PATIENTS FREQUENTLY SAY, “NO MATTER HOW MUCH I DIET AND EXERCISE, MY BELLY WON’T CHANGE.”

Pregnancy, weight changes, and time all influence the abdominal contour. The abdominal wall has three components: 1) the muscles 2) the fat layer, and 3) the skin. Although weight loss will decrease the fat component it will have little to no effect on the muscle or skin components. During pregnancy, the two rectus abdominis muscles which run straight down the center of the abdomen bow outward. Likewise, the skin stretches out. After pregnancy, the rectus muscles usually retain some curve allowing the central abdomen to bulge and have a rounded appearance. Although exercise can strengthen the muscles it does not put them back into a straight orientation. Likewise, the skin does not always completely shrink down to its original size, leaving some redundancy. Significant weight changes can have similar effects on the skin and muscle in both men and women.

Q: I’m terrified of offending my hosts. Which of my polite habits do they secretly hate?

Q: Settle an old argument I’ve had with my in-laws: when is it okay to be seen in my robe, either as a host or as a guest?

• Arriving early (or well-past fashionably late)

Basically never, Cousin Eddie. Do not wander down for coffee in your bathrobe, and do not lounge on the couch in it, especially not without wearing something underneath. As the name suggests, your bathrobe should be worn to and from the bath. That’s it.

• Insisting on helping – in spite of many, many protests • Offering “well-meaning” tips or advice (which even you know is just thinly-veiled criticism) • Refusing to take their word when they say “help yourself” • Cleaning without first asking about their preferences and processes

Q: Do I really have to bring a hostess gift if I’m staying over Christmas? YEP. Gifts should never do double duty (and that includes birthday/ Christmas, too, ya cheapskates.) This question strikes us as particularly funny because the holiday season is one of the easiest times of year to find a gift for your hosts! Need ideas? • High-end chocolates • Christmas cactus, amaryllis or paperwhites • Custom embroidered tea towels • High-quality balsamic vinegar • Holiday candle/diffuser set • Wine or bourbon • A bouquet of flowers • Luxury hand cream and soap

“But it’s a housecoat,” you may be saying. Yeah, we don’t buy it. Assuming you aren’t stricken with the flu, get dressed already! One major exception? If someone shows up to your door unannounced after a reasonable bedtime hour. In which case, they deserve whatever eyeful they get.

We get it. Really, we do. But unfortunately, the secret switcheroo is still considered rude.

First thing’s first: excuse yourself to the restroom and promptly flog yourself for your sins.

That said, there’s absolutely nothing wrong with asking your host for different accommodations. If you’re asking because of a physical need, such as needing to be close to an exit due to a health condition, then explain your reasoning. But if it’s a personal quibble with your neighbor, keep it to yourself.

After that’s done, you have a few different options:

Either way, be prepared to accept your host’s answer as the final word on the matter.

Citrus It’s hard to imagine now, but once upon a time, it was difficult to

find fresh fruit in small towns, especially in the cold winter months. But Christmastime always brought crates full of delicious oranges and grapefruit from the southernmost states. This was so common that citrus is a staple of rustic holiday décor! Nowadays, many school groups raise funds by selling these bright fruits during December. It’s a tradition to put oranges in kids’ stockings to symbolize the gold that Saint Nicholas put in the stockings of the young brides he helped.

Christmas Cakes It seems like everyone’s family recipe box is chock full of these special desserts that only get made around the holidays. From apple stack cakes to classic fruitcakes (doused with bourbon), nothing makes us feel more festive than a lovingly-made cake.

Make Some Noise In days gone by, Christmas in Appalachia meant lots and lots of noise. From canon fire to firecrackers, people loved to make a ruckus to celebrate the season. One tradition saw people putting gunpowder between two anvils and clanging them with a hammer; the boom could often be heard three hollers over. Other folks just fired their guns in the air. Unless you happen to be either Calamity Jane or some kind of daredevil blacksmith, we suggest maybe sticking to safer means of making a little noise.

Oysters For past generations, the arrival of refrigerated transportation combined with cooler winter temperatures made it possible for landlocked areas of the south to get fresh seafood for Christmas. That meant oyster stuffing became a staple of the holiday table; oysters on the half shell was a favorite appetizer for Christmas and New Year’s Eve.

Magnolias Evergreen magnolias offer stunning seasonal décor in the South. Even if you opt for faux, the creamy white flowers, deep green leaves and red seed pods are basically Christmas-ready.

Candles in the Windows During the short days of winter, families would set lit candles in the windows to let potential visitors know that everyone was awake and welcoming guests. Now, of course, we just consider this look absolutely charming. To prevent fires, however, our “candles” are most likely battery-powered.

Superstitions Did your family have any Christmas superstitions? There are a lot of folksy Southern beliefs that get passed from generation to generation. Some of our favorites:

• If you go to the barn at midnight on Christmas Eve, the animals will kneel and be able to talk. • Eat an apple on Christmas Day for good health in the coming year. • Burn a log from the previous Christmas to bring good luck to the home. • It’s lucky to take a bath on Christmas Day. • A cricket on the hearth at Christmas is a sign of good luck. • Young women in search of love should visit the hog pen at midnight on Christmas Eve; the hog that grunts first will divine her future husband. • The weather on the Ruling Days of Christmas foretell the weather for the coming year.

