INTRODUCTION
In terms of the European programme Erasmus+ and during the application of the planning with the title “In einem gesunden Korper lernt ein Kluger Geist –in meinem Korper fuhle ich mich wuhld”, “A health mind lives in a healthy body”, we decided to create a cookery book with the title
“The healthy Cooking Book”. Schools from various European countries such as Austria, Denmark, Finland, Germany, Poland, Greece and Spain, coorporated and prepared three recipes each, two for children and one traditional, in order to promote the healthy way of nutrition and life by using pure materials of good quality, herbs, fruit and vegetables. Healthy nutrition in combination with exercise, lead to a healthy way of life and give us both a healthy body and mind.

Kaiserschmarrn Also known as "Emporers Trifle" this dish is a true staple in Viennese cuisine and can not only be served as dessert but also as a main course. And: It is really easy to make.
Ingredients:
6 eggs- 6 Eier
350–400 ml milk- 350-400 ml Milch
180–200 g finely ground flour- 180-200 g glattes Mehl
3 tbsp crystal sugar - 3 Tl Kristallzucker
1 packet (8g) vanilla sugar – 1 Packung Vanillezucker
some grated lemon rind- geriebene Zitronenschale
a pinch of salt- eine Prise Salz
approx. 50 g butter - circa 50g Butter
icing sugar and cinnamon– Staubzucker und Zimt
Separate the eggs and place the yolks in a mixing bowl. Trenne die Eier in Eiklar und Dotter und gebe die Dotter in eine Schüssel.

Pour in the milk, flavor with some grated lemon rind and vanilla sugar, and add the flour. Mix to form a smooth dough. Gib die Milch, Vanillezucker, geriebene Zitronenschale und Mehl in die SchĂźssel. Mische bis ein feiner Teig entsteht.
Beat the egg whites together with the sugar and a small pinch of salt and fold into the dough mix. Schlage das Eiklar mit dem Zucker und einer Prise Salz und mische es mit dem Teig.

Melt the butter in a frying pan. Schmelze die Butter in einer Pfanne.
Pour in the mixture. Cook the underside until light brown, turn over using a spatula. Gebe den Teig in die Pfanne. Koche die Unterseite hellbraun und wende es mithilfe einer Spatel.

Tear the ‘Schmarren’ into small pieces, using two forks. Schneide den Schmarren mithilfe von Gabeln in Stücke
Remove from the pan and arrange on plates. Dust with confectioners sugar and cinnamon. Serve with baked plums, a berry or fruit compote.
Gib den Kaiserschmarrn auf einen Teller. Bestreue ihn mit Staubzucker und Zimt. Serviere ihn mit Zwetschgen, Beeren oder Kompott.

Tiroler Gröstel mit Spiegelei
Tyrolean griddle with fried egg
Zutaten (für 4 Personen):
Ingredients (for 4 persons):
500 g gekochte und geschälte, erkaltete Kartoffeln 300 g gekochtes Rindfleisch 1 Zwiebel (klein gewürfelt) Salz Kümmel Schnittlauch Butter
500 g boiled and peeled, chilled potatoes 300 g cooked beef 1 onion (finely decide) salt caraway seed chives butter
4 Eier Butter
4 eggs butter
Zubereitung
Preparation Cut the onion into small cubes and fry in a large pan in butter.
Die Zwiebel in kleine Würfel schneiden und in einer großen Pfanne in Butter anrösten.
Das gekochte Rindfleisch hinzugeben und ebenfalls rösten.
Die Kartoffeln in Scheiben schneiden und in die Pfanne geben, alles gemeinsam gut anrösten und mit Salz und Kümmel abschmecken.
Die Eier in einer zweiten Pfanne in Butter zu Spiegeleiern braten. 11
Add the cooked beef and roast it.
Cut the potatoes into slices and place them in a pan, fry well together and season with salt and caraway.
Fry the eggs with butter in a second pan.

Zutaten (für 4 Personen):
Ingredients for 4 persons):
250 g griffiges Mehl 3 Eier 5 g Salz ca. 50 ml lauwarmes Wasser Salzwasser
250 g grippy flour 3 eggs 5 g salt 50 ml warm water saltwater
Butter oder Butterschmalz 1 Zwiebel, fein gewürfelt 100 g geriebener Käse
butter 1 onion (finely decide) 100 g grated cheese
Röstzwiebel Petersilie Salz und Pfeffer

Zubereitung
Preparation Process flour, eggs, salt and water to a dough.
Mehl, Eier, Salz und Wasser zu einem Teig verarbeiten.
Den Teig durch ein Spatzlsieb oder einen Spatzlhobel in kochendes Salzwasser drücken, einmal aufkochen lassen, abseihen und eiskalt abschrecken.
Eine Pfanne erhitzen und den gewürfelten Zwiebel in Butter hellbraun anrösten. 13
Press the dough throug a screen into the boiling saltwater. Let it boil once, strain it and quench it with cold water.
Heat a pan and fry the onion in butter light brown.
Die Spatzln in die Pfanne geben und anrösten bis sie heiß sind. Den Käse unterheben und zerlaufen lassen.
Place the spätzle in the pan and fry until they are hot. Lift the cheese and let it rumble.
Die Kasspatzln mit Salz und Pfeffer abschmecken und mit Röstzwiebeln und Petersilie anrichten.
Season with salt and pepper and arrange with onion and parsley.

