Whether it’s a signature taco or one of their fresh margaritas, Torchy’s Tacos is ready to bring an exceptional dining experience to customers in Hamilton County. “We want to be known as the best damn taco place out there,” says Torchy’s Tacos Market Partner Joe Kopke. “Everywhere we go, that’s our mission, while providing jobs and a great work culture.” Torchy’s Tacos in Fishers marks the chain’s first location in central Indiana. Since the restaurant’s grand opening on March 14, hungry Hamilton County patrons have flocked to the beloved taco shop, getting a true taste of the Torchy’s Tacos hype for
themselves.

The origin of Torchy’s Tacos dates back to 2006, when Founder Mike Rypka first started selling freshly made tacos out of a food trailer he hooked up to his red Vespa.
“Everything is made from scratch,” he says. “I think a lot of brands say that, but our food really is made from scratch. People can’t receive their food in just two minutes because we do make everything from scratch. It makes the fast-casual, or what we call ‘craft casual,’ an elevated experience where you might have to wait a little bit longer, which is why we have bars with scratch-made cocktails and margaritas.”
“Mike just really wanted to get tacos in people’s hands,” Kopke says. “He got on his Vespa, would hand out free chips, salsa and queso, and the lines started to form in 2006. People used to say that the tacos were damn good, and that became our mission statement as we are today.” Now with more than 100 locations across several states, the Torchy’s Tacos brand has become a favorite to many across America. According to Kopke, one thing that sets Torchy’s apart from other taco spots is the 6 / GEIST MAGAZINE / MAY 2022 / TownePost.com
“We are working our tails off in the back to make everything recipe-right and to perfection,” Kopke continues. “That way, when you do get your food, you do say, ‘Man, that’s damn good.’ It’s a different experience from the typical fast-casual, where everything’s in front of you and
already made. They say fresh, but how fresh is that?”

When it comes to customer favorites, Kopke says you can’t go wrong with the Trailer Park taco, which features fried chicken, green chiles, lettuce, pico de gallo and cheddar jack cheese with poblano sauce on a flour tortilla. “You can get that trashy, which is with our award-winning queso layered over the top,” he says. “It’s named after Mike starting the business out in a trailer park. I think that’s one of the very best and most unique tacos that we offer.”
“Any time we look at location, we look for demand and people who want to see Torchy’s brought to their community,” Kopke says. “I think we had a lot of good feedback from people who lived in that area. Now that we’ve been open, a lot of people have said, ‘We’ve been to Texas and we experienced Torchy’s. We’re so glad you’re here.’ We felt it was a good place to plant our roots in the Indianapolis market as we try to grow that market out.”

While munching on a taco or two, be sure to explore the Torchy’s drink menu as well. “The margarita is a staple, whether it’s frozen or on the rocks,” Kopke says. “Then you’ve got the Torchy’s Tini, which is a classic martini with a twist. We have our Sangria, which is made from scratch. area for a short time thus far, Kopke says he couldn’t be happier with how things have gone. “We’ve had great feedback from our guests,” he says. “We’ve hired a great team and the management team there is outstanding. In the early stages, it’s everything we thought it would be. Skilled trade careers offer steady work because people will always need plumbing, heating and cooling in their homes and offices. In addition, many people love to work with their hands. The team at Peterman Brothers recognizes this, and in October of 2020 they began Top Tech Academy, their own internal trade school that offers both HVAC and plumbing courses. Offered twice per year in the spring and fall, Top Tech is a five-month accelerated program where students undergo a mix of classroom learning, hands-on training and field
experience. D
uring the years she served as McCordsville’s town manager, Tonya Galbraith oversaw a remarkable amount of growth and change. After holding the position since January of 2005, she retired in April. Several initiatives she helped put into place are still evolving, and she looks forward to seeing their end result as she continues to be actively involved with the town in other ways. Local government has been a passion for Galbraith throughout her entire career. Prior to becoming McCordsville’s town manager, she worked as a lobbyist for more than 17 years. She supported both the legislative needs of cities and towns as well as environmental management.