Santa Claus! The origins of

While we sometimes call Santa Claus “Saint Nick,” they’re actually two different figures. Saint Nicholas was a real person, and the inspiration behind the jolly old elf! He also has his own day of celebration.

Saint Nicholas of Myra was a Christian bishop of Greek descent. As the patron saint of sailors, merchants, archers, children, brewers, pawnbrokers, singletons, students and repentant thieves, he was known throughout his life for acts of generosity. Once, he heard of a father who could no longer afford dowries for his daughters; without the money, they might have to turn to desperate measures to make their way in life. Wanting to spare the family any embarrassment, Nicholas snuck up to their home under the cover of darkness and tossed a bag of gold in through a window. Upon discovering the gold, the father went out and arranged a marriage for his eldest daughter right away. After the wedding, Nicholas went back and tossed in another bag. (In one version of the story, Saint Nicholas placed the gold in the girls’ stockings, which were hung from the mantel to dry.) After the second daughter’s wedding, the father stayed awake all night. He caught Saint Nicholas in his act of kindness and fell to his knees, thanking him. Humbly, Saint Nicholas asked the father not to tell anyone who had helped the family – though, clearly, word eventually got out! His generosity inspired the idea that Saint Nicholas might come and leave gifts for children on the night of his Feast Day (December 6). Over time, this tradition blended with Christmas. St. Nicholas is still celebrated as a separate holiday figure in several Scandinavian countries. Santa Claus has his beginnings in the story Saint Nicholas. Immigrants brought the figure to America and he was often still dressed as a bishop in their minds. Washington Irving penned one of the first written descriptions of the man in America in 1809, which most historians agree was more akin to a Dutch burgher. The famous poem 1823 “A Visit from St. Nicholas” (the one that starts with “‘Twas the night before Christmas…”) helped solidify the big guy’s look. He picks up a pipe and a few pounds and “dressed all in furs from his head to his foot.” He gets a full team of reindeer, rosy cheeks, a white beard and a pipe.

Traditions Around the TOPS office, we’re big on the holidays. Our doors are decorated, we have potlucks whenever possible and we love a gift swap. So we thought it was only fair we share some of our own Christmas traditions with you, our readers.

Diana Gevedon, Business Manager goes with a big group of family and friends to Gatlinburg each year. Diana gets 90% of her Christmas shopping done on this trip. Sundblom’s Santa Illustrations of Santa after this time generally seem to be some blend of Irving’s Dutch chap and the poem’s fur-clad “jolly old elf.” German-born political cartoonist Thomas Nast (who gave us the Republican elephant and Democratic donkey) illustrated Santa for Harper’s Weekly, bringing German-Bavarian elements to his look, and fun details like the belt. Most illustrations of yore were obviously done in black and white, but hand-painted children’s books often included red, possibly based on those famous ruddy cheeks. When color printing became more common, Santa’s fur suit was often still brown, white or black – you know, realistic fur colors. But splashes of red, green and yellow kept appearing and it seems like red eventually won out, probably for its overall festive, fantastical note.

Haley Walls, Vice President of Production says her family’s giftgiving tradition started with her grandpa. He would do the ol’ “I think there’s one more” trick and surprise everyone with one last gift. Eventually, the youngest kids got in on the fun, each one trying to be the one to give the last gift. Now, the kiddos haul out a Santa sack full of presents that someone in the family secretly helped them pick out. It’s a cute tradition that everyone looks forward to. Everyone who knows Keith Yarber, Owner knows that he doesn’t consider it to be Christmas until National Lampoon’s Christmas Vacation has graced his TV screen... and until he has quoted the film at least a billion times. Abbey Allen, TOPS Digital and Magazine Marketing Specialist says that her family’s holiday tradtions revolve around recipes. They always make sorghum cookies her grandma made, as well as Chex party mix. She also loves to watch The Family Stone, which is a favorite among most of the TOPS team.

By the 1930s, all of the elements were more or less set. But it was Haddon Sundblom’s illustrations for the CocaCola Company that solidified Santa in our cultural eye. When you think of Santa, this is probably the version that comes to mind. (The fact that red happens to be Coke’s brand color was probably not a coincidence.)

20% Christmas Trees When Queen Victoria married her first cousin (yikes), Prince Albert of Saxe-Coburg and Gotha, the pair bonded over their shared German lineage. One thing they both treasured was Christmas. We’ve mentioned that Christmas was in decline in England at the time of Victoria’s ascension. She and Albert worked to ensure that the holiday was more merry than ever.

