El mundo de la gastronomía ha vivido un boom sin precedentes en los últimos años, convirtiéndose en un reclamo turístico fundamental.

Con el objetivo de potenciar este sector, se presentará el próximo jueves 9 de junio de 2016 (Hotel Aloha Beach House, 11.30 horas) la Oficina Gastronómica Municipal de Torremolinos, un proyecto pionero que pretende coordinar todas las actividades gastronómicas que tengan lugar en la localidad y crear una marca distintiva de calidad.

Para lograr este objetivo, y como primer paso, también se presentará en el mismo acto la nueva web Torremolinos#Foodie, portal que hará la función de guía gastronómica local a los cientos de miles de turistas que nos visitan cada año. Para ello, la web va a contar con una ficha de los restaurantes más destacados de Torremolinos en los que se analizará, brevemente, el tipo de comida que ofrecen, el precio medio, los datos de contacto, la dirección, las redes sociales disponibles y la zona donde se encuentran.

Asimismo, Torremolinos#Foodie va a potenciar el comercio local especializado, promocionando productos locales, tiendas gourmet y vinotecas que destaquen por su calidad.

También contará con un apartado especial dedicado a noticias gastronómicas locales y nacionales relacionadas con la Costa del Sol, como congresos o semanas gastronómicas.

En el acto de presentación, que contará con la presencia del crítico Enrique Bellver (Diario Sur) y del coordinador de la O.G.M.T. y de Torremolinos#Foodie Lutz Petry (Guía Gastronómica CDS), el chef Diego Gallegos (Restaurante Sollo, 1 estrella Michelin) realizará un show-cooking reinterpretando una receta que tendrá el boquerón como protagonista , mientras que el coctelero Juan Miguel Moreno elaborará un cóctel especialmente ideado para la ocasión.

The world of gastronomy has experienced a boom without precedents in the recent years, becoming a major tourist attraction.

In order to strengthen this sector, the Oficina Gastronómica Municipal de Torremolinos (Gastronomical Municipal Bureau of Torremolinos), a pioneering project that aims to coordinate all the gastronomic activities in the town and to create a distinctive mark of quality, will be presented on Thursday 9th of June 2016 (at Aloha Beach House Hotel, 11:30 a.m.).

To achieve this goal and as a first step, in the same event there will also take place the presentation of the new web Torremolinos#Foodie, which will work as a local gastronomic guide for the hundreds of thousands of tourists visiting the town every year. For this, the web will have a record of the most outstanding restaurants in Torremolinos, containing a brief analyse of the type of food offered by each restaurant, the average price, contact details, address, available social networks, and area of location.

Torremolinos#Foodie will also boost the local specialized retailers, promoting fine local products, gourmet stores and wine cellars standing out for their quality.

It will also feature a special section dedicated to local and national gastronomic news related to the Costa del Sol, such as conferences or gastronomic weeks.

In the presentation, attended by Enrique Bellver (critic in the newspaper Diario Sur) and Lutz Petry of Guía Gastronómica Costa del Sol (coordinator of both the Oficina Gastronómica Municipal de Torremolinos and Torremolinos#Foodie), the chef Diego Gallegos (of one Michelin star restaurant Sollo) will perform a cooking show reinterpreting a recipe with the boquerón as main ingredient, while the barman Juan Miguel Moreno will prepare a cocktail specially designed for the occasion.

Fish&Fresh, Jornadas Gastronómicas del Pescaíto, sustituyen al Día del Pescaíto, para poner en valor la profesionalidad y calidad de nuestros establecimientos de restauración.

La fama mundial del ‘pescaíto’, todo un símbolo del Torremolinos de ayer y de hoy, que se cocina y sirve como en ningún otro sitio en los incomparables escenarios de las playas de La Carihuela y El Bajondillo o en el centro urbano, es un atractivo añadido para las decenas de miles de visitantes que, cada año, además de disfrutar del sol, la playa y los paseos, tienen en los platos y productos típicos de nuestra zona un auténtico universo de exquisiteces a su alcance.

Los establecimientos participantes han elegido en esta primera edición cinco de las más típicas frituras del pescaíto como los boquerones, calamares, rosada con ali-oli, adobo y chanquetes (pez plata) al precio de 5 euros la ración, para promocionar entre el 8 y el 11 de junio, la estrella de la gastronomía local, el pescaíto.

The world renown fame of our ‘pescaito’ continues to be the emblem of Torremolinos as much today as yesteryear. It is prepared and served as in no other place within the incomparable settings of the Carihuela and Bajondillo beaches or for the urbanite, the town centre. It is also an added attraction for those thousands of visitors arrive yearly to enjoy not only the beach and sun and long relaxing walks but also have the possibility to taste the exquisite typical products and dishes of our local area.

