But what about the rest of the year? We tend to forget that there still is delicious produce to be had all through the year. It’s easy to miss what’s close by and why it’s so important, maybe because we have the enormous privilege and ability to have almost any type of food all year round. Tropical fruit, avocados, berries, you name it. It is absolutely a privilege that not all countries have. But why does it matter to eat seasonally? It’s so much easier to just run to the store and grab what you need. Sourcing your food seasonally and locally, however, can have great nutritional and economic advantages. Let’s first take a deeper look at how your food gets from the field to your plate. If you’re buying an avocado in January in the Midwest, chances are that avocado is coming from Mexico or even south America. Picked from the trees, packed into trucks, sent to a packaging facility, then to a distributor, a retailer and finally, to you. Hundreds, probably even thousands of miles away. That’s no short trip!

Now think about transportation. How many miles did that avocado really travel? What was the carbon footprint? Trucking is the second largest carbon emitter next to air travel in regard to U.S transportation. Not to mention, the avocados must be held at specific temperatures to encourage ripening so that they don’t over-ripen before they reach the consumer. That temperature control need also uses more energy. Also, thousands of gallons taken to support the avocado orchard in the first place can drain natural resources too. Now, I’m not suggesting we boycott avocados and never eat one again, but I want you to understand how much energy is put into one little fruit that we are so used to having available everywhere. It is extremely important to be conscious of the ‘How’ and ‘Where’ Contrast the long and expensive journey of your avocado to food we have right in our backyard.
In the Midwest, the winter is great especially for hearty root vegetables and rich greens. Often, we may feel too intimidated to buy more local produce in colder seasons because we may not know what do to with it or how to prepare it. What the heck can you do with a Rutabaga? How can turnips possibly taste yummy? Often, these nutrient-dense root vegetables can be easy replacements for more common ones like potatoes! I encourage you to simply google whatever new vegetable you want to try and you will be introduced to a slew of ideas of how to make them delicious. There are endless possibilities.

Along with trying new foods, foods that are grown in season and in healthy soil create a richer, more nutrient dense product. Often when we tune in to the seasonality of food, what is available is often exactly what we need to keep us healthy. Why do we eat soups when we’re sick? t was mid-October, 2017 and the American Quarter Horse Association (AQHA) Congress, the largest single-breed horse show in the world, was in full swing. At the open class halter show, several horses were ready to compete for the gold in the gelding yearling championship. The stakes were high — everyone knew that there would be some stiff competition to determine which of these quarter horses would be named the best up-and-coming horse models in the world. One at a time, the handlers led their horses into the ring. As handler 3120 and the beautiful gelding at his side, Amazingunz (or Gunner, as his owner, Elizabeth Beauchamp of Culver calls him), walked into the ring, the judges and spectators alike couldn’t help but notice his sleek, muscled body and graceful balance. After the other horses walked around the arena, all of the horses lined up so the judges could get a closer look at them, making notes on clipboards while spectators and potential horse and stud buyers watched from the seats. Several minutes passed before the judges were finally ready to announce which horse was the best-looking and most graceful yearling gelding. If Gunner won, then Beauchamp would walk away with a trophy, a commemorative buckle, and cash prize. But more importantly, Gunner would receive a champion designation on his pedigree records, which would improve his overall value. But although Beauchamp has gotten into the top five at previous AQHA shows with her halter horses, she has never won first