Christmas trees as we know them date back to the Renaissance, but Germans had made them an art. And nothing said “Christmas” to Prince Albert quite like trees; he was known to set up many throughout Windsor Castle, and he sent them to schools and army barracks. While some previous English royals had decorated Christmas trees, Victoria and Albert gave the practice a major PR boost by publishing an engraving of the royal family decorating a Christmas tree. Since that famous picture, Christmas trees have been a staple of the holiday season for families across the globe.

What’s the “dill” with the

Christmas Pickle? The tale you’ve been told goes something like this; in ages and ages hence, people in Germany would hide a pickle in their Christmas tree and whoever found it would get good luck – sometimes in the form of an extra present left by Saint Nicholas. Why would Saint Nicholas leave a pickle? As the patron saint of children (plus merchants and brewers), one of his miracles was resurrecting three children who had been murdered and placed in a vat of pickles, possibly to be sold as pork later by an unscrupulous butcher. Yikes, that’s dark! Another suggested origin of this tradition was that a Bavarian-born soldier during the Civil War who begged for a pickle while starving. As it was Christmas, this guard gave him a single pickle, which the solider credited with saving his life. When he made it home, he began hanging a pickle of his Christmas tree each year to remember this incredible gift. While those stories may have basis in truth, the tradition of the Christmas pickle just doesn’t. It’s most likely that the tradition was invented in the 1890s to help sell ornaments. Traditional German glass ornaments were being imported to the US by Woolworths. Many of those ornaments were shaped like vegetables, a long-running French and German tradition. Maybe pickles weren’t selling well, or maybe they were a bit of a novelty to shoppers already, and having a little story behind them would help push sales. So they began to be sold with little cards that gave the pickles a purpose, as well as a little game for familities to play. Clearly, the concept took off. The Christmas pickle is now a firmly rooted American tradition.

Whoever hangs it first gets big bragging rights for the year. And Joseph isn’t too big to admit that losing can very nearly be a holiday-ruiner. Jennifer Baker, Account Executive can never wait to open Christmas gifts. The excitement will become too much on a random day before Christmas, so she’ll excitedly ask, “Want to open presents?!” She says that growing up, her parents were the same way. Chloe Day, Graphic Designer cherishes her family’s tradition of hunting for the Christmas pickle. But her family likes to keep things fair; there are two Christmas pickle ornaments, one for Chloe and one for her brother.

What we really treasure is that it helps children stop to enjoy the beauty of their family Christmas tree a little more closely.

Traditions Fran Elsen, Editor-in-Chief has everyone over to her house on Christmas Eve for happy hour, appetizers and silly games while the siblings do their annual gift exchange. How fun does that sound?! Vicki Evans, Vice President of Community Relations calls her celebration “Little Family Christmas.” It’s a special day of gifts, brunch and Christmas movies with her daughter in their jammies, snuggled up with their dog and cat. “Priceless times!” Reagan Newman, Administrative Coordinator says her favorite tradition is watching her dad light a fire in the fireplace... then turn on Netflix’s “Burning Fireplace” video on the TV that’s right above the already-burning fire! Sweet Snowglobes We are absolutely obsessed with this idea from AKA Design to make your own snow globes! Start with an empty craft snow globe or jar large enough to hold your gift card. Use a hot glue gun to attach miniature pine trees, reindeer, figure skaters, or whatever else your heart desires to the inside of the lid. To your jar, add artificial snow, miniature white pom-poms, confetti, or whatever flurry-like material you have. Tuck your gift card inside before screwing on the lid and flipping your jar back over. Pro tip: Add a bit of ribbon or tinsel and a gift tag around the side of the lid to make your snowglobe a bit more personalized and festive!

If you're planning to give multiple gift cards at once (we see you parent classroom volunteers), stay away from tossing everything into a bag and calling it a day. We love these ideas from Sarah Tucker (left) and Do Say Give (right), who bring a bit of order to the chaos of gift card bundling. Chris and Tara Russell first met at a business networking event where they were showcasing their own businesses but quickly realized how like-minded they were – not only in business but family. CUCINA opened its doors in 2007 with rebranding and a new launch in 2019, only to face the challenges of an unforeseen pandemic. Tara was assisting in the background, but this quickly changed due to the obstacles faced with Covid-19. Tara took a more active role in managing communication, scheduling, and other behind-the-scenes needs to allow Chris to use his creative strengths for design. “There is a lot of give and take in a partnership; the key is to not only listen but always be anticipating the other’s needs,” the pair explained. Fruitcake Bark

• 1/2 c. mixed candied fruit, chopped (see notes) • 1 T brandy • 1/2 c. walnuts, chopped (see notes) • 5-8 ginger snaps, chopped (see notes) • 20 oz. white chocolate

In a small bowl, combine candied fruit and brandy; let soak while preparing the rest of the recipe. Line a 15x10” jelly roll pan (or other rimmed baking dish) with parchment paper. Create a double boiler using a saucepan and a heatproof bowl (fill a medium saucepan with about 1 inch of water. Place a slightly larger heatproof glass or ceramic bowl on top; the bowl’s bottom should touch the water while the sides remain suspended). Bring water to a simmer over medium heat. Reduce heat to low, then add white chocolate to bowl. Heat until melted and nearly smooth; remove from heat and stir until completely smooth. Spread chocolate into the bottom of the prepared pan, smoothing top with a rubber spatula. Sprinkle on the (drained) chopped fruit, walnuts and cookie pieces, pressing lightly into the chocolate. Refrigerate 10 minutes, or until hardened. Break into pieces. (adapted from Dinner Then Dessert) Notes: If you aren’t a fan of candied fruit, omit the brandy and replace the same volume of candied fruit for dried fruits you enjoy. When chopping the ginger snaps and walnuts, discard any crumbs for a nicer finished look to your bark.

