transported from Somerset on oversized trailers pulled by semi trucks. The hefty houseboat was designed and built by one the nation’s leading houseboat manufacturers, Sumerset Houseboats & Cruisers. CEO and president of Sumerset, Steve Lochmueller is certain that the claim of this vessel as the world’s largest aluminum hull houseboat is undisputed. The Tammi T is the largest houseboat to his knowledge and the biggest Sumerset has ever built in its 40 plus years of business. So how big is it?
It may surprise you to learn that the world’s largest houseboat is docked at Craig’s Creek Boat Ramp at Laurel Lake in Corbin. At nearly 24 feet wide and 124 feet long, the collosal boat calls Kentucky its home. Christened the Tammi T, this dreamboat set the standard for luxury on the waves in Kentucky. To get to the water, the Tammi T traveled by highway. Each of the boat’s two decks (the second story cabin alone is 72 feet long) were

The cost of the Tammi T was around $1.5 million and took about six months to design, build and deliver. Amenities on the twostory boat include a spacious salon and galley with top-of-the-

line appliances, two steam showers and whirlpool style bathtubs. There are nine plasma televisions, an electric dumbwaiter from the main galley to the upper level, a custom roof bar with built-in blender, refrigerator and barbeque grill. For the ultimate in relaxation and recreation, there is a 12-person hot-tub, a custom outdoor patio bar with a built-in BBQ, and deck storage for personal water crafts. This houseboat even has a helicopter pad! The dock at Laurel Lake accommodates the new slip for the Tammi T, an additional houseboat and a place for pontoons and ski boats. What’s it take to power the largest recreational vessel of its kind? It has twin 5.7L Gas Mercuisers engines with Bravo II outdrives.The engines each produce 300 Horse Power. The fuel tanks hold 190 gallons of fuel for the engines and dual generators that power the multiple HVAC units and other systems requiring electricity. The houseboat is equipped with a separate 92 gallon tank and pump for refueling personal water craft and other water toys. Without doubt, the world’s largest houseboat will continute to gain notice and respect from the highend houseboat community worldwide. Boating 101 There are all sorts of classes to teach people how to drive a boat. But you never see classes for passengers. Knowing how to be safe on a boat as a guest is just as important as knowing how to be a driver. What do you need to know to be a good boat passenger? By Amanda Harper First, obey signs. It’s the easiest rule to follow, but also one of the easiest to forget as soon as you start having fun. Look around yourself and familiarize yourself with the posted rules and regulations of the lake, dock or marina you’re visiting. No open containers, no running, no swimming, no fishing, no hunting, no speeding--there are plenty of rules that you might be subject to. Know what you can and cannot do. Similarly, obey the law. Even if there’s no sign posted, you still have to follow the letter of the law. If you cause your host to rack up a ticket, it puts you both in an awkward situation and ruins the mood of any day on the lake pretty quick. If you’re imbibing adult drinks onboard, don’t take the wheel. Drunk piloting a boat is drunk driving--period. Avoid becoming intoxicated on the boat. Intoxication can quickly lead to avoidable accidents. Swimming while inebriated is a bad idea. It’s helpful to know how to drive a boat if you’re on board. Learn a little bit about driving a boat. Be up front with the driver about your level of experience. If the driver has to step away from the wheel, it’d be nice if there was someone on board who could take over. Knowing a little first aid is great, too!
marking up the deck. Wear appropriate clothing for the weather--obviously--but don’t forget that unexpected rain showers do happen. Come prepared! If you plan to swim, wear your swimsuit. But bear in mind that you should wear a coverup to protect yourself from the sun (the water reflects light upward, so a hat won’t help you keep your face from burning--remember sunscreen!) Also, pack a towel to sit on if you get wet. Don’t litter. Ever. But don’t litter on the lake. Not only is it rude and gross, it can come back to haunt your boat’s owner in the form of a ticket in some locations. Be kind to your fellow passengers. If someone can’t swim, don’t pressure them to get in the water or near the edges and NEVER push them in. If someone doesn’t feel well, try to show a little sympathy and make them as comfortable as possible. Don’t be rude or make a ton of noise if everyone’s feeling mellow and serene. The main rule to remember is that the boat owner’s rules are always number 1--no ifs, ands or buts. Being on someone’s boat is like being a guest in their home and car at the same time. People are picky about the behavior of the people that come inside either, so be aware that a boat owner is probably pretty firm about his or her rules. Respect them! Whatever they say goes. Ask questions! If you don’t know how something works, you’re confused about a rule or you’re not sure what to do in a particular situation, ask. The boat driver will be happy to show off a little knowledge, and they’ll understand that it’s better for everyone to be safe and informed than sorry.
Wear your life jacket. They’re not fashionable, but they’ve got your back in the event of an accident. If you absolutely do not want to wear it, consider keeping it on only when the boat is in motion. Children under 12 must wear life jackets at all times.
Having fun on a boat is easy, so long as you use a little “common sense” and respect. Respect your boat’s owner/driver, respect the laws, respect your fellow passengers, respect the lake.

