A Word from the Publisher It’s time to spring into summer with this new issue of Natural Healing, Natural Wellness. We created it to help you make the most of this lovely time of year. It gives me great pleasure to introduce you to our new columnist, Eric Francis. Eric is a world class astrologer and investigative journalist, and the founder and editor of Planet Waves—a resource that puts us in touch with what’s happening in our inner world and the world around us. We are delighted that he is contributing his “Chiron Files” to our newsletter, and I know you’ll find it fascinating and enlightening. There is so much great information inside these pages from our wonderful team of columnists and authors. You’ll read about everything from how to protect yourself from radiation poisoning to how to sooth your sole with

reflexology, and from the symbolism of water in your dreams to the “Dirty Dozen” fruits and vegetables that should only be eaten if they are organic (as well as the 12 you don’t need to worry about). As always, Lou has written an in depth, must-read article. In this issue he discusses what pain is, and better ways to treat it. And his eye-opening chart of the side effects of over-the-counter chemical pain pills makes it easy to see why you should keep them out of your medicine cabinet. Wishing you a wonderful season and good health,

PHYSICAL ADVANTAGE

“I am Woman”...Celebrating the Ladies During Women’s History Month by Laurie Towers

March is Women’s History Month, and so I mused…. Each culture develops a general perception of what the ideal female body type would be. Surely this could only be deemed unfair as the newer western ideals can be a bit stringent and applauding of emaciated structures. Although these may look flattering in a pair of jeans, it becomes a futile effort to obtain or maintain in reality. In design the male physicality has always been nurtured and subsidized for sport and strengthening prowess. Before adolescence however, males and females have very similar builds. At puberty, estrogen makes its entrance for the girls thus endorsing breast development and a wider pelvis to accommodate childbirth. Another feature of estrogen is to encourage the body to store its excess fat in the hips, thighs, and abdomen. As you would imagine, this is hardly a welcomed gift and is usually met with either the fight of intake depravation or any other item that may reduce the appearance of this. Throughout history, radical efforts have been embarked upon to reduce and alter a woman’s shape despite the fact that it would forfeit her certain rights of comfort. Corsets, although considered a bit Barbaric now, were certainly a common dweller in a women’s wardrobe by many cultures specifically during the Victorian era. Never totally obliterated from existence however, they do live on in a more humane presence by way of implementation of more comfortable and flexible materials. Truth be told, visual reduction or augmentation is a lucrative industry and will always exist as long as there is a society to subsidize this… and there always seems to be.

It wasn’t until after the 1920’s that American woman were no longer “under wraps” and began to wear clothing that displayed more of their bodies. This made way for increasing concerns of body image that of course, still plague us today. The more “voluptuous” appearance was no longer the ideal and it didn’t take long for the concern to give birth to the diet craze. Our culture has celebrated the athletic male body for thousands of years, but while the aesthetic beauty and strength of the male body has long been a common subject of art, women have not felt the same embrace. Throughout the 20th century though the new role of women both physically and intellectually had come to be reexamined. We gained the right to vote, own property, enter into politics and other professions ordinarily reserved for the boys. Despite the many gains, the allowance of women to redefine their “bodies” remained culturally stagnant. And it is still society that dictates the limitations on what is deemed “aesthetically acceptable” as far as the female body is concerned. continue on next page

During both WWI and WWII, many women found themselves having to venture out of the household to seek out the work that their husbands, now in battle, were pulled away from. It was during this time that an advertising frenzy began to heavily market products to women that encouraged them to retain their femininity. As most women were now doing “man’s work” they were a receptive and captive audience to this marketing angle, and print media profited greatly by way of the burgeoning advertising in magazines. PHYSICAL ADVANTAGE

“I am Woman”...Celebrating the Ladies During Women’s History Month Women and girls of the 60’s were assaulted with the visuals of Twiggy and Barbie dolls as the look to strive for. This look became the standard of impossibility that only proliferates the cycle of negative body image and cements the growth and profits of the diet industry. Thin was in, and there was no turning back. Until....... The standards of femininity sketched by societal hands were certainly challenged in the late 70’s when bodybuilding introduced a new type of feminine physique. The rules that dictated the “societal norm” for the desirable female body was blown out of the water completely and for good. Never before have female bodies looked like this, in the recent or distant past. Visibly developed muscles were heretofore unheard of on the female form, and the proportion became bigger—and, most importantly, stronger-mentally, emotionally and physically.