Si algo nos caracteriza en la costa malagueña es la fritura de pescado “pescaíto frito”; el secreto es buena materia prima , la temperatura del aceite que sea constante, rapidez en servirlo a la mesa y el buen hacer de los cocineros.

If there is something that the Malaga Coast has been well known for and best at, it’s the typical style of frying our small fish the “pescaito frito”. The secret is of course the use of excellent prime material, hot oil at a constant temperature, swift table service (served piping hot) and the expertise of the cooks.

BOQUERONES FRITOS / Fried Anchovies Se limpian bien y se lavan en agua fría para desangrarlos, se salan y se dejan escurrir, se enharinan muy bien y se pasan por el cedazo para que queden limpios de harina. A continuación se pone el aceite a calentar y cuando está bien caliente se frie que queden crujientes por fuera y tiernos por dentro.

To start with this delicacy, the first thing is to clean the anchovies by removing their organs and then washing in cold water to drain off the blood. Salted to taste and left to drain, they are then lightly floured, shaking them slightly through a sieve to remove the excess. When the oil is hot, but not too much so that the heat does not burn the fish, they are deep fried, crispy on the outside and tender inside.

ADOBO / Marinated fish En la costa malagueña el pescado más utilizado para el adobo es la rosada o la pintarroja (pescado de la familia de los tiburones, pero pequeñito). El secreto es hacer un buen adobado con vinagre de vino, agua, sal, ajos machacados, dos o tres hojas de laurel, oregano y pimentón, se deja macerar en frigorifico veinticuatro horas y pasado el tiempo se pone a escurrir. Una vez escurrido se enharina el pescado y se frie.

Along the Malaga coast the fish most commonly used are the “Rosada” (kingklip). A fish that is not pink but white and similar to cod and the dogfish ( both are a tiny version descended from the shark family)’. The secret to these bite–size chunks of fish is a good marinade (adobo). Seasoned with wine, vinegar, water, salt, crushed garlic, two or three bay leaves, oregano and pepper, left overnight to marinade and then drained. Once drained the fish is lightly floured and then deep fried.

CALAMARES FRITOS / Fried Squid Rings Se parte el calamar en anillas, se pasa por harina y se pasa por el cedazo. Se pone el aceite muy caliente y se frie.

Cut the squid into rings. Lightly flour and then sieve. Deep fry in very hot oil.

ROSADA CON ALIOLI / Battered fried Fish with Garlic Mayonnaise La rosada es un pescado muy sabroso y como principal virtud es que apenas tiene espinas, por lo que es ideal para los más pequeños.

Se corta la rosada en trozos pequeños a gusto, la lavamos y dejamos escurrir, la aliñamos con sal, perejil y ajo un ratito, a continuación la enharinamos y se frie en aceite caliente.

ALIOLI: Huevo, aceite, ajos, perejil y limón Rosada (Kingklip) is a very tasty fish similar to cod with the advantage of hardly having bones. It is Ideal for children.

The rosada is cut into small pieces, washed and drained. Then seasoned with salt, parsley and garlic, then floured and deep fried in hot oil.

ALIOLI: Garlic Mayonnaise made with egg, oil, garlic, parsley and lemon.

PEZ PLATA. CHANQUETES / Silverfish Escurrir todo el agua bien y enharinarlo bastante, pasar por cedazo hasta que estĂŠn muy sueltos. Se pone abundante aceite a calentar y es muy importante freirlos en pequeĂąas cantidades para que no queden apelmazados, se dejan escurrir y se salan en el plato.

Drain all water well and coat with enough flour . Use a sieve severla times until these small fish are very loose. Use a deep fryer or use plenty of oil in a frying pan. Make sure the oil is very hot. It is very important to fry them in small quantities so they are not thick and lumpy. Drain on paper towels and add salt before serving.

Plato especial EL ESPETO DE SARDINAS / Skewered Fresh Sardines El espeto de sardinas es un plato típico de la cocina malagueña que consite en espetar, es decir ensartar pescado en finas y largas cañas, para asarlo con leña en la arena de la playa.

La técnica consite en insertar las sardinas atravesando su lomo y cuidando que todas estén colocadas en la caña por igual. El secreto es que al ensartarla la espina esté siempre por debajo de la caña ya que si no fuera así, al darle la vuelta la carne del lomo de la sardina se habrá reblandecido y caerían al romperse.

Tradicionalmente se coloca en un pequeño montículo de arena dentro de una barca, para clavar las cañas y al otro lado la madera ya hecha brasa.

The Sardine “espeto” is the traditional way of cooking fresh sardines speared on a long flat stick (espeto) slowly cooked over an open wood fire on the beach. “Espetar” means to spear, drive through with something The secret to preparing them properly is to align the fish on the wooden cane making sure to pierce them through the stomach so that that the loin is always tucked below the skewer to prevent the sardines from falling off the cane and breaking when turning.

To cook, the wooden skewers are dug into a small mound of sand where the fire has been built within a traditional fishing skiff.
