ANDREA CAMASTRA

One of Poland’s most talented and progressive chefs today, his accolades include a latest Michelin star for NUTA, and also previously at Senses. He is named amongst the world’s 100 Best Chefs by Le Chef and honored by the Republic of Italy as one of its most renowned culinary professionals.

Plac Trzech Krzyzy (Three Crosses Square), in Warsaw’s heart is known for the historic neoclassic church, St. Alexander’s. Today there is another divine attraction here—NUTA, the recent Michelin-star awarded culinary home of the celebrated chef Andrea Camastra! Italian-born, he perfected his natural abilities at top venues across Europe, while also earning his master’s at Oxford. As Warsaw’s good fortune would have it, he chose this city to grace with his creative genius. His inspired creations are parts of set-menus, made with the confluence of sublime artistry, techniques of molecular gastronomy, yet endowed with an artisanal wholesomeness. The name NUTA refers to his philosophy of the ‘note-by-note’ steps of flavors, metaphoric rungs which make one ascend to gastronomic heaven! There is indeed an all-enveloping harmony which one experiences with Camastra’s craft, an unsaid testimony to his ingenuity.

A full range of excellent breakfast is served at Baczewskich daily: Mon to Fri, 8 to 12; Sat-Sun, 9 to 12.

Family Sundays: Families and friends can spend time in a festive environment; from 12 noon to 4 pm an instructor conducts classes in English, animations, games, and varied activities for kids.

Unique events can be organized in the large spaces within the restaurant as well as in the surrounding garden.

Baczewskich is located within a NeoRenaissance palace in the center of Warsaw; built in 1895 it was one of the few buildings that survived the Second World War. The restaurant evokes the nostalgia of the 1920s and 30s, and is the younger sibling of Baczewskich in Lviv, Ukraine. Chef Dmitriy ‘Dima’ Babak, brings his immense experience in bridging the modern with the traditions of Galician cuisine. For example, scallop carpaccio with black truffle reflects the contemporary, while the lamb shank with mashed potatoes and caramelized vegetables conveys the more traditional! In addition, Chef Babak always serves unique dishes from outside the menu, ostrich tartare and shark steak are examples. The ethos here is of feasting and fun in the environment of a ‘special occasion’ with piano and music, and well-attired service! A sophisticated wine list, as well as cocktails, classic liquors, and original tinctures all made in-house, are joyously served. Delightful indeed!

Restaurant Concept 13 is located on the 5th floor within VITKAC, the splendidly designed shopping landmark in Warsaw’s center. With Chef Rabie Abed Alsalm at the helm, it is doing as much for the advancement of the city’s gastronomic credentials, as the premises that it is in, is doing for the world of high-fashion and style! Sophisticated interiors define its cutting-edge, contemporary intentions, and reflect on the place’s culinary direction. Here is a modern international menu suffused with elements of fusion that makes its gastronomic idea interestingly well-rounded and complete. An open kitchen is at its core, from which emanates impressive preparations such as the fish soup with seafood and coriander; or the grilled octopus with tataki sauce. There is the menu of the day, and an extensive wine list of course. The summer terrace with its panoramic views, indeed makes this a very special venue, once only imaginable!

CONCEPT Food & Wine, located at Plac Koneser, the reincarnation of the historic 19th century Warsaw Vodka Factory, combines outstanding dining, a lovely bar, and an exciting sideview to the finest cars in the world as part of the high-end auto club, GAMA CONCEPT. The restaurant offers exciting interpretations of European and Polish traditional foods; each dish presented in a contemporary twist yet igniting a sense of nostalgia. Authentic flavors are an opportunity to reminisce about carefree times, of family get-togethers where the span of generations came together; the modern presentations representing the young and the new! Dishes such as the Silesian kluski with vege demi-glace, Polish cheese, and cranberries; or the Spanish Iberico pork chop with sour cream, potatoes, and dill are fine examples. Fine service, outstanding wines, and cocktails from the bar further ensure that meetings at Concept Food & Wine always end on a happy note!

Both have been recognized by Forbes as amongst the Top 50 Restaurateurs in Poland in 2024. Partners in life, they are the visionaries behind the EATERY and their latest, the EATERY trad. (see next presentation).