A Wine & Cheese Tasting on the Water For the most part, heavy meals don’t sit well after a long day out on the boat. Something refreshing, light and cool is always most welcome, especially for lunch or appetizers. Sandwiches and salads are great options. For something a bit dressier for your guests to snack on, consider turning your boating afternoon into a wine and cheese party! Simple, light and full of treats for every palate, wine and cheese sampling allows everyone to get their fill at their own pace and encourages mixing and mingling on board. By: Amanda Harper To create a great cheese platter, start with the platter! A plastic platter will certainly do, and will make transport easier. But a wide, flat wooden cheese board is much more visually appealing. A good platter will serve 10 or so, so if you have a larger crowd, consider making multiple platters.

Crackers, olives, rice crackers, almonds, fresh grapes and sliced pears are wonderful accompaniments. Some bread and olive oil will be welcome, as well. For full flavor, most cheese are best served at room temperature. Know the appropriate storage for each cheese, however, and don’t leave refrigerated cheeses out too long.
Gather some servewear. Cocktail napkins, skewers/toothpicks, small plates and spreaders will be helpful. Also, include wine glasses, small bowls and a basket for bread.
Learn what wines pair best with each cheese, and offer a great selection. Place bottles near the cheeses they best complement. Chardonnay works well with brie, gouda and gruyere while pinot noir may better suit muenster and port salut. Riesling is nice with edam, brie and gouda, but choose shiraz for cheddar. Sauvignon blanc is lovely with a variety of cheeses while port is a bit more persnickety. Round out the sampling with some nice chocolate and fresh fruit. They’re perfect wine pairings, too!

Tips for Watching and Enjoying Fireworks - Taking pictures of fireworks is tricky. Use a tripod and special settings on your camera for fireworks or outdoor (MINUS flash.) Your phone will probably take terrible photos of the display. - Or--crazy concept--put the camera down and just enjoy the show. The more you try to photograph, the less you’ll actually see and the less fun you’ll end up having. - Take a blanket, some water, a few snacks, insect repellant and your love for America.
- Do not try to set off your own fireworks while you wait for the show to start. They’ll look lame, annoy those around you and will stink up the place. - But sparklers are cool. Just be careful! - If you’re setting off fireworks at home, be mindful of local ordinances. Be safe... fireworks are obviously dangerous. - Also bear in mind that your neighbors might not feel as patriotic as you do. Stop the show at 10PM, and only do it on weekends.
- Watching fireworks can be a literal pain in the neck. Sit in a chair or position that doesn’t require too much strain. - For the most part, kids love fireworks. But smaller tots and children with sensitive ears won’t find it much fun. Arrange for them to stay home or away from all the booms. Earplugs help! - Getting to your chosen viewing location early is always a great way to grab good seats, but be sure you’ll be entertained and comfortable. Most shows start at ‘dark”--in the summer, that could be late!

