For Jerry Paul, it’s all about what you leave behind. As a veteran who was drafted into the U.S. Army in 1968 and subsequently spent two years in Vietnam (1970-1971), Paul has spent countless hours as president of the Howard County Veterans Memorial Corporation (HCVMC) raising awareness on veteran’s issues, as well as funds for several important military monuments in Kokomo.

Local Favorite Gives Back to Kokomo Veterans

Kokomo residents are likely familiar with the delicious pulled pork, baked beans and coleslaw of Hawg Heaven. But according to owner Carol Wills, the restaurant has now served hungry customers from coast to coast. “We just did a wedding in Myrtle Beach (in September),” Wills says. “I’ve taken ribs to San Diego. So I say they’ve had Hawg Heaven food from the Atlantic Ocean to the Pacific Ocean.” Founded in March 2012, Hawg Heaven specializes in pulled pork, while also offering up other delicious options like a Cuban sandwich, slow-smoked baby back ribs and more. In addition to feeding satisfied customers, Hawg Heaven also prides itself in giving back to the Kokomo community, regularly donating funds to local organizations that focus on kids and veterans. For the Wills family, running a restaurant is nothing new. “We bought the restaurant in Burlington, The Dinner Bell, in 2006,” Wills says. “We still own that property, and we smoke all of our meat out there. But you can’t eat in there.” From the beginning, Hawg Heaven has found success with a simple, nononsense food menu. “We have pretty much been consistent at selling the same thing,” Wills says. “We have a very small menu. We don’t do tacos. We don’t do gyros. We don’t do pizza.” According to Wills, the quintessential meal at Hawg Heaven consists of a pulled pork sandwich served with baked beans and coleslaw. “It’s my mom’s recipe of coleslaw, which is a creamy coleslaw with no vinegar,”

Wills says. “We sell a ton of that. We put pork in our baked beans, and we sell a ton of baked beans.”

When catering events, this heavenly trio of items is usually what customers ask for. “We do weddings on the weekends for people,” Wills says. “And basically, the three things that most weddings want are pulled pork, baked beans and coleslaw. Because if you’ve got a plate with just those three things, you don’t even want wedding cake.”

In addition to weddings, Hawg Heaven uses a 28-foot concession trailer to serve hungry customers at the Kokomo Event Center. Wills’ husband Mike has also been known to do a fish fry or two in support of a local cause. “Normally, it has something to do with a school or a church,” Wills says of the fish fries. “And Mike, he pretty much takes care of all that.”

In recent years, Hawg Heaven has also donated funds to several veteran organizations in Kokomo. Every Friday, in fact, the restaurant sells a baked potato, with proceeds benefiting the Howard County Veterans Memorial Corporation. “We do a baked potato on Fridays, and it’s called the Jerry Paul potato,” Wills says. “We just write a check to the Howard County Veterans Memorial. Jerry is the president of that. Sometimes he gives money to The Gilead House. I don’t care what he does with the money because I trust that he’s doing something good with it.” Last year, Hawg Heaven also donated a total of $45,000 to three different


Kokomo-based organizations serving veterans. “We gave back $15,000 to the DAV [Disabled American Veterans] in Kokomo because they needed to buy a van [for transporting veterans],” Wills says. “We gave the Military Foundation $15,000. The Military Foundation helps any veteran around Kokomo if they can’t pay their mortgage or if their water is getting ready

to get shut off. And then, we gave $15,000 to the Howard County Veterans Memorial Corporation for the women’s statue that we’re getting ready to do. “I told them I was going to give them a percentage, and I think they thought I was going to give them $5,000 each or something,” Wills adds. “But I was able to give them $15,000 each, so they were all happy with that.”

All in all, she and her husband just like being able to give back to their Kokomo community. “It’s just really about being able to help out,” Wills says. Walmsley says it’s mostly local businesses looking to give back to their community. “The more donations we get, the happier the kids will be,” Walmsley says. Toys for Tots serves children ages 0-17, or really any child that lives with the parents. Walmsley says many donate toys in the “fun age” of 4-10, but the needs extend beyond elementary-age children.

