KitchenAidÂŽ stands for beautiful design, reliability, efficiency and effectiveness - built to look and feel good, but also built for function and hard work. The KitchenAid Artisan KSM150 mixer has a 5 quart bowl with ergonomic hand pouring shield and tilt back mixer head design that provides easy access to the bowl. A smooth rounded design allows for easy cleaning and usage. The direct drive motor makes it silent, reliable and long lasting, whilst the single attachment hub is engineered for ease of use and versatility. The full metal construction makes this machine robust, stable and durable, whilst the original planetary action provides fast and thorough mixing. The mixing bowl has an ergonomic handle for better grip and easy handling, and the large capacity bowl is perfect for preparing small to large quantities of food. All these features add up to a fabulous mixer that makes light work of cake batters, sponges and meringues thanks to a direct motor, whisk beater and dough hook.
The KitchenAid Espresso maker has two independent boilers for consistent performance with no delay between brewing and frothing. The espresso boiler delivers constant temperature for optimal brewing of Italian style espresso with crema, whilst the steam boiler delivers abundant dry steam with a constant temperature for a rich creamy cappuccino. The large espresso and steam gauges give a clear indication of boiler status for brewing and frothing. The cup warmer is large enough to warm and store 6 espresso cups, and the professional filter can accomodate two interchangeable stainless steel baskets allowing brewing with ground coffee or pods. The sliding water tank is convenient to fill, and the non-drip system prevents any dripping due to solenoid valves. These features and the KitchenAid name combine to make this the perfect machine for use at home or work to make the perfect espressos and cappuccinos.

Serrano Ham, a spanish delight! Jamón Serrano is one of the cornerstones of Spanish gastronomy. It is Spain’s most outstanding meat product, not only because of its high levels of consumption and deeprooted tradition but also because of its high quality. The word “serrano “ in Spanish refers to the sierra, or mountains. Jamón Serrano is traditionally produced in mountainous environments where the air is clean, the moisture levels just right and the winters very cold. These are the traditional requirements for curing. The process in fact involves three distinct phases: 1. The fresh hams are first trimmed and cleaned, then stacked like cordwood and covered with salt. This serves to draw off excess moisture and to preserve the meat from spoiling. This typically lasts 2 weeks. 2. The salt is washed off and the hams hung to dry and start the first curing phase. This phase serves to initiate the curing process, here (among other things) the fat begins to breakdown. This takes about 6 months. 3. Air drying - it is during this phase that the hams are hung in a cool, dry place, and where the distinct, subtle flavours and aromas develop. This lasts from 6 to 18 months, depending on the climate, as well as the size and type of ham being cured. The drying sheds (“secaderos”) are usually built at higher elevations, thus the name “serrano”. Buying The essential difference between Jamón Serrano and
Spanish Ibérico Ham (commonly known as “pata negra” or “black-hoofed” ham) is the breed of pigs and the diet they are fed on. The real Jamón Serrano has a V-shaped cut in its skin. Storing This is definitely a “room temperature” product. To get the best of flavour and aroma, store and serve at room temperature. It’s best stored in a cool dry place. Refrigerate only if absolutely necessary, and be sure to let it acclimatise several hours before serving. Preparing As a starter or snack, serve in very thin, freshly cut bitesized slices. Exposure to the air drys, and more importantly dissipates those special aromas, so do slice just before you serve - and it’s OK to eat with your fingers! Cooking
The taste of serrano ham makes a great flavour addition to all sorts of dishes. Finely diced and very lightly fried, it adds a special touch (like bacon bits) to soups and salads. A great Spanish cooking technique - “rehogado con jamón” - will work any where: Lightly fry diced ham in olive oil, then sauté your favourite cooked vegetable in the mixture. It works great with artichokes, green beans, brussel sprouts, etc. Diced to medium size, it also makes a great addition to your favourite spaghetti sauce recipe, or an omelette. Lightly fried slices do wonders for ham and eggs.
and not forgetting the OLIVE OIL! Legend has it that once upon a time a dispute arose between the god Neptune and the goddess Minerva because of the power of Atica. Jupiter decided that he would give the power to whoever presented him the most useful gift for humanity. The dispute was resolved in favour of the goddess when she presented a branch asserting that it would become a strong tree, capable of living for centuries and centuries, and that not only would its fruits be good to eat, but furthermore, it would produce an extraordinary liquid that would serve to adorn the food of men, to alleviate their injuries, to give force to their bodies and light to their night. Such was the importance of the Olive in the ancient World that Olive tree branches were placed in the tombs of the pharaohs of ancient Egypt, and as Andalucia was one of the most important olive oil production areas in the Roman Empire, an olive tree branch became the symbol of Hispanic Rome.
Feliz Navidad In Spain, the Christmas holiday season is full of the usual Christmas festivities, but there is one tradition, not at all common elsewhere. Named “Hogueras” (bonfires), this tradition originated long before Christmas itself. It is the observance of the winter solstice, the shortest day of the year and the beginning of winter. It is characterized by people jumping over fires as a symbolic protection against illness. This fire-jumping can be seen primarily in Granada and Jaen. The more common traditions include incredibly elaborate “Nacimiento” (nativity scenes), Christmas trees, and remarkable Christmas markets scattered among villages and cities with piles of fruits, flowers, marzipan and other sweets, candles, decorations and hand-made Christmas gifts. Often, as the Christmas Eve stars appear in the heavens, tiny oil lamps are lighted, warming village windows. The crowds at the Christmas market thin as shoppers return to prepare for the coming meal. The Christmas Eve gaiety is interrupted at midnight be the ringing of bells calling the families to “La Misa Del Gallo” (The Mass of the Rooster). The most beautiful of these candlelight services is held at the monastery of Montserrat, high in the mountain near Barcelona, which is highlighted by a boy’s choir described as performing the Mass in “one pure voice.” Christmas dinner is never eaten until after midnight. It is a family feast, and often highlighted with “Pavo Trufado de Navidad” (Christmas turkey with truffles; truffles are a mushroom-like delicacy found underground). After the meal, family members gather around the Christmas tree and sing Christmas carols and hymns of Christendom. The rejoicing continues through the wee hours of the morning. An old Spanish verse says... “Esta noche es Noche-Buena, Y no es noche de dormir” (This is the goodnight, therefore it is not meant for sleep.)
Christmas Day is spent at church, at feasts and in more merry-making. A custom peculiar to Spain is that of “swinging.” Swings are set up throughout the courtyards and young people swing to the accompaniment of songs and laughter. It is not Santa who comes to Spain bearing gifts, but the Three Wise Men. The Spanish Christmas continues for a few weeks after Dec. 25th. On the Eve of Epiphany, January 5th, children place their shoes on the doorstep, and in the secret of the night, the Three Wise Men pass leaving gifts. January 6th, Epiphany is heralded with parades in various cities where candy and cakes are distributed to throngs of children.

