Even with the end of his administration approaching, Ditslear is not slowing down. His goal for 2019 is to continue moving the city forward on the Noblesville NOW Capital Improvement Plan. Launched in July 2018, its objectives are to strengthen infrastructure, create greater economic development, enhance public safety, improve connectivity and expand the downtown area. “Since we launched Noblesville NOW in 2018, we’ve made progress on some of our goals, and we’ll continue to focus on these projects to address the needs of our community now and in the future,” Ditslear adds.

After graduating from Noblesville High School in 2001, Robyn Littler worked in Human Resources for several years and had the unique opportunity to teach English in Spain. In 2008, however, she felt a yearning to return to her hometown and began working at Noble Coffee & Tea. A few years later, she, along with her husband Mark, bought the roasting side of the business and they roasted for the shop as well as a number of local restaurants and cafes. Then in January 2017, they purchased the retail store.
“Every day former teachers come into the shop and parents of people I went to school with. A lot of people stay here or come back to Noblesville because people here are kind, generous and supportive,” says Robyn, who was eager to give the place — and the menu — a face lift.

The couple started off by changing their product offerings, getting rid of processed foods and artificial flavorings and replacing it with fresh, local, clean food. They get a lot of their muffins from Sunrise Bakery in Fortville and much of their gluten-free products from Jen Wiese’s BeeFree GlutenFree Bakery in Noblesville. In addition,

Still, working on a 120-yearold building with sagging floors and uneven walls proved to be challenging but worthwhile. In the end, they have expanded the space to a whopping 3,600 sq. ft.

“We both grew up in family businesses so it’s in our blood,” Mark says. “It’s definitely not the easiest, but being independent people making your own way is rewarding.” Mark renovated the bathroom and flooring, then began building tables and a new bar in the front window. He’s also erected a large conference table out of thick slabs of Indiana cherry. “Whenever possible, we source everything we use from the U.S., especially Indiana,” Mark says. The Littlers like connecting with people and giving back to the community so they host a lot of events and other altruistic activities. For instance, they have participated in toy drives and fundraisers to benefit the Humane Society. It should come as no surprise, then, that Noble Coffee & Tea is a dog-friendly establishment. Guests are welcome to bring their canine inside while waiting in line. Over the holidays, community members were invited to bring in their kids, their dogs and get their picture taken with a winter backdrop. “We are the Grand Central Station of downtown Noblesville so lawyers,

city workers and others who work downtown come in regularly for meetings and to socialize,” Mark says. “We like being that gathering spot.” The couple enjoys the flexibility of owning their own business but admit that at times it can be trying. For one thing, being open all but two days out of the year means little to no down time. Not to mention, as Robyn points out, “anything can go wrong.” And it has. For instance, in November she got a call at 5:45 a.m. from her barista, alerting her that the power was out due to an ice storm. “You’re always kind of waiting for something to happen, but when it does, we get through it,” says Robyn, who has plans this winter to begin offering brewing and roasting classes to the public. The first will be called “How to make good coffee at home.”

“We have a lot of customers who tell us, ‘I buy your beans, but I can’t make it taste quite like you do,’” Mark says. “That’s because most people just buy a coffee maker and wing it, not knowing how much coffee to put in. It either tastes good or it doesn’t. We want to teach people how we build our recipes.”

Have you ever wanted to get the inside of your car professionally cleaned but realized with frustration that you didn’t have hours to spare for sitting and waiting at a car wash facility? Crew Carwash’s new Xpress Interior Clean service on Tegler Drive in Noblesville provides an answer to that dilemma — an eight-minute answer, to be exact. “We’ve always concentrated on the outside
of the car for the last 40 years, and it’s exciting to get back to the inside with this innovative approach,” says Sally Grant, the executive vice president of Crew Carwash whose grandfather founded the company back in 1948 in Fort Wayne. The approach Grant refers to is simple yet effective. The company installed a conveyor belt that runs the length of the new building, which sits separate from the exterior car wash, allowing the staff to continually hand-clean the cars that
enter — up to four at a time. Vacuums that hang from the ceiling, towel warming and floor mat cleaning stations and rolling bins for clean and used towels all facilitate Crew’s quick interior cleaning process, and customers can relax in a space near the end of the conveyor belt that includes chairs and a restroom while their car is serviced. The facility allows Crew employees to service up to four cars at once inside the building, and have each and every car finished in about eight minutes.

