ELEGANT BLESSINGS: LIVING A LIFE OF GRACE -By Madisyn Taylor
When we accept that we always exist in a state of grace, we are able to live our lives more graciously.
G
race exists inside of all of us and around us. It is our inner beauty that radiates outward,
touching everyone we meet. It is that unseen hand that comes from the divine, raising us up when we most need it. To be able to live in a state of grace is not based on worthiness, nor is it earned through good deeds, ritual, or sacrifice. Rather it is an unearned favor, freely bestowed and available to all, that is inherent to our birthright. All we must do is open our eyes to its presence and we will find and experience grace everywhere. continued on next page

DailyOm Grace is in the rain bringing relief to drought-ridden farms, and the unexpected lead for the perfect job opportunity that comes from a stranger. Grace is what happens to someone when they miraculously escape injury; it is even the simple events that happen to us that we call “good luck,” like when we don’t get a parking ticket after are meter has expired. Grace resides in the love between two people, the gift or check that comes unexpectedly in the mail, the cozy comforts that make up a home, and in the acts of forgiveness we bestow upon others. It is grace that moves us to go out of our way to help a stranger. In music, a grace note is the pause between notes that is so important to the pacing of a song. Grace is the state we are in when we are doing nothing but just being who we are. When we accept that we always exist in a state of grace, we are able to live our lives more graciously. Knowing we are graced gives us hope, makes us more generous, and allows us to trust that we are taken care of even when we are going through difficult times. Grace is our benevolence of heart, and our generosity of spirit. Grace is unconditional love and the beauty that is our humanity. When we know that we are blessed with grace, we can’t help but want to live our lives in harmony. Reprinted from DailyOM- Inspirational thoughts for a happy, healthy and fulfilling day. THE CHIRON FILES ANNOUNCING INVESTIGATIVE FEATURE ON THE HISTORY OF MONSANTO & GENETIC ENGINEERING OF FOOD -By Eric Francis
How did Monsanto
become so powerful? How is such a relatively small company so influential? These are among the questions asked in “In Through the Out Door: The Cosmic Signature of Monsanto and GMOs,” an investigative feature written by Eric Francis Coppolino, editor of Planet Waves.
You may request a copy of the article by emailing press@planetwaves.net. You’ll receive a reply with a PDF file.
Published in the August/September edition of The Mountain Astrologer (which appeared on stands July 1st), the article tracks the history of Monsanto from its founding in 1901 to the present, including the recent discovery of illegal GMO wheat in Oregon and the recent March Against Monsanto. Coppolino has covered Monsanto since 1991, publishing his work in Sierra magazine, The Las Vegas Sun and The Village Voice. The New York Times once said that Coppolino “has a hunger for government documents that rivals that of Seymour Hersh.” His astrology has appeared throughout the English-speaking world from the UK’s The Daily Mail to Australia’s Harper’s Bazaar.

makes no predictions about what might happen to Monsanto or its GMO enterprise. Rather he uses astrology to analyze the company's history, influence and staying power, reviewing the charts of patent applications, legislation and the birth of the founder, John F. Queeny. Quoting documents obtained through the legal discovery process, the article documents Monsanto's history as a chemical firm in prior decades, including alleged manipulation of cancer research. It then tracks the many twists of Monsanto's rise as the leading purveyor of genetically modified crops, including the patents for the New Leaf Potato, Bovine Growth Hormone and Bt corn.
"This is an unusual perspective on Monsanto that's never been written before," said Tem Tarriktar, publisher of The Mountain Astrologer. "Due to his history covering the company and his track record as a news astrologer, Eric was the one writer to take on this story." "I've read thousands of pages of company memos, depositions and scientific reports," Coppolino said. "Studying Monsanto's chart has pulled together many pieces of a very complicated puzzle." He began covering Monsanto after PCB explosions contaminated four dormitories on a college campus in New Paltz, NY in 1991.

THE NATURAL 9 FOODS THAT FIGHT FAT MEDICINE WOMAN NEW COLUMNIST
-By Michelle Schoffro Cook
Tired of that spare tire? Sick of your love handles? You can increase your body’s fat-burning power by eating more foods that help your liver (your body’s main fat-metabolizing organ) to burn fat better, resulting in a leaner body. There are many fabulous foods that fight fat, but the ones below are some of my favorites:
continued on next page
Page 12
Leafy Greens: Spinach, spring mix, mustard greens, and other dark leafy greens are good sources of fiber and powerhouses of nutrition. Research demonstrates that their high concentration of vitamins and antioxidants helps prevent hunger while protecting you from heart disease, cancer, cataracts, and memory loss.
Beans & Legumes: Legumes are the best source of fiber of any foods. They help to stabilize blood sugar while keeping you regular. They are also high in potassium, a critical mineral that reduces dehydration and the risk of high blood pressure and stroke. A legume, soy is particularly good for fat-burning. Isoflavones found in soy foods speed the breakdown of stored fat. In one study, those who consumed high amounts of soy products shed three times more superfluous weight than did their counterparts who ate no soy.
Garlic & Onions: This dynamic duo of foods contains phytochemicals that break down fatty deposits in the body, while also breaking down cholesterol; killing viruses, bacteria, and fungi; and protecting against heart disease. With a little help from garlic and onions, you can burn fat while warding off illness. continued on next page
Page 13
Cayenne: This hot spice lessens the risk of excess insulin in the body by speeding metabolism and lowering blood glucose (sugar) levels, before the excess insulin can result in fat
Green Tea: Study after study proves that drinking green tea dramatically reduces weight. It contains the phytonutrient epigallocatechin gallate (EGCG). EGCG increases the rate at which fat is burned in your body. Research at Tufts University indicates that EGCG, like other catechins, activates fat-burning genes in the abdomen to speed weight loss by 77 percent. Most studies show that drinking at least 3 cups daily offers the best health benefits.
stores. Spice up your next meal with cayenne and lessen those love handles.
Turmeric: The popular spice used primarily in Indian cooking contains the highest known source of beta carotene, the antioxidant that helps protect the liver from free radical damage. Turmeric also helps strengthen your liver while helping your body metabolize fats by decreasing the fat storage rate in liver cells. Add a teaspoon of turmeric into your next curry dish to help your body fight fat. continued on next page
Page 14
Cinnamon: Researchers at the United States Department of Agriculture showed that a quarter to one teaspoon of cinnamon with food helps metabolize sugar up to twenty times better than food not eaten with cinnamon. Excess sugar in the blood can lead to fat storage. Before you sip that chai tea latte or eat your oatmeal, sprinkle on the cinnamon.
Flax Seeds & Flax Seed Oil: These seeds and oil attract oilsoluble toxins that become lodged in the fatty tissues of the body. Once attracted, they help to escort fat-soluble toxins out. That spells fewer fat stores and a trimmer you.