Make A Path for your future
Annemarie and Adriaan a story of communication. There is an old saying that states, if the ship does not come in to you, then swim out to it, and in the case of Annemarie and Adriaan this is exactly what happened. For many older couples who have had previous partners, seen their children grow up and leave the nest and may find themselves single again after many years, this is the end. They basically accept that they will now be alone for the rest of their lives and may even look at others with jealousy, and yet, since we decide how our lives move forward it is up to us how our future story unfolds. When you talk to Annemarie and Adriaan you feel as if they have been together for ever. They share the same desire for art, Annemarie with her paintings and Adriaan with his hand built furniture, but more importantly they share a passion for life. What is the secret for the success of their relationship? Communication, something clearly displayed in their combined works with Karmesia. When we meet new people we have to adapt, make changes, to incorporate this new relationship into our lives. We have to make way for a new chapter in our story, and sometimes we need to prune back old friendships, old habits and daily routines, in order that the new branches of life can grow through. We cannot live in the past; we have to look to the future to guarantee a successful relationship. This is not to say we forget our past, it simply is no longer appropriate to compare our past with our future. For Annemarie and Adriaan, they constantly talk. When they hit a barrier, rather than walk away or give up, they discuss the problem and seek a solution, a solution that fits well with both of them and allows them to enhance the foundations of their relationship rather than damage it. Considering how short a time they have been together, they have nurtured and developed the most beautiful tree, full of new branches of life and opportunity, fed by wisdom, friendship, companionship, love and communication. The old branches are not forgotten, they simply form rich nourishment for the new. No matter what our age or circumstances we should all strive to nurture a tree we can be proud of.
Being happy doesn’t just put a smile on your face, and make you feel good about yourself and the way you look. Happiness has far-reaching, positive effects on every area of life. When we are in a positive mood people like us more, with friends, love and connections more likely to cement. We are tolerant, expansive and creative, and open to new ideas and experience. One of the crucial elements lies in not confusing quickfix pleasures such as TV, chocolate, sex and shopping (which can leave you disappointed or dissatisfied) with lasting happiness, which is psychologically deeply rooted. How often does your day whizz by, filled with anxiety and pressure of work, while the evening passes in a state of passive boredom? Happiness hardly features at all. Psychologists have studied thousands of people, trying to answer the question, ‘When are people most happy?’ They discovered that, for many, it was when they were in a state that is dubbed ‘flow’, absorbed in challenging tasks that engaged their skills so deeply they were unaware of anything else. In flow, worries evaporate, time stands still, you just stop thinking and ‘do’. You can experience flow by choosing pastimes that need your skill and commitment, where you are active, rather than passive. Look for activities that include clear and attainable goals, and give immediate feedback. In playing tennis, for instance, the goal is to get the ball over the net, and you can make the task more challenging by the way you play. Feedback is instant, either the ball goes over the net or it doesn’t. Skimming through a newspaper, on the other hand, provides neither goals nor feedback, so you lose any chance of feeling stimulated and satisfied in the same way.

Reasons to be Cheerful
You can transform routine tasks so that they create flow by taking a different approach. For instance, instead of cutting corners to make your work easier, find ways to challenge yourself by investing more, rather than less energy into mundane jobs. Not only will you start to enjoy work more, you will also become more productive. Psychologists found that flow had an addictive quality and that once a person has started to absorb more knowledge and refine their skills, life without flow feels static, boring and meaningless. The more flow you experience, the more your sense of having a meaningful life increases. That in itself creates feelings of purpose and self knowledge, which in turn lead to happiness. Keys To Happiness Find a reason for living that is bigger than you are, and that gives your life meaning: love of a partner, child or friend, spiritual faith, helping others. Aim for enough money, but give up hankering after riches. Research shows that, once reasonably comfortable, more people aren’t made any happier by having more cash. Identify your signature strengths. Typical strengths include spirituality, perseverance and leadership, kindness and generosity, love of learning. Once you know what yours are, start giving yourself small but frequent opportunities to use them in your daily life. Learn to think optimistically. Consciously spend more time mulling over what has gone right and less time re-running the story of things that went wrong. Identify the things you love to do – the activities that give you deepest satisfaction – and do more of them. This enhances the amount of ‘flow’ in your life.

The two German brothers Mario and Marco Kern first had their idea to open a Custom Bike Shop in 1989 and considering the fact that they live in the European “California” (Altea, in the Costa Blanca region of Spain) they were in the perfect place to make their dream come true. The custom motorcycle market in spain is quite simply huge! The weather , the roads and the dramatic scenery make even the shortest ride a thoroughly uplifting experience. I get withdrawal symptoms if I miss my Sunday morning ride out for any reason! The customisation of motorcycles used to be the reserve of “those in the know” , however, that fact is changing fast. With the advent of shows like American Chopper and Biker Build Off on satelite television, more and more riders are realising that they too can enjoy a slice of the action. A motorcycle has always been seen as an ultimate expression of freedom and a custom made special has to be the ultimate statement.

