Rachel Burnett and Tom Nguyen are bringing joy to the Noblesville area and beyond with their special brand of doughnuts. On Thursdays, Fridays and Sundays they serve up Instagram-worthy, mochi-style doughnuts inside the VFW building on South 9th Street in Noblesville. On Saturdays they partner with local eateries to create pop-up shops. The challenge for customers is to get there before they sell out.
Shaped like flowers, mochi doughnuts are made from a blend of rice and wheat flour, which gives them a pillowy chew. They are extremely popular in California and came to the United States via Japan and Hawaii. Nguyen became an immediate fan from the first time he tried one.

MOCHI JOY’S UNCOMMON DOUGHNUTS ARE IN DELICIOUS DEMAND
“I went to the first mochi doughnut shop in California and stood in a huge line,” he says. “When I tried it, I thought it was the best dessert ever and it would be so cool to have a mochi doughnut shop some day. When we moved from Orange County, I decided I could be the first to open one here.”
“Mochi doughnuts were created in Japan first, but in a regular doughnut shape,” Nguyen continues. “Hawaii had something similar but the mochi doughnuts were called ‘poi’ and were like shaped like doughnut holes. Then the doughnut-fryer people made the flower shape. Hawaiians married the shape with mochi dough. It became so popular in Hawaii that Japan started to do it too. Now that shape is only used for mochi doughnuts.”
A graphic artist by trade and an avid home cook, Nguyen took a year to do research. He and Burnett, his wife, traveled back to California and visited close to 10 mochi doughnut shops. The gold standard turned out to be the doughnuts from the first shop he ever tried. He reworked several recipes that he found on YouTube until he achieved the taste and texture that he wanted.
Today, 16 flavors are available each day the shop is open, and they rotate with the seasons. Nguyen says once he came up with the glaze recipe, the sky was the limit. Traditional, glazed mochi doughnuts are always offered, but the majority feature bold flavors and bright colors, many with fun sprinkles or other decorations on top. Some examples are lavender lemon, matcha latte, churro, and taro unicorn.
“I’m the quality control,” Burnett says. “If I don’t like it, it doesn’t go out. They are shareable and can be treated like cupcakes. They are great to bring to special occasions like parties or work events.”
Besides doughnuts, there are other offerings customers love. A partnership with Helm Coffee Company has yielded a couple of fun

drinks. The company came up with a cold coffee blended to complement mochi doughnuts, which comes in a can. The iced cereal-milk latte is comprised of Fruity Pebble-flavored milk and Helm coffee. The two wafflemodo sammies, made of pressed waffle doughnuts, ham from local vendor Smoking Goose, and gourmet condiments, are popular.
In the future, Burnett and Nguyen would like to have their business in a retail shop. For now, they are starting off small and working out of the commercial kitchen at the VFW. All the design and social media promotion is done in-house, and Mochi Joy has a large following. Word of mouth has increased demand. The doughnuts can be ordered online or bought on-site, and all inventory is typically sold out every day.
“We love it, although we wake up at 3 a.m. in the morning and don’t stop working until 6 p.m. each night,” Burnett says. “I quit my full-time job in April to join Tom. It’s definitely more fun.”