DREAMWORKS DREAMS ON THE RADIO -By Doug Grunther
I
have been the host of The Woodstock Roundtable for
over a decade. It's a Sunday morning talk program on Radio Woodstock, 100.1 FM and I've done a number of radio segments where listeners had the chance to call in with a dream and get into a lively conversation about its meaning. Now I've decided to do a listener call-in dream segment every week on the program from 8:30—8:50AM. Here's why. At night we are treated to some of the most entertaining, strange, enlightening, hysterical, and profound presentations. They are our sleeping dreams. I'll bet you've had a dream in the past as scary and shocking as Alfred Hitchcock's Psycho. I'll bet you've had a dream in the past, which was just as creatively bizarre as the best David Lynch or Louis Bunuel film. And I'll bet you've had a dream just as erotic as Body Heat. You're not alone. We all have.

LIVER QI STAGNATION: WHAT IS IT & WHAT CAN YOU DO ABOUT IT? -By Nicole Cutler
I
f you’ve ever seen or spoken with an acupuncturist before, you may have heard the term ‘liver
qi stagnation’. Even if the terminology is new to you, it is likely that at some point in your life it has or will affect you. Awareness of the general concept behind liver qi stagnation will help you recognize when you are most susceptible and take several simple steps to relieve this common imbalance. Whether considering the liver in Eastern or Western medicine, this organ has many functions. In Western medicine, the liver is responsible for cleansing toxins from the blood, storing energy, manufacturing many essential substances (cholesterol, hormones, proteins, enzymes and bloodclotting factors) and producing bile. In Eastern medicine, the liver is responsible for storing the blood, regulating energy (qi), harmonizing the emotions, assisting digestive functions and nourishing the body’s eyes, tendons and ligaments.
continued on next page
Page 19
LIVER QI STAGNATION When overworked, the liver tends to get clogged up and perform sluggishly.
• Western holistic health practitioners may refer to this as a congested liver. • Acupuncturists call it liver qi stagnation. • Allopathic physicians only diagnose a liver problem if blood tests, an ultrasound or biopsy
indicate liver damage.
Liver qi stagnation frequently exists far before any evidence of liver damage surfaces. However, liver qi stagnation that persists unabated for an extended period of time can cause a long list of serious health issues – including liver damage, endometriosis, migraines, irritable bowel syndrome, atherosclerosis, high blood pressure and more. Liver qi stagnation is responsible for a wide range of vague, odd-sounding symptoms that can render someone more susceptible to serious illness. Unfortunately, a Western medical doctor cannot detect liver qi stagnation and will proclaim someone with this imbalance to be completely healthy. Liver qi stagnation refers to liver energy that fails to disperse normally and act freely. Acupuncturists refer to liver qi flowing free and easy throughout the body as a tenet of good health. Emotions are the primary factor impeding liver qi flow. As such, impairment of the liver qi is frequently a result of emotional upset, depression and rage. In addition to emotions being at the root, inactivity and excess toxins building up in the liver can cause liver qi stagnation. Toxins can be anything the body does not easily process, such as chemicals, drugs, alcohol, trans fats and sugar.
COMMON LIVER QI STAGNATION SYMPTOMS MAY INCLUDE: •
Pain or discomfort in the abdomen, flanks
(sides of the trunk) or breasts
•
Sensation of a lump in the throat or
difficulty swallowing
•
Frequent sighing
•
Bitter taste in the mouth
• Headache •
Depression or mood swings
•
Premenstrual syndrome (PMS)
•
Alternating constipation and loose stool
continued on next page
Page 20
RELIEVING LIVER QI STAGNATION The good news is that liver qi stagnation is not permanent. There are many ways to ease liver congestion. Common strategies include limiting the amount of toxins entering your body (eating healthy foods), regular exercise (this helps circulate qi), finding ways to release stress and anxiety and working out any lingering anger issues.
THE FOLLOWING FOODS HELP DISPERSE LIVER QI: •
Turmeric, mustard seed, orange peel and saffron
•
Garlic, onions and fennel
•
Apple cider vinegar, lemon and lime
•
Kumquats and cherries
•
Red and black dates
•
Mushroom, squash and sweet potato
If exercising regularly, avoiding toxins, eating healthy food, relieving stress, and managing anger do not seem to be easing liver qi stagnation, consult a licensed acupuncturist. These professionals have access to a variety of non-invasive therapies that help relieve liver congestion. Although working towards the free and easy flow of liver energy may not be your first priority, it is one of the greatest steps you can take towards assuring your own wellness; now and in the future. OPTIONS FOR LIFE FOOD: THE NATURAL SOLUTION FOR CANCER-PROTECTIVE ESTROGEN MANAGEMENT -By Elyn Jacobs
E
strogen is thought to be the driving force behind
many breast cancers; however, estrogen is only one part of the cancer story. To protect ourselves against cancer, we must control the estrogen, cut off the pathways for cancer, detoxify the body, reduce inflammation, and protect our DNA and so much more. What magic bullet can do all that? Food. The compounds in everyday foods can likely manage estrogen as effectively as drugs, yet cause no side effects and come with a host of benefits. For example, quercetin, found in apples, red wine, red grape skins, tomatoes, onions, and green tea, has anti-estrogenic effects and may reduce the metastatic potential of cancer cells. It disrupts the process that turns healthy cells into malignant cancer cells and its antioxidant and anti-inflammatory properties protect DNA from cancerfriendly mutations.