Besides being responsible for managing the day-to-day running of the town, Galbraith’s duties also included implementing any decisions made by the council as well as serving as the liaison between developers of residential, commercial or industrial projects. One ongoing project during Galbraith’s tenure was tackling how to handle and accommodate the increase in traffic and growth of businesses along Mt. Comfort Road. “When I first came to the position there

was a population of 1,300 people, and now it is close to 10,000,” she says. “We were part of the Hancock County Area Plan Commission. The county had the end vote in whatever we did. During the recession in 2008 when everything slowed down, we formed a steering committee to map out how we could break away from the county and form a planning commission. By 2010 and 2011 we had our own comprehensive plan and zoning ordinance. We wanted to be in charge of our own destiny since the area was screaming that it was going to grow.”
Galbraith says she is most proud of how the community has grown in a smart way. When she first began, McCordsville had only a small public works and a utilities department. Currently the town has planning, building, municipal and environmental departments, plus a fulltime town engineer and an assistant town manager. One project Galbraith felt strongly about was the need for a town center to
serve as an anchor and give residents a strong sense of community. “In 2007, with the help of a group of students from Ball State, we started planning for a town center that would look much like what Fishers has today,” she says. “Then the recession hit and the project was put on hold. It really started to move forward in 2018 when another steering committee was
formed for planning stage one and choosing a developer. It takes that long for a project like it to be implemented.” The result will be a multi-use area with retail space, apartments and green space, and is a multimillion-dollar partnership between the town of McCordsville, Rebar Development, and Pride Investment Partners. Future stages are planned to include a town hall and an outdoor amphitheater. The goal of the town center is to further define McCordsville’s unique identity and attract people and new businesses to the area.

While Galbraith is ready to step away from being town manager, she will stay involved by serving local organizations. Recently appointed to the Fortville-Vernon Township Public Library board, she is also vice president of the Hancock Health Foundation board and a member of the Hancock County Community Foundation.

“A referendum to become a city has not been a push here,” Galbraith says when asked if McCordsville will ever become a city with a mayor, instead of a town. “There are actually many more towns in the state of Indiana than cities. I did do many duties a mayor would have done but my job as town manager was to put into place what the town council approved.”

I feel like I was useful to get the town to this point, and the transition to Tim Gropp as the new town manager will be perfect. He brings a new set of skills to the position that are different than mine. I couldn’t be happier for him to take over where I left off. I’m excited to continue to contribute to my hometown in different ways.”

Watching television cooking shows tend to give the everyday American inspiration, whether it’s inspiration to travel, cook or eat whatever food they’re seeing. But very rarely does having Food Network perpetually on television during your college years push
one to change career paths. For Kelsey Murphy, it did all that and more. Originally from Chicago, Murphy met her husband, Brandon, while attending Indiana University (and binging Food Network). The two both graduated with degrees in physical therapy, and Murphy would come
home from work every day and cook to unwind. “I became a food television junkie and just absorbed everything I could from watching Food Network,” she says. “When I’d come home from work, all I wanted to do was be in the kitchen. That was my way of relaxing.” Murphy and her family became devoted fans of Fox’s MasterChef reality competition show where amateur chefs compete in a series of cooking challenges, surviving eliminations and learning under a panel of esteemed chefs. After the tenth season completed, Murphy saw a call-out for the show and she was encouraged by her family to apply. What was initially thought as silly turned into a long, intense process that included numerous interviews, questionnaires and background checks. Murphy headed west to start taping the show in February 2020, where the cast cooked and competed until March 17, when taping (and the entire world) shut down for the global pandemic. Murphy and the others were sent home with instructions

to keep quiet about the show and follow along with the show’s culinary team as they worked to continue fine-tuning their skills in their home kitchens. Seven months later, the cast and Murphy returned to finish taping. “By the time we went back to taping, I was 25 weeks pregnant, and it was by far my hardest pregnancy,” says Murphy. She competed with her own sous chef along for the ride. When the finale was being taped, Murphy had to serve a four-course dinner. By the final course, she knew that if she could just plate the dessert, she would have the win in the bag. “That dish was something that I had worked very hard on, and it was very touch-n-go if I was even going to be able to accomplish it,” she says. “When they announced I was the winner, it was more of a sense of relief because of the amount of stress I had put
on myself, as well as my family to be able to go out and do this. It was a relief that I had actually gone out and accomplished something for not only me, but for my family.” Now the mother to three boys (5-year-old Aniston, 3-year-old Maddox and 1-yearold Lucas) is not only a MasterChef, but a restauranteur. Murphy has spent the time since her win to focus on how she wanted to share her love of cooking with the Fishers community. “The win inspired me to really pursue cooking as a career,” she says. “It was an opportunity you can’t pass up — I felt like I could at least just try because I had a wonderful physical therapy career to fall back on, but hopefully not.” Murphy did research as to what direction she wanted to go in for her restaurant, who to work with and what to not do. She knew that since she didn’t have any real “street

