Another Fascinating Latin Vegetable By Tom Golen, Señor Siesta
I recently wrote about the plantain banana to promote its wonderfully versatile culinary usage, particularly in Latin cuisine. Herein, I similarly introduce some culinary applications of yuca-- that ugly root vegetable unknown, still, by an overwhelming majority of (North) Americans. One of my favorites is enyucado (yuca cheesecake), a delightful dessert, recently introduced to Senor Siesta Restaurant by a young visiting chef. Juan, from Colombia, sharpened his culinary skills working in several fine restaurants in Spain over the past decade, has introduced me to several new Latin recipes, including this scrumptious yuca dessert and many fascinating sauces — he calls “reductions”— including his garlic guava sauce that we drizzle over our baked salmon. A sweet yet naturally tart guava reduction also tops our enyucado. Yuca, not to be confused with the yucca ornamental plant, is the edible starchy gluten-free root of the cassava plant. Originated in Brazil and Paraguay, thousands of years ago, yuca was introduced into Africa and Asia centuries ago by Portuguese traders. Today it is a staple carbohydrate food source in several countries in these regions and it is the third largest source of carbohydrates in tropical diets today with Nigeria being the world’s largest producer. Interestingly, beyond its presence in the day-to-day cuisine of the aforementioned regions, yuca’s culinary use and recognition in North America is still quite obscure. While yuca can be found in most U.S. grocery stores, most Americans (including the grocery store cashiers) remain totally unfamiliar with yuca. Yes, yuca has several interesting savory and sweet culinary applications. Yuca flour, yuca bread, yuca crackers, and yuca cakes are quite popular in Latin and Asian countries.

Deep fried yuca fries have gained some popularity in American restaurants while another by-product of the yuca plant — tapioca — is well known but rarely associated with yuca. In the U.S., most have had tapioca pudding while “bubble tea”, with tapioca pearls, has a far more limited American following. I fell in love with “yuca con chicharon (pork cracklings)” in Central America and enjoyed my first sweet cassava cake in the Philippines. Yuca’s thick woody brown skin must be removed and the white starchy flesh cooked, typically by boiling, prior to eating. The flesh softens and becomes semi-translucent. The fibrous stem running down the center of the flesh is easily removed after cooking. Deep fried, the result is similar to French fries or partially mashed and smothered with butter and/or sour cream a la a baked potato. At Senor Siesta, we have offered this gluten-free root in many ways including yuca con chicharon (Honduran), yuca con mojo (Cuban), yuca a la huancaina (Peruvian), and enyucado (Colombian) — the last two being the most popular. Enyucado is the most delightfully surprising to our guests and it is quite easy to make. Raw yuca flesh is shredded and mixed with cheese, cream, shredded coconut, and sugar and then baked in the oven. The result is a sensational and the cake can be enjoyed either warm or cold. We serve it warm with the aforementioned guava reduction, toasted coconut shavings and small scoop of coconut ice cream. We invite you to become familiar with yuca. AMERICAN HERITAGE WINES On a recent Florida Spring morning, a soft breeze drifted across the uncut grasses between the neat rows of grapevines. It was approaching 8:00 am and a brand new day was awaking. As the first sunbeams stretched out across this idyllic canvass, buds of bright yellow slowly appeared. Beginning as a tiny stream of color, a raging river of flowers soon washed the landscape. Unfolding before our eyes was this days harvest … the “Dandelion Flower”! Long before you or I were born, our ancestors awaited this same moment with bountiful joy! Our ancestors considered this wonderful wildflower the grandest of the bloomers. The roots provided delicious teas and broths. The leaves were eaten raw in salads or cooked with other dishes. The bright yellow flowers, however, were the most treasured. These tiny petals were destined to become their most precious possession … “Dandelion Flower Petal Wine”! What I have just described is a prime example of an… ”American Heritage Wine”! On another day, a whole passel of brownish-red tubers were gently dug up from the ground beneath our feet. Kind of long and roundish these gems were not potatoes. They were and are a part of the southern landscape of America. Again, our ancestors recognized and appreciated this grand tuber for what it was, a delicious feast when cooked and a fabulous adult beverage when fermented into…”Sweet Potato Wine”! What I have just described is another prime example of an…”American Heritage Wine”!
As Spring evolves into Summer, another beautiful plant rises from the soils of the southeast United States. A member of the nightshade family, it soon bursts into countless clusters of white flowers. Under the warm southern sun, green fruits soon appear. Almost with the blink of an eye, these green fruits ripen into bright, luscious and plump red fruits. Today, they mostly garnish our fresh green garden salads. To our ancestors, however, these red fruits had a grander purpose. With visions of a spectacular and unique taste, our ancestors were able to transform this indigenous and delicious fruit into the most wonderful and golden colored…”Cherry Tomato Wine”! Again, what I have just described is another prime example of an…”American Heritage Wine”! Our ancestors settled all across our country. They were a hardworking and industrious lot! Most were farmers and knew how to grow things. Most had the knowledge to make wines. If wild Native American grapes (muscadines, catawba’s, concords, fox grapes, etc.) grew where they settled, they were certain to use them to make fabulous grape wines. Grapes, however, were not their only choice. Many other wines were made from local fruits and vegetables. As you visit wineries in America, today, we encourage you to ask them about those “American Heritage Wines” that they produce. It’s time that we celebrate our collective heritage. It’s time that American wineries reach back into their regions past and bring forward to us the great American wines of yesterday! Until next time…”Salute and Happy Days”!