According to a recent survey of teenage girls, their primary source of news and issues on women’s health comes from the media. That has to make you wonder: what chance does an expanding mind have if it is being spoon fed a distorted philosophy. As parents, mentors or just concerned adults, we can inspire and offer more diverse and healthy images of women that would no doubt promote a more healthy self esteem so that a young woman doesn’t succumb to the pressure of feeling the need to conform to a societal ideal. Our daughters deserve it, and so do our sons who will go out and marry not just the woman but all she encompasses in full bloom. And with our support and nourishment, she can grow, conquer and command her place in the world based on a fair starting point, and measured by merit and equal value…Baby steps and progress made day by day, but progress surely made. Perhaps still a long, long way to go.....“until I make my brother understand”

NATURAL Wellness DREAM WORK

KEY DREAM SYMBOL: WATER

T

by Doug Grunther

hroughout the history of recorded dreams certain key symbols appear often, regardless of the dreamer’s birthplace or culture. Among the most common dream symbols are: Water, Male/Female, House (Dwelling), Clothing, Cars/ Transportation, Sex, Death, and the Shadow. In the next several columns I’ll discuss these symbols one at a time. Today’s column focuses on Water. (Note: It is important to remember that dreams and dream symbols represent metaphorical, not literal language.)

A shaman I interviewed told me that in his tradition every morning a tribute is made to water for providing a medium for emotional transformation. This correlates with what many dream experts know to be true: the metaphorical meaning of water in a dream most often refers to our emotional state surrounding the subject of the dream. It is important to note the specific details of how the water is presented. For example, if the dreamer is swimming in very turbulent, dangerous water, but is successfully keeping his/her head above water, I might consider this a message from the psyche that I, as the dreamer, have the ability to negotiate a difficult life passage. If however the dreamer is drowning in the turbulent water, in my imagined version this could mean the dream is coming to warn against taking on too much at one time in waking life. Take note of the specific body of water. In a dream there is a big difference between swimming in a friend’s backyard pool (perhaps a more personal emotion about that friend or what the dreamer “projects” onto that friend in waking life) and swimming in the ocean ( a more universal connection since the ocean is the original home of all humanity). A client of mine had a dream where he steers a motor boat across a calm lake but when he gets to shore all sorts of difficult and annoying things start to happen. I suggested that if this were my dream, the opening trip across the calm water shows that I, as the dreamer, have the ability to emotionally navigate the subsequent experiences on land more competently than I might have imagined. Recently a friend of mine asked for insights about a dream

she had which included everything from a stressful scene at her friend’s house to wrestling with a giant beast which was half lion, half platypus. But for me the key scene featured a man she knew in waking life standing in water up to his chest and successfully transforming the beast into a joyful child. Since the chest is where the heart is, if this were my dream, I would see this scene as helping me with a deeply heart-felt emotional issue. I would then want to connect this issue with the specific description the dream presents of the man in the water. In this case it was an authority figure who reminded the dreamer of her father. This generated a powerful “AHA” of recognition for the dreamer. Finally, since as I write this column the world is still caught up in the enormous tragedy in Japan caused by a huge earthquake and subsequent tsunami, I feel compelled to focus on the metaphorical meaning of a tsunami. When a dream features a tsunami, it often refers to an emotional tidal wave which shakes the very foundation of who we think we are and what our purpose in life is. In waking life, the advice given to avoid the destructive effects of a tsunami is to head for “higher ground.” In the dream world, I would project this “higher ground” to be a clear directive from my psyche that it is time to focus on what is truly important and valuable to me, particularly as it relates to a “higher” cause or calling. In the next dream column I will offer insights into the metaphorical levels of Male/Female images which appear in our dreams.

Easy Way to Get Labels Off

by Annie B. Bond

T

rying to remove clamshell packaging can cause rage attacks, and so can trying to get price labels off of housewares. Who hasn’t had trouble removing labels from new glasses, plates, or plastic containers? Getting labels off of plastic is especially hard because the glue needed to stick onto plastic is especially strong. All the commercial label removers that I have seen are made with solvents that are petroleum-based and very neurotoxic, so making do with simple, natural solutions is well advised.

How to remove labels on plastic: 1. Dab some olive oil (or whatever cooking oil you have handy) onto your finger and rub into the label, saturating it. 2. Set overnight. 3. Peel the label off. If it doesn’t come off easily, saturate with oil again and let set for another half day. 4. Keep repeating the process until all the glue is gone. 5. Wash in hot soapy water. Note the repetition required for some labels! Still worth the process so that you don’t pollute your home with neurotoxic solvent-based label removers.

