Seland also has a new weight-loss program that combines red light therapy with healthy eating that does wonders.

Because of the northern location of Norway, the atmosphere acts like a prism, separating the longer frequency red light that we see during the Midnight Sun. “The bright red color of the sunrises and sunsets are the same frequency of light that is now being used for healing therapies called Red Light Therapy,” he says.

How often patients receive these treatments is dependent on their needs. Some come in once a week while others may require a pit stop three times a week.

Now he’s bringing his beloved country to his patients in a healing capacity by introducing a Prism Light Pod — the only one in the state. The unique red light therapy Prism Light Pod sits inside of a “Hytte” (Norwegian for “cabin”) to help patients feel as though they’ve been transported to Norway.

Portofino offers a guided culinary experience, sending guests on a tour of Europe one bite at a time. Owner and Chef Dan Stackpoole saw the opportunity to give residents an experience they were lacking in the local community. “There are no true, formal, fine-dining experiences with multiple courses in the area,” Stackpoole says. The menu consists of five courses with several options to choose from within each course. “We start with antipasti, which means before the meal,” Stackpoole says. “In the United States we’d call that an appetizer. From there we have insalate, which are fresh seasonal salads and sometimes a soup. Then you have the primi, which is your pasta or starch. We follow that with secondi, which is your protein course. The last course is dolci, meaning dessert.” Stackpoole wants guests to understand the pasta course isn’t the entree.

You are going to get to know us.” The restaurant has no phone, no official bartender and no hostess, and will not offer carry-out. “I love to go out to eat, and if you’ve ever eaten in a true Italian restaurant, you know you’re not going to get a huge portion of pasta during the primi course,” Stackpoole says. “That’s a very Americanized version of pasta.” Portofino does not take walk-in guests, and reservations must be made in advance. This allows Stackpoole to give the utmost attention to each table. “We will never seat all the tables, and that’s by design,” Stackpoole says. “We want our guests to sit down and enjoy the experience. We will only have a few tables sat at the same time. It’s about quality, not quantity. We do that so we can focus on the attention to detail, food service and presentation.”

“I didn’t want our guests to hear a phone ringing in the background and a hostess taking carry-out orders,” Stackpoole says. “I want our guests to immerse themselves in the experience.” Stackpoole calls the restaurant his fun cooking, and takes pride in sourcing quality ingredients even if they cost more and are harder to find. “The food itself is really quite simple,” Stackpoole says. “It’s not so much about the technique but rather the quality of ingredients used. When guests arrive for their reservation, they are offered a cocktail or glass of wine from a list procured by Stackpoole. Then they’re guided through the menu by Stackpoole and his partner Summer Hellis. The pair are the only ones working in the restaurant during dinner service. “I do have an assistant, but it’s pretty much just Summer and I,” Stackpoole says. “We both talk to tables together. some of our ingredients. There are no shortcuts.” Even the olive oil has to meet Stackpoole’s exacting standards. “For example, the olive oil I purchase for the restaurant is cryovaced,” he says. “No air touches it so that it doesn’t oxidize, so it’s very floral and perfume-y. The smell is absolutely amazing. Most people never get to experience that smell. When you open olive oil, you have about three to four days before it loses 50% of its flavor.” Antipasti offerings include smoked salmon rosette, steamed mussels and taglieri (the Italian version of a charcuterie board). The primi menu includes risotto frutti di mare (steamed mussels with seafood), quattro formaggio (four cheeses) and ragu blanco.


The secondi portion of the menu includes dishes some guests may have never tried in the past, such as wild boar cacciatore, roasted rack of lamb and osso bucco. “These are items I love to cook, and I consider my best dishes,” Stackpoole says. “I’m heavily influenced by French and Italian cooking. These dishes all contain those influences.” Guests can expect to be at the restaurant for a few hours for dinner. “This isn’t a rushed experience,” Stackpoole says. “It’s a well-flowing process, but it does take a little longer than going out to your average restaurant.” Portofino is located on Fall Creek Road in an unassuming retail space. Guests’ eyes are treated to a small preview of ingredients in a glass deli case in the front of the restaurant. “When you walk through the lobby, you’ll

see the glass case where I display some of our ingredients,” Stackpoole says. “The quality of ingredients is so important to me. I want guests to see what we’re using. This way, they get to be part of the restaurant.” Stackpoole has 25 years of experience in the restaurant industry. Portofino is not his first experience with restaurant ownership.