Business Scene Ralph Stokley and his family have been creating family memories on the water for 40 years! His parents started the business in 1972. As a child, Ralph learned the ropes and became familiar with the world of boating. In fact, it’s the only job he’s ever had, giving him 31 years of full-time experience at Stokley’s Marine! Stokley, a University of Kentucky graduate, says that his most successful business move was to pick up Tracker boats 22 years ago, a company that has been great to work with through the years. Offering a wide range of boats at all price ranges has been essential to the success of Stokley’s Marine. They are excited to once again have Crownline boats back on the floor, making them the only Crownline dealer in Central Kentucky. Their current location is their third and they’ve expanded it seven times. The average employee for Stokley’s Marine has been there for over 15 years. Stokley’s aims to take care of their customers, through friendly customer service, keeping them coming back again and again.. Some of their customers are on their 10th or 15th boat purchased from Stokley’s! Stokley says that some lessons must be learned the hard way. Some people assume that life as the owner of a successful business is glamorous, but it certainly takes a little elbow grease sometimes. The owner has to pitch in and help with every job around the office--even cleaning the bathroom, at times. When he’s not in the office, Stokley loves being on the water. He and his family love to go boating and fishing, most often in Jamestown on Lake Cumberland. He has a wife and three teenage kids who all love water skiing, tubing wake boarding and fishing. His kids all work for him during the summer, following in the footsteps of their father. They love the Bluegrass and have never lived anywhere else! Stokley’s parents are alive and well. His father, who has tons of knowledge and expertise in the field, is in Kentucky for six months out of the year and works for the business part-time delivering boats.

Business Scene Every business has an inspiration. The moment that Robin Hammond knew what she wanted to do was a little moment that brought on a big idea. She was at a wedding and saw a small candy table and thought, “Wow, that could be amazing if it was done a little over the top.” And so she decided to take sweet things over the top, creating unique candy displays for a variety of occasions, like weddings, birthdays, special events--or June, National Candy Month! For Hammond, Something Sweet Candy Buffet Co. is a creative outlet. She loves candy and loves bringing a smile to everyone’s face. Starting a business on that principle wasn’t always easy. She had a few reality check moments in her past year of operation. For instance, as a small business, getting a door opened to a distributor was tough. As a one-woman operation, Something Sweet didn’t seem like a worthwhile investment to a lot of candy distributors--there’s a 400-500% markup on most candy, and a small operation isn’t as profitable as a major grocery chain, for instance. This is something Hammond has had to work hard to overcome to ensure that clients get the best possible price and maximum variety of choice for candy. Hammond was born in Lexington and has no plans for leaving.

She says she plans to keep putting smiles on faces for a long time. “I mean, really, who doesn’t have a fond memory of candy!” She explains, “It amazes me to see adults turn into children when they are enjoying one of our candy buffets.”

Business Scene Simply Love Studio was started in 2012 by a fullservice wedding planner who saw the need for brides of all budgets and personalities to have access to professional wedding assistance. Having a wedding planner isn’t the right option for every bride, so Simply Love Studio aims to fill in the gaps for brides who forego a planner. With 5 years of planning experience before coming on board with Simply Love, Sarah Burton has seen her fair share of ups and downs in the wedding business. She aims to learn from every experience, good or bad. As she puts it, “Who knew flowers could freeze?” If Burton had known then what she knows now, she says she would’ve taken graphic design classes in college. “I find myself needing ideas on brochures and ads all of the time,” she explains. Simply Love Studios operates on a schedule that’s directly opposite of the traditional wedding season. Their big events are late fall and during the winter, allowing vendors to participate fully since they’re busy in the summer and fall. As part of her job with Simply Love, Burton works with the Venue Hop (a bridal show on wheels) and Bridal Benchmark (a complimentary 6-week educational series for brides.) Burton grew up with a family where work ethic was very important. “You’re not to be late and there is always a way to fix a problem so that everyone comes out ahead,” Burton says of her family’s lessons. She grew up on a small farm in Southern Kentucky, and she says it’s hard not to call Lake Cumberland home, but Lexington is the only other place she’d want to live. Burton adores animals, so she spends as much time as she can with her 2 dogs. In the future, Burton says she can’t imagine retiring--”Business owners retire?”