When you first meet Hans you will find yourself impressed, not only by his physical size (well over 6 feet) but also by his bright and large personality (Sagittarian). A large smile and general sense of calm convey the message that you are talking to “the right man”! Hans was born in 1953 in Arnhem, the Netherlands and studied in Groningen from 1972 until 1980. He has a doctorate in law along with a doctorate in economics, which gives him and his many clients a clear commercial advantage. “We started practising in Spain in 1989 and in 1995 we opened the office. First in Altea and later we moved to the Commercial Centre “Arabi Plaza” in Alfaz del Pi. From there we cover the whole coastal area of Spain, from the border with Portugal up to the border with France.” Hans has 5 sons, 4 live and work in Holland and 1 lives and studies in Spain. He is not married and currently lives in Altea. On becoming a solicitor and barrister in Holland in 1980, he worked for some years at what is now one of the biggest law firms in Holland. And the people in general are nice too” “What I dislike is that almost everything is political and you have to have (a lot of) patience. Furthermore, you have to adjust to the fact that it is almost impossible for a Spaniard to say no to anything. So you shouldn’t be immediately happy with his yes!” People moving to Spain should inform themselves well and hire the help of professionals when they are considering to buy properties over here. Do not rely on the information given by the real estate agencies. Make sure to get the advice from a professional who has no interest in the deal itself, and check everything. A price is always negotiable. Remember, Spain is different!

TRIBAL BASICS Tattoos are a very old form of body art and have
been practiced throughout civilized human history, dating back thousands of years. The first recorded indication of tattoos comes from the ancient Egyptians where wall paintings as old as 2000 BC have been suggesting the use of tattoos. The first electronic tattoo machine was invented by an American tattoo artist named Samuel O’Reilly in 1890, which gave birth to the new era of tattooing in which people started to have different kinds of tattoos on various parts of their body. The popularity of the tattoo has now, after many years, found its place and is now considered a fashion symbol rather than a simple mark. Once seen as a non sense thing, it has truly become an integral part of new generation fashion. Body Piercing History Nose piercing was first recorded in the Middle East approximately 4000 years ago, it is mentioned in The Bible when Abraham requested his oldest servant to find a wife for his son Isaac, the servant found Rebekah, and one of the gifts he gave her was a ‘golden earring’ the original Hebrew word used was Shanf, which also translates as ‘nose ring’. The ancient Aztecs practised Tongue piercing in a ritual form, when the tongue was pierced to draw blood to please the Gods.
Ear piercing was probably man’s fist attempt at body piercing due to the ease in which it can be carried out, the oldest mummified body in the world found in 1991 showed that the body was over 5,000 years old and had pierced ears with the holes enlarged to 7-11 mm diameter. If you are looking for a Tattoo or a Piercing, call SARA in El Campello, they will be more than happy to go through your options. They can even design bespoke tattoos for you. TELEPHONE : 653 230 713

Tabarca
inhabited island in the Land of Valencia. Declared Natural Marine Reserve since 1980s. Center for top sea cuisine. Surrounded by crystal clear waters, full of natural riches, it boasts one of the beaches awarded with the European Union blue flag. The Island if Tabarca is located eleven miles south of Alicante, this guitar shaped island is actually a geographical prolongation of Cape Santa Pola with a total area of 30 hectares, a length of 1800 m and a width of 450 m (at it’s maximum). The Island of Tabarca has a curios history, having been mentioned by the Greek historians Strabo and Ptolemy, and is believed to be the island that St. Paul disembarked on, giving his name to the settlement established here before it became refuge for Berber pirates in the Middle Ages. In 1760, King Carlos III ordered a fortification to built on Tabarca and it was later colonised with 600 Genoan fishermen released from Tunisian port of “Tabarka” near Algeria, giving a new name to name to the island, hitherto called simply “Isla Plana” (Flat Island) or “Planesia” due to its flatness. The Genoans were released following an agreement
made by the monarch on 8th December 1768. They settled on the island with their families and for this reason people on the island of Tabarca today still preserve surnames of Italian origin Parodi, Ruso, Chacopino… ect..
The fortified enclosure, listed as a National HistoricArtistic Complex in 1964, is an interesting example of a fortified city following 18th century urban designs. Still viewable are it’s gateways, the Governor’s house (now converted into a hotel) the church of St. Peter and St. Paul, concluded in 1779, as well as St. Joseph’s Tower, located outside the urban perimeter and dating from the second half of the 19th century. The absence of cars on Tabarca, its clear transparent water, and the traditional fishermen’s cuisine all make Tabarca a delightful place to visit.

! e k i B r u On Yo Cycling is a great way to get fit. It is a sport you can enjoy without feeling that you are actually “exercising. It allows you to take in the air, the sights and the sounds whilst giving your body a good work out. Try to do 30 minutes a day, but to start with aim for a couple of times a week and build up, however, with all new exercise, check with your GP before you start. If you do not own a bike, or are not sure if this is the exercise for you why not hire a bike and see what you think? We found a great new business in El Campello where you can hire a bike for as little as one hour, be it a little one with stabilizers or a competition mountain bike. They have a good selection, which is great news for everyone in the family. I used the hire service to teach my son to ride without stabilizers. I also use the service just for a ride along the wonderful Sant Juan Player. Its a lot less bother than loading the bike into the car (a work out all on its own).
If you are in doubt as to why you should get riding then here are a few points. 1.It helps you achieve balance for your mental, physical and emotional needs. 2.Reduces your fat and increases your muscle mass. 3.It will lower your blood pressure. 4.If combined with the right diet it will help you with weight loss. 5.It will lower your cholesterol. 6.It will reduce your risk of heart attacks or strokes. 7.It will reduce your risk of diabetes. 8.Helps prevent certain cancers. 9.It will help improve your bone density, great for kids and even more important as you grow older. 10.It will give you an aerobic work out.