AGNIESZKA DUBAS, MARCIN MAZUR

This innovative restaurant in Warsaw’s center, the EATERY, has garnered a reputation for the reimagining of traditional Polish home-cooking into its modern presentations. The adherence to creating everything in its kitchen is one reason why the quality is stellar. Much demanded by guests, as examples, are the onion flatbread with onions, poppy seeds, and salt; or the slow cooked ribs, for over eight hours in dark beer, topped with honey glaze! The menu pairs well with the natural wines and artisanal beers on the list. This remarkable venue is a consequence of the creative energies of hotelier-restaurateur Marcin Mazur and Agnieszka Dubas, fashion stylist and the EATERY’s interior designer! The internal space, with rattan and marble, with each element custom-designed, with music and film as part of the decor, serves to meditate one’s mind on the artful composition of the plate. An outstanding experience!

TOP FINE DINING ›

A culinary encore of the EATERY now happily graces Warsaw’s Powisle in the form of the much appreciated, the EATERY trad. It bestows an authentic experience of traditional Polish cuisine thoughtfully prepared using the finest recipes from various regions across Poland. Signature cocktails, artisanal Polish beers, and natural wines have been meticulously selected to pair with and enhance the rich flavors on the menu. Founders Marcin Mazur and Agnieszka Dubas have created here as well the same welcoming ambiance which captures the warmth that should go with high-class Polish culinary traditions. Each dish on the menu can either be had as an appetizer or as a full serving, an innovative way to enable sharing as well as allowing a wider sampling of the kitchen’s excellence. Dishes such as the fish soup, pork jelly with marinated boletus, the pyzy or dumplings with various meat fillings, and much more, are all outstanding both in flavors as well as in their modern presentation. Awesome!

EPOKA has achieved brand stardom too in the gastronomic arena! Old Polish recipes from antique cookbooks are recreated in modern interpretations, with an emphasis on sustainability— fresh products from local suppliers and zero food waste! Chef Przybysz’s two tasting menus are thus epochs-based, culinary episodes titled History and Short History. His culinary creativity is a bridge connecting the old with the new; each course a discovery, a modern interpretation of a recipe from the old reaches of Poland’s kitchen history. Deriving inspiration mainly from Thailand, Vietnam, and Japan; each dish tempts with color and flavor, all made with an extreme importance given to the quality of ingredients— fresh herbs and spices such as lemon grass and coriander, and quality seafood and meats such as fine lamb. A specialty here is omakase dining, getting an insight from the Chef into the secrets of Asian cuisine! A special table with a window opening into the kitchen allows one to witness and converse with him— mentioning one’s favorite ingredients results in unique customized dishes at the table! The place reflects true Asian hospitality combining wonderful service by an experienced service staff, delivering a harmony of flavors, in an inviting atmosphere. For over a decade HOZA remains one of the city’s top Argentinian-inspired steakhouses, now under owner Lukasz Stachura’s direction. Located in a building which dates to 1900, its exposed brick walls, unique art and antiques reflect a sophisticated yet cozy ambience. Chef Karol Dabrowski is at the restaurant’s culinary helm, his 15-year experience ensuring the high quality of the kitchen’s output. The Argentinean-Latin thrust in the menu is evident; the beef or provolone stuffed empanadas, the parrillada with its varied mix of meats, and the paella with prawn, octopus, and squid, are all excellent, complemented by wine selected from the over 150 titles stocked in the cellar. Dining within the orangery, in its delightful private room which seats 10, or in the large summer garden in the courtyard, this is an outstanding venue where professional service and positive energy makes it all so delightful!

Chef Adam Anikiel, in his words—"I derive enormous joy from cooking. I love my work. It's great to meet interesting people and feed them well. Everything I do is in harmony with nature, flavorful, not excessive, and with heart!”

KLONN’s reputation is the result of its dedicated team and the vision of owner Miroslaw Nizio (of architectural studio Nizio Design). Head Chef Adam Anikiel brings his experience from prestigious restaurants such as The Ledbury in London, and The Farm, and Concept 13 in Warsaw. At KLONN, Adam’s creations combine traditional Polish recipes and the richness of local ingredients with his own experiences, memories and tastes, creating a uniquely new vision of contemporary Polish cuisine; fresh and simple, the unexpected accents make dining here a unique experience. Wine selections are advised by expert sommeliers who consider wine pairing, not just based on the food and its flavors, but also according to one’s mood and preferences. And natural labels in the extensive wine collection here enhance the amalgamation of gastronomy, and hospitality. His sophisticated haute-cuisine approach elevates local cuisine into delightful compositions!