place… until that competition with Gunner. It was an exhilarating experience for Beauchamp, but it was only the beginning. Since then, she has won high honors at dozens of national and world competitions and become a world champion many times over. As inspiring as the facts are, they are surprising to one person in particular: Elizabeth Beauchamp. “I’m pretty goal-oriented, but I had never, ever fathomed that I would be a world champion or even set that as a goal,” she says. Growing up, Beauchamp was practically raised in the family’s barn. “My father grew up around horses and he raised me around horses,” she explains. “My father used them to make a living, too, using Belgium horses for heavy work.” Beauchamp’s first horse was Rustler, a horse that Beauchamp’s uncle rescued from a kill pen. “I started riding him at nine years old. I had him until he died, about 23 years,” Beauchamp says. “I learned more from him probably more than the other kids learned from horses that were better trained or earned more ribbons and trophies.” More than that, Rustler was a companion to a young girl as she grew up. “Some days, [it was like] oil and water and some days like lemons and lemonade,” she says. With her family’s background in horses, it is little wonder that Beauchamp wanted to be a veterinarian. In time, though, she shifted her goals to pursue other entrepreneurial endeavors. After high school, she got a parttime job at a flower shop, which inspired her to open her own after graduating from Ancilla College. She called it The Garden by Elizabeth and it’s located at 103 N. Plymouth St. in downtown Culver. Nevertheless, she continued to keep horses, and decades later decided to show in the big leagues. Beauchamp remembers that her involvement in the horse world today is largely due to some

encouragement from her fiancé, Shawn Yount. “Shawn pretty much said, ‘If you want to do it, then let’s do it!’” she says. “He likes the livestock end of things, and I like the horse end of things and so both of our passions merged.” After a few competitions and minor wins, Beauchamp entered yearling gelding Gunner in the Breeders Halter Futurity open halter show in 2017, about a month before the AQHA Congress. “I beat all of them and won the entire show,” she says. “I guess I knew it was a big deal, but I didn’t really realize until I was out of that moment what really happened. I think I was in shock for a very long time.” From that victory, Beauchamp went to the 2017 AQHA Congress and won her first championship. A month later, Gunner won the gold at the by-invitation-only World Show. Since then, Beauchamp has only gotten more involved in the horse world.

Currently, she owns 14 horses. Although a few live on Beauchamp’s property in Culver, the rest are stabled around the nation. Each one is unique, not only in personality but also in talent and ability. “Educate yourselves,” she says. “Long before I had the horses to compete at the level that I do, I never stopped reading. I never stopped visiting. And I never stopped wanting to learn more. Because you never know when an opportunity is going to rear its little head at you, and you have to have the resources to be able to run with it. A person can really be anything as long as they keep trying and never stop educating themselves.” Beauchamp never does things by halves. Not only does she travel around the nation for competitions, she still owns her flower shop. Aside from that, she is president of the Culver Chamber of Commerce and remains active in the lives of her fiancé and their five children.

Before she opened Poppin’ Off Popcorn, Adamik worked in a few different fields.
In June of 2016, Elizabeth Adamik’s passion for popcorn influenced her to open a unique business, Poppin’ Off Popcorn on Pearl Street in Knox.
“I worked in fast food as a teen, and then in ophthalmic tech,” Adamik says. “I also worked as an exterminator, and held licenses in Illinois and Indiana for pest control. Most recently, before opening the store, I was a stay-at-home mom for over 12 years.”
“I have always loved popcorn, and wanted to bring something unique to the area,” Adamik says. “(My family) needed flexibility for our family life as well, so most of the time this has been a good fit.”
Adamik says Knox residents have been highly supportive of her business.
“We have a loyal following, and are always getting new customers each week,” she says. “Many come at the recommendation of our current customers, and that word-of-mouth advertising is very much appreciated. We are very grateful for the community’s support, and always try to give back.” Some of Poppin’ Off Popcorn’s best sellers are the standard flavors. “Our homemade Carmel, Starke County

She suggested we roll our Carmel in the Cheddar, instead of just mixing it with Cheddar. All flavors are made fresh at the store. We use anything from actual brownie mix to candy flavoring oils, to make unique flavors.”

Adamik has her own personal favorites. “Chicago Mix is my standard, but I also enjoy most of the savory selections like Pepperoni Pizza, Chili Cheese and Dill Pickle,” she says. Adamik and her staff create and change the popcorn flavors seasonally. “We also do a flavor of the month to try flavors out,” she says. “We have Redskin Red Cream Soda, Blue Jay Banana Berry, Bobcat Banana Split, Cheddar Jalapeño, Sugar Cookie, Sea Salted Carmel, and Candied Jalapeño Cheddar, to name a few. Levi Miller, owner of Miller Hardwoods, has made his business successful by ensuring that his customers are satisfied. “I’ve been doing it that way since I started,” Miller says. “I began working in this business in February 1975. I worked with a portable sawmill, and I didn’t know one tree from another. I really had a lot to learn, but I worked hard at it.” Miller started out part time, but was eventually able to turn his work into a full-time venture.

