AMBERNAZWA ROOM RESTAURACJI RESTAURANT

Amber Room is located within Sobański Palace, an architectural gem on one of the most beautiful streets in Warsaw. Part of the Polish Business Roundtable Club, the visionary behind this is the late Mr. Jan Wejchert. A spacious setting spells class; the essence here is modern Polish, with items such as the foie gras marinated in Madeira with figs; the duck breast with creamy carrots and figs; and the chocolate fondant with cheesecake. The restaurant has proven itself at the “Wine and Food Noble Night” culinary competition organized annually in Warsaw; in its first entry in 2010 it won in all three categories! Recommended by the Michelin Guide 2011 and 2012, it is only one of two restaurants in the city to have received Michelin’s 4 Forks and Spoons categorizing it as a luxurious restaurant! AKADEMIA SMAKU NAZWA RESTAURACJI RESTAURANT

Located in Warsaw’s center between two cultural landmarks, the University of Warsaw and the Polski Theater, Akademia Smaku emanates its own educational leanings sending happy guests informed on what excellent Polish cuisine is all about. The name which translates to “academy of flavors” is appropriate; this indeed is an outstanding place where in its impeccable interiors one is exposed to an impressive array of Polish flavors. The menu truly delights with its high level of authenticity, quality, and freshness— virtually every item that arrives on one’s table is prepared after one places an order. Items such as the veal stuffed cabbage rolls on pumpkin mousse; roasted trout served with boiled potatoes, with freshly chopped fennel; traditional beef rolls served with roast buckwheat with raisins and pickled cucumber; the halibut served with broccoli puree and pickled cucumber sauce, are all excellent. NAZWA A. BLIKLE RESTAURACJI RESTAURANT

A. Blikle Restaurant Nowy Świat 33, Warsaw 00-029 phone: +48 22 826 64 50 www.blikle.pl

TOP Warsaw

If there is a famous Polish café that defines history then one needs to visit A. Blikle, in existence since 1869. Nowadays, more of a cafe cum brasserie, this institution which has been run by the Blikle family for five generations offers a synthesis between Polish and French cuisine. While its “café aspect” needs no introduction with its wide spectrum of offerings- desserts, famous donuts, cheesecake with raspberry, fine coffees and teas, its brasserie is demonstrating the same sense in its food offering. The mushroom soup with dumplings; the wheat and buckwheat pancakes served with salmon, caviar, or herring; the foie gras with gingerbread; duck in various recipe formulations and the St. Jacob mussels are good selections. With breakfast served all day including the Russian breakfast with champagne and caviar, A. Blikle always lives up to a quality experience.

To the casual fleeting eye, Batida may look just as a place where the idea of a café has been elevated to the days of nobility and European charm. But it is much more. With a number of locations in the city, the one on Plac Konstytucji, is perhaps the one that exemplifies best the Batida vision. A mammoth space, freshly renewed, majestically sweeping with high ceilings and porcelain chandeliers, does apt justice to the wide spectrum of what it purveys within, especially the delicious cakes and pastries which are perhaps the best in Warsaw. Batida may very well be all things to all people, and delivers on this motto superbly over breakfast, lunch, dinner, and throughout the day; the special area on the 1st floor is ideal for family and business meetings. The winning concept here is to make everyone happy in an elegant, classy setting conducive to good conversation!

CASA NAZWA PABLO RESTAURACJI RESTAURANT

Casa Pablo is redefining the idea of Spanish cuisine in Warsaw. In a non-clichéd setting - vintage, inspired, composed of objects and furniture from Spain - creative Spanish cuisine is served under the watchful eye of owner Pablo Martin Delgado. While not a traditional Spanish restaurant, dishes are prepared using Spanish techniques and products flown in from the country. Culinary creativity is reflected in items such as the homemade foie gras coated with toasted kikos, served with fig compote and raspberry pebbles or the duck breast burger served with sansho ko pepper caramelized onions, mahon cheese, arugula, raspberry ketchup and truffle mayonnaise. An outstanding bar reflects the culture of Spain, and the space exudes a warmth that appeals to a wide range of customers - couples seeking a romantic evening, business-folk, as well as those seeking a chic place to have dinner or drinks with friends.