The Leukemia & Lymphoma Society (LLS) Students of the Year campaign is an annual, seven-week fundraising competition that requires participants to develop their leadership and organizational skills. Individuals must be nominated and selected to compete with each other while heading up a series of activities that raise money to benefit the LLS. Many have firsthand experience of how these illnesses can impact a family and turn normal lives upside down. This is the case for Hamilton Southeastern High School senior Luke Andritsch, who was diagnosed with acute lymphoblastic leukemia, a type of blood cancer, when he was 3 years old. “Immediately after, LLS stepped into my family’s life providing resources about what the next couple of years were going to look like for us,” Andritsch says. “LLS’s mission has always been to cure blood cancer but

they also work to improve the welfare of kids who are going through it. That is why I chose to sign up for LLS Students of the Year campaign, because they make such an impact on a child’s and family’s life from all different aspects. They had that effect on me and I hope my efforts help another family have the same effect.” Being chosen to be a competitor in Students of the Year campaign has been on the radar for Andritsch ever since he was a freshman in high school. His family has been involved with LLS efforts to raise money for research. Besides participating in half-marathon and triathlon fundraisers, Andritsch’s mother, Vicky Andritsch, won 2017 Woman of the Year, which is a similar LLS campaign for adults.

vie to see who can raise the most money during the campaign, which runs from January 20 to March 11. The competition closes during an event attended by the students’ teams and supporters. The winner is announced, but all celebrate that the funds raised will go towards finding a cure. “I wanted to wait to be in the program because I knew as I matured, I would be able to do this to the best of my ability and have more connections to go full-in and raise as much money as possible,” Andritsch says. “Of course, this is a competition but the other candidates and I have the same goal of ending this horrible disease. Every three minutes someone is diagnosed with a blood cancer, so we are all motivated that no individual must hear this horrible news.”

waking up at 4 a.m., running four miles, and then repeating the run every four hours for 48 hours. His team of multigenerational members has planned other novel ideas to generate donations. Andritsch, who has been growing his hair out for two years in anticipation of a fundraising event, plans to cut it all off when a monetary goal has been met. In addition, the team members are doing a competition of their own by

splitting into groups to see who can get a donation from each of the 50 states. “We have a lot more planned like dine-todonates, fun runs, music concerts, letter and email campaigns, and everything in between,” Andritsch says. “The best way to learn about upcoming events is to go to my Instagram or Facebook. I have a fundraising page where people can donate and get updates on how the campaign is going.”

Andritsch and his team have set a fundraising goal of $175,000. If met, it will set the record for the most money raised by a student in Indiana. All the money raised goes straight to the LLS and the research they are conducting. “LLS invests so much in research because currently the cancer treatments that kids must take are intended for adults,” Andritsch says. “At least 80% of childhood blood cancer survivors develop a chronic health condition from the toxic treatments, which is why LLS and I are so determined to raise money so kids who have to fight this horrible disease don’t have to deal with conditions for the rest of their life. Someday the treatment that I went through will be considered barbaric.” “It is my number-one goal to help fund the research LLS is doing,” he continues. “Please consider donating. We aren’t going to wake up one day with cancer cured. It is going to take the hard work of everyone, not just doctors, scientists or me. It takes every single person to bring an end to this horrible disease. By donating you can become a part of the generation that will bring an end to cancer.”

If there’s a furry animal somewhere nearby, you can almost guarantee that Samantha McAfee will find it and either try to feed it or give it some love. There’s a reason why she grew up with the name Snow White, and it’s because of her deeply ingrained love for all animals - wild and domesticated. It’s because of that love that she started her foundation to help dog owners battle canine cancer just over a year ago.

Fur The Brand is a nonprofit foundation run by McAfee and her two best friends, Noelle Norwood and Mystica O’Connor, out of Hamilton County. The national foundation is dedicated to assisting with treatments related to canine cancer. It all started because of McAfee’s beloved pup Valerie, and her battle with cancer. “Her first round of surgeries, I was a mess,” McAfee says. “I was emotionally drained. I just kept thinking about growing up, knowing my parents wouldn’t be able to TownePost.com / FEBRUARY 2022 / GEIST MAGAZINE / 21

pay the extra bills, there would be no way I could afford to pay for any of the treatments she needed.” To McAfee and her husband, former Indianapolis Colts punter and multimedia mogul Pat McAfee, their seven animals are their children, and Valerie is a lot like her firstborn. The couple spent their honeymoon trying to think of what they could do to help other dogs battling cancer like Valerie. “Being an animal lover, I was first thinking