MACIEJ MAJEWSKI

Chef Maciej Majewski has carved a niche for himself; his philosophy emphasizes a refined palette of flavors, the freshness of ingredients, and palpable creativity served in delightful compositions. At the elegant KUK, healthful products from trusted sources are pillared upon the inspiration from regular, local dishes, combining further with Maciej’s artistry of having “fun with form and content.” What emerges with his sophisticated haute-cuisine approach are unique, elevated interpretations. His differentiation is further evident in the structure of the menu with its two sections titled simply, “I like it salty” and “I like it sweet.” The style here is neo-bistro, where the motto of ‘eat-taste-share’ bestows an air of informality. The preference here at KUK is for families and friends to celebrate, to relax and take their own time in a backdrop of fine interiors, great service, and outstanding culinary enterprise!

Located on the prestigious Royal Route in the very heart of Warsaw, The Lobster House, as its name suggests, specializes in seafood. With its revolutionary approach to sustainable procurement, the freshest lobster, crab, oysters, mussels, clams, and much more are brought in daily from the restaurant’s own marine aquariums. In its modern interior (and a lovely terrace when the weather permits), Chef Marcin Legat serves a delectable menu; his passion for combining tradition with innovation has solidified the restaurant’s reputation as one of the premier seafood restaurants in the country. The menu also includes must-haves such as the lobster bisque; the oriental soup with baked lobster and coconut milk, scallops with spicy sauce and wakame; Scottish crab with homemade fries; and quality meat ensembles served as well. With attentive, informed service, and a wide array of wine and champagne from the world’s best producers, this outstanding venue delivers complete culinary joy!

La Luce has indeed come to be that shining light in the heart of Warsaw! Here, a serious gastronomic thrust by Chef Wojciech Swiesiulski has helped illustrate Italian dining with its higher, more modern possibilities. A sophisticated menu showcases evolved dishes from what is a regionally diverse cuisine. Few examples that highlight the culinary merit include the much-ordered stracciatella, with the finest Italian tomatoes, basil and almonds; the misto maro, or the mixed grilled seafood with prawns and squid with nduja and fennel; the pasta orecchiette with truffle and parmigiano; and the tagliata di manzo, where the beef is evenly seared. This is a place which impresses not only with the excellence from its kitchen, but also with the juxtaposition of impeccable service— the deep knowledge of the menu, of which wine goes best, and the pervading passion to please with an elegant, cultured approach. Always memorable!

The name Jacek Grochowina has become synonymous with topmost culinary credentials. Indeed, this star chef’s modern venue, NOLITA, has become a standard bearer for what fine dining in its highest forms should be. This gastronomic juggernaut is a reflection in Warsaw of similar inspiring culinary landmarks in Manhattan’s same-named neighborhood where traditions and modernity have combined! With his history that includes working at the Ritz in London, this internationally awarded chef has carved out his own amazing niche; in NOLITA’s graceful modern setting his menu surpasses with profound creativity. Seasons play an immense role as do the trusted sources of his products and ingredients. Ristorante San Lorenzo, ever since opening its doors in 2000, has become the standard bearer of fine Tuscan cuisine in the city. Spread over two majestic floors with tables dressed in crisp white and frescoes adorning the walls, the image here conveys the place’s seriousness. Chef Luca Dolfi, a Tuscan native, has for over 15 years brought his creative experience to bear with remarkable consistency; this comes alive in a menu that is close to traditions, one that uses the finest ingredients, and which is then served with stateliness. The culinary celebration here is evident in items such as the salad with steamed shrimp and fresh arugula; the ravioli with sea bass stuffing; and the grilled Steak Florentine, served with baked potatoes, and flavored with rosemary. Outstanding desserts and an extensive wine list complete the equation, ensuring San Lorenzo’s place amongst the top in fine dining!