The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

BUTCHERY & WINE RESTAURANT

Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla ice-cream. A comprehensive wine list, and friendly service make Butchery & Wine a top selection!

The legendary Café Bristol Café, situated in the very heart of the city, is an integral part of Le Meridien Bristol Hotel. For years a favorite meeting place for both Warsaw’s visitors and its locals, it has welcomed patrons since 1901. With interiors styled in Viennese elegance, this is the place where one can enjoy outstanding coffee and desserts from its own in-house bakery throughout the year. The menu changes with the seasons; late autumn-early winter is a time for the stuff of Polish orchards, so cakes with apples, plums and pears are outstanding, as well as there is a greater an emphasis on salads, fruits, and light meats. No surprise therefore that this place has come to be a place where social and business meetings always go well! Note: Breakfast starts at 8 am, and in December, Christmas dishes will be available for takeout.

DELICJA POLSKA RESTAURANT

Delicja Polska located on Krakowskie Przedmieście, the main street in Warsaw’s center, is indeed a unique place for traditional Polish cuisine. OBERZA POD CZERWONYM WIEPRZEM

Oberża Pod Czerwonym Wieprzem, or the Inn Under the Red Hog was in its historical past a restaurant for the communist party elite, where surrounded by chandeliers, portraits, and flags, once feasted the likes of Lenin, Breżnev, Fidel Castro, and Mao Tse Tung! The walls are replete with portraits of old communists, and the dishes have names such as Delicacies of the Polish People’s Republic, a selection of pate, luncheon meat, blood sausage, and kielbasa; varied pierogi “made from rationed flour”; and Baltic herring and game pate for the “Dignitaries and Bourgeoisie”. This is Polish cuisine in fact at its very best, with main dishes that are outstanding-examples include the oven roasted duck, served with cherry sauce, roasted apple, and beetroot. Joseph Seeletso, the founder and celebrity chef owner of Joseph’s Wine & Food was born in Botswana where he inherited the idea of gastronomy from his father. His first job at 19 in the kitchen of the Sheraton Hotel there was intense. In 1998 he graduated from Westminster College in London with honors and received the Professional Chef’s Diploma. At the Claridge’s in London he acquired further skills under Executive Chef John Williams. His Poland phase began in Krakow in 1998, blending African cuisine with international culinary themes producing his ‘heavenly combinations’. A TV star in Poland in his own right, Joseph was invited in 2010 by CNN to showcase Poland in the distinguished company of Professor Norman Davies. Botswana was where he started exploring the world of wine, giving him endless ideas of combinations of dishes and wine.

NAZWA RESTAURACJI

He has represented Botswana during international trade shows in Orlando in 2005 and Tokyo in 2006, and flies back to Botswana regularly to prepare Presidential state dinners. His outstanding restaurant and wine bar is now the place to be in Warsaw where his innovations of different foods are prepared in an open kitchen format. The location of a former factory, a wine bar with perhaps the longest list of wines in the entire city, a wine

store, all provide an outstanding atmosphere. Culinary creativity is experienced in flavorpacked items such as the tuna tartare; the marinated duck breast with carrot mousse and sugar peas; and Pandanus mousse for dessert. Joseph’s Wine & Food is a top choice indeed! Please note: From September the restaurant opens on Sunday during 12.00-16.30, offering special family lunch.

SŁODKI...SŁONY NAZWA RESTAURACJI RESTAURANT

Located on swanky Mokotowska Street, Słodki... Słony, pronounced “swodkey, swoneh” (and which translates to Sweet, Salty), is Poland’s top restaurateur and culinary genius Magda Gessler’s immense imagination coming together to produce gastronomic art of high order. Passion is clearly evident here with over 60 kinds of desserts, cakes, and pastries on the menu; what is different here is that recipes are 100% natural and date back over a century. Not surprisingly sweets were even sent to Pope John Paul II at the Vatican! Just as “Słodki” caters to the sweeter aspects of life, “Słony” caters to the salted, with items such as the caviar served on toast with egg and lemon, salmon in a marinade of green lemon and dill, alongside good old Polish bigos as well. A marriage of immense flavors, traditions, and an enrapturing ambience makes this place a sweet Warsaw experience indeed!