It’s not easy being an ogre, but Shrek finds it doubly difficult for an ogre like himself to fill in for a king when his father-in-law King Harold of Far, Far Away falls ill in this third Shrek movie. When King Harold (John Cleese) passes away, Shrek sets out with Donkey (Eddie Murphy) and Puss-in-Boots (Antonio Banderas) to find Arthur (Justin Timberlake), the only heir in line for the throne besides himself. Mishaps and comedy abound, including a spell gone wrong that locks Donkey and Puss-in-Boots inside one another’s bodies. In the end, Shrek, Artie, and Fiona each learn a lot about their individual strengths and what truly makes each of them happy. Of course, it’s the pervasive humour and wit that make Shrek 3 so side-splittingly appealing.

‘You cannot pretend to read a book. Your eyes will give you away. So will your breathing. A person entranced by a book simply forgets to breathe. The house can catch alight and a reader deep in a book will not look up until the wallpaper is in flames.’ It is Bougainville in 1991 - a small village on a lush tropical island in the South Pacific. Eighty-six days have passed since Matilda’s last day of school as, quietly, war is encroaching from the other end of the island. When the villagers’ safe, predictable lives come to a halt, Bougainville’s children are surprised to find the island’s only white man, a recluse, reopening the school. “Mister Pip” is an unforgettable tale of survival by story; a dazzling piece of writing that lives long in the mind after the last page is finished.

Richard Hammond is one of our most in-demand and best-loved television presenters. On September 20, 2006, he suffered a serious brain injury following a high-speed car crash, and the nation held its breath. On the Edge is his compelling account of life before and after the accident and an honest description of his year of recovery, full of drama and incident. It is also, perhaps, his explanation of why, as a married man and father of two young daughters, he was prepared to risk all by strapping himself to the front of a jet engine with the power of eleven Formula One cars.