cred” in the culinary world, besides as a competition show winner, she needed to do things right. Recently she opened her restaurant, suitably named “Inspo” as part of the Fishers Test Kitchen. “I wanted the restaurant to really represent the things that I love and the things that have inspired me on my journey to where I am now,” she says. “For example, there’s ceviche on the menu, I feel like that was one moment when I was traveling and I had my first taste of that and it was like ‘Wow.’ Just the taste of it was something I could eat all the time. So, I thought if I was going to have my own restaurant why not put in on the menu because it’s something I love and could eat all the time and, two, I think it’s something other people will love and you can’t find it often.” Murphy is grateful for the group at the Fishers Test Kitchen for helping her
learn the ropes to being not only in the restaurant business but working and leading a restaurant. She hopes to use this time at the test kitchen to expand her knowledge and continue to bring her inspiration to the community. “I’m really trying to bring elevated food to Fishers,” Murphy says. “I want to give people more diverse options, more options that are brought from local entrepreneurs. I want to get people into the elevated food scene but while teaching people that food doesn’t have to be weird or stuffy to be elevated. I really want to step people into that genre, and I think there’s such a market here and there are so many transplants from across the country now moving to Fishers, but I think people are very ready and willing to step into that scene. I’m hoping to be the start of that movement, and I hope to put Fishers on the map in terms of the culinary world. hen most people think about the progression of a successful business, they might think about expansion. It’s pretty common for a growing business to desire more space, more employees, more services but for this local business, their perspective of success is more about the quality of what happens within their space over the size of the space itself. Sometimes, less truly is more. Radiate 60 Hair Collective was established in 2016 from the desire to bring a positive change to the beauty industry, not only for clients but also for stylists as well. Owners Krystal Brown and Carly Rush wanted to create an environment that focused more on igniting beauty and life within a person rather than just transforming the outside. “There are enough things in our world that only touch the surface level of our lives,” Brown says. “We knew God was calling us to create a space where we could go to deeper levels of relationship with our guests and where it was part of the culture to build each other up with love and encouragement.”

The safety of students is paramount at Hamilton Southeastern (HSE) Schools. In creating a safe learning environment, HSE school leaders recently appointed Mike Johnson as director of school safety. The school board recently decided to make the position a full-time role.
Johnson spent 29 years with Fishers Police Department in various roles. He spent 21 years working with the D.A.R.E. education program, gaining in-school experience in the process. He was embedded within the school system from the beginning of his law enforcement career.
“Most recently, school safety fell under the director of staff and student services,” Johnson says. “When Ryan Taylor retired, the superintendent and the school board decided to create a full-time safety position. I had recently retired from Fishers Police
“I thoroughly enjoyed my time with the program,” Johnson says. “It was a great opportunity to work with kids of all ages. I also provided some conflict resolution with students and families. I also got to be a mentor for kids. I was fully immersed in the TownePost.com / MAY 2022 / 25
school culture in my life as a police officer.” Johnson was also heavily involved with the Indiana School Resource Officers Association, where he was trained on best practices for school policing across different spectrums. While his current role does not directly involve supervising school resource officers, he works in conjunction with them. “They have their own supervisor with the police department, but they have me as a liaison to anything school-related,” Johnson says. “We talk through a variety of issues as they come up. It might be something as minor as an elementary-aged student needs a positive role model, to something heavier
such as how we can respond to students with suicidal ideations.” Johnson is excited to be able to make the position his own by deciding what he wants to focus on in the upcoming years. “This concept of school safety isn’t new, but having someone dedicated to it full time is,” Johnson says. “There are really great people at HSE Schools, and it’s just a blessing to take this role and make it my own.”
Johnson knows physical safety is important, but wants to focus on emotional safety as well. He also wants to expand upon the Parent Safety Academy to showcase what HSE school leaders do to protect students and staff. He would also like to work on transparency efforts through social media. “I want to look at the things we do well and expand upon those, and look at the areas where we may see some gaps so we can improve on those,” Johnson says. “The
beauty of this now being a full-time position is that I won’t be pulled away due to other responsibilities or duties.” Johnson is also a trainer with the National Association of School Resource Officers, teaching their adolescent mental-health class and school resource officer course. As for Peck and Hanlin, they were high school friends who decided nearly 35 years ago to start a commercial cleaning company — an endeavor that over time morphed into Indiana Restoration & Cleaning Services, a Noblesville fixture for more than 30 years. Peck & Hanlin started Hometown Roofing Team in 2018 in response to their insurance agents — customers needing qualified and honest, ethical inspections of hail-damaged homes when unscrupulous, out-of-town