For getting labels off of glass, soak the item in hot soapy water for a few hours and see if the label peels off. If not, use the oil technique, above.

Healing Your Sole: Self Reflexology “Our feet contain thousands of nerve endings and almost seventy acupuncture points which can support all over health.”

O

ur feet are home to literally thousands of nerve endings and almost seventy acupuncture points, which is why foot reflexology is so effective. By massaging and stimulating specific areas on the soles of our feet, we can provide general support for our entire body, improve sleep patterns, increase physical and mental wellbeing and also alleviate chronic conditions such as sinusitis and digestive upset. Although it is wonderful to work with an experienced foot reflexologist whenever possible, we can also develop a practice of treating ourselves to a self-reflexology treatment if we take some time for this purpose before we begin our day or in the evening to relax before going to bed. There are a number of different ways to work the soles of your feet, including walking barefoot on river stones, rolling each foot over a golf or tennis ball, or just using your fingers and hands to massage your feet. When starting a reflexology session, it’s a good idea to begin with loosening up your ankles – rotate each foot clockwise then counter-

clockwise about ten times. You might also want to pinch the end of your toes, which can increase circulation and drainage in your sinuses and stimulate your pituitary and pineal glands. Then you can begin massaging the ball of your foot, the arch, and the heel. If you find that an area is tender, it may indicate some distress or dysfunction occurring in the corresponding area of the body. You may want to explore what is going on with that organ or system. Whether we are able to spend just a few minutes a day on this kind of self-care or a full half hour, our efforts are never wasted. By taking responsibility for our own health and taking time every day to connect with our body, we can not only assist our body in letting go of stress and dysfunction, but we can also continue to support an ongoing sense of wellness and vitality. Protect Yourself Against Radiation Toxicity

T

he unfolding events relating to Japan’s damaged nuclear reactors are raising worldwide concern about increased radioactive isotopes in our environment. While we are constantly bombarded by radioactive exposure every time we fly in a plane, sit in front of our computer, use our electronics, walk through ever-present wireless networks, take an X-ray and so on, it seems an appropriate time to discuss what we can do on an on-going basis to protect our selves from excess radioactive toxicity. Japanese health authorities are passing out potassium iodide tablets to those in the vicinity of these reactors – as it is common knowledge that the thyroid gland is a weak spot when it comes to radiation exposure. By flooding the body with iodine, the iodine is taken up by the thyroid, which then blocks radiation uptake into the thyroid. This reduces the risk for future thyroid cancer.

by Joan Apter

However, potassium iodide should only be taken 24 hours prior to exposure and be maintained during the duration of excess exposure. In this article, I would like to offer healthy alternatives to protecting the thyroid, protecting against radiation toxicity and building the immune system on a daily basis, as part of our regular wellness program. I will be focusing on foods, and specific products I know and trust from Young Living Essential Oils (which I use and recommend for their quality and purity). ......continued

hyroid Protection:

1. Sea vegetables and their products Sodium alginate, a non-nutritious extract from Pacific Kelp used to bind and detoxify heavy metals from the body (such as lead, mercury, cadmium, etc.), and agar, used as a thickening agent instead of gelatin or corn starch, will protect the human body from radiation effects. They also reduce absorption of strontium 90 by 50-80%. Kelp and dulse, excellent natural sources of iodine, help protect against radioactive iodine, found mostly in milk. When the diet is adequately supplied with organic iodine (as in kelp), radioiodine is not as readily absorbed by the thyroid or the ovaries. Kelp contains 150,000 mcg of iodine per 100 grams (32 ounces). The RDA of iodine is 150-200 mcg. A reasonable daily dose of kelp would be 1-2 teaspoons of granules or 5-10 tablets. Other high iodine foods include: seafood, beef liver, pineapple, eggs and whole wheat. Note: Taking kelp as a source of iodine is much safer than drinking iodine or eating potassium iodide, which can be especially dangerous for pregnant women and can cause allergic reactions. Iodine (inorganic) is toxic because of its tendency to combine with protein. That’s how it destroys bacteria (a protein). When you put iodine into your mouth, it combines with the protein there and in your stomach or wherever it goes. This causes irritation--or worse. Also, sudden large doses of iodine in humans with a normal thyroid may reduce the synthesis of thyroid hormone.

