AMBER ROOM
Amber Room, located within the Sobański Palace on impressive Av. Ujazdowskie, is both an architectural as well as culinary gem with an interior that spells absolute class. The menu comprises Polish cuisine with the personal touch and interpretations of Chef Robert Skubisz. His creativity has been honored over the years with a range of prestigious awards. The á la carte menu, seasonally inspired, is based on the highest quality ingredients sourced as much locally as possible. Dishes such as tuna tartare with avocado, ginger and lime; duck breast with pumpkin, spinach, figs, and Porto sauce; and lemon soufflé with Earl Grey ice cream, are all delectable. Recommended by the Michelin Guide, Amber Room is the only restaurant in Poland to have received the 4 Forks and Spoons award each consecutive year designating it as a luxurious restaurant!

ALE GLORIA
If one was ever in the need to suffuse romance into life, a visit to AleGloria would be very much in order! The bright interiors are the tasteful amalgamation of cream and strawberry, appeal of candle light, polished wood, and gleaming white laced table linen embellished with flowers. Famous restaurateur Magda Gessler is at the helm of affairs; her insights, her creativity, her culinary design, have made this place one of a kind where she has taken Polish cuisine to a new dimension. Tradition has been fused with modern ideas; the otherwise staple beetroot soup, barszcz, is elevated here multiple degrees with raspberry vinegar, black currant syrup, and served with white bean filled ravioli! With a vast selection of wine from its cellars, and an extensive selection of drinks, AleGloria is indeed Polish hospitality at its modern-day finest. An experience in a monumental setting!

Beef N’ Pepper, located in the center of town, has quickly established itself as leading steakhouse in Warsaw with a menu that is direct and to the point. Mostly used here is the finest-quality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are exhilarating indeed, each bite conveying to the palate that this is truly outstanding! Further completing the equation here menu-wise are items such as the chicken salad with seasonal vegetables and sousvide eggs; and the beef tenderloin soup with cheese and chilli. The excellent dining experience at Beef and Pepper is significantly enhanced by the place’s wellequipped bar, affording guests a rich array of interesting whiskeys, bourbons, wines and cocktails that combine exceedingly well with the menu. CHŁODNA 15 BY WILAMOWSKI
Chef Arkadiusz Wilamowski’s Chłodna 15 is the new talk of the town. His exceptional background of being trained in the world’s top Michelin starred restaurants, such as Alain Ducasse at the Dorchester in London, and at La Gouesniere under Olivier Valade, is now Warsaw’s good fortune. Chłodna 15 purveys a fine French and International menu, born of sophisticated technique, an abundance of wholesome Polish ingredients, and an exceptional wine list completing the equation. Wilamowski’s menu changes frequently as his emphasis is on seasonal, top quality ingredients; the restaurant’s own Homarium, enables the use of fresh lobster which is one of the Chef’s favorite culinary items. There is also a degustation menu for those who wish to sample the encompassing creativity. Mesmerizing desserts provide a fine exclamation mark to sophisticated yet easy dining. A definite culinary master stroke!

D. PAWELEK BRASSERIE WARSZAWSKA
The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

FINE DINING
Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla icecream. A comprehensive wine list, and friendly service make Butchery & Wine a top selection!
D. PAWELEK ROZBRAT 20
When Daniel Pawełek, one of the best regarded restaurateurs in town, gets behind an idea it is sure to win acclaim; an appreciation that is for the long haul. This track of success is what Rozbrat 20 is clearly on, enhancing the quality of life substantially in the trend-defining area of Powiśle. Here breakfast has been given top priority, at equal notching with lunch and dinner. An array of wines, freshbaked breads and pastries are highlighted in an interior that is elegantly simple. The main thrust is focus on quality and an emphasis on innovative creations — from eggs with avocado paste, to steaks and salads with ingredients sourced from local suppliers who are equally faithful to the idea of organic, seasonal, and fresh. With a dynamic menu that changes daily, the added service includes the option to purchase outstanding wines to take away or to sip on the spot!

FINE DINING
Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!
D. PAWELEK KIELISZKI NA HOZEJ
When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kieliszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

HOZA
Warsaw’s culinary trajectory was definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the War, the ambience here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. This is an outstanding venue where positive energy and friendly service makes it all so delightful!

Piotr Bienkowski founded the first Steak House in Warsaw over 30 years ago. As a member of the American Beef Club he was taught “steak secrets by none other than Tony Perini, the personal chef of George Bush. And now following in his immense footsteps his son Robert has opened Hunter, the new place in town for steak, seafood, and more! With personal supervision and strong unbending focus on quality, the place is already garnering rave reviews. Items on the menu that indicate culinary fervor include the grilled baby calamari with lemon salsa and coriander; T-Bone marinated in pepper, garlic butter and jalapenos; the cod baked in white wine, butter and herbs; and for dessert pear baked in wine with vanilla sauce. With a superb wine and drinks list, informed and friendly service, Hunter is indeed at the top of its game! Note: Monday thru Friday there are attractive prix fixe lunch specials!
KUCHNIA WARSZAWSKA
Kuchnia Warszawska, offers the finest Polish culinary traditions in an atmosphere enhanced by its location in the Old Town Market Square. Here rediscovered traditional recipes blend with modern interpretation at the hands of a passionate and experienced kitchen team. “Varsovian” cuisine is influenced by various cultures and incorporates several culinary traditions -- from the tables of Polish aristocracy, from faraway lands, from Jewish merchants, and from the culinary ingenuity of poorer workers as well. This extraordinary range is apparent in dishes such as the trout marinated in vinegar; Żurek, or the rye soup with boiled egg and white sausage; the Bryzol or the fried beef served with baked potatoes and candied beetroot; and the simply delicious cheesecake with chocolate sauce for dessert. Kuchnia Warszawska, is indeed a truly wonderful dining experience!