Summer is a time for barbecues, grills all fired up with a fanfare of succulent meats and vegetables ready to meet the flame and seasonings we all love. It is also a time for long days spent on the beach, kids splashing in the pool, cocktails with friends and working on that glorious tan that will take us well into winter. Yet, what of the unsung heroes of summer cuisine? What of the luxurious summer salads? There are so many beautifully refreshing salads just waiting to be savored and more often than not we always find that only the main dishes are heralded. Today we put forth the ever cool and divine summer salad for your pleasure, to taste of the freshness of a cooling summer refreshment. Delight in these four summer salad recipes (and a bonus refreshing sangria!) and make them over and over again each summer hereafter!
CRAISIN SALAD Submitted by Lora Finlayson 1 bag lettuce 1 pear peeled & cubed 1 apple peeled & cubed 1/2 cup craisins 1/2 cup cashews 1/2 cup shredded Swiss cheese 1 pkg ramen noodles (do not use seasoning) Â DRESSING: 1/2 cup sugar 2 tsp. onion (chopped) 1/2 tsp. Salt 1 tablespoon poppy seeds 1/3 cup lemon juice 1 tsp Dijon mustard 2/3 cup olive oil Mix the first ingredients into a bowl. Mix all ingredients for your dressing and pour over salad and mix gently until completely covered.