2. Thyromin: Thyromin™ is a special blend of bovine glandular extracts, herbs, amino acids, minerals, and therapeutic-grade essential oils in a perfectly balanced formula that maximizes nutritional support for healthy thyroid function. The thyroid gland regulates body metabolism, energy, and body temperature. Vitamin E (as mixed tocopherols), Iodine (from potassium iodide & kelp), Potassium (as potassium citrate & potassium iodide), Pituitary Extract (from bovine): Adrenal Extract (from bovine), L-cystine, L-cysteine HCl, essential oils of peppermint, spearmint, myrtle and myrrh. • Anti-Oxidants: These protect our cells from free radical damage. (Free radicals are molecules responsible for aging and tissue damage.)

Unchecked free radicals attack DNA, the blueprint used to create new cells. If not repaired, damaged DNA copies itself into new cells and each new cell is damaged and mutations occur. Radiation can generate massive amounts of damaging free radicals, in turn potentially inducing DNA damage that may lead to future cancer. This means it is a good idea to maximize your overall antioxidant defenses. Having an adequate antioxidant defense system for more optimal health is common sense. During times of increased stress your needs for antioxidants rise – and this relates to any type of stress. Radiation exposure is simply one more type of stress. Anti-Oxidant Product Recommendations: NingXia Red and Longevity capsules, Super C 1. NingXia Red: A wide-spectrum antioxidant drink, NingXia Red does more than protect against a single free radical. It absorbs four of the most prevalent free radicals found in the body. And it’s more effective than any other health drink at absorbing the superoxide free radical—the most abundant free radical in the human body. NingXia Red combines the benefits of Ningxia Wolfberry, blueberry, pomegranate, apricot and raspberry juices and enhances them with essential oils. A number of studies show that wolfberries protect against DNA breakage and mutations. Additionally, ellagic acid, found in blueberries, raspberries, and pomegranates (all juice ingredients in NingXia Red) may “protect DNA against injury.” .......continued Page 7

The essential oils that are added may also increase bioflavonoid activity. Vitamin C is one of the most important vitamins required by our bodies. NATURAL Wellness ALEXANDRA’S INSIGHTS

How Frito Lay Has It Wrong: Fried Foods Are Dangerous ! by Alexandra Jamieson

L

ooking at websites of some of the world’s biggest fast food and packaged foods (read JUNK FOOD) companies has been a little shocking – and I thought I had seen it all! (Remember in Super Size Me when I had to watch Morgan go through 30 days of torture eating nothing but McDonald’s? If you haven’t seen the movie, you can watch it for free on Hulu.com.)

“Frying in ANY oil produces a chemical known as acrylamide!”

I was reading on Frito Lay’s website about their crunchy Fritos brand chips, and how, as the company puts it: “…frying isn’t unhealthy, it’s the type of oil in which the frying is done that matters.” Both I and the USDA disagree with this idea. Frying in ANY oil produces a chemical known as acrylamide. Here is what the USDA says about the danger of acrylamides: “Acrylamide caused cancer in animals in studies where animals were exposed to acrylamide at very high doses. Acrylamide causes nerve damage in people exposed to very high levels at work. FDA has not yet determined the exact public health impact, if any, of acrylamide from the much lower levels found in foods. FDA is conducting research studies to determine whether acrylamide in food is a potential risk to human health.”

HERE’S THE REAL SCOOP: Fried foods aren’t healthy, no matter what oil you use. Acrylamide is a dangerous (more than likely) carcinogen and the National Institute of Health recommends against them in a heart healthy diet. Heart Healthy Popcorn If you’re a crunch lover, then try eating air-popped popcorn. Drizzle it with olive oil and sprinkle some Red Star nutritional yeast flakes on top for a savory, cheesy (but dairyfree), healthy, protein-rich flavor. It’s delicious! Fried foods are dangerous—but my heart-healthy popcorn is crunchtastic! You can spend $20 on a great air-popper and buy organic popping corn in bulk for less than $1 a pound. I always use organic corn products so I can avoid any genetically modified organisms. That means every bowl of popcorn will cost less than a quarter after a few uses of the air popper! It’s a terrific money saver.