Costa Blanca Lifestyle Magazine talks to Han and Marije Mourmans about their beautiful home “Benisicli” in Guadalest Situated just a few kilometres from the picturesque village of Guadalest, “Benisicli” lies almost totally hidden within the surrounding countryside. With views down to the Mediterranean flanked by the majesty of the mountains, you would be hard pushed to find a more beautiful location to create your perfect home. What Han and Marije have accomplished here is quite simply “amazing”. They purchased a rather sorry looking house approximately 9 years ago and embarked on a journey of incredible commitment and guts to create what is now an extremely desirable and attractive home. The story of the renovation is a long one, with tales of determination, obstacles and surprises at almost every turn. I was given a fully documented journal of the process with photos and it is only my lack of time and knowledge of the dutch language that prevented me from publishing the whole thing! So here is the summary. The house was originally built in the 1950s with the majority of its ancient beams coming from a much older property, now situated at the bottom of a man made reservoir.
The house sits on just over 8000 sq mtrs of land and has 6 Bedrooms with a fully self contained 1 bedroom apartment. The fabric of the old building has been sympathetically retained with any piece (however small) being re-used in some way. Even old photographs found have been restored and framed and feature on the walls. Old wall tiles now create the most unusual mosaics and even the tree that grows from inside the dining room and protrudes to the outside through a small hole has remained! Over 12 kms of electrical cable were required for the rewire and the ceilings were completely removed a reconstructed. I asked Hans how he achieved such a remarkable transformation and his reply was simple, “live by the budget”. They wrote the main budget first and then broke that down to “mini budgets” with each section being re-written and checked at least twice a week. This story is a supreme lesson in discipline and resolve and should serve as inspiration for anyone looking to build a dream home here on the costa or indeed anywhere in the world.
The Black Magic of Food Now, before you all get excited, I am not talking about liquorice that comes in packets and made into shapes, covered in sugar. I am talking about pure liquorice, so put the car keys down you have no requirement to rush to the nearest 24hour petrol station! The liquorice I am talking about here is found in health food shops, it will not be found on the sweet counter! I have always been fascinated by the history of food, when it was first used, what it was used for and so on, and with liquorice I was not disappointed. The ancient Egyptians used liquorice, a jar of it was found in the tomb of Tutankhamen, to treat coughs and colds, and it is still used today to make medicines, mainly to stop them tasting absolutely revolting! When the Romans marched all over Europe, they chewed on the liquorice root because it made there mouths water and therefore quenched their thirst. I first saw this raw root here in Spain, when I saw a little old man selling, what looked like twigs, for a Euro. It took me a little while to realise what it was, and having bought some and tried it I could see what all the fuss was about. It was truly a new experience, and I love new experiences with food. Miners used to also chew it for the same reason when working down the mines. The Chinese have been using it for thousands of years, and it plays a big part in Chinese herbal remedies, both as a cure and also to disguise some of the tastes of the more bitter remedies. The ancients used it like we use Ginseng today. It was used as a tonic for when they felt stressed. A great deal better than grabbing a bar of chocolate! Keep a tin of liquorice in your bag or car, you can buy this in health food shops, it is great for freshening the breath and also is wonderful to give you a lift if you are feeling like your batteries are running out. By the time we reach the medieval times it was being used all over Europe to help with coughs and colds, as a laxative, a ‘pick me up’ and an aphrodisiac. All in all a bit of an all-rounder really, although it shows you need to be careful how much you eat of this pure liquorice, the difference between a laxative and an aphrodisiac is quite small! It has even been mentioned in the Kama Sutra when they recommend you mix it with milk and drink it as an aphrodisiac. So, here we are in the 21 st Century and the medical world has started to look a lot more at the cures to be found growing on our planet, all supplied by Mother Nature, and all of which have been put here for a reason. We just have to research into what each thing is for. Liquorice contains the same healthy chemicals as found in red wine, and it is a wonderful antioxidant, and now liquorice compounds are showing promise in helping to fight cancer and HIV. It also helps arthritis, mild menstrual problems and symptoms of the menopause. It expels mucous from the lungs, which makes it brilliant in the treatment of bronchitis, sore throats or laryngitis. All healthy, and all without any additives. So where does it come from? It grows completely wild in the Middle East, Europe, USA and western Asia but here in Spain it is grown commercially. It is also grown in the UK in Pontefract, hence the famous Pontefract cakes!
The beautiful little blue flowers can identify it and it grows to about a metre in height, but the bit you are interested in grows underground and the roots can reach a staggering nine metres in length. If you are able to get the root, you can either chew it, or you can bash it down and then make a wonderful tea with it. Simply pour on the hot water, leave for about 5 minutes strain it and drink it. This will give you a wonderful hit
of vitamins and minerals, which is why it gives you such a lift. As well as iron and calcium it also contains Folic Acid, B Vitamins, Manganese, Potassium, Flavonoids’ (antioxidants) and Vitamin E. Remember also that liquorice helps with your digestion and it supports your liver too. There is a definite sweetness to liquorice and this is because it is actually 50 times sweeter than sugar and the taste lasts longer in your mouth and the tobacco industry uses it to flavour cigarettes, cigars and chewing tobacco. Now I do go on about the Mediterranean Diet, but at the end of the day it is common for me to see people munching on sunflower seeds, chewing a stick of liquorice, eating a piece of fresh fruit, cutting an orange in half and squeezing it into a child’s cup in the middle of a playground and so it goes on, which is such an amazing contrast to what you see in other countries. I never see people walking down the road with a bag of greasy chips in their hand. I never see Spanish people stuffing a sandwich whilst walking down the street at lunch time, meal times are to be savoured and enjoyed. Mothers do not pick up their children and hand them a sugary snack. Everything these people have, everyone has around the world, so what needs to happen is people need to change their outlook on food. Take an interest, understand what it does for you, good and bad, and really start to make a difference to your health and how you are feeling. I say this to people over and over again, be organised. I know it is difficult to prepare a healthy lunch in the morning before you go to work, I totally understand that, but what stops you preparing a little extra the night before so that you can put your lunch into a box and in the fridge ready for the morning? Nothing really, just a lack of organisation. So start to organise how you eat, and what you eat with the same level of commitment as you do towards everything else in your life! There, I have told you off now, but I do want you all to feel so much better in how you look and feel. Start with the basics, and build from there. You owe it to yourself. A word of caution, Liquorice can raise your blood pressure, and eating a lot of it can do this, so if you suffer from high blood pressure, are pregnant or are currently breast feeding, do not overdo the liquorice. You should always take it easy with natural ingredients, and remember, it does work as a laxative, so moderate your intake.
The Wonder of
Liquorice by Lynn Nicholson
First of all, let me make one thing really clear here, there is only one purpose for sliced white, processed bread. That is to scrunch it up in your hand until it forms a disgusting doughy ball of rubbish, and then use it for target practice! Why anyone would want to eat that, or give it to their children is beyond me, and now they advertise this bread without crusts! Part of a child’s development is to learn to chew, to experience tastes and textures, something that a bland square of ‘nothing’ really is not going to do. Also, just as something to think about, when you buy fresh bread you have to eat it the same day, basically because by the following morning it is like a brick. Now, you can buy bread that is designed to last 7 days in your kitchen. What on earth is in there to make it last that long? Whatever it is, the more you eat of it the more you are filling yourself with it. Worth thinking about isn’t it? Here in the Mediterranean the idea of giving children, or anyone, bread other than that baked today is simply not in the vocabulary. Part of the morning ritual is to buy, or make, your bread for the day. Children have great chunks of crusty, freshly baked, bread stuffed with olive oil, roasted vegetables, fresh cheeses all sorts, the point being, they
experience taste, texture and real food. It is no wonder that children are suffering from being overweight, hyperactive, distant and generally fed up when they are being fed junk. Remember who you are and what you look like is a reflection of what goes in and that applies to children and adults. Now, in the interests of developing your skills, and your children if you have them, I want you to start learning to make bread. Not in a bread maker, which I loath with a passion, but with your hands. Understand food, feel food, get to know what is good, understand when the reactions within food take place, feel bread change as you make it from dough, into a soft warm puppy belly like dough that is going to cook into the most delicious bread you have had in a long time. Fill your home with the smell of freshly baked bread, and there is nothing more homely than fresh bread cooking. So, let us start with the basic bread recipe and then build from there, once you have learnt to do this, you can begin to experiment with all kinds of flavours, the list is endless, and trust me, once you get into the habit of fresh bread, this goes for that you make or purchase on a daily basis, you will never want to go back to eating that rubbish they call sliced bread again.
Make Bread By Lynn Nicholson
The Basic Bread Recipe Right, now this really could not be simpler:3 x 7g sachets of dried yeast (you can use fresh, but lets start with dried!) One tablespoon of good honey (you can use sugar but I never do) About 1 pint of tepid water, (you may need a little more or a little less.) 1kg of strong bread flour 30g of salt - (use something like Maldon Sea Salt) Now this will be the basic for everything else! How? In a jug put the yeast, honey and half the water, give it a quick mix with a fork and leave it while you do the next stage. Put the flour and salt in a large bowl and make a well in the middle. Tip in the yeast and sugar mix and use your hands to bring it together. During this process add the remainder of the water. Remember you may need a little more, you may need a little less, just feel your way and when the dough has come together in a ball, that is enough water. It should not be wet, but equally it should not be dry so it falls apart. Right, now to get rid of all your stresses and start kneading! Everyone has their own way for this, but for me, I always push the dough away with the palm of my hand, fold it over, turn and do it again, and keep doing this for at least five minutes, but you will know when it is ready because you can feel it change. Basically as it all starts to happen you will feel it turn into a soft dough, it will become easier to move and softer to the touch. OK, now put it on a floured tray, or bowl, put a couple of slashes in the top, cover with a clean towel and leave. Make sure you put it in a draught free place, as you want it to grow, to double in size. Now this can take 40 minutes, it can take an hour, but be patient. Do something else whilst this is happening. So, the dough has grown to double its size and you are now starting to feel pretty pleased with yourself. Now pick the dough up, and it now feels completely different, and you have to now knock all the air out again. This is much simpler than kneading and only takes about a minute. Having done this, now shape your bread into whatever shapes you fancy. You could do a plait, or you could do some cottage loaves, you could put it into a bread tin, whatever, remember, this is home made, it is not meant to look perfect that is what makes it so special. Having created your bread put it on the oiled or buttered trays you will be cooking it on, or in, and leave to rise for the second time. It needs to double in size again. Now again, do not rush it, wander off and do something else and check it after about 30 to 40 minutes. Put the oven on to gas mark 6 or 200, the time will depend on the sizes of the bread, but we will talk about that in a minute. When the bread has risen, carefully, no banging about here with it, take your time and be gentle, put it in the oven. It will be ready when you can tap the bottom of the bread and it sounds hollow. Give a loaf about 30 minutes and then take a look, rolls, about 20 minutes and then take a look, the thing is, just relax, you will be able to see when it is looking golden, if you are not sure, take it out, tap the bottom, if it is not sounding hollow then put it back. Once cooked leave on the side to cool a little, and there it is. Home made bread. Wonderful. You can do so much more, you can add poppy seeds, sesame seeds, squash it flat in a tin to make wonderful garlic bread, you can make cheesy bread, herby bread, you can make a fruit loaf, you can make anything, and you can start by creating your own pizzas!