BROCCOLI/CAULFLOWER SALAD Submitted by Lora Finlayson 2 heads cauliflower 2 lbs. broccoli 1/2 chopped onion 8 oz grated cheddar cheese 1 lb. bacon  DRESSING: 2 cup mayonnaise 1/2 cup sugar 4 tablespoons vinegar 1/2 teaspoon salt Cut and chop your cauliflower and broccoli and put in a bowl and add your onion, cheddar cheese and bacon and mix. Mix all ingredients for your dressing and pour over salad and mix gently until completely covered
REFRESHING & LIGHT POTATO SALAD Submitted by Nadia M. Perez Bugler 6-7 medium sized red potatoes 1-2 stalks celery, finely chopped 2 sprigs green onion, sliced 3-4 sprigs dill, sprinkled on salad 1/4- 1/3 cup mayonaise 2 tablespoons dijon mustard salt & pepper to taste Peel and dice potatoes and place in water, just barely covering the potatoes. Bring to a boil and cook for about 15 minutes. Remove from heat and drain. Rinse in cold water in order to stop the cooking process. Place in a bowl, cover, and place in refrigerator for about a half hour to cool. Chop the celery, green onion and dill together. Take the potatoes out of the refrigerator and add the chopped greens and remaining ingredients to the potatoes. Mix until well coated and then place in the refrigerator for 1 or 2 more hours until the salad is well cooled. Serve as a side or eat it on its own. Enjoy! 14
ROASTED CORN SALAD Submitted by Mara Stork 6 large ears of corn cut from the stalk (or 3 cans) 12 cherry tomoatoes, cut in half 1 large green bell pepper (seeded and chopped) 1 celery stalk, chopped 1 small red onion, chopped ½ cup mayonnaise Ÿ cup plain yogurt 2 tablespoons red wine vinegar salt and ground pepper to taste 2 teaspoons chopped fresh cilantro 2 teaspoons chopped fresh Italian parsley Combine the corn, tomatoes, green pepper, celery and onion. In a bowl, whisk together mayonnaise, yogurt and vinegar until smooth. Pour mixture over vegetables, add salt and pepper to taste. Cover and refrigerate for at least an hour or up to 3. Remove from refrigerator, transfer to a serving bowl, sprinkle with cilantro and parsley. Makes 6 servings.
SHRIMP, MANGO, AND AVOCADO SALAD Submitted by Tom Callaio 3 tablespoons orange juice 1 tablespoon fresh lime juice 1 tablespoon honey 1 teaspoon grated orange peel 3 tablespoons olive oil 1/2 red onion, sliced paper-thin 1 pound fresh shrimp (grilled or steamed) 1 large mango, peeled, pitted, sliced 1 large avocado, halved, pitted, peeled, sliced 12 large lettuce leaves (whatever kind you like) 2 tablespoons fresh cilantro to garnish 4 tablespoons peanuts to garnish Combine first 4 ingredients in small bowl; whisk in oil. Season dressing with salt and pepper. Mix in onion; let marinate 15 minutes. Combine shrimp, mango, and avocado in large bowl. Gently mix in dressing. Overlap ends of 3 lettuce leaves in center of each plate, forming bowl. Mound salad on top of lettuce, garnish and serve.

WATERMELON, MINT AND LIME SALAD Submitted by Peter Hanson 8 cups seedless watermelon chunks (1 inch) from a 6-pound melon 1/4 cup fresh lime juice 1/2 cup mint leaves, torn Salt In a large bowl, toss the watermelon with the lime juice. Fold in the mint leaves, season with salt and serve. The watermelon salad can be refrigerated overnight. Fold in the torn mint leaves just before serving. For a grown-up version, add a few splashes of rum.
GREEN TEA CUCUMBER SANGRIA Submitted by Mara Stork 1 cucumber chopped 2 cups water 2 3 / cup honey 2 Tbsp. fresh lemon juice 3 cups brewed green tea 4 cups white wine (chilled) Combine all ingredients, except for wine, in a blender or food processor. Puree until smooth then strain. Pour into a pitcher. Stir in wine and ice. Serve.

The original incarnation of the Crab Trap began in a little thatched roof restaurant at a marina on the tip of Snead Island in 1976, appropriately named the Sea Hut. Eight years later with business outgrowing capacity, we moved locations, expanded our menu and changed our name to the Crab Trap. Founder Lee Cline and his wife, Margaret’s, vision continued to evolve with the opening of a second location, Crab Trap II, in Ellenton. Tiki Bars to Savor this Summer By: Nadia M. Perez Bugler Tiki bars--the mere mention of them evokes the feeling of sitting beneath the thatched roof of the bar hut with a luscious tropical drink in your hand, sun setting over the turquoise blue water as Jimmy Buffet plays in the background. We've all wanted to relish in that feeling at one time or another, not a care in the world...just the wind at our backs. Living in Southwest Florida affords us the ability to realize this dream every day. Tiki bars are up and down the coastline from Anna Maria Island to the Inlet of Charlotte Harbor, the majority of which offer gorgeous crystal clear water views of the Gulf of Mexico making this the perfect backdrop to relax to. Our aim is to take you on a tropical tour of the area's most notable tiki bars. Visit any one of these, rain or shine, and you will be stepping into paradise.