ore and more people are hearing about West Fork Whiskey Co., the 30,000-square-foot agritourism facility that opened in August across the street from Grand Park. It’s one of the largest craft whiskey distilleries in the country, and also offers a great deal more. For starters, it includes the Mash House, a family-friendly restaurant that runs weekly specials and is open for lunch. There is also Stave, a speakeasy cocktail bar with an intimate atmosphere, perfect for relaxing with friends while sipping top-tier cocktails. Plus, West Fork has retail space, an event center and an education center.
“Many folks think this is a whiskey bar, but there’s so much more,” says Kevin Boyd, marketing director at West Fork Whiskey Co. Mash House recently kicked off an all-day Sunday Funday brunch that runs from 9 a.m. to 9 p.m. The menu includes a Chicken and Corncake Waffle - juicy fried chicken served with honey butter and glazed in maple syrup. It’s a cornmeal waffle because they like to highlight local farmers and products. Therefore, they make a lot of “cornforward” products.
“We’re all about the corn,” Ray says.
The Mash House Fries are tossed with parmesan cheese, herbs and seasonings and can be served poutine style (adding gravy and egg). Then there’s the Grand Park Breakfast Platter, with the name serving as a nod to their neighbors. It includes egg and choice of bacon or bourbon sausage, potatoes and toast. The mouth-watering French Toastella is buttered French toast topped with peanut butter and Nutella. The Classic Breakfast Sandwich is a monstrous egg frittata with bourbon sausage and cheese, on an English muffin.
“The menu is really a fun mash-up, no pun intended,” says Megan Ray, program manager.
Every day of the week offers something fun at the Mash House, starting with BBQuesday from 5p.m. 10 p.m. on Tuesday.
“We have a pit master from Tennessee who works here,” Boyd says. “He gets out there at 6 or 7 a.m. and starts smoking meat in our smoker in the parking lot. Our pitsmoker special starts around 5 p.m.”
The middle of the week is a great time to visit because on Whiskey Wednesday it’s $5 off all bottles at the carryout bottle bar, and $8 for an old fashioned. For entertainment, there is Live Jazz from 6:30-8:30pm every other week in Stave Lounge. Thirsty Thursday has an $8 beer and a shot, called “The Dave,” and Half Off bottles of wine followed by live music at the Mash House from 6-8PM.
The music is mostly pop classics from the 1960s, ‘70s, and ‘80s - tunes that many people know and like to sing along to. It’s acoustic-forward in the Mash House as artists sit amongst the tables (or, in warmer months, on the patio).
“We want people to come grab a drink and appetizer, then stay for live music and dinner,” Ray says. “Families love the Mash House early in the night, and young professionals and empty nesters take advantage of the evening hours.”
Not only did the Mash House team just put out their new winter menu with tons of new tasty food choices, but the Stave team also just released an extensive makeover cocktail booklet that includes 20 to 25 drinks.

there’s something for everyone, and you don’t have to be a whiskey drinker,” says Boyd, noting that they have their own gin that they call East Spoon, which is a play off of their name. “We are a whiskey distillery but we have to have gin, so to poke a little fun, we came up with East Spoon.”
This is a great month to shop, as West Fork has gift card and package deals available that you can personalize. Check out their winter apparel including sweatshirts, T-shirts and beanies with the West Fork patch on it.
Their bottle bar is in the retail center as well. Guests can sample whiskey or purchase flights. “It’s try before you buy,” Boyd says.
The idea is to come get lunch and shop. It’s also a convenience. Say you’re on your way to a holiday party, and you can pop in and pick up a gift for a white-elephant exchange.
Check West Fork’s website and social media pages for community calendar updates, because Santa will be making some appearances in the event center.
“We are planning to have pictures with Santa as well as cookie decorating,” Ray says. “The kids can decorate a cookie while parents enjoy a whiskey cocktail.”

In the new year, they plan to kick off a West Fork Whiskey winter cornhole league. The games will take place on Wednesday evenings to coincide with Whiskey Wednesday. Participants are invited to come out and enjoy a cocktail or meal, then play in a competitive league.
“It’ll be official with teams registered and wearing West Fork T-shirts,” Boyd says. “If you are interested in playing head to West Fork’s website calendar for team registration.”
At West Fork Whiskey, they have limited bourbon and whiskey releases (typically two each month). These are unique single barrels, not just their standards, and they can only be purchased on-site at West Fork Whiskey.
“You can’t find these bottles at Meijer or Crown Liquors,” Boyd says. It’s all part of a line called WFX, which simply means Westfield Exclusive. “We pick our favorite barrels - ones that customers don’t have access to. If you want the best stuff, you’ve got to come on-site, and when it’s gone, it’s gone.”
The big takeaway is that West Fork is not just a restaurant, nor is it just a distillery and bar.
“We are community driven, with all sorts of activities, events and programming for all ages and demographics,” Boyd says.
For instance, they have just launched a behind-the-scenes tour of their new facility. Guests get to walk through the distillation processing and production area, then finish the 45-minute tour in the education room with a tasting of the West Fork Whiskey line.
“It’s really unique and super fun,” Ray says.