Luckily, businesses like Five Below donate. With a bit of creativity, it allows plenty of options for the older kids. Last year, Walmsley helped put together “man in a bag” and “woman in a bag” kits. Just because they can’t afford the toys doesn’t mean they should be left out. “The parents are tremendous. They break out in tears and thank us,” Walmsley says. “It’s awesome leading these people around to pick out the toys.” He says he cherishes his experience last year in Grant County. The parents encouraged him, and he’s excited to run this year’s campaign. Many companies help make the process smooth. Integrated Services, Inc. provides trucks for the transportation of toys. It takes two long days to collect all the bins and get the toys to the distribution center. Individuals can help beyond providing a donation. Walmsley encourages motivated individuals to go to the website to apply

to volunteer. They can also schedule events with Toys for Tots to add charity to an occasion. Walmsley says to contact him with any ideas. If there aren’t enough toys donated, local foundations, as well as the Marine Corp Foundation, can fill the gaps. But Walmsley feels confident in the community to give back. “Kokomo is a great community. They’re tremendous supporters and want to help out the less fortunate in their community,” Walmsley says. “There’s lots of big hearts in Kokomo.” Luckily for Walmsley, his job doesn’t entail sliding down a chimney or relying on reindeer for transportation. But it doesn’t mean he has an easy gig either. As the leader of this year’s Toys for Tots campaign, he juggles lots of responsibilities to get toys to local children, just like Santa. For Jerry Paul, it’s all about what you leave behind. As a veteran who was drafted into the U.S. Army in 1968 and subsequently spent two years in Vietnam (1970-1971), Paul has spent countless hours as president of the Howard County Veterans Memorial Corporation (HCVMC) raising awareness on veteran’s issues, as well as funds for several important military monuments in Kokomo. His latest endeavor as the HCVMC’s leader is spearheading a $350,000 fundraising campaign to construct a Women’s Legacy Memorial, honoring women throughout the history of the United States military. So far the organization has raised about $143,000 for the project, and the Howard County Board of Commissioners approved installation of the monument on the northeast corner of the County Courthouse in 2017.

Previous HCVMC fundraising efforts resulted in the Blue/Gold Star Family Memorial, located at Darrough Chapel Park. Paul designed the memorial in 2009, which honors military family members and which was completed in 2015. Much of Paul’s inspiration for the Women’s Legacy Memorial comes from his mother, Barbara Jean Wagner, who grew up through the Great Depression. Wagner dropped out of high school to work as a waitress to help support her parents and siblings and went on to raise Paul and his two brothers as a single mother. While the HCVMC is still nearly $200,000 away from hitting its fundraising goal for the monument, Paul is determined to see the project through. “What helped us on the family monument project was some of the builders who worked on it, like the company out of Indianapolis who put on the limestone caps, gave us discounts once they learned about what the sculpture was, and that’s what we’re trying to do this time for the Women’s Memorial,” he adds. “I’m hoping we can get some help in that way.” The HCVMC was formed in 1999 as a partnership between Vietnam vet Roger Roe, his friends at the UAW Local 292, and several local business leaders, in an effort to establish a memorial to honor Howard County veterans. The memorial was completed in 2000, and since then the HCVMC, with Paul as president and Roe as vice president, has continued to honor those who have served in the U.S. military, locally and nationally, through its community-based projects. Warren grew up in Kokomo, before working in the healthcare industry. After years of employment at hospitals in the Chicago area, however, she “decided it was time for a change,” moving back to Kokomo to be near family following the death of her mother. During one fateful trip out to Colorado, Warren had the realization that maybe it was time to start a clothing boutique. “My grandpa turned 100 out in Grand Junction — I have a lot of family out in Colorado because that’s where my mom was from,” she says. “When we were out there, we were like, ‘Wow. There are so many cool outdoorsy, mom-and-pop retail shops. There’s nothing like that in Indiana.’” This “light bulb moment” is what led to the start of P.F. Hendricks. “I’ve always been into outdoor activities and good quality clothes and apparel,” Warren says. “But you had to travel to Indianapolis and buy things online, and that just wasn’t optimal.” Through P.F. Hendricks, Warren can now offer Kokomo residents with quality outdoor apparel, saving them a drive to Indy or elsewhere. While putting less gas in the tank, Kokomo customers can also go home knowing that many P.F. Hendricks products are environmentally friendly too.