The interiors are a feast for the eyes with high ceilings, wood paneling, and furniture that straddles the rustic with the elegant. Smiling chefs ceremoniously prepare items such as beef tartare, table-side on trolleys, much to the delight of guests. As further examples, Polish ‘ravioli’, or pierogi, such as with veal, cabbage and mushrooms, goat cheese, and cottage cheese and potatoes; Zurek, the sourdough-based soup; the oven-baked succulent duck; and the venison braised in red wine sauce served with Silesian dumplings and pan-fried beetroot, are all simply outstanding. The emphasis is on simplicity and quality, and on the careful selection of ingredients. The marinated turnips with bluefin tuna, citrus salad and truffle ponzu; or the tenderloin with ginger and roasted sesame, are examples where the naturalness of the ingredients flows through. Restaurant Warszawska located within the Hotel Warszawa conveys its ‘special-ness’ with its large open glass kitchen, and its expansive modern space that is such a unique characteristic of it. This is an apt home where standards of Polish cuisine are enhanced by Chef Dariusz Barański’s skills. While they still emerge named as the classic beef tartare; or dumplings with potatoes, with wild garlic and gravy; or the slow-roasted sea bass with hollandaise sauce, the difference lies in their making. Only local, organic, seasonal products are used, derived from trusted, regional suppliers. Cold meats are cured in its own smokehouse on premises, cheese is made with traditional methods, the bread baked from organic grains, and even the ice cream made from natural milk. Great for lunch and dinner, breakfast is served as well with fresh fruit and vegetable juice always served. Polish hospitality at its true best!

JĘDRZEJ AND LILIANNA LEWANDOWSKY WITH THEIR WOOD-FIRED FORNO ACUNTO ANGOLARE!

Jędrzej Lewandowski represented Poland at the Olimpiadi Vera Pizza Napoletana 2018, the International Olympics for Neapolitan pizza making where over 200 professionals from all over the world took part. His ‘Margherita’ brought the team high recognition and was amongst the top ten ‘Under 35’ medalists. In 2024, Jędrzej and Lilianna also took part in the ‘La Pizza Più Alta d’Europa’ expedition, during which the AVPN association baked a wood-fired pizza at an altitude of 3,466 meters at the summit of Mont Blanc. Bravo!

WORLD & EUROPEAN AWARDS & RECOGNITION

- Ranked #97 amongst 100 best pizzerias in the World by 50 Top Pizza World, Napoli 2024;

- Ranked #20 amongst 50 Top Pizza Europe, Madrid 2024;

- Awarded ‘Top Pizzeria in Poland 2024’ and ‘Best Fried Food Europe 2024’ in Madrid 2024; - Ranked #44 at the Campionato Mondiale Della Pizza, Parma 2023;

- Ranked #46 and #47 amongst 50 Top Pizza Europe 2023 Madrid and 2022 Milano.

When Jędrzej and Lilianna Lewandowsky decided to give up their jobs as architects to pursue their passion, the couple turned their studio into a restaurant. Little would they have known that their endeavor, Zielona Gorka, in Pabianice (near Łódź), would one day be ranked amongst the Top 100 Pizza restaurants in the world! It is recognized by the Associazione Verace Pizza Napoletana (AVPN), the authority for verifying true authenticity; these standards are now enshrined within the UNESCO Cultural Heritage List! The kitchen at Zielona Górka is akin to a theater stage; interestingly the pizzaioli (pizza chefs) working here are also accomplished musicians who have a shared passion for making pizza! Their “instrument” here though is a genuine wood-fired brick oven, a Forno Acunto Angolare; the “symphonies” emanating from which are the over forty types of pizza for which guests arrive from far and wide to savor and applaud. This workshop of passion is a true, living masterpiece!

Michelin recommended Artesse, located steps from the Main Square within the former Lubomirski Palace, comprises the inference of ‘art’ within its name; this reflects on both its sublime culinary philosophy, as well as on its physicality wherein elements of classical art and the contemporary blend in its elegant, refined space. This visual ‘bridge’ from the old to the contemporary is the cursor for one to sense that the same link manifests in its evolved approach to gastronomy. Thus here, the best traditions of classic Polish are the foundations upon which Chef Mateusz Suliga exercises his modern culinary finesse to create compositions that become part of an extraordinary dining event. Served as courses within carefully designed tasting menus, each aspect packs a gastronomic high note. With the best pairing of wine, polished service, Artesse has indeed become a much recognized high-point in Krakow’s culinary landscape!