When Lea Hurley developed food intolerances to almost everything that is used to spice food, she knew she would have to get creative to satisfy her sweet tooth. In researching an array of nut butter at local grocery stores, Hurley quickly realized most contained ingredients she couldn’t have or didn’t want to have, like artificial sweeteners.
“I went home and discovered that I could make my own peanut butter and add things to it to make it taste like dessert, but healthy,” Hurley says. “I began using it as a way to curb my sweet tooth. After meals, I’d have a spoonful to keep me from hitting the candy that would surely make me feel sick afterward…it started making tasteless rice cakes edible. Bland oatmeal became something I looked forward to every day because the different nut butters made it like a new experience each time. Before I knew it, I was putting it on everything. I even put it on some plain baked chicken, which livened it right up. Don’t knock it till you try it!”
She said her husband, Mark, and her kids loved it. Her friends and
family even asked her to make it each week. Hurley says Mark asked her for three years to take it to a bodybuilding show, but she kept saying no, being afraid people wouldn’t like it. Mark took matters into his own hands, and the idea took off from there.
Hurley went from making her unique nut butters in a commercial kitchen to opening her first storefront a few months ago. She found the perfect spot at Hamilton Town Center and opened American Dream Coffee House. While coffee is king at some coffee shops, Hurley’s nut butters are the star of the show.

“That’s what keeps us going…knowing we’re making a difference,” Lea says. “We also donate 10% of our proceeds to support veterans, first responders and nurses. Each month we pick a different charity to donate to from a cause near our hearts.”
Lea says she tried to create a trendy upscale version of the show. She wants it to be a space where people can come to hang out, work and bring their children in for a treat and lemonade while they grab a latte and--most notably--some nut butter.

Tyler Ashby, a senior at Noblesville High School, recently landed an interesting and impressive internship with IU Health.
It’s an internship that will help him out in his future endeavors. Ashby loves science and his internship has given him an opportunity to explore an area he is thoroughly interested in. He couldn’t be more pleased.

those tests.”
Ashby’s internship is perfect for his future college plans.
“I plan on studying environmental science and genetics in college and ideally I would like to have my own research lab and do genetic research as a career,” Ashby says.
Ashby noted that the internship with the Clinkenbeard Lab has also been a great place to learn about things he was already interested in.
“The lab is part of the Indiana Center for Musculoskeletal Health,” Ashby says. “The staff looks at avenues of cellular metabolism and osteogenesis with the goal of identifying novel therapeutic avenues for mineral metabolism in bone health in patients that are affected with chronic kidney disease.”
Even though Ashby is busy with his internship, he still finds time to be involved in several extracurricular activities. All the activities are something he is passionate about and has been able to learn from.
Ashby says he enjoys being on the Academic Super Bowl and playing tennis.
“With tennis, I really enjoy being around friends I’ve made these past few years,” he says.
Ashby is also the student body treasurer.
“I enjoy helping plan activities such as homecoming and the many events that happen during homecoming week,” Ashby says.
Ashby is also involved with the Noblesville High School Symphonic Orchestra.
“With The Symphonic Orchestra, I have
enjoyed being with the some of my closest friends that I’ve made over the last six years,” Ashby says.
Ashby has also had a great time being involved with the Noblesville Mayor’s Youth Council, which has given him an opportunity to improve the city of Noblesville.
“I enjoyed working with groups such as Hamilton County Parks, Keep Noblesville Beautiful, Fueled for School and the Noblesville Tree Board in an effort to make my community better,” Ashby says.
“I like downtown Noblesville and places such as Forest Park and Potters Bridge,” he says.
Ashby notes that Noblesville has been a great place to live and grow up.