WHAT ABOUT PHARMACEUTICALS?
Tamoxifen competes with estrogens for binding to the estrogen receptors in the body. When estrogens bind to the receptors in the cells of the breast or uterus, for example, this activates cell growth and division. When Tamoxifen occupies the estrogen

but rather only stops them from growing; therefore there is no offer for a cure, only a band-aid. When you remove the band-aid, the cells can then begin to divide again. And, Tamoxifen comes with side effects and resulting effects, not benefits.
Aromatase inhibitors, drugs such as Fermara, Aromasin and Arimidex, stop the production of estrogen in postmenopausal women. More specifically, they block the enzyme aromatase, the enzyme responsible for the biosynthesis and

kinds of estrogen, “good” and “bad” estrogen. “Good” estrogen metabolites are released into the bloodstream where they cause many of the benefits estrogen provides, such as prevention of heart disease and strong, healthy bones. “Bad” estrogen, in large quantities, causes trouble. By inhibiting aromatase and blocking estrogen, less “bad” estrogen is available to stimulate the growth of hormone-receptor-positive breast cancer cells. However, this also means that you have less of the protective “good”. So by blocking aromatase, we create imbalance and eliminate protective estrogen. Again, nature has a remedy, sans the side
Remember, estrogen is natural to our body; we need it. In fact, we had plenty of estrogen well before the dramatic increase in breast cancer; what we didn’t have was the toxic food, water and chemicals we have today. These chemicals add xenoestrogens (chemical estrogens) into the picture, chemicals that mimic estrogen. Xenoestrogens have been in the environment only in the last 70 years, which certainly helps explain the explosion of incidence. Eliminate as many as you can; use non-toxic home and beauty products and eat organic food. Eat to detox: detoxifying foods can help remove these chemicals from the body.
effects. Compounds in crucifers, for example, can improve the balance and help the body metabolize estrogen into more of the good and less of the bad. Button mushrooms are thought to contain natural aromatase inhibitors; other types of mushrooms-- portobello, crimini and shiitake mushrooms also inhibited aromatase activity and all inhibit tumor growth. HEALING SCENTS EMOTIONAL BALANCE WITH THERAPUTIC ESSENTIAL OILS
-By Joan Apter, LMT
P
eople have used aromatic plants to enhance the
human experience for over 5,000 years. Although the term "aromatherapy" is new to many, the practice of using aromatic essential oils for physical, mental, emotional and spiritual balance is an ancient art.
PRIMER: What Are Essential Oils? Essential oils are the subtle, aromatic and volatile lifeforce extracted from the flowers, seeds, leaves, stems, bark and roots of herbs, bushes, shrubs and trees, through steam distillation under low pressure and low temperature. Like human beings, they are alive, both chemically and electrically. They have a direct effect on the brain through the olfactory system and skin absorption. Serving the same function as human blood, essential oils are the regenerating, oxygenating and immune defense properties of the plant kingdom. Essential oils contain a frequency that is several times greater than the frequency of herbs and food. They enhance brain wave function, improve spiritual awareness, and bring a beautiful balance to the body. continued on next page

How to Achieve Emotional Balance with Essential Oils Aromatherapy is the art and science of the use and application of therapeutic essential oils.
Essential oils contain molecules that pass directly to the emotional brain. They assist in the release of negative emotions, allowing you to manifest your highest potential. The following blends, found in The “Feelings Kit from Young , Living, contain essential oils found to strengthen and stabilize emotions. They may be applied as a daily regimen, as you focus on your intention to release and let go.

REFLEXOLOGY Questions Afoot
-By Debbie Burklund
"WHY DO YOU JUST DO FEET?" Rude question? Maybe. But the fact is that, even if my hands don't leave your feet, I am treating all of you -- your body's organs and systems -- by removing metabolic debris, which enables your cells to begin their job of self healing. I'm seeing all of you, much as an ophthalmologist does when looking into your eyes.
"BUT DON'T YOU GET SICK OF FEET? " Nope. Negatory. Nuh-uh. I love what I do. And no two pair of feet are the same.

KEEPING FEET HAPPY AND HEALTHY: TIPS THAT ARE GOOD FOR THE SOLE
-By Patricia Martin
S
tanding for hours, walking on hard
surfaces, wearing non-sensible shoes— that’s a day in the life of a foot. We demand a lot from our feet, yet often take them for granted…Until our “dogs” start to dog us with pain! Our feet are made up of 26 bones, 56 ligaments, and 38 muscles—which translates to roughly 25% of the bones and the muscles in our entire body. And every day, our feet absorb about 1,000 lbs. of force. By the time we’ve reached our 50th birthday, most of us will have walked more than 70,000 miles. No wonder foot pain is the 3rd most common medical complaint.
There’s a good chance that we’ll be one of the 80% of the U.S. population that will suffer from some kind of foot ailment at some point in our life. Here is some information and tips to help you stave off pain and stay foot loose and fancy free! continued on next page
Page 31
STEP INTO THE RIGHT SHOES If the shoe fits…wear it! Treat your feet right by protecting them with proper, foot-friendly shoes. Unfortunately, some of the most popular shoes are also the worst for feet. Here’s a rundown of the ones you should walk away from.
The Worst Offender: Flip Flops Fashionable thongs made of colorful rubber, sometimes glamorously bedecked with sparkling glitter or flower embellishments, flip flops remain one of the most beloved shoes of summer. They’re easy to slip on, easy to slip off, and—unfortunately—they also make feet more susceptible to pain and injuries. Here are some of the reasons flip flops should not be worn, or at least not worn for any length of time. (They’re fine for lounging by a pool or at the beach, but not out pounding the pavement.)
•
Flip flops offer no arch support. In fact, continuous walking in flat-
soled footwear may cause the calf muscle to stretch, resulting in the
Achilles tendon getting strained. Also, wearing shoes without support
on a regular basis can cause knee, hip and back problems.
•
Because flip flops are thin and flimsy, feet hit the ground with more
intensity/greater impact, which is more jarring to bones and joints.
•
Flip flops can aggravate foot deformities such as bunions and
hammertoes, and also contribute to such painful conditions as plantar
fasciitis. •
Flip flops leave feet totally exposed, making them vulnerable to cuts
and scrapes. In addition, their thin soles are easily punctured by
shards of glass, nails, splinters, etc., opening the door to more injuries. continued on next page
Page 32
•
Flip flops and other backless shoes cause toes to “over
grip” in order to keep them on your feet, which can throw your gait and balance off kilter, increasing the risk of tripping by as much as70%.
•
Not only are flip flops typically not made in an
environmentally conscious fashion, their rubber soles are porous, which makes them a breeding ground for funguses, bacteria, and other germs. This unhealthy environment can lead to athlete’s foot, warts, and other unpleasant conditions and infections.
•
The thin rubber thong between the toes causes
friction, which can result in irritation, blisters and abrasions between the toes that may become susceptible to infection. Diabetics should be particularly wary of wearing flip flops if they have disease-related neuropathy because they won’t be able to feel any irritation until there is a significant problem.
When it comes to easy and breezy summer shoes, sandals would be a better choice. But if you insist on flip flops, be sure to invest in a good, well-constructed, quality pair that offers support. The best: those with an orthotic foot bed (which, by the way, can be very cute and fashionable looking, too).