“I was also working at a trailer factory,” he says. “I worked full time at Fairmount Trailers, in the metal department. I put metal on the exterior of the trailers.” Miller says he no longer works with hardwoods, and now focuses all of his attention on the mulch side of his business. “The sawmill I worked with lasted several years, and now we are all about mulch,” he says. “We previously worked with green lumber, which is called hardwood. We had our own cutting crew that did a great job over the years. In 2006 we shut down the mill. We had a good run with it.” Miller is glad he kept the mulch aspect of his business, which has thrived. “We have between 80 and 90 semi trucks of mulch a year,” Miller says. “We have used two semis for deliveries, but we usually only use one semi.” Miller Hardwoods dyes their mulch black and dark brown, which customers appreciate.

“Our customers are really happy with the mulch they get,” Miller says. “We keep really close tabs on all of our customers, and stay in touch with them to make sure they are satisfied with everything. They tell us they really like the texture of the mulch. I have a good reputation with my customers, and that really means a lot to me.” Miller added that he regularly asks his customers what Miller Hardwoods could do to improve. “We’ve received a lot of compliments over the years, and there’s nothing better than that,” he says. “I regularly call my wholesale customers, and ask them what I can do to enhance my products. I really want to get their feedback so I can work even harder to make them even more satisfied.”
Miller credits his employees with much of the business’s success. “My wife Mary Ellen has been my secretary for the last 45 years,” he says. “We will have been together for 47 years this coming June. We have a good working relationship, and we enjoy working together.”
The couple believes positive word of mouth from happy customers has kept them in business for so long. “We have a good delivery service, and we know how to treat people right,” Miller says. “We also use high-quality mulch that is not ground up. Our mulch is a premium mulch.

Heat oven to 350°F (325°F for dark or nonstick pan). Line 9-inch square pan with foil, allowing some to hang over edges of pan. Grease bottom and sides of foil with shortening or cooking spray. Make and bake brownies as directed on box. Cool completely on cooling rack, about 1 1/2 hours. In large bowl, beat softened butter and cream cheese with electric mixer on medium speed until smooth. Add 2 tablespoons whipping cream; beat until blended. Slowly add powdered sugar; beat until fluffy. Beat in mint extract. Beat in food color until desired color. Spread over cooled brownies. Refrigerate about 1 hour or until set. In 2-quart saucepan, heat Topping ingredients over medium-low heat, stirring constantly, until melted and smooth. Remove from heat; let stand 15 minutes. Pour topping over filling; spread to cover. Refrigerate uncovered about 2 hours or until set. Using foil to lift, remove brownies from pan, and peel foil away. Before cutting, let stand 20 minutes at room temperature. Cut into 4 rows by 4 rows. Store covered in refrigerator.

This year, share that excitement by hosting your own watch party for your family and friends with this winning starting line-up. Here are 5 helpful tips for making your March Madness party a slam dunk. 1. Chow Down on Game Day Classics Food for your March Madness party should be simple and easy to eat with your fingers. Chicken wings, jalapeùo poppers, pizza and nachos are classic game day go-tos. Take your finger food game to the next round by choosing foods
that correspond with some teams in the tournament. For example, serve mini hot brown sandwiches in honor of Kentucky or pulled pork sandwiches for Kansas. For dessert, decorate cupcakes in your favorite team’s colors or use orange and black icing to create mini basketballs. It’s not a party without libations, and March Madness allows for lots of creativity for drinks. If a local team is in the dance, keep a cooler full of beer from area breweries. 2. Don’t Skimp on the TV The bulk of the party will be watching the games, so you’ll want to have a nice-sized TV. If you can swing it, set up several TVs to watch multiple games at once, especially during the first rounds. A piece of wood is, by its nature, a work of art. The interior rings a tree produces mark the years of its life. They also act as a sort of diary. Some of those rings mark where branches once grew. Others tell of drought or flood years. The careful observer can even tell if the tree caught fire or struggled with disease at some
point in its life. A lot of wood has two stages to life, each of which can last decades - one as a tree and another as a building material. But Tim and Micah Bradley, the father and son coowners of Barnwood Masters in Mentone, give reclaimed barnwood another stage of life as custom-made furniture. some major changes in their family life. For many years, Tim Bradley worked as a catastrophe claims insurance agent. That career ended abruptly years ago when a car accident resulted in a mild traumatic brain injury. This affected much of his life, including his ability to work and drive. It took five years for him to recover to the point where he could again pursue some of his interests. One of the first activities his family encouraged him to attempt was woodworking, a long-time favorite hobby.

