicacies greets you upon entering, and the sight of the display case is a feast for the eyes. There you’ll find flaky croissants – chocolate, strawberry, and almond – covered in powdered sugar, glistening chocolate cream puffs and eclairs, tarts and cheese danishes topped with berries, cookies, quiche and warm sourdough bread and baguettes.

Opened in January and located in Vista Run Shopping Center, Le Croissant is easily identified by the line of anxious customers waiting to be among the first of the day to experience Central Indiana’s talk of the town.

Behind the counter, employees buzz about keeping up with the orders, and at the center of all this activity is Pedro Ulloa, owner and baker extraordinaire. While he is not completely surprised at the enthusiastic response, Ulloa is humbled.

“Every day there is a line. Every single day,” he says excitedly. “The first day we opened, there was so much left at the end of the day. I shared it with all of the other shops around. They loved everything and they told their friends. A few days later, we sold out, and have sold out every day since then.”

but it’s his ‘never give up’ spirit that defines him.

Ulloa is proud of the success of Le Croissant, but he does not take it for granted.

Determined to become a U.S. citizen, which took 14 years, he worked in landscaping, meat packing facilities, restaurants, worked as a welder, auto mechanic and home remodeler, just to name a few. But baking was his forte, his passion, and lucky for us, his destiny.

The road that led to Greenwood was long and difficult. A native of Mexico, Ulloa joined other family members living in Los Angeles, arriving on July 4, 1985. Decades of laborious work would follow

“I’ve always worked. Hard work. And I was good at it. Bosses always said they wished they had a hundred Pedros,” he says with a chuckle.

long after it closes, preparing for the next day. With only one mixer, the process is tedious and time-consuming. He has his sights set on acquiring a larger mixer which will enable him to prepare more pastries in less time. Another goal on Ulloa’s list is to open a second Le Croissant French Bakery in Carmel. “We’ve had customers from Muncie, Lafayette, Plainfield,” he says. “Every day, customers from Carmel come here and beg me to open a bakery there. “I would like to have a second bakery and I think it will be a success in Carmel. There are bakeries all over town, but nothing like what we offer at Le Croissant French Bakery. But first, a new mixer.” Le Croissant is located at 916 E. Main Street, Greenwood. The bakery is open Tuesday – Friday, 10 a.m. – 6 p.m. and Saturday 10 a.m. – 4 p.m.

WEATHER FORECASTING SERVICE HELPS CLIENTS MAKE DECISIONS WITH PROFESSIONAL DATA & CONSULTING

What started out as a storm-chasing hobby over time morphed into a life-saving business. Michael Clark and his friends, Bryan and Amanda Kilgore, all went to Whiteland High School together. “We loved storm chasing, and we were successful at getting footage of some good storms as well as close-ups of tornadoes,” Clark says.

People started paying for that footage so they monetized the storm-chasing aspect of it. As time passed, however, that piece of it died as the trio recognized the need for the public to have access to a better weather forecast. They started a Facebook page where they posted things randomly and intermittently, then began a subscription service where people could get more information. BAM (short for Brian, Amanda, and Michael) officially launched in May 2011. He calls it a 24/7, 365 job. 10 / CENTER GROVE MAGAZINE / MAY 2022 / TownePost.com

“You can have a week of next to nothing followed by a week of nonstop work because it’s all weather-dependent,” Clark says. Though BAMwx started out as a threeperson team, the workload grew over time, so in 2016 they hired Kirk Hinz (who became their COO this year). They now have 16 people on payroll. Since BAMwx launched, advancements in technology have exploded. When they first started, they offered a subscription service for $50/year or $5/month which gave subscribers access to a 10-minute daily

forecasts. Now they have created an application for phones, iPads or computers where they send location-specific weather info to devices every hour. “You get hour-by-hour forecasts, 10-day forecasts, radar, alerts. You can talk to meteorologists 24/7,” Clark says. “What we offer now compared to what we offered initially is not even in the same league.” Technological advances in cellphones, iPhones and apps means that they can get info into someone’s hands to where they don’t need to go to anywhere else but the BAMwx platform to make decisions about closures, cancellations, evacuations, etc. They deliver weather forecasts for businesses such as the MLB, the NFL, the NCAA, as well as farmers, construction companies, schools and 911 centers.

