issue 34 The Editors Once again the world appears to be focused on negativity so we have worked hard to bring you a selection of people and businesses that scream positivity from the roof tops. We travel to Granada in Spain, Hawaii, Sweden, Ecuador, the Galapagos Islands, USA, Tanzania to name just a few, but what they all have in common is a desire to break through all this doom and gloom. This world is packed with so much from horse trekking through beautiful landscapes to sailing on the open seas, from great food, eco products, creative courses, conservation and of course our Real Estate section brings us homes and islands to get our minds really thinking. What is important in these times is not be brought down with all the negativity but to push through, to acknowledge all the positive things in our life and really focus on them, nurture them and reject all negativity. When you think things are tough think of others who are having a much harder time and take a moment to really appreciate what you have. Find ways to push through, explore the planet, explore opportunities and most importantly, explore you to find your inner strength and take control.

NEW YORK CITY Regardless of what impression you may have pieced together from your favourite TV show or friends’ lengthy anecdotes, only when you have experienced New York first hand can you understand how it earned the ‘City of the World’ title. With every square inch dedicated to entrepreneurial outfits selling every service, product and experience under the sun, it is easy to appreciate its early beginnings when Dutch settlers arrived to get rich quick on the fur trade. Whilst other American cities are clearly steeped in religious tradition, New York makes no excuses for its capitalist roots, and still attracts ex-pats in their millions, all hoping to make it big. But whether you are a budding entrepreneur or simply looking to experience the buzz, there is an endless array of attractions for every visitor – the difficult part is choosing! Every traveller should experience the wonders of the Galapagos Islands. This unspoilt paradise provides a true portrait of how the planet used to look before man stamped his mark on it. The Galapagos Archipelago was discovered by accident in 1535, when Tomas de Berlanga, the Bishop of Panama, drifted off course while sailing from Panama to Peru. The Bishop reported his discovery to King Charles V of Spain and included in his report a description of the giant Galapagos tortoise, from which the islands received their name. Of course it is possible that inhabitants were well aware of the Islands before this date but there is no record of this. The Galapagos’ most famous visitor was Charles Darwin, who arrived in 1835, exactly 300 years after the Bishop of Panama. The message is simple. “Why should those of us with money be able to come and take the best of a country without thinking of the consequences? Often our presence as tourists can mean using precious resources (such as water) needed by local people, hotels being built on farming land without proper compensation to the local owners, wildlife being disturbed, and communities marginalised to make way for tourism. The Tribes Foundation believes that a country and its resources belong to the local people first, and that they, their traditions and their environment need to be protected from negative impacts of tourism. Only within such parameters does tourism seem fair.” The charity backs poverty alleviation, education, cultural preservation and conservation projects within areas affected by tourism. Anyone can apply to the foundation for backing if their project fits the above aims. Many of the projects currently marked for help have been put forward by tourism companies within the relevant countries, who are themselves

approached for help by their local communities. Parts of the tourism industry really do want to help improve life for local people affected by their presence. Viscerally Affecting
M
osaic artist Nathalie Vin was a international recruiter for a prestigious MBA programme with the glamorous lifestyle attached but could always hear a small voice inside telling her this wasn’t it. She experienced her transformative ‘eureka’ moment ten years ago in an incident involving some close friends and some black grout! Having tried mosaics as a hobby for three or four years, one day Nathalie was working on a large piece and her friends were helping her rub away the excess grout when she noticed the rising levels of excitement all around her. “Their whole demeanours were changed – they were absorbed yet elevated, concentrated yet transported,” says Nathalie. “That for me told me everything I’ve learnt from mosaics since, that mosaics affect people quite viscerally.” Since then she has exhibited nationally and internationally, been commissioned publicly and privately and held numerous workshops for children and adults of all ages and backgrounds. “I think what I am most involved with and always trying to get

across in my workshops or show in my art is the three-dimensionality of life.” The immense public-art piece called The Glow Project, which Nathlie devised and curated for the city of Brighton, exemplified this belief. In Glow, giant images culled from the residents’ private lives and from unexpected details of The Royal Pavilion were projected onto the exterior of the Pavilion and the residents’ flats to accompanying music and imagery. “It was just like a mosaic on a massive scale,” Nathalie says, “juggling all these tiny fragments and details to create a harmonious whole.