Fish in a Pot. In the old days the fishermen made this dish when they were at sea. They put chopped vegetables ond fish in layers in a pot and added water, butter, salt and pepper. Then the pot was put on the hot boat engine to boil. Hours later dinner was ready. This is a modern version made in the school kitchen for 4-5 persons: 400 g cod 2 leeks 2 carrots 2 potatoes 1 onion 1/2 tin of chopped tomatoes salt, peper 75 g butter 2 dl cream
1)
Peel, rinse and chop the vegetables in thin pieces. Cut the cod in pieces of 3 cm.

Melt the butter in a pot and saute` the vegetables. Take half the vegetables out of the pot and put the cod in.
3)
Sprinkle with salt and pepper and add the tomatoes. Put the vegetables back in the pot.
4)
Add cream and leave the dish to boil for about 30 min over low heat under a lid.

Maskintorsk
400 g torskefilet 2 porrer 2 gulerødder 2 kartofler 1 løg 1/2 ds hakkede tomater salt, peber 75 g smør 2 dl fløde
1)
Skræl, skyl og snit alle grøntsager i tynde skiver. Skær torsken i 3 cm store stykker.
2)
Smelt smørret og svits grøntsagerne. Tag halvdelen af grøntsagerne op og læg torsken i.
3)
Drys med salt og peber. Læg torsken i og tilsæt tomater. Kom grøntsagerne tilbage i gryden over torsken.
4)
Hæld fløde i og læg låg på.
5)
Retten koger ca. 30 min over lav varme under låg.

Peel the potatoes and cut them in quaters.

Shake the potatoes with oliveoil, salt and oregano in a plastic bag. 3) Put them in the oven and leave them to fry for about 30 min on 180` 4) Dip the fish in egg and breadcrumbs with salt and pepper.

Fry the fish in butter.

Serve potatoes and fish with lemon, remoulade and ketchup

How to do Tee näin 1. Add the quark in the bowl. Lisää rahka kulhoon.
2. Whip the cream and add in the bowl, if you like creamier quark (without cream quark is even healthier). Vatkaa kerma ja lisää kulhoon, jos haluat kermaista rahkaa (ilman kermaa rahka on kylläkin terveellisempää).

A TRADITIONAL FINNISH DISH
Sautéd elk with lingonberries, pickled cucumbers and mashed potatoes
4 servings | Cooking time 2-3 h

Ingredients 600 g elk meat 100 g butter 1 small onion, chopped 2,5 dl water 3 tsp salt 5 pieces of allspice 5 pieces of juniper berries
Ainekset 600 g hirvenlihaa 100 g voita 1 pilkottu sipuli 2,5 dl vettä 3 tl suolaa 5 maustepippuria 5 katajanmarjaa
How to make it – Valmistus 1. Take meat to come up to room temperature for at least half an hour before cooking. Cut the meat into thin slices, or use pre-chopped meat. Ota liha huoneenlämpöön vähintään puolta tuntia ennen valmistusta. Leikkaa liha ohuiksi lastuiksi, tai käytä valmiiksi pienittyä käristyslihaa.

2. Measure water (2.5 dl) in pot, add salt and spices. Preheat. Mittaa kattilaan tai pataan vesi (2, 5 dl), lisää suola ja mausteet. Laita kattila lämpenemään.
3. Soften onions in frying pan with butter and add them in the pot. Kuullota sipulit voissa. Lisää kattilaan.
4. Sauté elk meat in a frying pan in small batches in butter and add it in in the pot. Ruskista hirvenliha voissa pannulla pienissä erissä ja siirrä kattilaan.
5. Let the stew cook at low temperature for 1-2 hours until the meat is tender. You can tender the sautéd elk also in oven, in an ovenproof pot. Anna käristyksen kypsyä alhaisella lämpötilalla kunnes liha on pehmeää. Voit kypsentää käristyksen myös uunissa uuninkestävässä padassa.

Serve with lingonberries, pickled cucumbers and mashed potatoes. Tarjoa puolukoiden, suolakurkun ja perunamuusin kanssa.
MASHED POTATOES

Ingredients 1 kg potatoes 1-2 dl milk 1 small onion salt 2 tbs butter

How to make it - Valmistusohje 1. Peel the potatoes and place them in boiling water. Add small onion and the salt. Kuori perunat ja laita kiehuvaan veteen kattilaan. Lis채채 pieni sipuli ja suola.
2. Cook until potatoes are tender, about 15-20 minutes. Drain well. Keit채 kunnes perunat ovat pehmeit채, n. 15-20 minuuttia. Kaada vesi pois.