Page 33
OTHER OFFENDING FOOTWEAR BALLET FLATS: Those sweet little ballet flats seem to always be en vogue. They are cute, with a sole as flat as a pancake…Which means that they present the same problems as flip flops in terms of lack of support.
SNEAKERS SANS SOCKS: The right sneaker or athletic shoe offers great support and comfort. But don’t ditch socks or you’ll create an environment that’s friendly to breeding bacteria.
RUBBER/PLASTIC “CLOGS”: This style of shoe has become wildly popular for both adults and children, but is not meant for long-term, real-world wear. Unless you have purchased a name-brand expensive pair, your feet may be in for all kinds of bacteria/fungus issues. And be forewarned, there have been news reports over the past several years that individuals wearing soft-soled clogs—especially children— are getting their toes caught in escalators, and suffering from minor to major injuries as a result. continued on next page

HIGH HEELS: Podiatrists say more than half of Americans regularly experience aching feet, and that that 80% of those who go for treatment are women. No doubt high heels have something to do with that! Compounding pain issues is the fact that women walk, on average, three miles farther than men each day. And, according to a survey by the American Podiatric Medical Association (APMA) 65% of women spend more than four hours on their feet each day. High heels LOOK fabulous—but are brutal for feet. Wearing them can lead to Plantar fasciitis, Achilles tendonitis, sprained and swollen ankles, forefoot pain, blisters, aching feet, hammertoes, corns and calluses, lower back pain, knee strain, as well as other painful conditions.
Despite the health hazards, women are not about to give up their stilettoes! Here are some tips for reducing the physical dangers of wearing high heels. •
Make sure the heels fit well. Studies show that 88% of American
women wear shoes that are too small. As we age, feet expand, so it’s
helpful to have them measured periodically.
•
Choose to try on shoes at the end of your day, as they swell throughout
the day when you stand and walk around.
•
Try on both pairs of shoes, as your feet may not be identical in size and
the shoes may not be identical in size as well.
•
Consider high heeled shoes with an “air bag” or very comfortable sole
that protects your feet from rubbing and provides shock absorption. If
the shoes you love do not have a padded sole, get a cushy insert. continued on next page
Page 35
•
Spend less time perched on high heels. Limit your walking and standing when
wearing high heels, and whenever possible give your feet a break during the day
by switching to more comfy shoes, at least for a while.
•
Apply Topricin Foot Therapy Cream to feet before strutting out in heels as a
preventative, to reduce pain and injury, then again afterwards to help relieve any
burning, throbbing nerve pain in the feet. As an added plus, it also treats dry,
cracked skin of the feet and eliminate “ashy heel.”
WHEN SOMETHING’S AFOOT Here are other ways to keep your feet happy and healthy. •Swelling in the lower extremities may be a sign of poor protein assimilation. If you suffer from swollen feet and ankles, try switching from meat, poultry and fish to more bioavailable proteins like whey and legumes. continued on next page
Page 36
•
Elevate your legs for 15 or 20 minutes to reduce swelling.
This is especially important if you tend to cross your legs,
which hinders circulation and causes blood to “pool” in
your feet.
•
Diabetics often suffer from swelling feet, and have a
tendency to have more pressure inside their foot which
is said to be the cause of initial skin breakdown and
lesions. The best course of action they can take is to
see their primary care physician and podiatrist
on a regular basis and keep their blood sugar under
control. Elevating their feet and icing them are helpful,
followed by applying Topricin after the cold therapy.
•
Treat your feet to a massage. At the end of a long day, a
good foot rub feels great and does wonders for your
feet. Look for a foot roller that is specially designed to
massage the soles of the feet, or roll your bare feet over
a tennis ball or golf ball.
continued on next page
Page 37
•
Soak in relief. Treat your feet to a nice relaxing warm
bath with Epsom salts, which will help relax your muscles, reduce
pain, and sedate the nervous system as well as help drain
toxins and reduce swelling. Another technique that’s refreshing
and stimulating is to fill one basin with cold water and another
with hot. Start by placing your feet in cold water for five minutes,
then switch to the hot, and repeat. What happens is this “hydro
massage” alternately dilates then constricts the blood vessels in
your feet, which boosts circulation.
Work it out. Exercise can help relieve your feet’s aches and pains. Here are a few suggestions:
•
A simple exercise is to first point, then flex, your feet, which helps
stretch out the small muscles on the bottom of the foot.
•
Stand and raise both heels up so that you’re on the balls of your
feet, and hold for 10 seconds (repeat 10 times).
•
Try scattering some pens and pencils on the floor, and pick them
up with your toes, one at a time. •
Feet that have been cramped in shoes all day will benefit from this
exercise in resistance: wrap a thick rubber band around all the
toes (one foot at a time). Spread your toes open as far as
you can, and hold for five seconds. (Repeat this stretch & release
10 times.) continued on next page

•
Sweaty feet are not only uncomfortable, but can lead to health issues because it makes feet more
susceptible to infections. Most people do not hydrate sufficiently enough and their body temperatures will normally rise, depending upon their level of activity. Water also regulates your body’s natural internal temperature—which equals less sweating. In addition to drinking plenty of water, try using talc-free powders and natural deodorants, such as “crystal” deodorant, on your feet. You may also want to take your shoes off periodically throughout the day so your feet can “air out.” •
Maintain a balanced PH. Some simple, natural ways are to take the supplement acidophilus;
immerse feet in hot water with a combination of Epsom salts and natural apple cider vinegar. (Vinegar corrects PH on skin, helps reduce itching, and neutralizes fungus; Epson salts help draw out toxins and neutralize fungus as well. In addition, Epson is very soothing for muscle aches and joint pain. •
Avoid eating nightshade vegetables (tomatoes, peppers, eggplant, white potatoes) and gluten
(especially wheat, barley and oats). Nightshades can aggravate inflammation and gluten ups the histamine response, which causes an allergic response to the gluten. •
Apply Topricin Foot Therapy Cream evenings and mornings, and
periodically during the day to maintain happy, healthy, pain-free feet. Topricin helps to reduce swelling because of its role in helping the body detoxify and remove excess fluid from the underlying supportive tissue. It targets ankles ankle and foot pain and contains eleven natural medicines that naturally support and assist the body by helping the subcutaneous skin layers of the feet to drain toxins and excess fluids from the tissues which increases blood flow and helps heal the damage that is causing the pain. In addition some the natural biomedicines in the formula have antifungal and antibacterial properties.
•
See your doctor or podiatrist immediately if you have concerns about
any foot issues.

