Amber Room, located within the Sobański Palace on impressive Av. Ujazdowskie, is both an architectural as well as culinary gem with an interior that spells absolute class. The menu comprises Polish cuisine with the personal touch and interpretations of Chef Robert Skubisz. His creativity has been honored over the years with a range of prestigious awards. The á la carte menu, seasonally inspired, is based on the highest quality ingredients sourced as much locally as possible. Beef N’ Pepper, located in the center of town, has quickly established itself as leading steakhouse in Warsaw with a menu that is direct and to the point. Mostly used here is the finest-quality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are exhilarating indeed, each bite conveying to the palate that this is truly outstanding! The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!


D. PAWELEK KIELISZKI NA HOZEJ

When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kieliszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

Warsaw’s culinary trajectory was definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the War, the ambience here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. La Rotisserie is located within an architectural gem, the elegant Mamaison Hotel Le Régina in a magical part of Warsaw’s Old Town. Mokotowska 69, is the next culinary venue by Andrzej Rudnicki-Sipayłło, known from his landmark restaurant Merliniego 5. His over thirty years expertise, drawing from his work experience in New York’s finest restaurants, “brought” Manhattan to Warsaw when he opened Merliniego-5 in 2010. Restaurant and Bar Mokotowska 69, which opened in May 2016 in the center, inherits this success. Essentially specializing in seafood and steaks, classic Polish dishes with a contemporary interpretation are on the menu as well. The excellent, seasonal wine list comprising selections from all over, matches the dishes ideally on the seasonally varying menu. Items such as the halibut with carrot puree; the rack of lamb; the Black Angus rib eye from NYC’s Ottmanelli and Sons; and the Kobe style strip loin from Tajima, are indications of the place’s emphasis on top quality. A sure success which adds to Warsaw’s culinary landscape!

Located in the Old Town Main Square, Restaurant “U Barssa� is one of the oldest and most famous restaurants in Warsaw. Its hospitality traditions date back to the nineteenth century and the place indeed transports one to a time that once was, serving a traditional Polish menu which has its roots in the kitchens of past aristocracy.