“It was just something fun that we would do as kids with him in the shop,” Tim’s son Micah says. “(We would) tinker around a little bit and build 4-H projects, shelves and little cabinets.” Since reclaimed barnwood is beautiful, versatile, and relatively easy to access in Indiana, Tim started using it when he again picked up the hobby. It didn’t take long for others to notice Tim’s gift as an artisan, and he began selling what he made. “He was getting enough orders, and there was enough attention to what he was doing, that it was time to make it into a real business,” Micah says. That was three years ago, and since then the business has grown exponentially. Barnwood Masters has two main services. They dismantle collapsing barns, and make handcrafted furniture specifically for homes and businesses. Although Tim’s first love is building tables, Barnwood

It’s also a way to preserve the earth’s resources. “Sustainability is a big thing for us,” he says. “We want to be good stewards of what God’s given us on this earth. According to a study conducted by Pew Research Center, less than 50 percent of Americans feel they can trust the recommendations and information given by their doctors. However, a study by the National Library of Medicine indicates that those who find a dependable medical provider end up living healthier lives and making better lifestyle choices. As such, finding a trustworthy health care provider is a vital decision now more than ever. For Tracy Haddix, RN, MSN, FNP-C, providing trustworthy health care is her way of making a difference in the world and her patients love her for it.
“I want everybody to be in the best health they can be in,” she says. That desire is all the more potent because in the nearly 30 years that Haddix has been working in the health industry, 26 of those were spent as a bedside nurse before she became a nurse practitioner at the Knox Winamac Community Health Center (KWCHC). “Working the emergency room and ICU as long as I have, you see every aspect of life,” Haddix says. “I don’t want my patients to be the person I’ve seen in the ER, and in bad shape because they didn’t take care of themselves.”
According to Haddix, the best way for a person to take thorough care of their body is through preventative medicine methods. For many patients, she draws a parallel between regular health checkups and routine car maintenance. “You don’t wait for the engine to blow up before you change your oil,” Haddix says. “You need to take care of your body before something bad happens.” Through promoting healthy lifestyle choices and recommending blood work at annual checkups, Haddix is able to help most patients avoid the worst medical emergencies.

Of course, preventative measures are not always possible in Haddix’s line of work. “Most of the time people don’t come until something’s already wrong,” she says. “Then you have to try to control or heal.” Because most sick patients have urgent complaints, Haddix and the other practitioners at KWCHC always try to work those patients in and give them care as quickly as possible. One of the most satisfying aspects of working at KWCHC for Haddix is the ability to be active in her hometown of Knox. “This is a way I can work in my community and give back,” she says.

Wild Rose Moon has shone as a beacon for the arts in Plymouth since opening in June of 2015. Executive Director George Schricker and Assistant Director Marcia Heintzberger long dreamt of opening a performing arts center in the area. George inherited the facility space from his greatgrandfather.
In keeping with the Wild Rose Moon motto, “Arts in Action in Service to Community,” the staff offers many ways for people to get involved in the arts. The facility includes two sound stages that serve as individual listening rooms and workshop spaces. The venue brings in original artists from all over the country, ranging from gospel musicians to classical French guitarists to Celtic bands. In addition to live performances, the facility also offers various opportunities for locals

area,” George says. “We have story after story about how people who have come to our open mic have been helped both professionally and personally through the experience.” Wild Rose Moon also offers jam nights and a comedy improvisation class. Jam nights are meant to encourage people to bring instruments and join in with area musicians. Jam nights are hosted on the second Wednesday of each month from 7 p.m. to 9 p.m. Comedy improvisation classes are held on the first and third Monday of every month from 7 p.m. to 8:30 p.m., and these classes were launched to help develop public speaking and interpersonal communication skills for participants. Both of these events are free and open to the public.