La Trinacria - El Campello Owned and operated by Florian and Nicolas, “La Trinacria” was first opened in May 2006 by Florian following an inspirational period of his life in San Francisco (where he met his wife). Florian was “blown away” by the Californian food and discovered some amazing restaurants with outstanding customer service. He took the experience gained there and mixed it with his traditional Sicilian cooking methods to create what he describes as a “new concept”. Nicolas joined Florian a little later on and represents the cool head to Florians fiery passion. It is a partnership that obviously works very well indeed! Nicolas is Corsican and brings his own style to the menu also. “We serve 90% traditional Corsican and Scicillian food with the remaining 10% being concept ideas”. Nicolas spent a good few years in Sydney, however, the food of that region does not mix well with the traditional dishes they serve, so his discoveries have to remain with him...for now! Nicolas and Florian design the menu and try the different combinations themselves to give the customer sound recommendations for a truly enjoyable meal. The main appeal of the restaurant is the traditional recipes handed down through generations for you to enjoy, it’s like a living history! With seating inside the restaurant for 55 and a further 70 outside on the heated terrace, the atmosphere is warm, friendly and exclusive. They speak four languages English / Italian / French / Spanish. Reservations on 965 636 342 C/San Bartolome, 115 03560 El Campello Opening 1pm - 4pm days & 8pm - Late evenings

Healing and the art of healing has been practised throughout all time and encompasses the need to have a fully functioning body with a resonant and fully able mind. From the early doctors who drank the urine of their patients, to the little old ladies who died as witches; because they knew the secrets of medicinal herbs, man has striven to be fit and well. Early evidence of healing is shown as a pattern through life, appearing in the hieroglyphics of the Egyptians, and drawn in the sand of the Native American Indians as they practised good health through the provision of their medicine man. Just now many people are looking for alternative means of healing; but during an age when modern medicine has made so many leaps and bounds we are living on average seventeen years more of our life. Delicate surgery and the birth of nano medicine will see us taking one pill to control the critical conditions of today. But modern medicine enters the body with a specific aim, and though it may work, it does so often without the permission of the body it is treating. The great difference with alternative treatments is that they are always chosen to work with the body, and they have great results; they work. We live in an age where we can harness the energies and the successful treatments of the past and use them to treat our present day ailments, realising optimum health as a goal. I was interviewed on Breakfast Television in the UK as an aromatherapist, and some thirty years ago dermal absorption was a pathway
Mans Quest For
HEALTH unknown, though of course it has a potential to heal in an invasive way throughout the body. I wonder if those who laughed at me then would laugh now, when patches to help stop smoking, and HRT are just two proven methods of healing through the largest organ of the body, the skin. Time tells, and there is a need to embrace all medicine for the good of the patient. People still do tell me( though they are a dying breed!) that when they were younger there was no such thing as stress. Of course there was, and it killed! Modern therapies link to ancient practise to produce the range of complementary therapies of today. And practitioners are ready and waiting to embrace the past and to bring the present to their patients and clients. With a hefty dose of feel good factor we can feel on top of the World. I am proud to endorse the alternative therapies and healing from this feature which I know will bring comfort to many, and healing to those who seek to acknowledge the true source of energy within themselves in the hands of dedicated professionals here on the Costa Blanca. Alternative Therapies Explained words:Lynn Nicholson
A brief guide: Aromatherapy Aromatherapy is the systematic use of volatile plant oils known as essential oils for the treatment or prevention of disease. It is a form of complementary therapy designed to treat the whole person and not just the symptom or disease by assisting the body’s natural ability to balance, regulate, heal and maintain itself. Reflexology Reflexology is a treatment where the therapist works primarily on your feet. The theory behind reflexology is that there are “reflex points” in the feet, hands and ears that relate to specific organs and glands in the body. Practitioners believe that stimulating those reflex points promotes health in that organ via the body’s energetic pathways. Reiki Healing Reiki is a Japanese technique for stress reduction and relaxation that also promotes healing. It is administered by “laying on hands” and is based on the idea that an unseen “life force energy” flows through us and is what causes us to be alive. If one’s “life force energy” is low, then we are more likely to get sick or feel stress, and if it is high, we are more capable of being happy and healthy. The word Reiki is made of two Japanese words - Rei which means “God’s Wisdom or the Higher Power” and Ki which is “life force energy”. So Reiki is actually “spiritually guided life force energy.” Indian Head Massage Massage has always played an important part in Indian life, Originally part of the ancient Ayurvedic healing system, dating back nearly 4000 years, Indian Head Massage or, as it is known in India,`Champissage’, has been practised in India
for over a thousand years. The techniques were originally developed by women who used different oils (coconut, sesame, almond, mustard, and olive) to keep their hair strong and in good condition. Head massage is now performed as an integral part of treatment given by barbers and masseurs and these skills have been handed down from father to son, mother to daughter. Echoes of this Indian tradition reached the West long before the practice itself in the form of `shampoo’ which comes from the Hindi word `champi’ – being `champi-ed’ meant having your head massaged. Bowen Technique Developed in the 1950’s by the late Tom Bowen in Geelong, Australia, The Bowen Technique is a gentle but dynamic body therapy that is therapeutic and very effective. It empowers the body’s own healing resources, achieving balance and harmony, frequently resulting in fast and lasting relief from pain and discomfort. The technique is considered safe to use on anyone from newborns to the elderly, with any condition from sports injuries to chronic or organic complaints. Hopi Ear Candles Hopi Ear Candles (often shortened to Ear Candles) are hollow tubes traditionally made from organically grown flax, extracts of honey, bees wax and herbs. These candles provide a non-invasive treatment of the ears which are used to treat a variety of conditions in a practice often known as Thermal Auricular Therapy. The use of ear candles is thought to be thousands of years old and was seen in ancient Egypt, Greece and Rome, though it is the Native American Hopi Indian tribe that had the most recent influence on modern Europe and helped term the phrase hopi ear candle Always discuss your problems with your holistic practitioner they will help you in your choice of treatment.