of how I could help the animals, but then I got to thinking - why can’t I help the person too?” McAfee says. “I needed to be able to do both.” That’s how Fur The Brand was born. The company name is inspired by For The Brand, a slogan Pat incorporates into his marketing and products. Fur The Brand helps to pay for cancer treatments. “This helps the dog fight the cancer while relieving the financial burden on the owners, so they can just be there for the dog,” McAfee says. At the height of the COVID pandemic in 2020, McAfee went to work learning all about running a foundation and how to start fundraising. While the National Canine Cancer Foundation exists for research and medication development, McAfee has not been able to find another foundation like her own. In just over a year, Fur The Brand has helped 14 dogs from Indiana, Illinois, Iowa, Pennsylvania and Texas. Each cancer treatment might cost an owner $5,000 to 10,000.

“We hit the ground running last year, and it’s just been really cool to be able to help dogs and their owners,” McAfee says. “There are hard days. There are multiple times that we’ll get stories and we just sob. At first I wanted to spend all of our money helping everybody I could, but my friends have been able to wrangle me in and help me work on a budget. I still have some learning to do, but this has been very fulfilling.”

Krista and Zack Schuyler love being smallbusiness owners in a small town. The couple opened Fortville Music Garage in November of 2020. During that time they immersed themselves in the community. In July Krista saw a Facebook post asking what Fortville was missing. One prevalent answer was a coffee shop. “I think there were over 800 comments on the post, and a large percentage of those were about a coffee shop,” Krista Schuyler says. “I’ve always wanted to own a coffee shop. We thought about it for a while and decided to move forward, opening our coffee shop, Beeline Beverage & Snack.”

Beeline is housed below Fortville Music Garage on Main Street. The cafe has a small stage for entertainment, offering the students upstairs another creative outlet. The idea was more than just a coffee shop and a place for the community to gather. “We noticed during the day there aren’t many places to go where you can work from your laptop or meet a friend,” Schuyler says. “We wanted to offer a space for that, and also a kid-friendly space for moms.” In the evenings Beeline offers themed nights like trivia and bingo. Beginning in January, every Thursday will be designated as Sponsor Thursday. The Beeline owners will


pick an organization, and 10% of sales from 3 p.m. to 7 p.m. will go to that organization. Fridays will include live entertainment. The menu includes P1 Coffee, a product from a Fortville-based coffee roaster. P1 started as an e-commerce coffee company, brewing small-batch coffee. The owners approached the Schuylers when they heard they were opening a local coffee shop. Keeping the coffee local was essential to the Schuylers. Guests who don’t enjoy coffee can choose from a variety of gourmet sodas from Boylan Bottling Company. Boylan soda has been brewed in the U.S. since 1891. Beeline also offers bakery snacks such as muffins, protein bars, animal crackers, chips and candy. Even though the doors officially opened on December 4, word spread quickly in anticipation of the new venture. “We had about 1,200 followers on our Facebook page before we even opened,” Schuyler says. “The community embraced us in such a positive way with the Fortville Music Garage, and they’ve done the same with Beeline Beverage & Snack. We already have repeat customers, which is so nice. The Fortville community keeps embracing us and loving on us. We love being part of this community.”

The owners didn’t grow up in the Fortville area, but love the small-town feel. Schuyler recently hosted the coffee shop’s first bingo night and said it’s the most fun she’s had in a long time. TownePost.com / FEBRUARY 2022 / GEIST MAGAZINE / 25

For Cassie and Jeff Leifel, owners of Clean Eatz, the tag lines displayed in the bright orange and green interior of their establishment are not just pat phrases. Those phrases, including “We Change Livez” and “It’s A Lifestyle,” certainly hold true for the couple who not only recently got married, but also introduced the franchise to Fishers a few weeks later. Specializing in healthy food options, the chain offers fresh meal-plan ordering, an eat-in café and a frozen grab-n-go market.

Paul Shoopman, a luxury home builder in Carmel, Indiana, knows how much folks love to live on the water. However, new waterfront options in the Carmel area are rare these days. Fortunately, the Waterfront of West Clay community, located on the north side of 116th Street just east of Michigan Road and five minutes east of Downtown Zionsville, offers stunning lakeside lots nestled among trees and green spaces. “If you want to live in Carmel or be in the Carmel-Clay School District and be located on the water, this is a great option,” says Shoopman, president and founder of Shoopman Homes.