The Heat Treatment: Lighting Your Cigar There you sit with your carefully selected cigar, with the cap chopped to your liking. You take a smooth pre-draw and enjoy the flavor of the raw tobacco. Now comes the time to place flame to your cigar and enjoy. What’s the right way to do it? Introducing flame to your cigar is crucial to the whole experience. A poorly-lit cigar can lead to not only a foul-tasting cigar, but also a lot of maintenance. Cigar smoking is meant to be relaxing; when the burn is uneven, your relaxing moment becomes babysitting.

Once all surfaces on the foot of the cigar are toasted, move your lighter in closer and begin to create an ember. If the visible flame of a torch lighter is touching the tobacco, back off a little bit--that is too much heat. Once the foot of the cigar is completely glowing orange, take your first draw. Look at the foot, blow the smoke onto it and see where you need to apply more flame. Do so, and once lit completely, sit back and enjoy.
Buy a lighter. It doesn’t have to be a good lighter, but get something that can be refilled and puts out a nice hot torch flame. You can light a cigar with the standard gas station lighters. However, the cheap butane doesn’t burn clean and will make your

Winchester native Lauren Mink gave the judges on “American Idol” chills with her performance of “Country Strong” earlier this year. When she heard the words,”You’re going to Hollywood,” she couldn’t believe it! Mink has dreamed of being a singer since she was 9 years old. Her babysitter at the time bribed her to perform a solo at church by telling her she would take her to see her first PG-13 movie. “Weird I know, since I was singing in church,” Mink laughs. She says even though she was trembling walking up to the microphone, she did it to see that movie! “From there, I just fed off the energy I got from singing.” Mink began performing at local events and has even completed two albums. The first consists of Christian and inspirational covers and the second is full of original songs. After graduating high school in 2004, Mink auditioned for “American Idol” with some friends. She didn’t make it past the initial audition in front of the producers. Last summer, this 25-year-old began to think that she might regret not trying a second time before she aged out of the competition. She and her mom loaded up the car and headed to Charleston. Her time on “Idol” was cut short after the second round of auditions. She says that if her experience in Hollywood taught her anything, it’s that “if I want to follow my dream of singing, I have to give up a lot to have a lot.” She loves her life in Winchester and everything that comes with it, her family, friends, job and boyfriend. “It was nice knowing what overnight success feels like,” Mink said. Her Facebook page went from 500 to 3250 likes overnight. “It was the best overwhelming feeling I have ever had and it’s still happening!” Mink became the director of STRIDE, a program for adults with intellectual and developmental disabilities, after volunteering there for six years. She says the key to the