QUICKIE CHICK
FAST FOOD’S SUPRISING SIDE EFFECTS -By Laurel House
Migraines
T
urns out processed foods can trigger migraines. Anyone who knows
how horrible those can be is probably dropping their jaw in horror at every time they ever went through a drive through. You’re just trying to get a quick meal, but what you don’t know is that that meal is loaded with things like nitrates, artificial sweeteners and monosodium glutamate (MSG). Nitrates are added to many fast foods in order to protect from certain bacteria and to give meat a cured taste and MSG enhances flavor, but along with the extra pressure on your belt buckle, these can lead to pressure in your brain.
Depression If you’re eating fast food, you’re probably not eating healthy food, too. Eating sugary and fatty foods regularly usually means you aren’t eating foods that give you nutrients that are essential for mental health, like antioxidants, folate and Omega-3’s. Without enough of these, you can experience symptoms of depression. continued on next page
Page 40
Decreased Sex Drive That’s right, if you’re going to indulge in one pleasure,
I’m not really in the mood...can we just cuddle?
you may have to pass up on another. Fatty foods can trigger biochemical changes that can cause libido, sperm count and ovulation to take a dive. I’ve always been against fast food restaurants as date spots, but this just confirms it.
Food Addiction Yup, it does exist. You may joke that you’re addicted to this or that, but be careful what you joke about. High levels of fat and sugar can cause blood sugar levels to spike and crash, leading you to need even more in order to just maintain normalcy. Imagine needing three cheeseburgers in order to even get out of bed!
A lot of people justify eating fast food because they had a lighter meal earlier or because they have a fast metabolism. But fast food has effects on one’s body aside from plain old weight gain and cholesterol increase. Consider these side effects next time you’re debating that fatty, fried, quick fix of a meal.

ALEXANDRA’S INSIGHTS HOW MY CELEBRITY FRIENDS HANDLE THEIR CRAVINGS...& THEIR LIVES -By ALexandra Jamieson
I
love getting inspired by friends who aim higher!
These women inspire me. They’re my friends, guides and creative partners. When I first started hanging out with JJ Virgin, one of my crave catalysts profiled below, she told me “Hey! Rising tides lift all boats – let’s help each other!” These women are supportive, playful, powerful, and they have cravings. Cravings for food that they listen to and use to give themselves what they really need and want – at dinner and in life. I’ve listened to these women when they’ve shared their stories of overcoming health and body challenges with the best diet for their individual diet – in the moment. Some of them grew famous with one diet and one way of eating and cooking, and evolved as their bodies told them they needed something different. They inspire me because they didn’t beat themselves up for their cravings… They don’t make their bodies wrong… They know how to listen to their cravings and give themselves what they really need…the good stuff…in life and at lunch. continued on next page

How did you first begin to handle your cravings in order to create the life and body you craved?
Cynthia Pasquella: Cookbook Author & TV Nutrition Expert “I got comfortable being uncomfortable – it’s when the bigger reasons behind my cravings started coming through that allowed me to finally heal my body and my relationship with food.”
Kate Northrup: Author & GlimpseTV Host “I learned about the glycemic index and I started eating a low-glycemic diet that didn’t spike my blood sugar. Then the cravings more or less went away because they were being caused by blood sugar spikes and lows.”
Jessica Ortner: Host & Producer, The Tapping Solution “I first began handling my cravings by letting go of the idea that I needed more “willpower”, instead I began looking closely and addressing the emotions I felt when I had the craving and my desire to turn to food for comfort.”

Being raised with an incredibly empowering and health-conscious Japanese mother meant learning to create balance early in life. My Mother taught my sister and I to eat, only when you are hungry. Stop, when you are full. I know, this sounds like the obvious; but so many of us fall-short when it comes to just passing on that last course or just one more cocktail. What one thing would you recommend women do/create/ have (that worked/works for you) in order to cure their sabotaging food cravings? JJ Virgin: #1 New York Times Best Seller “The Virgin Diet” “Eat a protein rich breakfast. If you start the day with a high carb breakfast or worse yet, no breakfast, you set yourself up for a day full of cravings. Protein is very satiating and helps stabilize blood sugar, especially when combined with fiber and healthy fats. My top recommendation is to start the day with a healthy meal replacement shake – I use a high quality vegan protein blend, unsweetened coconut or almond milk, chia seeds, kale or spinach and berries.”
Nisha Moodley: Founder of “Fierce, Fabulous & Free“ “For most women, there’s something deeper that we’re really craving: connection. Make a gentle effort to cultivate sisterhood in your life — you’ll satisfy your strong cravings for connection, building a solid sisterhood of support to celebrate your life’s highs and soothe your life’s lows.”
Jenny Sansouci: Founder of HealthyCrush.com “What works for me is to remember how certain foods make me feel. For instance, I know that sugar makes me feel depressed and too much coffee gives me anxiety, so in the interest of wanting to feel great, I tend to stay away from them. I don’t have time to feel crappy. I still give into cravings, I just try to do it in the nicest way possible – I find healthier alternatives. For instance, I’m a bit of a caffeine junkie, but I stick to yerba mate tea instead of coffee, which has some caffeine but lots of antioxidants, and doesn’t make me feel jittery. Instead of eating processed chocolate that’s full of milk and sugar, I go for raw chocolate.” These women are at the forefront of a healing, creative, supportive movement to help millions of people end their battle with their bodies, cure their sabotaging food cravings and get the life and body they truly crave. They’re doing them right. Giving themselves the authentic energy, real food and permission to be themselves every day, in every way. They’re building the lives and health they crave.