George’s favorite program currently offered by the facility is the Wild Rose Moon Radio Hour, for which
performers from across the world come and record a radio show in the venue. The event includes a studio audience that can sing and clap along with the performers. Audience members can also sign up to participate in a quiz show that is part of the event. Admission is $5, and the event takes place on Saturday mornings at 11 a.m. “Of course, the important thing to remember is that all these events are opportunities for training our production staff in the arts of audio engineering, videography and video editing,” George says. “These skills actively work to support the creative performers who engage with us.” The response from the community has been fantastic. As a nonprofit, the facility relies on grants, ticket sales and the kindness of patrons. Wild Rose Moon’s largest fundraiser will occur this October, but people are invited to join and become members throughout the year. The staff typically sets out receptacles for donations at events as well, and also welcomes volunteers. “We make it easy for people to be able to be a part of the programs if they don’t have a lot of financial resources,” George says. “All they have to do is help out in some way and they can see shows for free as they become part of the hospitality or production crew. We are always looking for new interns.

Spring has finally sprung. It’s that time of year when you want to feel refreshed and clean, and declutter your house while you’re at it. With the weather starting to warm up, you’ll want to start heading outside to enjoy the sun and fresh air. Nevertheless, we all have a need to clean this time of year - so what is the best way to tackle this year’s spring cleaning to-do list? It doesn’t have to be overwhelming, and it can even be fun. Getting the house in working order again feels good, and you can do it. Here are a few tips that will help you along to a very successful spring cleaning campaign. Take it One Room at a Time Houses can be overwhelming when it comes to cleaning, so be sure to break your cleaning down into smaller, manageable projects. One easy way to do this is to think in terms of one room at a time. Use a room checklist as a place to start, and also as a way to prevent forgetting about items you might not always clean. If you’ve already cleaned some items in certain rooms then feel free to skip, but you are sure to find something that’s taken a back seat all
winter and needs a deep clean. Start with rooms that get the most traffic so that if your plans get derailed, you’ll still have a sense of accomplishment. Clear the Clutter One of the biggest and best parts of spring cleaning is the purging of anything and everything you don’t need anymore. The feeling of letting go is a major way to refresh your soul this spring. Think about this in four categories - trash or recycle, sell, donate, and, finally, put away. There are always things we want to keep, and some we can do without. Make piles for each. If you choose to sell, list items on Facebook Marketplace as you are setting those items aside. Use the Right Tools and Supplies There are many cleaning supplies and tools out there that companies want you to think that you need, but it’s better to refrain from buying everything. Having dozens and dozens of cleaning products on hand at all times just clutters up the cabinets. Along with your mop, broom and vacuum, make sure you have a good all-purpose cleaner on hand for most projects. Other basics include an allpurpose powder or liquid cleaner for larger washable surfaces, an abrasive cleaner for small, heavily soiled areas, a nonabrasive cleaner for gentle cleaning on surfaces that scratch easily, chlorine bleach, glass cleaner, a furniture duster, and a toilet-bowl cleaner. Call in the Pros If your budget allows, there might be a few things you could take off of your list and bring in a professional to clean. Window, carpet and upholstery cleaning are much easier tasks for pros who do it all the time. Not only will this save you time, but it also might save you money as certain tasks often require tools you probably don’t have on hand. Hopefully these tips will help to get your spring cleaning off to a great start this year. Bart’s Water Sports Celebrates Nearly 50 Years in Northern Indiana Culver studied biology and education at Indiana University, and after an unsatisfying stint as a student teacher, he decided to pursue a career path quite different from teaching.