TOPRICIN IN THE NEWS

e’ve been very busy the past few months at Topical BioMedics, and are very excited to announce that Topricin has just been awarded a patent for the topical treatment of neuropathy. This is great news for the 20+ million American who suffer with debilitating neuropathic pain, who are desperate for relief, including: • Cancer patients, who suffer from chemo-induced peripheral neuropathy (CIPN). CIPN is excruciating, and of the leading causes of patients stopping their cancer treatments. • Diabetics—whose uncontrolled peripheral neuropathy is the leading cause of amputation of limbs. • Individuals who suffer with debilitating fibromyalgia--a population that is tragically driven to suicide because of the pain. Here’s how it works. Topricin’s combination of 11 homeopathic biomedicines helps the body rebalance healing chemistries needed to detoxify the area around the nerve tissue and restore normal oxygenated blood flow to the area—thus supporting an environment for normal nerve function and the beginning of easing neuropathic pain. Spread the word to anyone you know who is suffering—it will make a wonderful difference in their quality of life!

In Other News: We had the pleasure of hosting a visit by a team of budding young scientists! A gaggle of 5th graders competing in Edson’s Lego Body Forward Challenge came to our headquarters to interview Lou and talk about their project. The theme was “Working Together to Make Life Better,” and they covered the human body, from brain to bones, working on robotic innovations. Lou discussed Topricin’s healing technology and how it helps the body heal, and then answered the nonstop stream of questions the kids asked as they enjoyed some pizza. We were impressed with their very bright, enthusiastic minds, and know that when they are young adults they will certainly contribute to the world and make it a better place. Even though their project did not receive top honors at the competition, every one of them is a winner!

She made the transition from weight loss success story to athlete—including 2008 and 2009 winner of the Ms. Bikini International contest--and now also promotes Great Northern National Championship events. Just this past April, we worked with Stacy and the competing athletes, providing plenty of Topricin samples to ease their hard-pumping muscles! The exciting event took place on April 23rd at the mega Mall of America in Minnesota. We’re looking forward to working with Stacy again on the Midwest Championship in Chicago come October!

CHIRON FILES

Mental, Emotional, Physical or Spiritual?

O

nce someone explained to me that the distinction between jazz and blues had more to do with sorting things out in the record store than it did with meaningful differences in the music. To hear the terms, one would get the mistaken idea that they are entirely unrelated things. In fact, they are entirely related, most notably by being music.

by Eric Francis

That’s how it often is with categories of any kind, and that’s how it is with some we use often -- mental, emotional and physical. We could add ‘spiritual’ to that list, too. The thing about categories is that they do as much excluding as they do including. If you say ‘mental’ then you’re implying that whatever you’re talking about has nothing to do with the body. If you say ‘physical’ you imply just physical. ......continued on next page Page 13

NATURAL Wellness CHIRON FILES

Mental, Emotional, Physical or Spiritual?

I

f you say ‘spiritual’ you imply everything else is unspiritual. Often categories have no relationship to what they supposedly describe. White people are not really white and black people are not black. We refer to black, white and Latino but Latino is not a color. When we say ‘mental’ we might mean emotional or spiritual. Usually both have plenty in common with one’s physical reality. The charts for spring 2011 are full of illustrations of the crossovers between these seemingly separate realities. One example is how Aquarius (the mental dimension) and Pisces (the emotional and sometimes the spiritual dimension) have been morphing into one sign. Neptune (a planet associated with Pisces) has been in Aquarius for more than 12 years, and it’s about to cross back and forth over the line between the two signs three times between now and early 2012. This draws a connection between the mental, the spiritual and the emotional. The idea is that they are different expressions of the same thing. Take a few chords from blues, lighten up the riff, and you’ve got jazz. Meanwhile, Uranus, a planet associated with Aquarius, has been crossing back and forth between Pisces and Aries for the past year, morphing those two signs and carrying over energy from Aquarius. Aries is hot blooded and passionate, but it’s also about physical strength and stamina. Uranus adds the dimension of mental innovation and invention. When the Sun crossed it made Aries equinox point it made a conjunction to Uranus. Meanwhile Jupiter, the traditional ruling planet of Pisces, is in Aries, carrying some of that energy over to its neighbor as well.

