NEW SUN KING FISHERS TAP ROOM & BREWERY CELEBRATES GRAND OPENING AT FISHERS DISTRICT

he Yard at Fishers District is quickly becoming a Fishers staple as more restaurants, bakeries, shops and other businesses continue to open at the popular venue. The buzz surrounding the Fishers District only grew when Sun King opened its brand new Tap Room & Brewery on Feb. 1.

The two-story, 13,000-square-foot tap room is one of the largest facilities at the Fishers District. The entire facility is family-friendly, save the bar areas on the first and second floors.

The new location replaces the former 96th Street Sun King Tap Room in Fishers, and it is a spot that drew interest very early on with Sun King higher-ups.

“In 2015, when we made our first foray into Fishers, our original plans were to build out a spot and increase our production,” says Clay Robinson, Sun King Co-Founder & CEO. “There were some state laws and other things that caused issues. So, we pivoted and opened the 96th street small-batch brewery and had been there for the last five years. We always knew we wanted to do something more. Fishers has developed so much over these last five years.

“When The Yard at Fishers District was announced, we reached out to Thompson Thrift, having had a previous relationship with them, and decided to jump in. It’s great to be here. Fishers District has done a great job of curating the types of businesses that are here. There is a nice balance of food, wellness and shopping. That made it an attractive location for us.”

Those who have been to Sun King Spirits in Carmel will see a similar concept at the new Fishers location. Probably the most unique aspect of the new location is the partnership with the Fishers Test Kitchen. The test kitchen, located inside Sun King Fishers in its own section of the brewery, houses three accelerator chefs who will be the exclusive food provider for Sun King.

can then go back to their table anywhere in the tap room and enjoy a Sun King beverage while waiting on their food buzzer to go off letting them know their order is ready.

The Fishers Test Kitchen chefs will rotate out every 18 to 20 months with new chefs and new menus. The first round of chefs includes Chef Carlos Salazar with Lil Dumplings, brothers Jung Gyu Kim, “Chef John,” and Jung Min Kim, “Chef Kim,” with Korave Korean BBQ, and Chefs Adam and Alicia Sweet with Natural State Provisions. “This is a really great concept,” Robinson says. “When the idea came up, we were very excited. The hope is that the test kitchen brings new restaurants into existence, and that idea fits really well with our core values and concepts at Sun King, being entrepreneurial-minded. It will give these chefs an opportunity to break out into the food industry. The nice thing about the test kitchen is that it is kind of its own space and even has its own entrance. There is a nice variety of menu options, and all of the food tastes fantastic.”

The new Sun King Fishers Tap Room and Brewery seats around 300 guests, with more than 200 of that being family-friendly seating. The second level of the brewery includes a 3,000-square-foot rooftop patio with garage doors that will open up when the warmer weather rolls in.

Additional seating will be added later to the main floor outside patio area as well as a beer garden for guests to enjoy.

Much like Sun King Spirits in Carmel, the new Fishers location will also be serving its popular seasonal and specialty beers along with the new cocktails and spirits first introduced at the Carmel location.

“We will have the full selection of Sun King spirits that come out of our Carmel distillery,” Robinson says. “You will see our signature and seasonal cocktails, including our Pachangarita slushy made with Sun King agave spirit and our Pachanga Mexican Lager.”

The new facility will provide plenty of opportunities for future events as well.

“We try to make our space bright, open and a comfortable environment for people to come into,” Robinson says. “The second floor with its indoor, outdoor capability gives it a cool feel. When that second floor isn’t being used for special events, we will have cornhole, Giant Jenga, Connect Four, a foosball table and more. It is a fun area to kick back and enjoy yourself. The outside patio on the first floor, once that is furnished and warm, will have a traditional beer garden there. All of that leads out to the courtyard where we envision small-scale weekend events that have a festival-type feeling to them.