Every now and then we all need to stand still for a moment, take time out to listen and ask ourselves, What do we want from life? What do we want to achieve? and finally, how are we going to do it? Making a difference to our life is important, and it is equally important that when we are making changes we work with someone who understands the process we are going through and can identify with any obstacles or worries we may have, someone who can help with questions that we may want answers to and sometimes someone simply to put their arms around us and assure us that we have made the right decision. It is also important to recognize that whilst we do want to make changes we also need to ensure that we can continue to support ourselves financially. Consider training courses in alternative therapies. A booming market on the Costa Blanca along with the reality of helping others makes this a serious option for both the head
and the heart. Working with Christine Quinlan, a lady with her own wonderful story to tell, you can develop your skills at your own pace, eventually leading you to a qualification in any of the following:Reflexology Reiki Healing Indian Head Massage Hopi Ear Candles Training courses all cost 90 euro’s a day, therefore, you can easily work out the cost of your course. Remember, it can be at your own pace so contact Christine, who can go through the courses and help you identify those which best relate to you. Remember she’s not just there to teach but offers wonderful therapies also. Christine Quinlan www.bodyharmonytherapies.co.uk 0034 966 795 103
In order to take images of distant, faint objects, Hubble must be extremely steady and accurate. The telescope is able to lock onto a target without deviating more than 7/1000th of an arcsecond, or about the width of a human hair seen at a distance of 1 mile. Pointing the Hubble Space Telescope and locking onto distant celestial targets is like holding a laser light steady on a dime that is 200 miles away.
What is the
HUBBLE? Inspired by the crystal clear view of the stars from this magical part of the world, we take a look at the hubble space telescope. Hubble’s name: NASA named the world’s first spacebased optical telescope after American astronomer Edwin P. Hubble (1889-1953). Dr. Hubble confirmed an “expanding” universe, which provided the foundation for the Big Bang theory. Launch: April 24, 1990, from space shuttle Discovery (STS-31) Deployment: April 25, 1990 Mission duration: Up to 20 years Servicing Mission 1: December 1993 Servicing Mission 2: February 1997 Servicing Mission 3A: December 1999 Servicing Mission 3B: March 2002 Length: 43.5 ft (13.2 m) Weight: 24,500 lb (11,110 kg) Maximum diameter: 14 ft (4.2 m) Cost at launch: $1.5 billion Orbit: At an altitude of 380 statute miles (612 km), inclined 28.5 degrees to the equator (low-Earth orbit) Time to complete one orbit: 97 minutes Speed: 17,500 mph (28,000 kph) Hubble can’t observe: The Sun or Mercury, which is too close to the Sun Sensitivity to light: Ultraviolet through near infrared (1102,500 nanometers) First image: May 20, 1990: Star Cluster NGC 3532 Data stats: Each day the telescope generates enough data — 3 to 4 gigabytes — to fill six CD-ROMs. The orbiting observatory’s observations have amounted to more than 7 terabytes of data. Hubble’s digital archive delivers 10 to 20 gigabytes of data a day to astronomers all over the world. Power mechanism: Two 25-foot solar panels Power usage: 3,000 watts. In an average orbit, Hubble uses about the same amount of energy as 30 household light bulbs. IS IT TIME TO GET YOUR EYES TESTED So when was the last time you had your eyes checked, or are you one of those lucky people that simply has no need to visit the optician? Well think again. Your optician is more, much more, than someone who simply checks to see if you can read the big E, their job is to identify if your vision is accurate, if you are suffering from diabetes, high cholesterol, high blood pressure or glaucoma and if you are lucky enough to have someone like David Fine, they can even check if your child’s behaviour is due to vision difficulty. David, the only English Optician based in Spain who is registered with www.babo.co.uk, is able to identify when the brain is not working completely in harmony with your eyes, and in children, this can often be identified as a behavioural problem when in fact, with expert advice and simple training techniques, you can help your child relieve their frustrations simply by giving them the ability to see properly. David also works with children who suffer with dyslexia in order to try and identify if there are routes to take to help solve problems. After 35 years within the profession he has a wealth of experience to pull upon and will be able to answer your questions and put your mind at rest.
With all the latest equipment, David is also able to photograph your eye, giving him a permanent record of your eyes health. This is a far more efficient method of monitoring your health with each visit. David looks always for a cure to your vision difficulties hoping that maybe glasses may be short term, but whatever your needs short term or long term David has a wonderful range of frames, including sunglasses, from budget to designer so there is something for everyone. David will also help you if you opt for contact lenses, ensuring that the style you choose fits in with your lifestyle. When it comes to our vision we often neglect it until we have a problem but as an adult you should be going at least every two years and for children annually and when you consider that a visit costs 15 euro’s for an eye test, 10 euro’s extra for a photograph, there is absolutely no reason not to make that appointment. Make the appointment today, give yourself peace of mind and remember, should you need any medical advice David is based within The English Medical and Optical Clinic so no long referrals, and for hospital appointments, the centre has excellent connections with Levante Hospital and you can be seen the same day in most cases.