Do these categories mean anything? They mean a lot less than the statement that as the astrology of the spring and indeed the next few years develops, we will have increasing access to all the dimensions of who we are -- if we want to access those inner experiences. This column is called the Chiron Files, and it’s worth taking a close look at the particular influence of that planet on its new home, Pisces. Chiron is the original astrological factor that blurs the boundaries. Buzzing around between the orbits of Saturn and Uranus, Chiron is usually associated with the signs Virgo and Sagittarius. So that’s a lot of different qualities bundled up into one thing that’s a little like an asteroid and a little more like a comet. Chiron is like an unkaleidoscope that, instead of fracturing an image into things that make no sense, it reassembles things that make no sense into something that is perfectly understandable. To me Chiron in Pisces has a few basic messages. One is that everything exists on a continuum. There are not so many hard and fast boundaries and rules, but it’s good to know where you are on the spectrum at any given time so you can respond appropriately. Another message of Chiron in Pisces is that existence is holographic. Everything we experience is a sample of everything else. Perception is based on seeing differences, and those are in turn based on the differences we already have within our minds. Chiron is not only saying that we can see the world as whole, but also that as we see ourselves as whole, we will begin to see the world that way.

In effect, Aquarius, Pisces and Aries are currently acting like one sign. There’s something going on here -- personality integration. Except for the fact that personality is a category, and we really don’t know what it means. Is it part of the soul? Some say no. I say that it is an aspect of a person. What we think of as the mind (Aquarius, Uranus) is getting expressed through the body (Aries, Sun) and mixed with the soul (Pisces, Jupiter, Neptune) and also with what we sometimes think of as the feeling body or astral body.

NATURAL Wellness MEDITATION EXPRESS

Learning to Focus!

by Nancy Butler-Ross and Michael Suib

I

?

?

?

“How can you think and hit at the same time?” -- Yogi Berra

f you find that your thoughts wander and it’s difficult to stay focused while you’re meditating, that’s okay. Distractions and intruding thoughts are inevitable, whether you’re focusing on pink elephants or balancing your checkbook. The phone, the kids, coworkers, and your own thoughts are always interrupting. Because we’re usually pressed for time, most of us have become accustomed to doing two or more tasks simultaneously—catching up on reading while eating, talking on the phone while driving, texting and walking. It’s no wonder our minds don’t want to slow down in meditation and focus on just one thought at a time! While multitasking might seem like a time-saving device, most often it’s like eating crackers while whistling—neither task works out quite right.

Practicing meditations will help you in daily activities by making it easier to keep your mind on the present and focus on one task at a time, thereby allowing you to do a more complete and thorough job. It’s the practice of observing your thoughts and choosing not to focus on the distractions that is what meditation is all about. Anytime you notice that your thoughts have wandered, rather than getting angry and frustrated (a distraction in itself), just gently return your attention to your original focus. The meditation below and ones in future issues of Natural Healing, Natural Wellness will help you see how often your thoughts wander and then help you learn how to focus— having a one-track mind is the key! FOCUS POCUS This exercise will make you aware of how often your mind is fragmented during your day. MAKE A LIST. Each time during the day when you find yourself doing more than one task, take a minute to write down the things you’re doing simultaneously. At the end of the day, review your list. How many times was your focus fractured?

Being aware of when your mind is wandering is a key to harnessing it!

GO GREEN for Spring!

by Roufia Payman

S

pring is the time of renewal and growth—how lovely! The earth starts to bud and burst forth with a variety of delicious fruits, vegetables, and herbs that we can start enjoying now and then savor in the days ahead. For me spring officially starts on March 21st, the vernal equinox—no matter what the weather (and this year it was pretty chilly here in New York’s Hudson Valley). March 21st is the Persian New Year, also known as Nowruz, which I celebrate as a family tradition. Rejuvenation is embraced with a joy, and spring is celebrated by setting a table with a special cover and seven items, each with a special meaning or blessing and beginning with the Persian letter “cinn,” which translates to “s.” These seven symbolic dishes consist of: 1. Sabzeh (wheat or lentil sprouts, representing rebirth) 2. Samanu (a sweet pudding of wheat germ, symbolizing affluence) 3. Sib (an apple, for health and beauty) 4. Senjed (sweet dry fruit of the Lotus tree, representing love) 5. Sir (garlic, representing medicine) 6. Sumaq (sumac berries, representing the color of sunrise, and good conquering evil) 7. Serkeh (vinegar, representing age and patience) Other traditional elements include a pot of blooming hyacinth, decorated eggs, goldfish in a bowl, a few coins, rose water, a mirror, and candles which are lit for enlightenment and happiness.