There was myself and my idea or vision, and there were hundreds of participants and thousands of spectators and we each had our place and were joined or linked together by The Glow Project. I feel Glow celebrated how the individual elements in a city, both human and object, are unified to make a three-dimensional whole.” “Another mainspring of my work is the amazing, even celestial, qualities of nature. I have contrasted the flowing, eternal, patterns of the natural world with the harsh, rigid, routine of everyday human activity. Aiming again for holographic, 3D thinking, I have tried to show our individual life caught within and between these forces by inserting more personal, human pieces such as personal mementos, portraits and random three-dimensional images.” Her latest work is a set of five cloud shapes entitled NUAGES. Like many of us Nathalie’s fascination with one particular form of nature - clouds -began in
childhood, staring in wonder as these amazing billowing objects turned into witches, castles and elephants.

With the overlay of the adultartist’s perception she has created her five opalescent mosaic clouds. “While making the Koi mosaic, strangely I began to see it as much more a creature of the air than of water and ‘FREE AS THE AIR’ kept coming into my head as the title for it. When researching the mythology of the Koi, so strongly embedded in Japanese culture, one source said that according to legend if a Koi succeeds in swimming upstream and climbing a waterfall at a point on the Yellow River called The Dragon Gate, it will be transformed from a fish into a dragon – a creature of the air! I love this kind of serendipity! My own “Dragon Gate” was to represent the easiness and lightness that Koi seem to embody with their languid, hypnotic grace. My second challenge was to translate the amazing luminosity the fish carries in its scales. Mosaic is a deceptively difficult art form. As with FREE AS THE AIR I fight a constant battle with texture, form and matter to try and render the harsh essential solidity of the mosaic medium into lightness and fluidity. The old saying that to create art you must first destroy is especially true of mosaic where I have to seek ways of breaking up all the weight and gravity if I am aiming to show the airy, gracefulness in nature.” Currently Nathalie is working on a large scale public art piece about which she doesn’t want to reveal too much yet, but says it will hopefully inspire people to listen to themselves and to their inner voices.

ooking with mushrooms is real fun because they absorb flavours so well, just like a little sponge that said I have to say that I also love them raw in a salad, they have a taste all of their own which compliments the smoothness of their flesh so well.