Not unlike many successful, long-running businesses, Bart’s Water Sports began when its founder recognized an opportunity to fill a unique niche, locally and regionally. In 1972 Bart Culver, a lifelong water sports fan, Indiana University grad and member of the North Webster Ski Bees ski club, began a small retail shop that would eventually grow into a far-reaching mail-order and online water sports equipment and apparel business. “Bart grew up around the lakes and was active in all the water sports - if he wasn’t working he was around water,” says Bart’s Manager Mike Wilson.
“He started selling water skiing equipment to people as a very small business for people who were having trouble finding such equipment elsewhere,” Wilson says. “When he went to different ski club competitions he would run into people who would tell him they couldn’t find certain things. He had the idea of being the one who could provide it for all these people he would talk to.” Bart’s Water Sports began solely as a retail business, but it didn’t take Culver long to realize he could establish a much wider customer base through adding a mail-order component to his business concept.
“A lot of the people at the different competitions he’d go to, who needed products, were from Ohio or Michigan, and (Culver) started a mailing list and put out some black-andwhite flyers early on,” says Wilson, a former schoolteacher who started working at Bart’s during summers from the late 1970s until 1988 when he joined the company on a full-time basis. In 1975, the small Bart’s staff published its first water sports product catalog, and began filling orders for customers locally, regionally and even on a national scale. Bart’s has been headquartered at three different locations in North Webster since its inception, and Culver began the business by converting a small house into a retail shop and showroom.

Since 1995, the company has been located on East 800 North, and the staff currently welcomes customers for tours of its warehouse facility. If it’s related to water sports, you can probably find it at Bart’s. The company stocks surf boards, skis, kayaks, snorkel gear, towable tubes, boat accessories, life jackets and more - as well as a wide range of men’s, women’s and kids’ apparel. “We don’t sell boats and never have, and we don’t sell PWC’s (personal watercraft) or anything like that,” Wilson says. “Other than that, anything you need to participate in water sports, we’ll probably have it. Anything you can do behind or around your boat for fun or relaxation - we try to offer those kinds of products.” Wilson says the staff consists of seven full-time employees, and company leaders typically bring on between 12 and 22 seasonal staffers. “Our seasonal help fits into three categories,” Wilson says. “There’s our retail showroom, which is busy in the summer, and warehouse work. There’s also customer service, which years ago was just answering the telephone, but now that most orders are online it’s a matter of answering emails and live chatting.” Wilson says the Bart’s staff works constantly to process orders from all over the U.S. and the world. “We don’t do as many big international orders as we used to because our manufacturers and vendors have better coverage around the world than they used to,” Wilson says. “More companies have distributors in different companies, with the way the world has gone as far as online business.” Bart’s inventory has evolved through the years to account for trends in water sports, and the advent of new water activities. “When we first started, if people did something behind the boat it was water skiing,” he says. “Through the years wakeboarding has become popular, and tubing has changed a lot with different shapes and sizes. Tubing is easy for people to learn and do now. More recently wakesurfing has also gotten popular. So we’ve gotten more and more categories of products to sell.” Despite its growth and increased market reach through the decades, Wilson says Bart’s remains as focused on customer service as when Culver and his 58 / THE LAKES MAGAZINE / MARCH 2020 / thelakesmagazine.com
small staff were operating out of a converted house in the ‘70s. “We’re really still a small company,” he says. “We try to evolve and try to keep up and watch the competition. There are a lot of big online businesses that we have to keep our eye on, and our philosophy is that competition makes you stronger and better because you have no choice but to compete. We embrace that and have tried to get better wherever we could.” Wilson adds that the Bart’s staff regularly looks for ways to give back to the North Webster community, through outlets like volunteer opportunities and local food pantry donations.

“North Webster is a town of about 1,000 people, so it’s not like we have a huge labor pool to pull from,” says Wilson, who grew up in Central Indiana and attended Manchester University before eventually moving to North Webster in the late 1980s when he joined Bart’s as a full-time employee. “This past spring, we hired a college grad who had worked here in the