At P.F. Hendricks & Co., Lori Warren carries clothing that she describes as “trail to table.” “You can go on a trail or a bike ride in it, and then go to dinner with grandma and not look like you’re in sweatpants,” she says.

Founded in June 2015, Kokomo’s P.F. Hendricks carries outdoor, travel and athleisure apparel for men and women. From Patagonia to Prana, the small, family-owned boutique prides itself in carrying Americanmade brands that are both environment and employee-friendly. “All of my brands are very environmentally conscious, so there’s a lot of organic cotton, hemp and recycled fabrics,” Warren says. “Everything is also fair trade and bluesigncertified. That means the people that actually make the garments are treated well, and they have halfway decent working conditions.” When it comes to environmentally conscious brands, one clothing line Warren references is Tentree. “They plant 10 trees for each purchase,” she says. “You can actually register your trees, and they’ll send you updates on how your trees are doing.” Another interesting environmentally friendly clothing line you might find at P.F.

Thanksgiving is such a great time to be with family, watch some football and stuff your face full of some of the best comfort food out there. But cooking a Thanksgiving Feast can be daunting, unless you do it year after year. It takes strategic planning, off the charts time management skills and the energy of a 6-year old — which is probably why most people leave it to their in-laws or friends. Those who take on this beast of a feast year after year after year really revel in the chaos and strategy of it. It’s a full day in the kitchen, staying up late the night before and getting up early to get that turkey started on the big day. And it’s always helpful to have tried and true recipes to round out the menu! “Vintage” recipes tend to be some of the best. I mean who doesn’t love their great grandma’s green bean casserole or

their aunt’s secret recipe pecan pie? But a good mix of old and new is sure to satisfy most of your guests. If you are ready to try something different, here is a stuffing recipe sure to please. It typically entices wanting seconds from non-stuffing lovers and is sure to satisfy your tastes.

DRIED CHERRY & SAUSAGE STUFFING: Ingredients -½ cup butter (1 stick) -6 celery stalks, finely diced -2 medium onions, finely diced -1 loaf French bread, cut into 1-inch cubes and toasted (10 cups) -1 cup dried cherries -¾ pound Italian sausage, casings removed, cooked, and crumbled -¾ cup fresh flat-leaf parsley, chopped -1 teaspoon kosher salt -1 teaspoon freshly ground black pepper -2 14.5oz cans of chicken broth 24 / KOKOMO MAGAZINE / NOVEMBER 2019 / atKokomo.com

Directions (1) Melt the butter in a 12-inch skillet over medium heat. Add the celery and onions and cook until they are translucent, about 5-7 minutes. (2) In a large bowl or pan, combine the celery and onions with the bread, cherries, sausage, parsley, salt, and pepper. Add the broth and stir until well combined. (3) If you want some inside your turkey, use a spoon to loosely stuff the mixture into the turkey just before roasting. (4) If not, pour the rest of the into a baking dish, cover and bake in a 325° oven for one hour; uncover and bake for another 15 minutes. Serve warm. After you’ve had your fill ( I hope you wore your stretchy pants), watched your team win, and then napped for a bit, it’s time for dessert.


Holiday desserts are seriously the best. There’s just something special that makes a pumpkin pie on Thanksgiving taste way better than one on any other normal day. Fall recipes are always delicious, but some of the best and favorite out there tend to be pumpkin related. If you haven’t tried a pumpkin roll before, you might want to. They aren’t really that hard to make and it might quickly become a Thanksgiving dessert table staple.