Cream Cheese Mints

• 1 3oz. package cream cheese, softened • 1 T butter, softened • 3 c. powdered sugar • 2-3 drops peppermint oil • Food coloring

In a large bowl, combine cream cheese, butter and powdered sugar. Mix in peppermint oil. Divide dough into as many balls as you would like colors; mix food color into each ball. Roll dough into long logs, then cut with scissors into small nuggets; let dry for about 2 hours on wax paper, then refrigerate. (adapted from AllRecipes) Note: While, as the name suggests, mint is the most traditional flavoring for these little Christmas sweets, it they can be flavored with other candy oils. Many people enjoy using cinnamon oil!

Hot Chocolate Bombs

• 4 4oz. bars semi-sweet chocolate, chopped • 1 tsp. coconut oil • 1/2 c. hot chocolate mix • 12 large marshmallows • Christmas sprinkles or chopped candy canes

Line a 12-cup muffin tin with muffin liners and set aside. Create a double boiler using a saucepan and a heatproof bowl (fill a medium saucepan with about 1 inch of water. Place a slightly larger heatproof glass or ceramic bowl on top; the bowl’s bottom should touch the water while the sides remain suspended). Bring water to a simmer over medium heat. Reduce heat to low. Place chocolate and oil into the heatproof bowl. Heat, stirring occasionally, until chocolate is melted and mostly smooth, about 6 minutes. Remove bowl from heat and continue stirring until chocolate is completely smooth. Spoon 2 tsp. chocolate into the bottom of each muffin cup. Pick up each cup and manually rotate so that the chocolate comes 1/2” up each side. Let sit 15 minutes, until hardened. Add 2 tsp. hot chocolate mix into each cup. Drizzle chocolate on top of the cocoa, covering completely. (If chocolate has begun to harden, return to double boiler for 2 minutes.) Press a marshmallow into the top of each bomb. Add desired decoration. Let cool at room temperature until chocolate is set, about 1 hour. To serve, heat 3/4 c. whole milk over medium heat, then transfer to a mug. Place a hot chocolate bomb into the mug and let sit for 30 seconds as it melts, then stir to combine. (adapted from The Pioneer Woman)

The Best Puppy Chow

• 1 12oz. box Rice Chex cereal • 1 12oz. bag semi-sweet chocolate chips • 3/4 c. peanut butter • 1/2 c. butter • 1 tsp. vanilla • 1 2lb. bag powdered sugar

Pour Chex into a large bowl, and set aside.

Place chocolate chips, peanut butter and butter into a large microwave-safe bowl. Microwave for 60 seconds, then stir. Microwave at 30-second intervals, stirring between each, until completely melted and smooth. Stir in vanilla extract. Pour chocolate over Chex; fold with a spatula until cereal is completely coated (chunks are okay!) Pour powdered sugar over mixture, gently stirring until each chunk is covered. Cranberry Pistachio Fudge

• 1 (14 oz.) can sweetened condensed milk • 14 oz. white chocolate, chopped • 1/2 tsp. vanilla extract • 1 T butter • 1 c. dried cranberries, chopped • 3/4 c. shelled pistachios, chopped

Line an 8x8” pan with parchment paper.

Add sweetened condensed milk, chocolate and vanilla to a microwavesafe bowl. Microwave for 60 seconds, then remove. Add butter and stir. Microwave for 30 seconds, remove and stir. Repeat until chocolate and butter are completely melted. Fold in cranberries and pistachios. Pour into pan and smooth top with a rubber spatula. Refrigerate for 2 hours, or until set. Cut into squares. (adapted from Real Housemoms)

Peppermint Divinity

• 2 c. sugar • 1/2 c. light corn syrup • 1/4 c. water • 1/4 tsp. kosher salt • 2 large egg whites, room temperature • 1 tsp. vanilla • 3/4 c. peppermints or candy canes, finely chopped (see notes)