U FUKIERA RESTAURANT

U Fukiera, is a townhouse restaurant that has indeed become an ornament in Warsaw’s Old Town Square. Magda Gessler’s signature is everywhere, from fresh flowers, antiques, and art, to the excellent culinary experience. Magda Gessler had the vision over fifteen years ago to present that what Poland had to offer in terms of style, and remarkable culinary traditions could rival and surpass any other. Much of what appears on the table is what she learned from her grandmother with dishes such as the baked carp with porcini mushrooms and cream; and white sausage with honey and onion jam. With a far reaching reputation both domestically and internationally, its guest list boasts many visiting dignitaries. Ultimately what stands out at U Fukiera is the distinct philosophy that all guests here are A-list celebrities—to be fed, treated, and looked after as such!

TOMO SUSHI RESTAURANT

Tomo Sushi stands tall amongst Warsaw’s crowded culinary scene, largely due to a few unassailable features—great quality, authenticity, and an easy welcoming atmosphere. It has proven itself with creativity which is evident here at all levels. The menu has been put together with a clear thought to impress that this is no ordinary sushi place with items such as the Gyutataki, slices of raw beef served with shichimi sauce, grated daikon, fresh ginger, onions and greens; and the Shiromi Usuzukuri which is thinly sliced carpaccio of fresh white fish with lemon based ponzu sauce. The tuna steak with mustard sauce; the chicken teriyaki are all equally wonderful. The vision of Tomo’s co-owner Andrzej Pankiewicz is to impart a memorable experience; the word “Tomo” in Japanese implies friendship, and this is the place to enjoy company in the presence of outstanding culinary creations!

WHITE SUSHI RESTAURANT

Newly opened White Sushi located on Warsaw’s prestigious Krakowskie Przedmieście a few steps from the Presidential Palace, is redefining the way a sushi restaurant is perceived. Here, as the name suggests, there is the pristine backdrop of a white interior, where the mind gets a clean slate to simply savor and judge the immense quality of the offerings here. The delicious salmon tartar, salad with shrimp and avocado, and of course a refined array of fine sashimi and sushi are a treat for two reasons—the skill of he sushi masters behind the counter and the quality of ingredients as far as freshness and appropriate cuts are concerned. NATIONAL OPERA

Archiwum Teatru Wielkiego - Opery Narodowej/ Fot. E. Krasucka

Don Carlos, the opera in four acts by Giueseppe Verdi, based on Friedriech Schiller’s drama, brings the interesting story of its creation. Verdi composed it on request of the Paris Opera, to celebrate the World’s Fair. But despite its great expectations, it appeared instead to be a great disaster. Neither the then French emperor and empress, nor the performers or the audiences liked it. Nevertheless what French adjudged as a poor show, had a great reception at various foreign venues from London to Bologna. The public outside France appreciated the well-created characters, as well as the scenarios such as Philip’s monologue, and the night scene in the garden accompanied by the chorus. Don Carlos is a timeless piece of art, the story of 19th century royal families which after so many years since its inception, still thrills.

The exhibition presents the work of Julian Antoniszczak (known as Antonisz, November 8, 1941 – January 31, 1987)- cofounder of the legendary Studio of Animated Films in Krakow. An avant-garde Polish filmmaker, artist, animator, screenwriter, he is best known as an inventor and promoter of his unique animation technique called “non-camera” with Sun: A Non-Camera Film in 1977 being his first fully noncamera movie. The technique was to paint or scratch the images directly onto the movie tape instead of using a camcorder. His mechanical skills were legendary; he constructed numerous accessories supporting the creation of non-camera movies. The Antoniszograf, for example, was a machine which scratched a set of frames, with a fluid transition between the two following images. This exhibition allows one to witness his technology as an intrinsic part of his tremendous artistry.