As they evolved, the team made the emails more professional and loaded it with information, graphics, commentary and video in order to provide more information to the end user. “We found that people were starting to take our information and make business decisions with it and we thought that was worth more than $5,” Clark says. So they came up with an annual commercial-level subscription for $1,000. They took that model and expanded on sending email

“We provide a source of information to them that’s far better than what they would get for free off the internet,” says Clark, cofounder and chief meteorologist. The BAMwx team has had multiple scenarios where they have not only saved people tens of thousands of dollars in splitsecond decisions but they have also saved lives. “We’ve had instances where if people had not listened to our advice, 10,000 people at the Indianapolis Motor Speedway could have been hit with a hailstorm and severe thunderstorm that likely would have resulted in casualties,” Clark says. “And the organization that put it on would have TownePost.com / MAY 2022 / CENTER GROVE MAGAZINE / 11

probably been completely wiped out due to not keeping spectators safe.” Things like the state fair stage collapse could have been prevented had people evacuated and taken shelter. Three years ago, a farmer from Amboy, Indiana, inquired about a possible subscription to BAMwx. He wasn’t sold right away, but that same day severe weather was forecasted in the area. “If I know a customer is in a location who’s under the gun, we’ll reach out to them personally and tell them to take cover,” Clark says. Even though this farmer was not a client, Clark let him know that a tornado was headed for his house and he should seek shelter. Not surprisingly, the man subscribed soon thereafter. “He said that was one of the best customer service experiences he’s ever had,” Clark says. “I was just glad we were able to help him out.” In recent years, as BAMwx has become more financially successful, they have given back to the community. For instance, they give to The Cure Starts Now, a foundation in which all donations go directly toward research to find a cure for cancer. “When you go to these events, you’ll hear some of the saddest stories because these are 3, 4 and 5-year-old children who are going to die from cancer,” Clark says. “We


just want to do what we can to help.”

What sparked their interest in supporting this foundation was when a 4-year-old local girl, Adalynn Jessen, was diagnosed with brain cancer. “She got that diagnosis in June 2020 and passed away in May 2021,” Clark says. “We went on that journey with the family. It’s bittersweet.” There was a day when if Clark saw a big weather event forming like a huge snowstorm, he would get geeked out. Now while there’s still a bit of inner geek at play, a bigger part of him dials into the business side of things to make sure people are alerted in a timely and accurate manner. “I must admit, it’s good to have a big storm from time to time to remind me of why I’m doing this,” he says. The pandemic was a wild card in many ways, not least of which was confusing canines when it came to humans participating in a typical work day. During COVID lockdowns, a large portion of the population began working from home. As a result, many pets got used to having their owners hang around the house 24/7. Now that some of those folks have returned to the office, their pets feel lonely and bored. Even some people who have continued to work from home have chosen to put their pets in day care because their canines think “home time” equals “play time” and don’t really understand or appreciate the concept of “work time.”

he term “doggie day care” might sound cute, but day care for canines actually encompasses much more than simply pampering pooches. According to Ken Weadick, owner of Dogtopia of Greenwood, dogs experience multiple benefits by engaging in a daycare environment including socialization, increased confidence, exercise, and fewer incidents of doggie mischief, not to mention assuagement of the owner’s guilt for having to be away from home. Dogtopia is a national chain of which Weadick is a local franchise owner. For 12 years Weadick served as the Chief Clinical Officer at Cornerstone Autism Center in Greenwood. In December of 2021 he decided to switch gears and open Dogtopia of Greenwood, a move that enabled him to continue applying the science of behavior in his career, since he’s a behavior analyst. Clients come from a variety of situations to include health-care workers and first responders who log 12-hour shifts. Some are older and simply don’t have the mobility or stamina to play with their pets as much as they want, and Dogtopia enables their pooch to burn off energy. Plus, during the pandemic many people got puppies and then weren’t able to take them out to meet other people or dogs, so Dogtopia provides that socialization. “Dogs thrive in a structured environment where they can socialize with others and TownePost.com / MAY 2022 / CENTER GROVE MAGAZINE / 17

“Some people who are working at home have found that having a dog at home can be a bit of a challenge to being productive, so they elect to drop their pet here so they can work while their dog plays all day long,” Weadick says. “It’s a win-win.” At Dogtopia of Greenwood, dogs enjoy an open-play environment in a room that best suits them based on their size, temperament and play style. In addition, all dogs are fully vaccinated and have passed an evaluation indicating their readiness to participate in an open play. Each member of the staff goes through more than 40 hours of training, during which they learn how to read a dog’s body language to determine if a canine is feeling anxious or stressed, or if another dog is about to

He notes that they not only train, but also regularly retrain to practice engagement and enrichment activities as well as redirection and early intervention to avoid potential conflict.”