KEEPING UP WITH THE VEGETARIANS... THE VEGANS...THE FRUITARIANS... -By Christina Towle
I
s the hot new club the health-food store? Recently, I’ve felt the need to spruce up prior to entering the automatic doors of my local whole food store. Literally, I do a once-over to ensure that I’m green-carpet worthy. Recyclable bags--check! Proper yoga gear on--check! Eco-friendly water bottle--check! Now I’m good to walk the aisles as one with the environment. My son takes an apple off the shelf and it’s not organic. I’m sure that was a look I received from the woman near me. Should I grab the apple and lecture him on why we don’t eat conventional? My Pranayama course comes in handy--I decide to breathe deeply, and let it go. During my mini-meditative moment, I see the image of the New Yorker cartoon posted on my fridge. It pictures the evil witch handing Snow White the infamous apple. The caption reads:
“Why, yes, my dear, it is organic!” continued on next page
Page 46
Interestingly, there is a long tradition of glorifying food production. Tom Standage writes in An Edible History of Humanity: “In pre-revolutionary France, Queen Marie-Antoinette had an idealized farm built on the grounds of the palace of Versailles, where she and her ladies-in-waiting would dress up as shepherdesses and milkmaids, and milk cows that had been painstakingly cleaned…” Not so different from a recent episode of a reality television show. A company arrives at a celebrity couple’s backyard and plants an organic garden with automatic watering system in less than an hour. The couple is quick to label themselves as organic farmers yet are free from dirt and labor. The essence of nutrition has changed because of its en vogue status. Don’t get me wrong, I am thrilled that more are aware of the severity of the obesity epidemic and that people are taking great measures to protect our children. I am thankful for the efforts of the American Heart Association, the William J. Clinton Foundation’s Alliance for a Healthier Generation, and Jamie Oliver’s Food Revolution. It is crucial that we educate ourselves so we can make healthier choices for ourselves and our families. And this is my point. Health should not be a status symbol. It is not something we put on to appear more worthy. Do we really want to make health such a trend that we constantly feel like we have to overspend, making carrots akin to caviar? Just look at the data about publicized health foods in the last decade: Olive oil consumption has nearly tripled since 1991; walnut consumption reached a record high in 2004/05, of 0.54 pounds per person; and the acai berry has seen sales triple in just three years, from $3.8million in 2005 to $13.5 million in 2007. (Bittman ,Food Matters ).
Making health fun and attractive is not immoral. However, it’s more positive to direct our energies towards nourishing all with quality foods. CBS Sunday Morning’s “Fighting Hunger in a Land of Plenty” profiled the efforts of the California Food Bank. Recently, the association started the Farm to Family Program, in which volunteers gather fresh produce for food banks, so the hungry can eat healthy broccoli, portobello mushrooms, lovely potatoes and yams, carrots etc. Another program is The Farmer’s Market Nutrition Program (FMNP), established by Congress in 1992, that supplies local fruits and vegetables to women and their children. A hearty dream yes, to satisfy all who are hunger for health. But if we collectively shift away from thinking of health as an exclusive lifestyle and focus on providing good nourishment to all, our souls and stomachs will benefit. Let’s get rid of the VIP status and sit down at the same table.
Have you noticed the huge marketing campaigns for these foods? The commercials, the packaging, the infusion of “ingredients” into numerous other marketplace categories—even beauty products and clothing. It’s ironic that we spend so much time and energy making health pretty when the cleanest foods come from the dirt: Fruits, vegetables, and whole grains.

PLANET WAVES SEASON’S HOROSCOPE
-By Eric Francis
Aries (March 20-April 19) What do you offer in your sexual relationships and what do you get back? There may seem to be a situation wherein you do all the giving, and where someone else benefits. Have you found yourself in this situation before? You seem to be in the role of sexual healer. That's someone who engages in erotic experiences primarily for the benefit of others. Your role is to hold space for them, which is a high-consciousness experience. At the same time there's part of you that craves the experiences you want -- yet you will learn more and deepen your relationships by offering rare experiences to others, or to someone in particular. Reach for a deep understanding of what your partner or someone you care about needs and offer that to them as a conscious act of generosity and healing.
Taurus (April 19-May 20) When a house is designed with the kitchen at the center, it has a point of focus and feels more like home. This is an old tradition from when the hearth had to be at the center of a structure. The hearth provided warmth, energy for cooking, a gathering point and was a kind of utilitarian spiritual center of the home (a lot more interesting than most stoves). There is some experience that may benefit from using this as a metaphor. Something, someone or some experience needs to be kept at the center of your life, and everything else organized around it. This is likely to involve your physical home, who is welcome there and whether they feel comfortable -beginning with you. The message of the stars this month is to fully occupy your space and keep your home fires burning bright.
Gemini (May 20-June 21) You have been through an interesting tour of your feelings about yourself. You seem to have considered this from every possible point of view, and I think that's a beautiful (and necessary) thing for a conscious person. You're now at the point where it would be good to ask yourself what you've learned, because you will need to make decisions based on that mix of information and experience. You may encounter something that seems like a test of your self-worth. But once you get there, remember all that you've learned so recently. Remember that confidence comes from the heart and not the head; don't try to convince yourself of anything -- be courageous and look whoever in the eye and know that you can do not just what you need to do, but what you want to do.

Cancer (June 21-July 22)
Leo (July 22-Aug. 23)
Be conscious of when you’re trying to enhance how you feel about yourself by altering externals -- your appearance, for example, or making sure that people know your accomplishments. There’s a place and time for those things, but at the moment, your astrology is about orienting from the inside out. Consider this: If you emphasize your appearance in some way, that’s taking consciousness from your interior reality. Experiment with this to see it in action. You’re not valued by others because your appearance is so good, or so acceptable, or because your flaws are hidden. You are accepted because you are who you are, the more so the bolder you are about it. Consider that focus on externals, no matter how shiny, dulls something about your interior, while focus on your inner fire is how you can shine.
You cannot be totally committed part of the time -- such is a bit of wisdom from A Course in Miracles. Obviously you cannot do everything all of the time, but commitment is, above all, a state of mind. It’s a relationship to existence. It’s where the concepts ‘devotion to yourself’, ‘devotion to others’, and ‘devotion to a cause’ merge into one idea -- because they are the same idea. Your inner alignment is the focal point of your relationship to existence. Your astrology is describing you as centered in that relationship, and if you observe yourself and focus your attention there, you can answer many of your own questions about who you are, what you want to be doing and why. It’s not even possible to pretend -- knowing that will make your life much simpler.
Virgo (Aug. 23-Sep. 22) Is there a secret that you're hiding from yourself? I don't mean something you're denying; I mean something you're concealing from your awareness. Rather than looking for that thing, I suggest you look for the motive you might have. For example, if you fully consider something, what decisions might that lead you to make? If you admit something to yourself, what would you have to say to others about it? There may be some tension between your inner reality and the outer effects if you allow that to come fully into your consciousness. I would propose that the result of allowing your inner reality to the surface would be a form of strength and power that you're not accustomed to, and that you might consider scary. But is it really? You will never know unless you allow it to happen.
Libra (Sep. 22-Oct. 23) You still may not be fully in harmony with the extent to which you’re perceived as a leader. I don’t mean a boss, though that may be true. I mean someone in a position of moral authority, someone who is a reference point for right and wrong. As such, it’s essential that you question yourself, and that those questions lead somewhat directly to useful information. It’s clear that you’re doubting something about yourself, indeed, it’s likely that you’re obsessed with your doubts. But that’s not a direct path to knowledge -- it seems more like a diversion. If something doesn’t have an answer, it may not be a valid question. This one doubt may be covering your deeper faith in yourself. Set it aside for a few days and look at yourself from another point of view.