Use different herbs and spices to bring out their flavours� One of my favourite ways of cooking them is to get one of those huge flat mushrooms, drizzle them with a little oil, add a few dabs of butter sprinkle over lots of crushed fresh garlic, plenty of freshly ground black pepper and a little salt and then put them into a hot oven until the house is filled with the aroma of garlic.Once cooked they become the most amazing juicy, tasty mushrooms ever. Now put them into a bap, drizzle over the oil and butter from the pan, smear a good mustard over one side of the bap and then squeeze together, now you have the most amazing lunch. I have served this to people who like a steak sandwich and they have loved them, of course, these come without the health issues! Both fresh and dried mushrooms work incredibly well within cooking, the dried having a far more intense flavour so you need less, so whilst they may seem a little expensive you really do only need two or three to make a difference to any dish. Make sure you save the soaking water, either for the dish you are using or just freeze them into ice cubes to use in other dishes at a later date. Mushrooms work well as a side dish or a main dish so when it comes to recipes we really are spoilt for choice, but be wild with them, try to avoid just picking up that cling filmed wrap box of mushrooms, look for different varieties and see for yourself the difference in taste and texture, experiment with them, try cooking them in different ways, frying, baking, grilling, on the barbecue all manner of ways. Use different herbs and spices to bring out their flavours, experiment with different types of oils, just putting them under the grill with a big knob of butter, some chile salt and a little soy
sauce and hey presto, a wonderful spicy little dish that can be mopped up with a big chunk of bread. Mushrooms also adore cheese, again, baking tray, drizzle of oil, layout your mushrooms, I use flat ones for this, drizzle with a little oil, black pepper, a slice of garlic on each mushroom, a good sprinkle of chile salt and then top with a good cheese, such as cheddar, a bit more black pepper and then into the oven for about 20 minutes. Serve with a green salad for a magnificent lunch. Curried mushrooms are wonderful, create your basic curry sauce and then throw in a selection of mushrooms to absorb the essence of the curry and just towards the end, with literally minutes to spare, throw in fresh spinach which only needs time to wilt. Serve on a bed of rice. Fabulous. You can do the same with a goulash, chile in fact, mushrooms fit, in my opinion anywhere. Try slow cooking finely sliced onion and mushrooms in butter, water, salt, pepper, dried chile flakes, dried garlic and golden sultanas. Cook slowly until the water has gone and you are left with a sticky, delicious topping for a jacket potato, or an excellent pizza base! With so many wonderful herbs and spices available it is really only your own imagination which will prevent you with coming up with new ideas with your mushrooms, so start building your spice cupboard, one or two a week, until you have the artists equivalent of a paint pallet. In films it is always the man at the helm, leading the way across the ocean, large fishing boats always seem to have a man as the Captain in his thick sweater, hat with a weather beaten face, you start to get the picture, however, as I said, let none of this hold you back, look up female pirates from the past which used to terrorise the oceans, you will be surprised they were up there with some of the most notorious names! The 38-yearold from Hampshire in the UK punched the air as her boat crossed
the line off Barcelona, Spain, in sixth place. She spent nearly 103 days at sea in the 25,000mile race along with her Spanish co-skipper Anna Corbella, 34. Caffari has already successfully circumnavigated the globe twice solo, and now once double-handed. Then of course we have to mention Dame Ellen MacArthur, who has completed two non-stop circumnavigations. The yachtswoman is also still the only woman to have sailed solo and non-stop around the world, both with and against the prevailing winds and currents. Esteban is a Zotechnista, graduate of the Central American School of Ganadaría, born and raised in Guanacaste and does all the training of the Casagua Horses. Kay has ridden all her life and has a PhD in Ecology and has worked in Costa Rican conservation before moving to Guanacaste. They are both very knowledgeable conserning the natural and cultural history of the area.
O
nce upon a time, oh, that’s for fairy tales. But I guess coming to Costa Rica almost 35 years ago was a fairy tale. Some of us on our first visit were not even sure where in the world we were going. We quickly found out Costa Rica , known as the “ Switzerland of Central America,” was the tiny, democracy located on the land bridge between Nicaragua and Panama . Family and friends asked, “Is that that island down south?” or, “Isn’t it dangerous with the war in Nicaragua so close?” My father, even after I had been coming to Costa Rica for years, thought I was going to Puerto Rico . For biologists, Costa Rica and its unique biodiversity was a unique place to study, for surfers the white sand beaches and great waves of Guanacaste meant paradise on the long board, and for arriving foreign residents a place to live their dreams. The few foreign residents from the United States were located in pockets in the Central Valley- Escazu and Santa Ana or a small community in Nosara. Foreign residents willing to come to Costa Rica were given

perks, like tax free cars and dutyfree house hold possessions. The English speaking community, with their organizations, restaurants and bars, English newspaper and even a bookstore lived the life of expatriates, many clinging to their culture and customs in this tiny foreign country. This was the time of innocence. Oxcarts and horses could be seen bringing goods to the bustling Central Market in downtown San José . The smell of coffee roasting and fragrant, fresh flowers were yet to be drowned out by bus and car exhaust. The houses had elaborate iron work on windows; however fences and razor wire were absent. Rural houses had doors and windows open, with little concern for security. On my first visit in 1972, we were told, “the only police with guns were the personal police guarding the President. The others carried screw drivers in their holsters to remove license plates from illegally parked cars, or, in the case of the Rural Guard in Guanacaste and other rural areas, machetes. Foreigners and residents could walk most of the city streets without regard