Skilled trade careers offer steady work because people will always need plumbing, heating and cooling in their homes and offices. In addition, many people love to work with their hands. The team at Peterman Brothers recognizes this, and in October of 2020 they began Top Tech Academy, their own internal trade school that offers both HVAC and plumbing courses. Offered twice per year in the spring and fall, Top Tech is a five-month accelerated program where students undergo a mix of classroom learning, hands-on training and field

experience. Matt Harakal, owner of 21 NORTH Eatery + Cellar, has thoroughly enjoyed his work at the restaurant and is looking forward to the future. “I am the second owner of 21 NORTH,” Harakal says. “I was hired on as executive chef in 2017 and purchased the business in 2019. We’ve expanded over the years from 45 seats to 120 seats.” Harakal is also adding some new and exciting amenities to the establishment. “We are building a brand-new, custom kitchen with a private chef ’s table,” he says. “It’s awesome.” The eatery is housed in an old, charming

structure in downtown Martinsville. “I do not know the exact dates of the building, but it is before 1910,” Harakal says. Plenty of compliments are paid to the interior of the rustic-modern eatery.

Harakal praises his excellent staff and many of the Indiana breweries that make the outstanding beers served there. “We have some great local breweries like Cedar Creek, Switchyard and Black Dog,” he says. “They are producing incredible beers.” Harakal also acknowledges his loyal regulars as the key to his success and growing business. “They are the best,” he says. “We know what they like, and what food and drinks they love.” During lunch hours customers can enjoy the Traditional Cuban Sandwich, made with Kentucky ham, pulled pork, mustard, Swiss cheese and Cubano bread, along with fries, or the Beer Battered Fish & Chips, among many other options.

This spring, through a grant from the Indiana Department of Health and funds raised by the current class of Leadership Johnson County, the organization will be able to provide forensic medical exams. Presently, if the victim is a child, only Riley Hospital for Children in Indianapolis or a location in Bloomington can provide these exams. Children are required to abstain from eating, drinking or using the bathroom prior to the procedure, and often have had to endure a two- to four-hour waiting time before being seen. “I’m a nurse practitioner by trade and I came from Eskenazi Health,” Lee says. “I founded ASSIST because I continued to see victims take a back seat for many reasons. Things get missed, there is disbelief from other family members, or victims question if the abuse or incident was in their own head. As a forensic nurse, I testified as an eyewitness to injuries seen. Sometimes the victim and I would end up in the elevator with, or be parked two cars over from, the perpetrator who just got a light sentence. It is a hit to someone’s self-esteem when they have exhausted the health-care and court system.”

“Help comes out of the woodwork if someone is hit by a bus,” Lee continues. “Everyone sees it and everyone calls for help. It’s public knowledge and there is nothing to be ashamed about. Here, if someone is the victim of physical violence or sexual abuse, there is nothing outwardly to see. No one asks how the healing is going. The goal of ASSIST is to provide a seamless, one-stop place for services to help victims heal.” Services provided include individual counseling and support groups. Every victim is unique with differing needs, values and goals, so each treatment plan is tailored individually with input from the patient. Support groups are available even for those who are still suffering from an incident in the past, as evidenced by reoccurring nightmares or exhaustion. Other facets of ASSIST are victim advocacy

“It hasn’t always been an easy road,” Lee says. “Many people think that because we are a nonprofit, we get all the funds we need from grants, but grants get cut every year. Their purpose is to get an organization up and started, but our need is ongoing. COVID put us in crisis. It allowed kids to be in the homes of perpetrators. There was no outlet for help. Victims couldn’t leave or have anyone to confide in such as a school counselor or best friend. Violence is a health-care issue. It is a constant crisis that just doesn’t come and go. It is all the time.”

Enter My Baby Detailing. In March the new premium automotive detailing shop opened in Greenwood. Owner Dave Barnett owns nearby Christian Brothers Automotive. He opened My Baby Detailing to complement his auto repair business. “Greenwood is a real car town and there are a lot of automotive enthusiasts,” he says. “In this town, every Saturday night everybody gathers downtown at The Suds. Next door at Christian Brothers we get a lot of old, classic, cool cars. We noticed there are many people who are really about keeping their vehicles in top condition. When the property right next door to our shop became available, I thought it would be the perfect place and time to open a detailing shop.” Barnett is a car guy himself, so he knows