It is one thing that we encourage our children to eat properly, but if that means eating healthy food in front of the television or playing computer games then we really have missed the point. In the last decade we have seen the number of children, at school age, reaching the level of overweight or obese nearly double. We are now in a situation where one third of our children are now considered ‘fat’. I could go on with stats and figures but the main element here is that we need to change, we need to make a difference otherwise our children will grow up to become fat adults with all the health problems associated. I believe that you must make changes for the whole family in order to make a difference. Get out of old habits of always buying a few packets of biscuits each week, stop buying bags of crisps, put back ready made meals and start to make an effort to get your family healthy and happy. Why do you think so many children now seem to be going off the rails? It is not a medical condition it is simply down to poor nutrition and the lack of exercise and fresh air. A recent survey revealed that only half of all children get the minimum of one hour’s exercise at least five days a week. What on earth are they doing the rest of the time? Exercise can be broken down into many forms, you just need your imagination, and before anyone says that they cannot afford to take their children to sports clubs and so on, please, walking costs nothing, running around the beach or park costs nothing but it does cost you time and effort and for it to be effective you need to make it fun. You need to put some balance in too. I am not suggesting that your children never watch television or play computer games, but it should be monitored, kept to a minimum. Part of growing up is learning the skills to communicate, to be part of a team, social skills are learnt through mixing with children their own ages and the understanding of rules comes from taking part in games. Make small changes. Walk to school with them, great exercise and a good opportunity for a chat and some quality time. Buy a skipping rope and a ball. Find out about clubs within the school and after school activities. Talk to other parents and put together a group to meet on the local play area. Use your imagination! Taking part in regular physical activity increases a child’s self esteem and helps them develop into confident adults. Exercise will help reduce the risk of weight problems and the health issues such as heart disease and diabetes. Exercise also is fantastic in strengthening developing bones and can help to prevent osteoporosis. As a parent you have a responsibility, your children look to you for guidance and encouragement into adult hood. Do not let them down.

Salt of the Earth
The World Health Organisation has confirmed what many people had believed for years, namely that the Costa Blanca is one of the healthiest areas of the world in which to live. The region in and around Torrevieja is one of the healthiest places to be with the stunning Crevillente mountain range helping to create the areas unique climate where the average temperature ranges from 18-28 degrees Celsius. The two salt lakes of Laguna de la Mata and the Salinas de San Miquel surrounding Torrevieja also help to create its fantastic climate. They are Europe’s largest lakes and are sparkling flat expanses where salt wa-
ter evaporates to produce sea salt that is still widely exported. The high concentration of salt, together with the temperature forms a micro climate recommended by medical specialists the world over for its beneficial health properties in particular for heart disease, skin disorders, rheumatism and bronchial illnesses. Numerous heart, circulation and rheumatic illness clinics are located within the area, but something we can all do that is absolutely free is visit the lakes of La Mata and Torrevieja and enjoy a mud bath, recommended by Doctors around the world for its healing properties. Nature provides it for you, so rather than simply accept conventional medicine you should at least try what is being offered to you.

ith the explosion of the internet and personal computers over the past 15 years, visual design has become extremely important to everyday business. Where Logos and corporate identity were once the concern of only large national and international companies, due in no small part to the costs associated, “one man bands” operating from front rooms must now embrace and fully utilise the technology that now exists to reap the rewards of this once “black art”. Many people are still of the opinion that the visual design and corporate identity of their business is low on the priority list, this is a mistake!
For those that still feel a little intimidated by computers and the various software packages available, help is at hand. In The Balance ‘It is important that you learn to ‘listen’ to your body. You need to become intuitive to your body and learn how to keep balanced and in a natural state.’ The triangle of MIND, BODY and SPIRIT, represents the three inseparable components of our being and wellness. NONE of these factors can be affected without there being an effect on the others. It is also true, that you cannot treat one of these areas without considering the others. It is all about balance. Good health is about good balance. If you provide the Body with the right conditions, it will heal itself. The body is a wonderful and powerful self regenerating organism. It also has an extremely efficient Immune System which is more than capable in fending off the most damaging intruders. Unfortunately, if you do not provide it with the right conditions, mentally, physically and spiritually, it will not function at optimal level. When this happens you need to work hard to restore the balance. The main rule is simple. GOOD NUTRITION is fundamental to good physical health. You cannot expect to have a healthy body is you feed it junk. Processed Foods are generally low quality foods, which do not provide the body the nutrients our body require; in fact they burden the body and make it very difficult to eliminate the rubbish. It takes a huge amount of energy to digest food, even more when it is mainly rubbish, and this is energy which could be used to enjoy life. When you eat food laden with salt, often hidden in processed foods, you are creating all sorts of problems. Next time you are in a supermarket or deli, take a look at a piece of salted cod. See how hard and dry it is, and then think about your internal organs and how they will be looking in a few years. The similarity will be frightening. Remember, illness is the last stage of the problem. You have already ignored the early warning signs, tiredness,
failing energy, mental confusion, irritability, indigestion and so on. At this stage your body is screaming at you, ‘Look at me I am not coping’. Time for the help of a nutritionist. Obesity is on the increase, this will be the first generation where the children will die before their parents. Everyone has the opportunity to change this, the fact that you are reading this indicates that you are thinking about it, now you have to take the steps and do it! Surely you owe it to yourself to feel good, to then pass on your experiences and make a difference to someone else, or you can become that person who is just another statistic in a world that has lost sight of what life is all about.