“We’re very excited about this concept, and I think our customers in Indiana will be excited too — it fits right in with our brand of clean, fast and friendly,” says Grant, adding that the company retained Hamilton Designs and Compass Construction Group for the planning, design and construction process that started last May. Crew held a ribboncutting ceremony on December 20 with Noblesville Mayor John Ditslear in attendance after a soft opening in late November.
“My grandfather, who started the company, is 91 now, and he visited recently to see this new site and was blown away,” Grant says. “He started with full service back in 1948, but then the company got away from it and quit doing full service in 1978. It was neat for him to see this place, and he realized this was a whole new way to do interior cleaning.” The company, which currently operates 31 locations all in the Hoosier state, went to great lengths for research. A few employees, including Jerry White, general manager
at the Noblesville location, traveled to Germany for two weeks to study the type of system that makes the new service work, long before construction on the Noblesville location began. “We’re kind of replicating the process they use over there, with the conveyor belt and high volume, quick-pace car wash system,” White says. “Myself and another employee actually worked on a car wash line there for most of the two weeks. They open up for the day and will typically do 80 cars. It was

pretty impressive, and it’s fun to bring that type of system here.” Grant stresses that the Xpress Interior Clean service is not a complete interior detailing, but includes windows, floor mats, door jambs, dashboard, console, cup holders and vacuuming. “The training was maybe the biggest challenge throughout this process because we didn’t have a place where we could train our associates until we were ready to open, and so we’re all still learning but it’s going great,” she adds.

The service is $20 with any exterior wash purchase, and the company is in the process of developing an unlimited Xpress Interior Clean program for a flat fee. Grant says Crew has preliminary plans to open additional Xpress Interior Clean facilities and will monitor the success of the Noblesville location prior to finalizing plans for more locations. “We’re going to see how it goes here, and if we see that customers are finding the value of it, we’ve identified about five other locations in the Indianapolis area where we can do the same thing,” Grant says. When Mason Cannady, an eighth-grader at Noblesville West Middle School sets out to accomplish a goal, he succeeds. Cannady recently earned the rank of Eagle Scout at the age of 13, making him one of the youngest kids to do so in the 36-year history of his Troop 183. He earned his Eagle Scout rank on December 18. “I’ve always been motivated to do my best, so I worked hard and set smaller goals for myself along the way so that the task didn’t seem so big,” Cannady says. “I was also motivated because I wanted to attend some high-adventure scouting events that required you to be at a certain rank. I was also motivated by my family tradition. I am the 18th Eagle Scout in my family, across at least three generations.” For his Eagle project, Cannady conducted a pet food and toy drive. He also built an agility course to support the Humane Society for Hamilton County. “I was able to collect more than 450 pounds of dog and cat food and almost 300 toys as well as other miscellaneous items,” Cannady says. “We made a portable agility course that included jumps, weave poles, a tire jump, a atNoblesville.com / FEBRUARY 2019 / NOBLESVILLE MAGAZINE / 15

When he’s not busy with the Scouts or the National Junior Honor Society, Cannady is playing his violin.
Cannady initially started volunteering at The Humane Society for Hamilton County as part of a requirement for Citizenship in the Community merit badge.
“I have played the violin since the second grade,” Cannady says. “I enjoy playing the violin because it is a fun challenge. It’s rewarding to hear how practice pays off with beautiful music. Last year, when I was in seventh grade, I played a ‘group 1’ piece in the Solo and Ensemble Indiana State School Music Association (ISSMA) Competition, which meant that I was eligible to go to state if I earned a ‘gold’ medal.”

This is my fourth year playing for this organization with many other talented musicians from around Indiana.” Cannady encourages younger students to join the Boy Scouts. “I would tell a younger student to join Boy Scouts because it is really fun,” Cannady says. “You get to participate in a lot of activities that you wouldn’t necessarily have the opportunity to experience otherwise. Some of the fun activities I have been able to do with scouting include camping, canoeing, white water rafting, scuba diving and ropes courses. There is something in scouting for everyone.”