3. Add butter and mash potatoes and onion until no lumps remain. Continue mashing, gradually adding heated milk enough to make potatoes smooth. Lisää voi. Survo perunat ja sipuli sileäksi soseeksi. Jatka survomista ja lisää lämmintä maitoa kunnes perunamuusi on pehmeää.

Put baking paper on a small cookie tray and pour the mixture on top. Τοποθετούμε χαρτί ψησίματος σε ένα ταψί και στρώνουμε το μείγμα.
Bake it for 10 minutes. Let it cool down and cut it into small pieces with a knife. Το ψήνουμε για 10 λεπτά. Το αφήνουμε να κρυώσει και μετά το κόβουμε σε μικρά κομμάτια με ένα μαχαίρι.

Cretan dakos – Κρητικός ντάκος
Dakos are rusks made of barley which we use for the traditional veggie dish from the island of Crete. Below you can see the ingredients of our recipe: Ο ντάκος φτιάχνεται από κριθαρένια παξιμάδια, τα οποία χρησιμοποιούν στο παραδοσιακό τους τραπέζι στην Κρήτη. Τα υλικά παρασκευής της συνταγής είναι τα ακόλουθα:

MINCED MEAT ΓΕΜΙΣΗ ΚΙΜΑ
1 kgr of minced meat 1 κιλό κιμά 350 grams of chopped tomatoes 350 γρ. ντομάτες ψιλοκομμένες 1-2 spoonfuls of tomato paste 1-2 κ.σ. ντοματοπελτέ 53
125 grams of white wine (retsina) 125 γρ. Ρετσίνα 2 chopped onions 2 κρεμμύδια ψιλοκομμένα 75 grams of olive oil 75 γρ. λάδι 1 cube of beef 1 κύβο βοδινό 4 egg whites 4 ασπράδια αβγού A pinch of red pepper, black pepper, salt 1 πρέζα κοκκινοπίπερο, μαύρο πιπέρι, αλάτι 2-4 small pieces of garlic 2-4 σκελίδες σκόρδο Flavours: 1 spoonful of parsley, 1 spoonful of peppermint (both chopped) αρώματα: 1 κ.σ. μαϊντανό, 1 κ.σ. δυόσμο ψιλοκομμένο Spices: 2 pinches of oregano, 1 pinch of clove, cinnamon, coliander and a leaf of daphne μπαχαρικά: 2 πρέζες ρίγανη, 1 πρέζα γαρύφαλλο, 1 πρέζα κανέλλα, 1 πρέζα κόλιανδρο, ½ φύλλο δάφνης Besamel cream 4 δόσεις μπεσαμέλ(με τους 4 κρόκους του αβγού)
Preparation: Προετοιμασία:
1. Κόβετε τις μελιτζάνες σε μακρόστενες φέτες πάχους 1 εκ. περίπου. Τις αλατίζετε, τις αφήνετε στο αλάτι για 30', τις πλένετε, τις στραγγίζετε και τις σκουπίζετε καλά. 1. Slice the aubergines (about 1 cm wide). Add some salt and leave them for about 30’ minutes. Then wash, drain and wipe them.
2. Κόβετε ίδια και τις πατάτες και τα τηγανίζετε μέσα σε μπόλικο καυτό λάδι. Τα στραγγίζετε καλά σε σουρωτήρι και χαρτί κουζίνας. 2. Slice the potatoes and fry them in plenty of oil. Then drain them well.

3. Σε κατσαρόλα βάζετε το λάδι να ζεσταθεί και τσιγαρίζετε ελαφρά το κρεμμύδι και τον κιμά. 3. Heat some olive oil in a saucepan and brown the onion and minced meat.
4. Σβήνετε με το κρασί και το ζωμό. Προσθέτετε τα μπαχαρικά, λίγο νερό και βράζετε τον κιμά για 45'. 4. Add the wine and the cube of beef. Then add the spices, a bit of water and boil the minced meat for about 45’ minutes.
5. Στη συνέχεια προσθέτετε τη ντομάτα, το ντοματοπολτό, το σκόρδο, τα αρώματα και το αλάτι και τα αφήνετε να βράσουν μέχρι να δέσει η σάλτσα. 5. Afterwards you add the tomatoes, the tomato paste, the garlic, the flavours and the salt and let them boil until the sauce is fine.
6. Αφού χλιάνει ρίχνετε τα ασπράδια και ανακατεύετε. 6. Let it cool for a while and then add the egg whites and stir the mixture well.

4. Knead dough with your hand for about 10 minutes. If needed, add a little water. Dough should be tender and smooth. Cover it with food wrap and put away for 15 minutes to let it rest. Preparation: Preparación: Start the sofrito with the onion in small dices. When transparent, add the pepper (cut the same way), and after add the tomatoes.