Line rimmed baking sheets with wax paper, then set aside. In a heavy 2-quart saucepan over medium-high heat, stir together sugar, corn syrup, water and salt. Cook, stirring occasionally with a wooden spoon until sugar dissolves and mixture boils. Once clear and thickened, cook without stirring until a candy thermometer reaches 255°F, about 6 minutes. Remove from heat. Place egg white in the work bowl of a stand mixer fitted with the whisk attachment. Beat on medium until foamy; increase speed to high and beat until whites can hold a stiff peak. Reduce speed to low. Slowly, carefully pour hot syrup in a steady stream down the side of the work bowl into egg whites; do not scrape pan. Increase speed to high, beating until syrup is well incorporated. Turn off mixer and immediately scrape down sides of bowl, then fold in vanilla. Return speed to high until mixture begins to lose its gloss and is thick enough to hold its shape, around 8 minutes. Add 1/2 c. of chopped peppermints and beat on medium until just combined. Remove from mixer and use two spoons to scoop out candy into 1 T balls and place on prepared baking sheets. Sprinkle remaining peppermint over top. Let candies cool until set with a matte finish, 1-2 hours. Transfer to airtight containers for storage. (adapted from Southern Living) Note: Thicker peppermints may require a little smash before you can chop them. Not a fan of peppermint? Make a more traditional divinity by using pecans! Substitute the 1/2 c. chopped peppermints for chopped pecans. You can either top the candies with chopped pecans or push a pecan half into the top of each.

How to Make It: • Preheat oven to 200°F. • In a large bowl, mix flour and salt together. Once combined, gradually add water and mix well. • Knead dough until completely smooth, adding more water if too dry. • Roll out dough to desired thickness, we recommend about 1/4 inch! • Use cookie cutters to cut out shapes from your dough, being sure to use a toothpick or straw to add a hole for hanging. Place on a parchment-lined cookie sheet and bake for 20 minutes. • Flip your ornaments and bake for an additional 10 minutes. • Once cool, thread ribbon through the hole and decorate!

How to Make It: • Cut your ribbon into pieces between 3 and 6 inches long. • Tie the center of each piece around your stick, making sure to bunch pieces somewhat close together. • Repeat tying ribbons until your stick feels full. • Trim the edges of your ribbon so they form the shape of a christmas tree. • Tie a piece of ribbon to the top of your tree for hanging. • Pro tip: for even more fun, add stickers or pom poms to your tree!

How to Make It: • Press your peels as flat as possible without tearing them. • Using your cookie cutter, cut out as many shapes as you’d like from your peels. • Create a hole in the top of each shape using a hole punch or toothpick. • Thread ribbon through the hole for hanging.

You’ll Need: • Mini Pom Poms • Pinecones • Hot Glue Gun • Ribbon

How to Make It: • Apply a small dot of hot glue on the underside of each pinecone petal. • Stick a mini pom pom onto your dot of glue, repeating until your pinecone is as full as your heart desires. • Tie a piece of ribbon around the stem of the pinecone for hanging. No stem? Use a generous amount of hot glue to secure your ribbon.

spending 32 years in their 2-story traditional family home, Bret and Tami Melrose decided it was time to find their forever home. The result is a stunning combination of modern amenities and sentimental touches. They started planning a new build with a “ranch-style” feel, according to the Melroses, and they wanted to remain close to their roots in the 40502 neighborhood. On a Sunday afternoon drive, they found the perfect lot just a few miles away on Barrow Wood Lane. Once they purchased the lot in the autumn of 2021, it took six months of working with the city on the utility easements before they could break ground in the spring of 2022. The build was completed in August 2023. The couple wanted a different style and feel than their previous home. Builder Jimmy Nash was able to bring their vision to life. The home boasts a contemporary feel on the outside with its unique fixtures and finishes, while the interior is inviting and comfortable. The warm tones of cream, brown, and black make for a stunning display of style and design.

The many details throughout the home proved to be the most challenging. But these details, both small and large, are what make the home so special. Their personal touches were inspired by past vacations, as well as memories that summon that magical feeling of being home for the Melrose family. Much of their time is spent in the massive great room, which opens to the kitchen. But the downstairs level beckons friends and family to enjoy all the extra amenities, such as the large projection TV, pinball machines, sauna, and golf simulator. The upstairs patio is a dream space for entertaining with its soaring ceilings and woodburning fireplace; it is easily accessible from both the great room and the primary bedroom. Once completed, an additional stone patio on the lower level will include seating for several, a spa, and a firepit. The 7-car garage with a built-in car lift is the perfect storage space for Bret’s impressive collection of vintage cars – a favorite hobby of his, along with his extensive bourbon collection, which is featured in the glass-enclosed bourbon room on the lower level. The lighting was all curated by Tami herself. Each chandelier draws the eye to the high ceilings throughout the home with twists of hand-cut crystal and brushed gold. Those metallic touches are sprinkled throughout the home. The main floor powder room evokes old Hollywood glamour with its real wood pattern, trimmed in gold. “Our home is special because it reflects us and our family. Much of the décor may be new, but the details and memories of items we’ve acquired from travel with family and friends make it special and unique,” Tami says.