Noblesville residents Ryan Fitzpatrick and James Gibson see certain parallels between the city they’ve called home since they were young, and their shared place of employment, Cooper’s Hawk Winery & Restaurant on East 96th Street. Both offer unique visual surroundings and a fun setting for socialization, and both have grown in popularity in recent years. Gibson and Fitzpatrick feel that the leaders within both the restaurant and the city have kept a strong focus on personal relationships throughout their respective growth.
“One of the things I enjoy most is just recognizing the people that come in to the restaurant and saying hi and engaging in conversations with all of our Wine Club members - that’s probably the most fun of what I do here,” says Fitzpatrick, a 30-year Noblesville resident who serves as senior general manager and oversees two Cooper’s Hawk locations in Cincinnati, the Indy store and an upcoming location in Dayton, Ohio. Both Fitzpatrick and Gibson have brought their passion for people to Cooper’s Hawk, which includes upscale-casual dining,
a full-service bar, a private barrel-aging room, a tasting room and a gift store. The establishment also offers a Wine Club, through which members receive a new wine every month, exclusive discounts, a newsletter, invitations to members-only events and more. “James and I will sometimes see someone at the restaurant one or both of us know from our Noblesville connections, which is fun,” Fitzpatrick says. “That’s something that we feed off of because he might know someone that I don’t know since I didn’t come to
Noblesville until high school, and there might be a mutual friend that we didn’t know that we had. I have people that come in four or five times a week and it’s fun to build relationships with them.”

Fitzpatrick’s family moved to Noblesville in 1988 for his final two years of high school, and he went on to study marketing and food service at Ball State before embarking on a career in the restaurant business. Prior to joining Cooper’s Hawk seven years ago, he spent 14 years as culinary director at Rio Bravo. “We’re the largest wine club in America, and the challenge at Cooper’s Hawk is maintaining that high standard,” Fitzpatrick says. “In the restaurant business you have many different personalities that have to match together, so it’s also a challenge getting the team on the same page with your direction, and also making sure that you’re there for them too. We have about 130 employees at the Indianapolis location alone right now.” Fitzpatrick adds that Cooper’s Hawk provides an ideal setting for special occasions such as birthdays and anniversaries, and the restaurant will often roll out unique menu items for holidays. Valentine’s Day chef recommendations at the Indianapolis location this year will include a surf and turf dish of filet medallions with parmesan crusted lobster tails and double lobster tails with a parmesan crust. As Cooper’s Hawk’s tasting room attendant and Wine Club facilitator for three years, Gibson says the personal touch he and his colleagues bring to the establishment enhances the experience for each customer. “We create great wines for our customers and have great food on the table, and then we have great relationships with not just Wine Club members but everyone who comes in,” Gibson says. “That’s probably what I enjoy most about my job, and I couldn’t be happier here.” atNoblesville.com / FEBRUARY 2019 / NOBLESVILLE MAGAZINE / 21
Born and raised in Noblesville, Gibson has spent the majority of his career in hospitality and says the city he grew up in helped to prepare him for life’s responsibilities, on both a professional and a personal level. “I appreciate Noblesville because growing up, it had a very small-town feel and it was a tight community,” says Gibson, adding that he enjoys exploring Indy’s music and theater scene in his spare time. “The city really has just exploded in size since I was a kid, but it still somehow has that small-town feel to the locals, just on a bigger scale. I spend a lot of time in Noblesville still, and my father and I have a standing lunch once a week.” Fitzpatrick has a similar appreciation for the way Noblesville city leaders have kept a focus on the area’s historical and cultural identity, despite massive city-wide growth and development. “As I grew up in Noblesville — and I still have many friendships there — I saw the area develop so much,” says Fitzpatrick, who plays in an adult hockey league in Carmel and enjoys golf and fishing during his downtime. “But when you look at the square and all of the history, you see that the town leaders have kept Noblesville’s culture and history intact, and I love that piece of the puzzle.” Cooper’s Hawk Winery & Restaurant is located at 3815 East 96th Street.