In February 2022, the four Hometown owners decided to purchase Clevernest, an Andersen window dealer located in Carmel. Becoming a dealer allowed them to offer more options at better prices and provide the consumer with a better customer service experience. The dealership-status enables the team to sell to new construction, product only, offer service to existing

Education requires additional funding, according to Gibbs.
“It taught us again that the relevance of our work means two things,” she says. “We need to continue to fund ongoing programs that provide continuity. We collaborate with the school district to understand those program needs. In the coming year we are already working on ways that will deepen our partnership with the district in their existing STEM education programs. The other way we remain relevant is by continuing to be responsive to student needs as they arise.
“Previous and current staff and board members have built an amazing foundation that can be counted upon to support the work of the school district so that students have access to programs critical to their success,” she says. “The generosity of generations of donators have impacted through ongoing programs and responsive initiatives.”

There is no doubt that playing a musical instrument can be beneficial to young children. It can help children with motor skills, coordination, and emotional and behavioral development.
FMG doesn’t hire outside instructors but instead promotes students from within the organization through the student-teaching program. The year-long program requires one hour per week of dedication from the student. They are required to be multiinstrumentalists.
Krista and Zack Schuyler recognized the benefits music offered to their own children and wanted to share that with the community of Fortville. The couple opened Fortville Music Garage (FMG) in November of 2020. “We came to Fortville and fell in love with the community,” Krista Schuyler says. “We knew we wanted to do something in this community to make a difference. We took Zack’s passion for teaching and decided to open Fortville Music Garage.” She says the space fell into their lap, and the rest was destiny. Zack serves as lead instructor and teaches lessons in drums, guitar, ukulele, piano, bass, voice, orchestra instruments, video editing, music
“A lot of our students are multiinstrumentalists,” Schuyler says. “The music doesn’t change from instrument to instrument - just the mechanics behind playing it. Every three months, the student receives an evaluation and tuition reimbursement. At the end of the program they can stay on as a full-time instructor. The idea is to transfer our ideas and beliefs to the future generation.” Krista and Zack’s main priority is the students. They believe developing relationships with their students is just as important as teaching. They see FMG as a mentorship program as well. Schuyler says the studio has students ranging in age from 2 to 70. 36 / GEIST MAGAZINE / MAY 2022 / TownePost.com
“A large portion of our students are in the 8to 16-year-old age bracket,” she says. “Some of those students need a place to feel safe or to feel like themselves. Our goal is to give them a safe space to be creative.” Fortville Music Garage caters to all musical levels. Schuyler says they have students who have never picked up an instrument before coming to them, and students who have played for many years looking for advancement. In addition, students can participate in a student band called Overdrive. The band meets once per week for 45 minutes, and currently consists of 12 to 13 students of varying musical abilities. The couple also owns Beeline Beverage & Snack in Fortville. The coffee shop operates underneath FMG. It provides students with another area to showcase their musical talent. “Every Friday night we have an open-mic night,” Schuyler says. “It’s never forced on them, but it does allow them to get their

“I can tell you I’ve made some friends I will have the rest of my life through these two businesses,” Schuyler says. “It’s so cool to see. Zack is so creative and I’m so proud of what he’s done with Fortville Music Garage.”