Even if you don’t have space in your yard, start some herbs in a pot indoors and then put them outside as the weather permits. This way you’ll always have fresh herbs to add a delicious flavor to your cooking. Go for variety: chives, rosemary, oregano, parsley, thyme, marjoram, and tarragon, to name just a few. Snip and use in rice dishes, on fish and poultry, in omelets, salads, sauces and dressings— the sky’s the limit! Be spontaneous and enjoy the culinary adventure! Having more readily available fresh seasonal produce is another perk of spring. If you can’t grow your own, buy local—farmers’ markets are starting to emerge right along with the daffodils and tulips! If you have a large family, take out a share in a regional Community Supported Agriculture (CSA) group, or split a share with friends. This season look for lovely greens and fruits, rich in vitamins, minerals, antioxidants, and fiber. From watercress to brussel sprouts, and asparagus to strawberries, it’s the start of a bountiful season of beautiful produce. Buying organic is the healthiest choice. Organic produce is not only “cleaner” and free of pesticides, it also is more nutritious. But if you can’t always buy organic—or if it gets too expensive to purchase strictly organic produce— you can be selective and still receive wonderful health benefits from your produce. You just need to know about “The Dirty Dozen” and avoid them! ......continued on next page

New Leaf! Now that spring has arrived, get a “new leaf ” on life by cultivating herbs--there’s nothing like caring for something alive and beautiful to help reduce stress and make us feel happy and fulfilled. Herbs are not difficult to grow, and are so very handy to have in the kitchen. The green color is so positive and uplifting, the plants give off fresh oxygen, and you can eat them for your good health—a triple whammy of goodness!

GO GREEN for Spring! The Dirty Dozen

The Clean Dozen

The highest pesticide residues are found in “the Dirty Dozen, which are the most contaminated fruits and vegetables. Produce that should always be organic (or purchased from farms you know and trust that do not use pesticides and other hazardous chemicals) include the following 12 toxic culprits:

There are also 12 fruits and vegetables that you do not need to purchase organic since their contamination level is nil or negligible. These are:

Peaches Apples Sweet Bell Peppers Celery Nectarines Strawberries Cherries Pears Grapes (imported) Spinach Lettuce Potatoes (white)

Onions Avocado Sweet Corn (frozen) Pineapples Mango Asparagus Sweet Peas (frozen) Kiwi Fruit Bananas Cabbage Broccoli Papaya

Juice Primer With fruits and vegetables coming into season, juicing is a good way to enjoy raw produce, getting the benefit of all the enzymes. Some people shy away from juice extractors, thinking they are too messy to clean up. But if you like juice at its freshest, nothing beats a newly poured glass of fruit and veggie juice. And the “better” the juicer, the easier it is to clean and maintain. There are a number of mega-blenders that make “smoothies” and pulverize fruits and vegetables into a smooth

“slush” of sorts. This makes a good soup base, and also a nice drink if you add other liquids—such as organic tomato juice or organic grape or pomegranate juice (depending upon whether or not you want it sweet or savory) and some ice. It also is a bit more nutritious, as it gives you the fiber as well as the flavor and enzymes. Whether you choose to use an extractor or a blender, fresh juice is far healthier and better for you than any store bought, processed product. Don’t forget to throw in some herbs for a boost of flavor and nutrients! ......continued on next page

GO GREEN for Spring! RECIPE: “Persian Fish and Rice” Here is an easy recipe that is perfect for the spring and summer weather—simple and delicious! A mild white fish (tilapia, sole, etc.) OR wild-caught salmon* Season with olive oil, lemon juice, garlic, ground pepper, and sea salt or kosher salt, and broil until tender Prepared Brown Rice Seasoning to taste with liberal amounts of fresh herbs and spices, including parsley, dill, scallions, cilantro, garlic, etc.) Serve fish over rice, add some halved fresh organic cherry tomatoes and sliced cucumbers to the plate, squirt with a wedge of lemon, and enjoy! *Do not purchase farmed fish of any type, including shellfish like shrimp and scallops. Farmed fish are bad for your health—some also contain artificial colors and preservatives-- and the farming practices are destructive to the environment. Healthy Foodie Tips Omelets aren’t just for breakfast! Add a salad and you have a wonderful light lunch or dinner. By all means use tons of fresh herbs, scallions, lots of fresh veggies, and you have a nutritious and delicious meal. For a healthy break from gluttonous wheat bread, try toasting high-protein sprouted grain bread “Ezekiel” on the side. It reminds me of the sprouted grains of Persian New Year. It’s very filling and makes wonderful toast. You’ll find it in the frozen food section of health food stores and some grocery stores also carry it now.