Now back home in Kentucky and riding high on her success, Mink is focusing on what’s important--and her music. program is therapeutic recreation. “Our goal is to provide our participants with skills to go out in their community and to hopefully, provide them with a higher quality of life.” After mentioning the organization as part of her “American Idol” intro, Mink says the STRIDE website had more than 300 hits in a single night; “It was publicity and advertisement that we would have never dreamed of or been able to afford.” Back in Kentucky, Mink has been doing a lot of singing. Since her appearance
on television, she has been asked to play festivals, fairs, benefits and places that she had wanted to play for a while. Mink was the 98.1 The Bull correspondent for “American Idol”, polling her Facebook fans about each week of the show and reporting about it on air Friday mornings. Mink partnered with the station to put on a concert at Tin Roof with proceeds benefitting STRIDE. You’ve done it the same way since you could hold tongs. You learned your craft from grill pioneers who came before you. You use wisdom that’s been handed down from generation to generation since the age of the caveman; how to properly use fire to make food delicious. But you’re probably doing it wrong. Perish the thought that your ancestors weren’t maximizing flavor, juiciness and quality, but it’s true. Sure, you’re making okay burgers and ‘dogs now, but you can do better. Nevermind how much more you could be doing with veggies! LexScene is here to show you the way of the grill. Some of this might sound a little... off. It may go against everything you’ve been told. A Better Burger You probably slap the meat to the grill, then flip once--and only once. And that’ll make a good burger. But there is a better way.
Vegetation So a lot of people think it’s heresy to pile on the vegetable matter at a cookout. Those people have clearly never had proper grilled veggies. As a rule of thumb, if it’s a vegetable, you can probably hit it with a little olive oil, garlic, salt and pepper and slap it to the grill. Eggplant, bell peppers, zucchinis, mushrooms, corn, potatoes, asparagus, green onions, onions, jalapenos... they all benefit greatly from a little char. Most take just a couple minutes, usually ‘til you’ve got grill marks. It’s not limited to vegetables. Fruit is lovely when grilled. Brush sliced peaches, plums, pineapple, bananas, or strawberries with a little honey and thread them on a skewer. And yes, there’s tofu. Many balk at the notion of using tofu for pretty much anything, but it’s a wonderfully versatile substance. Squish the water out and marinate it in a little lime juice, olive oil, cilantro, garlic and cayenne pepper. You’ll think twice about writing off tofu!
Flip. A lot. We told you this would be hard to swallow. But follow us here. When you put the meat down, the heat begins the process of cooking the (cold) hamburger. The grill has to bring the meat up to temperature to even begin cooking it. When you flip to the other side, it’s the same situation. Cold meat on heat. And you’re starting from square one in terms of temperature.
Pro Tip: Grilling peppers? Chiles and other peppers are great on the grill, but be careful of the smoke. Don’t let it get into your eyes or fume any food that you don’t want to catch a little spice.
But if you flip a lot, you’re getting a more even heat through the hamburger. You’ll notice the difference when you cut into the meat--there’ll be a visible gradient from done to medium. With the one-flip method, you’re almost certainly overcooking the outermost meat if you reach a safe internal temperature. And another great thing? The more you flip, the more you take off the cooking time. It makes the difference of a couple minutes. Plus, you look so in the zone when you’re flipping. Everyone loves that part. How much difference does it make in taste? Well, it can be argued. Some people will swear they don’t detect even the slightest difference. But some people (my mother) will appreciate how much more of the meat is browned (because heaven forbid she get burger with too much pink in the middle.) LexScene Magazine | 71 | www.LexScene.com
Kebabs are tricky. With meat, veggies, fruits and who knows what else, it’s easy to overcook some elements and undercook others. To make a perfect kebab, estimate what will take the longest to cook and start that before it’s ever skewered. This is especially helpful if you’re doing shrimp--the veggies and other meats will almost certainly take more time, so pre-cook the other items a bit first if there’s a huge cook-time discrepancy. Flare-Ups: Who Cares? Flare-ups happen when fat from the meat drips into the coals and creates a flame. Why should you care? Because you’ve got what is essentially a grease fire on your hands. And since the meat has fed the grease fire, the additional heat may cause it to continue to do so--creating a huge, massive fire where once where was merely a grill. Aside from the potential danger, the flame can overcook your meat, and fast. What do you do? You can move the food elsewhere on the grill, or you can shut the lid and wait for the flare-up to die. Since flame needs oxygen to survive, you’re basically smothering it without killing your coals. Small flare-ups that never even reach the food can probably be ignored unless there’s more fat dripping its way. Those will squash themselves within a few seconds. Be aware that the flare-up is creating a bit of extra heat, so your cooking time may change slightly. What should you not do? Use water. If you spray water into the coals to zap the flare-up, you’ll probably succeed. But you’ll also stir up a bunch of ashes that will rise and land directly on your once-delicious meat. In spite of being absolutely ubiquitous to the grilling imagery we’ve come to know and admire, flare-ups aren’t desirable. Shut the lid and move along.