Scorpio (Oct. 23-Nov. 22)
Capricorn (Dec. 22-Jan. 20)
I suggest you make a list of every mistake you've made more than three times. Stick to the big ones -- the ones involving your career, your family, your sense of purpose; mistakes involving authority figures, the government, and how you think of your place in society. My question for you is: can you spot any pattern that they all share? Is there some underlying energy, idea or belief that you're allowing to misguide you? Here's a more challenging question: what would you have to give up if you start making better decisions? Your chart says that you're being called to service in a big way. True, you might consider helping people match their shoes to their dress a form of service, but I would submit that may be better suited for your list of mistakes. You have a purpose, it is significant, and it's beautiful -- all you need to do is get out of your own way.
There seem to be two parallel worlds in your relationships. One looks like passion and chaos, complete with mixed signals flying in all directions, bright light, dark shadows, passion and repulsion. In a parallel world there is focus, devotion, purpose and clarity. There is the honoring of what is vital and what is real. There is a conscious relationship to tradition, with everyone doing their part to uphold something that's older than everyone involved. I would propose that your life would be easier if you were to choose one of these worlds rather than trying to live in both at the same time. I can understand wanting elements of both, but not making up your mind is denying you either of them. Here is a clue: they have a lot in common; but in one, the passion is in a more accessible, available form.
Sagittarius (Nov. 22-Dec. 22) There is an I Ching hexagram (number 41) called Decreasing. Really, it means concentrating. I think of the energy of this hexagram as being about cutting back on what is not necessary, trimming back your energy field and focusing on what is important -- with a view toward the long run. That is what your charts are about now. Tidy up any fires that are burning out of control; keep your flame concentrated and contained. Use your heat and energy consciously. While you're at it, organize the kitchen, clean out one cupboard, scrub the teakettle and toss out anything that doesn't belong in your refrigerator. Focus on doing what is necessary using less energy than you usually do, but using it more meaningfully. Your confidence will grow and in the process you will discover some unexpected form of success.
Aquarius (Jan. 20-Feb. 19) There are times when your calling is undeniable. If you're not one of those people who feels this every day, get ready to experience it over the next five or six weeks. That said, if you're unaccustomed to the idea of a calling, you may need to get used to the challenge involved. I know there's plenty of modern mythology around 'do what you want and everything will work out', and I am aware that some people report that happening. More people say something like: 'had I known what would be involved, I might not have attempted it, but in retrospect I'm very glad that I did'. That more or less sums up your moment. You are being guided, if not by ease, than by meaning; you are being invited not into the familiar, tried and true, but into the authentic unknown.
Pisces (Feb. 19-March 20) If there's one pitfall to the otherwise brilliant astrology that's blessing you right now, it involves making the choice to send clear signals. You have both Neptune and Chiron in your sign; you can express yourself as either of them or as a blend of both. Neptune is dreamy and is not exactly the deacon of firm commitment. Chiron is on mission, focused and alert, but can come off as having rough edges or something to prove. Healthy Neptune serves to cultivate a vision. Healthy Chiron focuses on healing, which is then conveyed into creativity and a sense of commitment that you want to express in real ways. I suggest you borrow the best elements of both planets, which work beautifully together. Use Chiron to focus your vision. Use Neptune to help you dream a little -- in truth so much is possible.

HOWLING WOLF FARM “GRATEFUL”
NEW COLUMNIST -By “Mama Wolf”
A
s I lay wide awake in the middle of the night last night unable to fall back to sleep, I made a list in my head of many, many simple things I am so grateful for in my life right now. These are just a few.... :: The soft downy hair on the top of my sweet baby's head that I love to kiss until my lips tingle when I can't sleep at night. :: Two big kids who make me so proud every day of the people they are and are becoming as they grow and mature before my eyes. :: How lucky I am that my partner is willing to rub my achy feet at the end of a long day. :: My chickens are finally back into the springtime laying routine and farm fresh omelets really are the best breakfast ever (and lunch, and dinner). :: I'm so happy that the frogs are croaking in the pond again. :: The pasture and new garden project is so close to completion... just a few more tasks that need to be done. I can't wait to sow seed and watch it grow! :: My first few skeins of balanced and beautiful two ply yarn- soon to be knit into something cozy for a little guy I know and love. :: Our ever growing list of fruit trees, shrubs and ground covers from Burnt Ridge Nursery. :: Learning to ride horses again after 25 years out of the saddle. :: Occasional sunny days, and the crazy schizophrenic springtime weather of sunshine, sideways rain, hail, blustery winds and rainbows all in a matter of an hour. :: Fourteen and a half wonderful years with the most wonderful, amazing and loyal dog I could have ever asked for.
May your day (and night) be filled with much gratitude and love....

WONDERFUL JOJOBA FOR FURNITURE “WAX”: GREEN & NATURAL
J
-By Annie B. Bond
ojoba wax is a natural liquid wax that never goes rancid. The wax comes from the jojoba tree, and it is antiseptic, a good lubricant, and an excellent substitute for the old formulas that called for sperm whale oil. It is also perfect to include in a formula for a DIY furniture polish because it doesn’t go rancid.
Most commercial furniture polish is mostly petroleum solvents with a bit of synthetic lemon fragrance, exposing yourself and your family to neurotoxicants, respiratory toxicants, and cardiovascular and blood toxicants, according to scorecard.org. The neurotoxic exposure can make you feel depressed and anxious. Here is a solution that is natural, green, and non-toxic, yet it gets the job done. One source of jojoba oil is Desert Essence.
DIY Furniture Polish/Wax - 1/4 cup distilled white vinegar - 1/4 teaspoon jojoba liquid wax - a few drops natural essential oil of lemon (optional, although note that lemon oil is very uplifting, as opposed to the depression that petroleum distillates can cause)
Add the ingredients to a small glass jar, and shake to blend. Dip a soft rag into the mixture and work the polish into the wood, moving along the grain line. Recommendation: A similar concept, although without jojoba, is found with Natural Choices 100% Natural Shine Furniture Cleaner and Polish. Instead of vinegar the ingredient is real orange oil (d-limonene), squeezed from the peel, and instead of jojoba, soybean oil is used as a lubricant. A petroleum-free product, Natural Shine cleans the wood at the same time that it moisturizes and polishes.