The continuation of slower sales has pushed up months of inventory in September to the highest level since the first of the year (2.5). Although moving in a direction more indicative of a level market, available inventory levels have floated at historic lows since the start of the pandemic. A six-month supply is considered a balanced market. “It’s good news for buyers that we are seeing monthly increases in inventory,” said Kelley Nisbet, president of Bluegrass Realtors®. “But those increases are a result of slower sales, not necessarily from more homes coming online. The market needs an influx of new listings to satisfy demand which may also slow down price increases.” “Home prices are still increasing, just not at as fast as they were several months ago,” said Nisbet. “Interest rates have certainly played a role in the reduction, but inventory volume and selection need a boost going forward to calm appreciation. When and if rates fall, however, demand could once again spike and appreciation could go up with it.” Nisbet added, “The biggest driver in the market currently appears to be the interest rate. But as it’s been said before, you should date the rate and marry the house. Mortgages can be refinanced when rates drop but you can rarely, if ever, go back and buy your dream home.” Even as rates hover at 8%, the Mortgage Bankers Association is predicting that rates will fall to the mid-6% range in the first half of 2024 and land around 6% by the end of next year. POMEGRANATE SELECTING A POMEGRANATE: • A ripe pomegranate will feel heavy for its size. • Look for one bright in color, a medium to deep red. • The skin should have a leather-like appearance; firm and taut. • Since the skin is thick, surface abrasions don’t affect the quality of the fruit. Only worry if it appears to be a large, soft, darkened spot.

HOW TO CUT: • Locate the crown. Cut across the top, about half an inch to an inch beneath the stem. • You’ll be able to see four or five sections of pulp with flesh dividing the segments. Slice down along these dividers. • Pull the sections apart. Remove the middle membrane. • Submerge the pomegranate in a bowl of water. Gently remove the arils with your fingers. • Most of the pulp will float. If you’re not using the pomegranate right away, scoop out that pulp and leave the arils to soak. Otherwise, simply strain the water out.

Pomegranate Bundt Cake CAKE

• 1 c. sugar • 1/2 c. butter, softened • 3/4 c. pomegranate juice • 1 tsp. vanilla extract • 1 tsp. lemon zest • 2 c. all-purpose flour • 2 tsp. baking powder

GLAZE

• 1 c. powdered sugar • 3 T pomegranate juice

Preheat oven to 350°F. Spray a bundt pan with cooking spray, then sprinkle with flour, shaking to coat. In the bowl of your stand mixer, add butter, eggs and sugar; beat on medium speed until combined. Pour in pomegranate juice and vanilla, and switch to low until incorporated. In a separate bowl, whisk together flour and baking powder. Add to mixer bowl. Turn speed up to medium, and mix until flour is fully incorporated. Pour mixture evenly into prepared bundt pan. Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in pan for 15 minutes. Turn out onto a wire cooling rack. Let cool completely. Mix glaze ingredients together and drizzle over the cake. (adapted from North Shore to South Bay)

Pomegranate Moscow Mule • 3 oz. pomegranate juice • 2 oz. vodka • 2 T lime juice • 12 oz. ginger beer

Combine all ingredients in a cocktail shaker and shake well. Pour over ice. (adapted from The Cookie Rookie) Note: Using pomegranate vodka will give this even more fruity flavor.

Pomegranate-Kale Salad DRESSING

• 2 T pomegranate molasses • 1 1/2 T red wine vinegar • 4 T olive oil • 1/2 tsp. salt • 1/2 tsp. pepper

• 5 kale stems (see notes) • 8 c. baby spinach • 1 1/2 c. candied pecans or walnuts • 1 c. pomegranate seeds • 3.5 oz. bleu cheese, crumbled • 1/2 c. dried cranberries • 2 blood oranges, segmented

Place dressing ingredients in a jar and shake well. Place kale and spinach in a large bowl. Drizzle with about 3 T dressing and toss well. Pour half of kale mixture into serving bowl, then top with about a third each of the nuts, bleu cheese, pomegranates, orange segments and dried cranberries. Top with remaining kale mixture, then add remaining nuts, bleu cheese, pomegranates, orange segments and dried cranberries. Drizzle over remaining dressing just prior to serving. (adapted from Recipe Tin Eats) Notes: Due to the thickness of pomegranate molasses, shaking will work far better than whisking with this dressing. To make the raw kale more palatable, marinate: Remove kale from stalks and chop. Place in a bowl and drizzle with 1 tsp. olive oil and a pinch each of salt and pepper. Toss to combine, scrunching slightly. Let rest 30 minutes to tenderize leaves. You’ll be glad you took this extra step!