Cream Cheese Filling: -2 cups powdered sugar -8 oz cream cheese -¼ cup butter -½ tsp vanilla

PUMPKIN ROLL

(2) Pour and smooth evenly into a cookie sheet you have lined with parchment paper.

Here’s what you’ll need: -3 eggs -1 cup sugar -⅔ cup pumpkin -¾ cup flour -1 tsp baking powder -1 tsp ginger -½ tsp cloves -½ tsp salt -2 tsp cinnamon

Sponge Cake: (1) Sift flour, spices, and baking powder in a large bowl. Add eggs and pumpkin. Mix until combined.

(3)Bake at 375 degrees for 12 minutes. (4) While the cake is still warm, sprinkle lightly with powdered sugar, invert onto a clean tea towel and roll up. Let cool until room temperature or in the refrigerator. *You’ll want to roll while still warm to reduce cracks. And use powdered sugar on the towel to prevent sticking!

(5) Once cooled, unroll and spread evenly with cream cheese filling. Gently roll back up. (6) Place on a platter, sprinkle with powdered sugar and refrigerate. Serve Chilled. Filling: (1) Mix together room temperature cream cheese and butter, add vanilla and powdered sugar. Beat ingredients until creamy and smooth. And now that you’ve eaten your way through the table a few times, splurged on desserts and shared all the things you are grateful for, it’s about time for bed. Being around friends and family makes for some great memories, but all that turkey will probably have you ready to hit the pillow. May your day be filled with joy and laughter, and the best stuffing and pumpkin rolls you’ve ever had!

The old adage “You can’t come home again” certainly does not apply to Robert (Bobby) Cox. He has proven that someone can return to their roots and even make a difference. After spending years in the Middle East in the field of peacekeeping and law enforcement, Cox now strives to give back to his hometown of Kokomo. Cox’s career began when he was in his early twenties when he went to work at the Indiana Department of Correction. There he learned hostage negotiating techniques that provided him the knowledge he needed when he traveled to the Middle East to work as a trainer for the Afghan National Police. He was in Afghanistan from 2007 to 2012. “I took another position in 2013 in the United Arab Emirates in Dubai,” he says. “I was part of an embedded training task force to develop a federal police agency that could extradite criminals back to the country where they committed a crime. At the time, there was no force that could bring a criminal back if they fled to another emirate.” When Cox returned home to Kokomo in 2017, he continued working in law

enforcement as a deputy for Carroll County in the Burlington police department. However, he also started doing something completely different. He opened MO Joe Coffee House in May 2018. With its cozy vibe, comfortable seating areas and unique art on the wall, he had no idea what a force for good the store would become until he witnessed something extraordinary. “I was walking through the shopping mall when I heard a girl playing piano for tips,” Cox says. “She played really well so I invited her to set up at the coffee shop that night. We are open until 1 a.m. on weekends, but she didn’t get there until after 11:30 p.m. because she had to walk. She had bought a 26 / KOKOMO MAGAZINE / NOVEMBER 2019 / atKokomo.com

car from someone on the condition it would get needed repairs. The car owner skipped out and she didn’t have the money to pay the repair shop. Her keyboard had missing keys and she had to keep putting batteries in it because the power outlet was broken. “Afterwards I thought to myself that there had to be a way to help her out,” he adds. “I went into Sound of Music, which is across from the coffee house. They knew who I was talking about because the girl had been in the store looking at keyboards. They sold me one at cost and donated some attachments. Later, I was talking about it and customers overheard me. People started donating money to pay for the car repairs.

We raised so much money that we were able to give her the extra.” The heartwarming moment when it was revealed that the auto bill was paid and the keyboard was given was caught on video and posted to Facebook where it has had more than 16,000 views. It was a pivotal experience for Cox who since then has enabled and opened the coffee house doors to fundraising of all kinds. He knows that what he gives to the community will return back to him. “Why would I want to give money to a radio station for advertising when I can use that money for the good of the community?” he says. “That’s how I want my social footprint to look.”
