There are few summer treats quite as delightful as a grilled peach.
The kiss of the grill enhances the peach’s natural sweetness and brings a new dimension of flavor unlike anything else. How is it done? First, select slightly firm peaches: fully ripe peaches have more sugar, and are thus more inclined to burn. Halve your peaches and use a spoon to scoop out the pits. Brush each half lightly with olive oil to prevent sticking. Grill over medium heat directly on the grates until more tender, yet not falling apart. Grill marks are the surest sign that they're ready to enjoy. Once grilled, you can eat the peaches right away, or top with a scoop of ice cream. Grilled Peach Pizza
Pizza dough 1/4 c. honey 1 c. balsamic vinegar Grilled peaches 1 T. Olive oil 1 clove garlic, minced 3 oz. prosciutto 5 oz. Mozzarella Fresh basil
Prepare the dough (see the Great Pizza Crust for Grilling recipe). Combine honey and balsamic vinegar in a wide pot or skillet over medium heat. Simmer until reduced to under 1/2 c., stirring constantly. Sprinkle pizza with cheese. Spread prosciutto over pizza. Gently slice peaches and layer evenly over pizza. Grill until cheese is cooked to your liking. Sprinkle with fresh basil and drizzle with balsamic reduction to serve.
Grilled Peach Caprese
Grilled peaches Burrata Basil Balsamic reduction (above)
Slice peaches. Chop basil and burrata. Drizzle with balsamic reduction.
Lemon Pistachio Grilled Peaches
Grilled peaches Ricotta Lemon zest Roasted pistachios, chopped Honey Basil, chopped Combine ricotta and lemon zest, salt and pepper to taste. Scoop onto grilled peach halves. Sprinkled with pistachios, a drizzle of honey and basil.