Pomegranate-Braised Short Ribs • 5 T olive oil, divided • 4 lbs. bone-in beef short ribs, cut into 3” pieces • 1 large yellow onion, cut into wedges • 3 cloves garlic, smashed • 10 sprigs thyme • 1/4 c. all-purpose flour • 3 c. pomegranate juice • 1 c. dry red wine • 1/2 c. pomegranate seeds

Preheat oven to 275°F. In a dutch oven, head 2 T oil over high heat. Generously season short ribs with salt and pepper. Brown ribs on all sides, working in batches if necessary. Transfer to a plate and wipe pot clean. Reduce heat to medium-high; add 3 T oil. Add onion, garlic and thyme. Cook, scraping bottom with wooden spoon, until onion is softened, about 5 minutes. Add flour and stir to coat. Whisk in pomegranate juice and wine; bring to a boil, stirring frequently. Return ribs to pot, cover and transfer to oven. Bake about 3 hours, or until ribs are easily pierced with a knife. Transfer to a platter. Strain pan liquid into a fat separator. Discard fat and return to pot. Bring to a boil over medium-high heat and cook about 10 minutes or until it reaches a sauce-like consistency. Strain, season to taste, and pour over ribs. Garnish with pomegranate seeds. Spicy Pomegranate Salsa • 1 1/2 c. pomegranate arils • 1/2 c. red onion, finely chopped • 1 1/2 T jalapeño pepper, finely chopped • 1 T lemon juice • 1 T sugar • 1/4 tsp. salt

Gently fold ingredients together. Cover and refrigerate at least an hour before serving to allow flavors to meld. (adapted from Pomegranates.org) Note: This is a lovely topping for any meat, including fish. But you can absolutely enjoy this salsa with chips, as well!

Perfect Poached Pears • 3/4 c. pomegranate juice • 1 T honey • 1 vanilla bean, halved lengthwise • 4 c. water • 4 Bartlett pears, peeled, cored and cut lengthwise into eighths • 1/2 c. pomegranate seeds

In a saucepan, combine pomegranate seeds, juice, honey, vanilla bean and water. Bring to a boil over medium-high heat and simmer 5 minutes. Add pear slices. Cover and cook until tender, about 4 minutes. Using a slotted spoon, transfer pears to a plate and allow to cool slightly. Remove vanilla bean halves from poaching liquid. Divide pears among 4 bowls. Sprinkle with pomegranate seeds. Drizzle with about 2 T poaching liquid; if desired, garnish with vanilla bean segments. Serve warm. (adapted from Martha Stewart) Note: Don’t have vanilla beans in your pantry? Use 1 T pure vanilla extract or vanilla bean paste – none of the imitation stuff will do here. •

Cranberry Orange Cinnamon Rolls DOUGH

• 1/3 c. sugar • 1/2 T orange zest • 4 1/2 c. all-purpose flour • 4 1/2 tsp. rapid-rise yeast • 1 tsp. salt • 1 1/2 c. water • 6 T butter • 1 egg

FILLING

• 1/3 c. brown sugar • 1 T orange zest • 1 tsp. cinnamon • 3 T unsalted butter, softened • 1 c. dried cranberries

FROSTING

• 2 1/2 c. powdered sugar • 2 T unsalted butter, softened • 2 T orange juice • 1 tsp. orange zest • 1/2 tsp. vanilla extract

In a large mixer bowl, combine orange zest and sugar; sugar should be slightly moistened and fragrant. Add roughly 2 c. flour, yeast and salt, and stir until combined. Microwave water and butter together on high in 15-second increments until warm, but not hot to the touch; butter will not completely melt. Add to dry ingredients. Add egg. Beat 2 minutes at medium speed, scraping down the bowl as needed. Add 1 c. flour, then beat 2 minutes at high speed, scraping bowl as needed. Mix in just enough of the remaining flour so that the dough forms a ball. Turn dough out onto a lightly floured surface. Knead about 6 minutes, or until the surface is smooth and dough springs back when pressed with your fingers. Cover with a towel and let rest for 10 minutes. In a bowl, combine brown sugar, orange zest and cinnamon; stir until combined. Set aside. Roll dough into a 15x10” rectangle over lightly floured parchment paper. Spread 3 T softened butter over the dough, stopping 1/2” from the edges of the long side. Sprinkle cinnamon mixture over butter; top with cranberries. Beginning at the long end of the rectangle, roll dough up tightly. Pinch seams to seal the roll. Using dental floss or a very, very sharp knife, cut into 12 equal pieces. Place cut-side down on a greased 13x9” baking pan. Cover with a clean tea towel and let rise until doubled in size, about an hour. (See notes) Preheat oven to 350°F. Bake for 25-30 minutes, or until rolls are golden brown. Cool pan on a wire rack for around 10 minutes. Combine frosting ingredients, beating until creamy. Spread over rolls. If desired, top with roughly chopped dried cranberries. (adapted from My Baking Addiction) Notes: If you wish to make this the night before, stop after you place the rolls in the greased pan. At that point, cover with plastic wrap and refrigerate overnight. The next morning, remove the pan from the fridge, peel off the plastic wrap and let sit at room temperature 30-40 minutes while the oven preheats. Bake as instructed. And, yes, we agree that this recipe is more attractive when done in a skillet. If you wish to do this, just know that you will have leftover unbaked rolls. The good news? The extras can freeze! Just wrap each one tightly to prevent freezer burn.

