1-2 tomatoes, diced

Half or 1 small onion, diced

½ bunch of finely chopped cilantro freshly squeezed lime. half of it or a whole

Pinch of salt and or pepper

Options to add chopped: avocado, cucumber, mango, pineapple, serrano pepper, jalape

Directions

Mix all ingredients together in a mixing bowl and add salt, pepper and lime to your liking. Cover in and refrigerate for about 30 min to an hour.

Notes: I would make this first and keep it in the fridge until the meat is done cooking. This is good with practically anything. Have it with just chips, put some on your egg, or put some on your cooked steak. It's a nice summer side dish.