NUTRITONAL BITES LIVING OFF THE LAND -By Roufia Payman
“A
n apple a day keeps the doctor away…” And other fruits and veggies are just
as good for your health, too! Fresh produce contains vitamins, minerals, and many other nutrients that are essential to health and wellness, including phytochemicals, or antioxidants. Eating a diet that is rich in fruits and vegetables can help ward off heart disease and stroke, control blood pressure, and bolster your body’s immune system. It can also help you avoid diverticulitis (a painful intestinal ailment) and guard against cataract and macular degeneration (which are two common causes of vision loss). Moreover, luscious fruits and veggies can help the body cleanse itself of harmful toxins. Plus, they are just plain delicious! Our country’s basic diet falls woefully short of eating the proper amount of fruits and vegetables. Not counting potatoes—which should be considered a starch—the average American consumes just three servings of fruits and vegetables a day. This is much less than the nutritional guidelines that call for five to thirteen servings a day, which translates to roughly 2½ to 6½ cups, depending on an individual’s total daily caloric intake. Variety is the spice of life…And is also the key to health since no single fruit or vegetable can provide all of the nutrients we need. So, remember to eat a “rainbow” every day for optimum health! Here are some colorfully powerful fruits and vegetables that will add vitality and vibrancy to your nutritional profile. continued on next page

OTHER COLORFUL CHARACTERS Here are some other colorful fruits and veggies that are super health boosters. Apples: High in pectin, a fiber that binds to cholesterol and heavy metals in the body to help eliminate toxic build up and cleanse the intestines.
Avocados: A powerhouse that can lower cholesterol and dilate blood vessels while blocking artery-destroying toxicity.
Beets: Uniquely able to purify the blood and cleanse the liver. Cabbage: Offers numerous anticancer and antioxidant compounds, cleanses the digestive tract, and strengthens the liver’s ability to detoxify.
Celery: a great blood cleanser and contains different compounds that help detoxify cancer cells.
Cranberries: Contain antibiotic and antiviral substances. Lemons: An excellent liver detoxifier providing a superior amount of vitamin C.
Watercress: Delicious in salads or on sandwiches, it increases detoxification enzymes and acts on cancer cells in the body. continued on next page

HALF A PLATE FOR WHOLE HEALTH Are you hungry to start eating healthier? Then aim to fill ½ your plate with produce. Here are some easy ways to up your intake:

cider vinegar or lemon juice as a simple, healthful dressing. Season to taste with herbs and spices you like best.
UNDERCOVER AGENTS. Sneak fresh veggies into main dishes—they go with so much! Try adding mushrooms, peppers, spinach, zucchini, onions, or carrots to your pasta sauce, in casseroles, soups, stews, scrambled eggs, chili, or meatloaf. Or make veggies the main attraction on your homemade pizza—preferably using whole wheat dough--for a healthier version of everyone’s favorite comfort food.
With summer in full swing and farmers’ markets bursting with fresh produce, there couldn’t be a better time to live off the land!
GO ORGANIC Organic produce is good for the earth AND good for your body. It contains more antioxidants which not only protect your cells from aging but may also make you leaner. A recent University of Florida study found that people who consume more antioxidants had lower body mass indexes, smaller waistlines, and lower body fat percent than those with lower intakes, even though both groups consumed the same amount of daily calories. In addition, research shows that pesticide residue found on conventionally grown foods may be a contributing factor to the rising obesity rate. If you can’t go organic 100%, at least fill your shopping cart with the organic versions of “The Dirty Dozen™”—which are the fruits and vegetables found to contain the highest amount of pesticide residues— as well as the “Plus” crops, which do not meet traditional Dirty Dozen criteria but are commonly contaminated with pesticides exceptionally toxic to the nervous system. Here’s the full list of produce that are the most important to buy organic, compiled by the Environmental Working Group’s Shopper’s Guide to Pesticides in Produce for 2013: Apples, celery, cherry tomatoes, cucumbers, grapes, hot peppers, imported nectarines, peaches, white potatoes, spinach, strawberries, sweet bell peppers, kale/collard greens, summer squash

NUTRITONAL BITES RECIPES ROUFIA’S RECIPE CORNER T
he idea of “cold soups” seems so foreign or strange to some people that they just can’t seem to bring themselves to try one. But on a hot summer day or evening, nothing beats the heat better than a nice chilled soup—perhaps with a simple green salad-- and a loaf of good, whole grain peasant bread. Gazpacho is one of my summertime favorites. Filled with all kinds of glorious fresh vegetables, it’s like a refreshing “liquid salad.” You can be creative and adjust the actual vegetables, adding more or less depending on what you find at the farmer’s market or store. If you like tomato, I think you will love this recipe!
GAZPACHO Ingredients: • • • • • • • • • • • • • •
1 English cucumber or two small regular cucumbers halved and seeded 1 red bell peppers, cored and seeded 4 fresh tomatoes 1 red onion 2 ribs of celery 1 small zucchini 2 garlic cloves, minced 23 ounces organic tomato or vegetable juice (3 cups) 1/4 cup red wine vinegar 1/4 cup extra virgin olive oil Two tablespoons of fresh lemon A handful of fresh herbs of your choice: parsley, cilantro, and/or chives are good; a pinch of oregano or basil too Optional: If you like heat, add 1 jalapeno, seeded and chopped (use gloves); tabasco/hot sauce to taste Sea salt & fresh ground pepper to taste
Directions: Roughly chop the vegetables, reserving some on the side and dicing into smaller pieces. Place bulk of veggies and herbs in a blender or food processor and pulse to desired consistency, then mix with tomato juice. OR you can also blend the vegetables with the tomato juice or use an “inversion blender.” Mix in the oil, vinegar, lemon juice, salt & pepper (and hot sauce, if using) and stir well to combine. Add the reserve vegetables, taste and adjust the seasonings. Some people prefer a chunky gazpacho; I like to make mine relatively smooth, and use the diced reserved vegetables for some extra body. Chill before serving. The longer gazpacho sits, the more the flavors develop. continued on next page

SIMPLE GREEN SALAD DRESSING Along with ripe garden tomatoes, farm fresh cucumbers are one of the season’s greatest treats. Here is a recipe for a simple yet exquisitely tasty salad dressing that is the essence of summer. (Please note that the amount of ingredients is approximate— adjust the oil and vinegar and herbs to please your own palate.)
Ingredients: • 1 fresh cucumber, peeled, seeded and roughly chopped • ¼ cup extra virgin olive oil • ¼ (or more) cup apple cider vinegar (to taste) • 2 tablespoons of water • 1 or 2 cloves of garlic (to taste) • Handful of fresh herbs (parsley, basil, chives, tarragon, thyme, etc.) • Sea salt and pepper
Directions: Place all ingredients in a blender or food processor and puree until smooth. Taste and adjust seasonings.
