Head Chef, Boathouse on Blackwattle Bay Head Chef at one of the most picturesque restaurants in Sydney, Colin gives us an insight into his background before revealing the Insiders’ choices for restaurants to savour your free bottle of award winning wine with the Best View. Colin, what’s your background? I first joined the kitchen at the Boathouse as Senior Sous Chef in 2007. That was under the guidance of then Head Chef Perry Hill. I worked with Liam Tomlin at Banc, before winning the NSW Lexus Young Chef of the Year Award in 2005. I then worked alongside Warren Turnbull of Assiette before heading to the UK as Senior Chef de Partie under Brett Grahame at The Ledbury. What’s your restaurant’s food style? As a keen fisherman, I present an ever changing daily menu of Australian contemporary cuisine, using a combination of Mediterranean and Asian influences and the best quality seafood and produce available. What do you like to eat when you’re at home? A slow cooked shoulder of lamb is a household favourite. I like to use whatever catches my attention at the markets. Three quirky facts about you? –– I love cooking with my two year old daughter. –– I love tea and biscuits, one cup of tea usually means one pack of biscuits… –– I’m a mad fisherman, I once stored bait and burley in the freezer. My wife hated it!

Hugh Hamilton, the fifth generation of the family that planted Glenelg’s first vineyards in 1837, is a firm believer in the wine and food experience. Producing wines with character, and complexity, which are a delight to drink, the family follows a ‘minimal’ approach to viticulture, applying minimal water to the vines to produce small concentrated bunches of berries, jam-packed with taste. With a back drop of the Darling Ranges, this stylish restaurant, which overlooks vineyards and rural properties, was specifically designed with floor to ceiling glass to make sure diners could enjoy uninterrupted views. Peter, what’s your background? I began my cooking career in 1972. Since then, I’ve opened a series of highly regarded restaurants such as Cicada in Potts Point and Celsius in central Sydney. I have also been an in-demand guest chef, cooking at the Raffles and Ritz Carlton Millenia hotels in Singapore, the Lanesborough Hotel in London and on board Cunard’s QEII from Brisbane to Sydney. In 1991, I was appointed Australian consultant chef to American Northwest Airlines. I also have my own cookbook, The Golden Flavours of Summer. What’s your restaurant’s food style? I’m a founding father of Modern Australian cuisine. We present seasonally driven dishes that are executed with French-influenced precision. I like the interplay of classic harmonious flavours enhancing the principal ingredient with restraint and simplicity. What do you like to eat when you’re at home? Simple and fresh, anything my wife cooks, it’s always good. Three quirky facts about you? –– I love ice cream. –– For me, a prize-winning dish means integrated flavours with perfect cooking technique. –– I believe you know a great dish as soon as it’s presented to you.