Alongside him is Sommelier Andrzej Strzelczyk who ensures that wine selections are paired perfectly with what is ordered on the plate. A new seasoninspired menu has dishes such as the roasted fillet of halibut, parsnip puree, root vegetables, pommery mustard and vanilla sauce; all faithful indications of the Chef’s impressive creativity. Marconi Restaurant, located within the iconic Hotel Bristol in the heart of Warsaw has its own separate entrance from Karowa Street, offering a relaxed dining experience throughout the day. Executive Chef Michał Tkaczyk has created an exhilarating, modern menu which emphasizes the finest seasonal produce derived from local farms and trusted purveyors. One can savor Polish beef tartare, a light salad, or select charcoal grilled steaks and seafood. And of course a fine wine list and drinks adds much alongside mesmerizing desserts prepared by the famous Hotel Bristol patisserie. Overlooking Warsaw’s most intimate patio, the restaurant is a great setting for casual meals, business meetings, family gatherings or romantic dinners. Special moments here include the popular Sunday Brunch, and Afternoon Tea served in the adjacent Column Bar.
MOKOTOWSKA 69
Mokotowska 69, is the next culinary venue by Andrzej Rudnicki-Sipayłło, known from his landmark restaurant Merliniego 5. His over thirty years expertise, drawing from his work experience in New York’s finest restaurants, “brought” Manhattan to Warsaw when he opened Merliniego-5 in 2010. Restaurant and Bar Mokotowska 69, which opened in May 2016 in the center, inherits this success. Essentially specializing in seafood and steaks, classic Polish dishes with a contemporary interpretation are on the menu as well. The excellent, seasonal wine list comprising selections from all over, matches the dishes ideally on the seasonally varying menu. Items such as the halibut with carrot puree; the rack of lamb; the Black Angus rib eye from NYC’s Ottmanelli and Sons; and the Kobe style strip loin from Tajima, are indications of the place’s emphasis on top quality. This long unfaltering collaboration over the years between owner and chef has resulted in interesting variations such as Pizza Pizzaiolo with Parma ham and arugula, spaghetti with mussels, and the much-indemand pork fillet with mushroom sauce. With a well-appointed bar which leads to a chic, semi-private chamber, great homemade desserts, a committed and friendly staff, and an endearing value-for-money ethos, Giovanni is where everyone wants to come back to over and over again! EL GRECO
El Greco has become the yardstick in Warsaw of what a fine Greek restaurant ought to be. An intrinsic part of the culinary landscape of the city, most dining decisions made in this bustling part of town must include El Greco in their calculations! Its atmosphere is so thoroughly inviting, supported by a menu that is replete with excellent flavors, just perfect for those idyllic Mediterraneancharmed lunches and dinners. Especially imported ingredients impart authenticity to the menu; items such as the horiatiki, which is the traditional Greek salad with tomatoes, cucumbers, peppers, feta, and kalamata olives; the souvlaki kotopoulo, or the chicken shish kebab with fries served with pita and tzatziki; the arnaki me melitzanes, stewed lamb in wine and tomato sauce; and for dessert the braised pear served with delicate yoghurt cream, are all outstanding. IN KRAKOW FIORENTINA
The exhirating new restaurant in town is Fiorentina, the inspiration for which of course is Florence, a city suffused with the spirit of the renaissance. The interiors here reflect the idyllic clime of sunny Tuscany combining magically with the unique architecture of Krakow. The restaurant takes its name from the unique cut of meat, a part of the sirloin, which is the reason why the perfectness of the Florentine steak is legendary. The team in the kitchen strives with utmost care and attention to detail, transforming the act of a meal into veritable culinary journey. The menu features traditional Italian recipes, always created with fresh and non-processed ingredients, crafted and served with modern interpretations, with unconventional arrangements and combinations of flavours. With terrific service and an expansive wine list, Fiorentina is yet another feather in Krakow’s culinary cap!

IN WARSAW H15 BOUTIQUE HOTEL
The H15 Boutique Hotel, a 5-star boutique hotel in Warsaw’s center, is the repository of huge history. Built during 1892–1897, it was here before the First World War that Polish patriots organized secretly to regain Poland’s independence. In 1924 the building was bought by the Soviet Union, becoming an example of socialist realism with symbols of the ‘red star’ and the ‘hammer and sickle’, carved figures of peasants and workers, and the Soviet Union Globe above the first floor balcony. In 1941 the building was taken over by the Third Reich, paradoxically saving it during Warsaw’s destruction. Now, H15 Boutique has 46 individually appointed luxury rooms and apartments for short or long stays, with comfort levels beyond that of most luxury hotels in Warsaw. With the SPA which ensures the highest quality services, and fine dining at the Signature Restaurant, H15 is indeed a class act.