for personal safety. Murder was an event so rare it was news for weeks. The majority of the crime was petty theft of person things left unguarded. The Costa Rica of the ´70s was much like the innocence of the ‘50s in the US . I like to remind folks who complain about the roads and airports, that just a few years ago it took me 3 days to get from Michigan to Guanacaste. One day to Miami , overnight there for we couldn’t connect in time for the once daily flights on “iffy” airlines to Costa Rica . We would then overnight again in San José , then go on the Guanacaste by bus the third day. After the first rains, much of the beach in Guanacaste was only accessible by plane or an “Amazon Queen” type freight boat that traveled the north pacific coast weekly. In the ´60s and ´70s there were small airfields in most coastal and inland communities, including Flamingo and Cartagena . A few residents lived in fishing villages year around; visitors came during Christmas and Easter vacations to their simple beach cottages. Tourism was limited to the visiting ecologist or adventure traveler who, after a daylong, bumpy bus ride over treacherous roads to the little town of Santa Elena , would spend a full day hiking the muddy trail to Monteverde´s famous windswept ventana, the site of the continental divide. A few of the Quaker families rented rooms or had hostles, simple dorm-type rooms with shared facilities, for visiting birdwatchers, biologists
or student groups. Groups ate family style, Quaker meals with lots of whole grain bread and the famous Monteverde cheeses. Most Costa Ricans didn’t even know Monteverde Cloud Forest preserve existed, or thought it was a place that only “gringos” visited. Mudslides and detours were common on the Pan Am highway or the mountain road to the Atlantic coast, however one could still ride the narrow gage Atlantic railroad from San José to Limon. The 110 mile ride, if there were no stops for mudslides blocking the tracks or flooded rivers, took 3 to 4 hours, with 52 stops. Thirty years ago, the Costa Rica government, under Dr. Oscar Arias, was just starting the National Parks and Preserve system. Manuel Antonio and Arenal were still in private hands, but with help from international conservation groups and the “debt for nature” program of the World Bank, Costa Rica began building the parks and preserves that would attract the tourists of the ‘80s and beyond. As an Ecologist/Biologist, people ask me my opinion of the impact of tourism in Costa Rica . I say, although there are problems in some areas due to over development, in general, the tourists have given the government of this small county, a reason for preserving large tracts of land and protecting much of it’s unique biodiversity. Certainly, it is sad that there are no longer turtles nesting on Tamarindo and Langosta Beaches, and those of Playa

Grande are threatened, however, the causes are complex with many culprits to blame, on and off shore. It is difficult, I add, to ask little Costa Rica to stop its own development and create a country-wide natural zoo, however wonderful that might be. The success’, in the last 30 years, outweigh the failures in comparison to what is being done to protect the natural heritage in the developed world. We are planting trees to reforest barren hillsides, creating new preserves and expanding parks. Tourists pay fees and taxes which contribute to the very things they came here to enjoy. And now, rather than having to take six days of their vacation to come to Guanacaste, they enjoy a 3-7 hour flight directly into the heart of Guanacastes tourist paradise. Although the crime rate and costs have risen, where in the world haven’t they? Those of you who arrived this year, one day, thirty years from now, will tell your stories of “once upon a time” in Costa Rica .

Saadani is located in what is a historically very important coastal strip. To the North is Pangani where many believe the ancient trading site of Rhapta, referred to in Ptolemy’s ‘Geography’, was sited. It became important again as the main terminus for slave caravans, heading to Lake Victoria in the 19th century. Bagamoyo, to the South, became the most important town in what is now Tanzania at the same time, with 50,000 slaves shipped annually to Zanzibar through the 1850’s. Saadani itself began to figure as an important trading post, appearing on maps from the early 19th century. In 1888 the German takeover of the region was instigated by Carl Peters, who developed a protectorate from Tanga to Dar es Salaam. Echoes of the past vibrate around the ancient ruins mingling with the vibrancy of local life. Proceeds from which contribute towards the dispensary. Saadani National Park is Tanzania’s youngest national park, covering 1150 square km in the east of the country, north of Dar es Salaam. The park has the distinction of being the only coastal wildlife sanctuary of its kind on the eastern coast of Africa. It offers a completely unqiue safari environment, combining the most rare of recipes - river, bush and beach. The extraordinary Wami River forms the Southern boundary of the Park. From the open sea you can boat into the river mouth and within minutes you are passing pods of hippo and basking crocodiles. The entire eastern boundary of the park is set along the Indian Ocean where white beaches stretch to the horizon in both directions, and sand islands off-shore provide snorkelling and swimming. Every effort is made to run the Lodge in the most sustainable way reducing as far as possible the negative impact. The fifteen, tented cottages with their cool grass roofs are strung along the beach. Each has its own veranda and pretty ensuite bathroom. remiere Scene’s Claire and Anthony Bueno had a knock out time as Hugh Jackman attends the UK Premiere of his movie Real Steel.
Joining us in conversation are executive producer Jack Rapke, producers Susan Montford and Don Murphy, delightful director Shawn Levy and the truly delectable Hugh Jackman.
Shawn Levy: Director
and so I wanted to see if we could combine those elements. CFB: And having Hugh as a stage actor as well as a film actor give you and extra boost because he’s used to the live performing?
CFB: So can you tell me what connected you to the script the first time you read it please? SL: I think when I first read the script I could see the possibility of making a movie like the kind I loved growing up. Movies like the Rocky series where there’s great action but you’re also engaged in a rousing way