Cyrano de Bergerac’s top rung reputation as a French-inspired restaurant in Krakow goes back to when it opened its doors in 1997. Located just steps from the Main Square, its historic setting within a multi-level cellar, was once a place where mead or honey wine was brewed over 160 years ago! The décor comprising rich tapestries, antique furniture, and artwork goes together with an impeccable staff— all making dining here at a class which is now increasingly rare. The stellar menu is what attracts guests from all over— with starters such as fresh oysters, or the terrine de foie gras to exhilarating main dishes such as the Saint Jacques scallops with baked cauliflower, or the wild boar tenderloin with mushroom sauce and cabbage pancake. For dessert, the crème brulée with vanilla bourbon is always a favorite choice. And the well-compiled wine list, mostly French derived, is designed to pair excellently with the menu. Indeed, always a memorable experience!

The popular Pimiento Argentino Grill first opened its doors in Krakow 17 years ago. It specializes today in Argentinean and Japanese beef, as well as succulent seafood, all made traditionally. It serves guests at two top-notch locations, Kazimierz and Old Town, as well as from its latest, Shop&Bistro. Ingredients are flown-in from Argentina, Japan, as well as from the U.S. and Australia; each cut of beef is pampered in the kitchen to impart authentic flavors. Popular appetizers include the Argentinean tenderloin carpaccio, and the empanadas stuffed with beef. From its main courses, the three cuts of Argentinean prime beef with tenderloin, sirloin, and rib eye; the delectable Kobe beef fillet; or the rock lobster tail, are all stellar! As a word in Hebrew ‘Noah’ means rest, peace, and delight, and as a name we know it from the biblical Noah and his Ark. In a certain sense Restaurant NOAH is both— a refined venue where culinary fulfilment comes to a delightful rest, and an ‘ark’ which has brought the vibrant flavors from the streets of Israel to its natural home, Kazimierz the historical Jewish enclave in Krakow. The fusion between the food cultures of Israel and Poland has given NOAH a unique standout reputation. Seasonal and artisanal in its approach, the menu here is authentic yet unpretentious, and provides a happy nod to the urban multiculturalism of today. Dishes, for example, such as zucchini served on tahini with lemon and nuts; or lamb with cinnamon, pine nuts, tahini and pickled lemon, are truly fragrant, flavorful, and completely satisfying. And of course, these are designed to be shared with friends at the table. Krakow is indeed gastronomically richer with the presence of NOAH!

Pod Aniołami, which translates into Under the Angels, is located on what is known as the Royal Route, impeccably delivering its history. In the restored chamber upstairs, grand receptions are organized amidst the splendor of 18th-century paintings! Starters such as the carpaccio of smoked goose breast with skin, served with cranberries; mushroom soup with noodles. The grilled sirloin with capers and rosemary; the huntsman’s wild boar steak, marinated in juniper sauce, grilled over beech hardwood fire, served with grilled bacon, green pepper and red cabbage with raisins in wine, are all exceptional. A beech-wood grill serves a wide array of meats to be had perhaps in the medieval-style courtyard garden that’s open all year round. Desserts include sernik, the Polish cheesecake; or szarlotka, which is the local apple pie. Pod Aniołami is indeed a culinary experience from when real nobility paraded along the Royal Route!

Here the spirit of this much-loved cuisine resonates in modern interpretations at the hands of Chef Stanislaw Bobowski. His long experience, burnished by his wide travels, imparts an added edge to his creativity. Guests are simply delighted with flavors that spell authenticity. Authentic Neapolitan-style pizza!

Pizzeria Santa Maria, a quaint and cozy eatery, offers the finest Neapolitan pizza in the center of Krakow. Tucked away within a building entryway in the Main Square, its interiors convey a sense of the Italian countryside! Owner Jakub Adamyczyk has trained with Polselli, the world leader in pizza-flour milling, located near Naples. The highest grade of this special ‘Type 00’ classic flour, an authentic spectrum of Italian cheeses, fine cold cuts, imported tomatoes from the volcanic soils around Vesuvius, and hand-pressed olive oil— these are indeed the high-quality ingredients that are foundations of the Neapolitan-style pizza made here at Santa Maria. The philosophy in the kitchen, that besides ingredients and technique, great food also needs ‘love and passion’ during its process, is yet another reason that the food here is endowed with a certain magic. Pizza is everywhere these days, but at Pizzeria Santa Maria it is truly special and in a class of its own!