Chrissy Teigen’s Dutch Baby Pancake • 1 c. all-purpose flour, sifted • 4 large eggs • 1 c. whole milk, room temperature • 1/2 tsp. kosher salt • 4 T butter, melted

Preheat the oven to 475°F. In a blender, combine flour, eggs, milk, salt and half the butter. Blend until smooth with no lumps, about 20 seconds. In a 10-inch cast iron skillet, heat remaining 2 T butter over high heat until foamy, shaking to distribute if necessary. Add batter and immediately move skillet to oven. Bake until the outside of the pancake is puffed and a deep golden color, about 17 minutes. Remove from oven and place skillet on a wire rack for 1 minute. If not eating right away, remove pancake from skillet and set on wire rack, to prevent t from deflating. (adapted from Cravings by Chrissy Teigen) Notes: This is wonderful dusted with powdered sugar and served with maple syrup. However, we think it’s also a wonderful vessel for fresh fruit. This recipe is meant to serve 4. If you’re serving a few more people, make the recipe again, turn the second Dutch Baby onto the wire rack, then return the first to the oven for a couple minutes to rewarm. •

Christmas Coffee • 1/2 c. sugar • 1/4 c. unsweetened cocoa • 1/4 tsp. cinnamon • 1/3 c. water • 10 c. brewed coffee Over medium heat, bring sugar, cocoa, cinnamon and water to a boil for 1 minute. Add to coffee; stir and serve immediately. (adapted from Food.com) Note: Serve alongside whipped cream, milk, sugar, Frangelico and Bourbon, allowing guests to “spice up” their own cup.

Morton Strata French Hot Chocolate • 1 1/2 c. whole milk • 1/2 c. heavy cream • 2 tsp. powdered sugar • 1/2 tsp. espresso powder • 8 oz. bittersweet chocolate, chopped In a saucepan over medium heat, whisk together milk, cream, powdered sugar and espresso powder until warm and small bubbles appear around the edges; do not allow to boil. Remove from heat and stir in chopped chocolate; return to heat if necessary to allow chocolate to melt completely. Serve warm, topped with whipped cream. (adapted from Well Plated) Notes: It’s important to use good-quality chocolate here. That said, you’re welcome to use milk chocolate or dark chocolate, if you prefer. French hot chocolate is much thicker and richer than good ol’ Swiss Miss. If you find this consistency a little too thick for your liking, add warm milk. On the other hand, if you want something a little more decadent? Add more chocolate! This makes 4 small servings... or two very intense ones!

One of our favorite holiday movies is The Family Stone, which is totally funny and heartwarming (and packed full of some of our favorite actors.) Part of the fun revolves around Sarah Jessica Parker’s character insisting on making her family’s traditional breakfast strata. We think it sounds good! • 8 slices white bread • 8 oz. sliced mozzarella • 2 – 14 oz. cans sliced tomatoes • 13 oz. can sliced mushrooms, drained • 1 medium onion, sliced • 5 eggs, beaten • 1 tsp. salt • 1 tsp. oregano • Pinch garlic salt • Parmesan cheese • Sliced black olives (optional) Cut the bread into stars, if desired. Otherwise, use a cookie cutter or jar lid to cut into circles. Set aside. Place bread scraps into bottom of a greased 13x9” baking dish. Layer half of the cheese over the bread scraps. Arrange half of tomatoes along with all of the onion slices and mushrooms over the cheese. Cover with the rest of the cheese, then top with the bread shapes. Place slices of tomato in the center of each bread shape. Whisk together eggs, milk, salt, oregano and garlic salt. Pour over the casserole. Sprinkle with Parmesan and olives (if desired). Cover and refrigerate overnight. Remove casserole from fridge and uncover. Preheat oven to 325°F. Bake 1 to 1 1/2 hours or until a knife comes out clean. Let stand 10 minutes to firm. • 2 c. milk • 8 large eggs • 3 green onions, chopped • 1 tsp. onion powder • 1 tsp. salt • 3/4 lb. Canadian bacon, cubed • 6 English muffins, torn • 1/2 tsp. paprika

HOLLANDAISE SAUCE

• 3 egg yolks • 1 T lemon juice • 1/4 tsp. Dijon mustard • 1 dash hot sauce • 1/2 c. butter, melted

Grease a 13x9” baking pan with cooking spray. Whisk together milk, eggs, green onions, onion powder and salt. Set aside. Layer half of the Canadian bacon in the prepared dish. Cover with English muffin pieces. Top with remaining Canadian bacon, then pour milk mixture over casserole. Cover with plastic wrap and refrigerate overnight. Preheat oven to 375°F. Uncover baking dish. Sprinkle paprika over the top, then cover with aluminum foil. Bake until eggs are nearly set, about 30 minutes. Remove foil and bake an additional 15 minutes more. Make the sauce. Add egg yolks, lemon juice, mustard and hot sauce to your blender. Cover and blend on high for 5 seconds. Set the blender to medium-low speed, then slowly drizzle the butter in in a steady stream. The sauce should become thick and smooth within 15-30 seconds. Drizzle directly over the casserole and serve. (adapted from AllRecipes) Note: If you want to use leftover ham instead of Canadian bacon, we don’t think anyone would complain! We get that Hollandaise can be tricky; if you want to take a shortcut and use a packaged mix, that can be our little secret.