SL: Yeah the truth is Hugh is almost in a class of his own because he’s a big movie star but he’s also an actor’s actor, so not just because he is standing next to me and he can beat me up (laughs) but it was a dream collaboration. CFB: Did you shoot this chronologically? SL: We didn’t shoot chronologically and it’s interesting because the boy Dakota got so much more comfortable as the movie went on …we didn’t shoot chronologically watching this boy become more and more comfortable was a fascinating evolution.

CFB: What strikes me is that the robots feel very tactile in the film; would I be correct in saying that?
Jack Rapke: Executive Producer
CFB: What was it that endeared you to the story? JR: The story at it’s core is a father son story that Charlie, Hugh Jackman, is not particularly a good father, not a particularly a good guy, on a losing streak, been on one his whole life and through this little odyssey with the son that he knew he had, that was never really with him, he learns to love his son and his son loves his father and (it’s) around this wonderful robot boxing which is pretty great. CFB: At the centre of this is heart isn’t it really? JR: The core of it is heart but we have really violent, really terrific boxing sequences and these robots go after each other pretty, pretty good, so it’s an edgy movie with heart which is very rare I think. I think the audience will have to decide whether that all works, I think it does. CFB: You’ve obviously got great casting with Hugh but did that help that he was a father; choosing an actor that is already a parent? JR: We chose Hugh because he is so charismatic and he’s the lovable rogue. So even though when he starts out in the movie he’s not a particularly great guy, he’s charming so you love him in spite of his floors and as the movie goes on he starts to make the right choices and you even love him more. I think if you had another actor who doesn’t have the same vulnerability then it wouldn’t work as well. So he’s the perfect choice.
SM: Yes we actually had many of the robots built and they exist and they are a little bit taller than humans and they move and their eyes light up because we wanted to have them grounded in as much reality as we possibly could create. CFB: With relation to the boxers did you use some of the characteristics of some of our more iconic boxers and try to integrate them? DM: All of the boxers were choreographed by Sugar Ray Leonard so he’s one of the best fighters that are still alive. Every fight that was a fight is what he put together and choreographed. CFB: What was it that particularly endeared you to want to be a part of the project and that you wanted to invest your time and your efforts into? SM: We’re really big Twilight Zone fans and we absolutely fell in love with the short story Twilight Zone episode with Lee Marvin so we auctioned the film rights for the short story almost seven years ago and it took quite some time to set it up, we eventually set it up with DreamWorks and it took this length of time to see it to fruition and we couldn’t be more delight with the way it’s turned out. CFB: The parallels between boxing and acting; is it about being in the moment? HJ: Of course it’s about being able to stay cool under pressure, acting is really about putting yourself out there and so is boxing, because you either win or you’re on the mantle.
CFB: Acting with Dakota what was that like, because children have no inhibitions does that free you up creatively as well? HJ: Absolutely; and Dakota himself has an old soul to him, he’s got older brothers so he’s a bit more mature than his years and he’s at ease. It was so great working with him. CFB: And what was it about Charlie that you connected with and resonated with you? HJ: I really am touched by those sort of characters he’s had a few bad breaks at the wrong time and I kind of think all of us can end up on the wrong side of life just like that (clicks his fingers) and he has sort of lost belief in himself and the world and his son gives it back to him.

Chocolate Fondant For 2 People
INGREDIENTS : 2 eggs 40g sugar 30g hazelnut powder 50g dark chocolate 55% 50g unsalted butter First of all make sure that you have two ramekins which you have greased inside the edges. In a large bowl whisk up the eggs with the sugar until you have a creamy consistency. In a separate bowl melt the chocolate with the butter in the microwave for 30 seconds, then add the two mixtures together very gently, slowly adding the flour then the hazelnut powder. Fill your ramekins until about ž full. Bake in a pre-heated oven at 180° for 12 minutes. Once the fondant is ready let it rest for 5 minutes then turn it over on a plate, remove the ramekin, pour on some fresh cream and ENJOY!