Q: Is the grill the best place to cook a steak?
Burger Secrets - 85% lean beef will result in minimal shrinkage while providing ample juiciness
in the middle as it cooks, thus making it a terrible surface for those delicious toppings.
- Try going 2 parts beef to 1 part ground lamb or pork. You’ll be amazed at the difference. Just be sure to cook appropriately.
- Do not press the burger with your spatula on the grill. Ignore what color you think the juices are running. Know how long to cook your burger and let that be your guide. Do not lose delicious flavor into the coals (thus causing flare-ups.)
- Don’t mess with it too much. The more you mush and mix the meat, the denser and tougher the end result is. - As a follow-up point, the more stuff you add to your meat, the more you have to mix it. Not only are you creating a meatloaf out of your precious burgers, you’re actually making them less delicious by adding “delicious” add-ins! If you must add stuff, do it before it’s ground or after it’s cooked. - Don’t salt a burger until the moment it hits the grill. It begins drawing out moisture and actually changing the texture of the meat the moment you do it. Never add salt to the patty as it’s being formed. - Press your thumb into the middle of the patty. This will prevent it from humping up
- Warm the buns. Get good buns and toast, steam or grill them. - If you hate hand-patting your patties, get a press. Do not buy pre-patted. - Use a thermometer for ultimate accuracy and perfect cooking. You can reach safe internal temperatures and avoid overcooking with the help of one little device. Worth every penny. - Turkey IS a legitimate burger meat. - Top your burger with whatever you want to. Mayo, sriracha, pickles, ketchup... whatever. It’s your burger, savor it!

Since the advent of gas grilling, the debate has raged on in backyards the world over--which is “better”, gas or charcoal? The answer is simple: neither. They’re both fantastic and produce delicious food. It all comes down to personal preference. Many grillers swear that charcoal produces a more robust grill flavor. And it’s true that if you close the lid and get the smoke rolling around in there, you’re going to get a stronger flavor. But it’s not something that can’t be attained with gas. Wrap soaked woodchips in a bit of aluminum foil and poke holes in it and sheblam, you’ve got smoke flavor. (See below on smokin’.) And it’s a cleaner smoke flavor that most charcoal.
A: Yes. No. Maybe. It’s a loaded question. All things are better on the grill, so obviously steak is better on the grill. It’s the iconic image--a T-bone on a flaming (flames are bad, by the way) grill. It’s the essence of grill season. But it might not be the best steak. The best steak on the grill doesn’t require searing (so-called molecular gastronomists have busted this myth,) but instead cooking the steak as fast as possible, then getting it off the heat the second it’s done. Do this while ensuring that the meat doesn’t get hit by flare-ups, let rest for 10 minutes before serving and you’ve got yourself a pretty good steak. Probably. Depending on the cut. Because some cuts of steak will never be quite perfect, no matter how you cook them on the grill. Some cuts require slow and low heat to dissolve connective tissue and fat. Some require a more delicate hand than you or I could offer it. The best advice is to learn all about your cut of meat and its needs before it ever hits the heat. Frankly, unless you’re smoking your meat, you can usually attain just as good a steak in the oven (clutch your pearls, girls.) Most people like a little char flavor, but to be a downer, it’s almost certianly bad for you. Cooking it in the oven it better for your overall health and will allow you to control both the temperature and cooking environment much better than a grill would.
The real advantage in gas grilling is the speed. A clean grill can go from cold to ready in 10 minutes. Try that with charcoal! That makes a gas grill far smarter for those who like weeknight meals on the grill. The cost effectiveness is a point of contention. The initial price for a
Go Lean! Unless a recipe specifies otherwise, choose a leaner cut or fat content for your meat. Why? It’ll reduce flare-ups and make cleanup much easier later on. Lean is okay! charcoal grill is almost always less than a gas grill. The real costs come later. Sure, you have to buy fuel tanks for a gas grill, but for most people, one a season should do it. Charcoal grills require far more bags of charcoal over a typical season, and that could get pricier over time. In the end, it really comes down to speed of cooking, perceived flavor, effort, cost and--lets be honest, snobbery. Stop turning your nose up at your fellow grillers and consider that they probably have a very good point.
THE GREAT DEBATE: GAS V CHARCOAL
Smokin’ If the chips are on fire, you’re doin’ it wrong. There’s two kinds of smoke that wood gives off: the black kind you can see, and the invisible kind that you can’t. The inivisble kind is the delicious, good-smelling kind. And that’s what you want in your meat. To truly smoke meat, you want it to be well below normal grilling temperatures. This is where a smoker comes in. It will get the wood to the right temperature to release the goodness without giving off the bad. It has the added benefit of helping to break down tough connective tissues and fats that keep your meat chewy. A smoker can be as complicated as some $400 device you purchase or as easy as clever device you build in your own backyard (tons of tutorials on the internet!)
