Congratulations to our Australia Day Award Winners

Outstanding community involvement through a lifetime of sporting involvement has seen John Bigg named as the 2013 Citizen of the Year in Bundaberg Regional Council Australia Day Spirit Awards. Mayor, Cr Mal Forman said John Bigg had been a standout in an exceptionally strong field of nominees for the award. “A life member of seven associations, a teaching career that has progressed above and beyond his work role, involvement in charitable work as a Freemason and a champion rower who brought honour, not only to himself, but to the city of Bundaberg,” said Cr Forman. Aleksander Nigalis, 17, is the Young Citizen Award winner. “Aleks has stamped himself as a future leader based on what he has been able to achieve as a student at Kepnock High School,” said Cr Forman. Australia Day Senior Citizen Award recipient is Pat Russell. “Patricia has been an active member of the Make-A-Wish Australia Bundaberg Branch for 18 years serving 16 as president,” said Cr Forman. Other award winners are: Community Event of the Year – The 66th Australian Jazz Convention; Community Spirit Award – Bargara 3 Innes Park Neighbourhood Watch; Senior Creative – John Rotar; Junior Creative – Chern’ee Sutton; Green Award – Ian Gorrie (Childers); Senior Sport – Josh McLean; Junior Sport – Rheed McCracken.

Bundaberg Museum congratulated on achievements

Bundaberg and District Historical Museum (BDHMS) was recently congratulated for its achievements during the year long participation in Museum and Gallery Services Qld’s Standards Programs. According to the programs reviewers, members of the musuem can be proud that they run an organised museum and archive, and have used the standards process to gather more advice and information on improving the overall procedures, processes of the organisation, and ultimately, the visitor experience. The program has assisted members of the museum to ensure they are on the right path to improving museum practice and to preserve and present Bundaberg’s local history. Proud of their achievements are museum coordinator, Chris Spence (centre); treasurer, Estelle Hanson (left) and volunteer, Selena Hanson. The museum is located in the Botanical Gardens and is open 7 days a week, 10am to 4pm.

2013 cricket championships sure to be a hit

Bundaberg’s growing reputation as a centre providing top class sporting facilities and events will be further enhanced early in the New Year with the staging of the 2013 Australian Country Cricket Championships. Council’s Sport and Recreation spokesperson, Cr Lynne Forgan said Council fully appreciated the financial advantages events of this type produced for the local economy. “It provides a major boost for our accommodation providers, food outlets and tourism facilities,” said Cr Forgan. “Council recently received an excellent report card from Rowing Queensland regarding its sponsorship of the Queensland Schools Championship Regatta which attracted 3,000 competitors and visitors to the region. “These cricket championships are also well supported with teams from most states and territories and we expect visitor numbers will be quite exceptional over the 12 days of the championships,” said Cr. Forgan. “Council has been pleased to partner with the Bundaberg Cricket Association in the organisation of this event and has provided additional water to ensure facilities at Salter Oval and Kendall Flats are appropriate for competition.

“We have also assisted with the importation of a supply of black soil to ensure pitches are maintained in peak condition,” said Cr Forgan. The championships will be held until January 14 at Salters Oval and Kendall Flats. One of the highlights of the competition will be a 20/20 match played between the Queensland Bulls Invitational XI and Australia Country on Saturday, January 12.

MONTHLY FISHING UPDATE I hope you all had a good holiday and caught lots of fish! The weather through December was a bit hit and miss and the huge tides didn’t help. The big tides meant some Salmon was to be had in the Burnett, using large prawns at dawn and dusk in the deeper parts of the system saw some good catches with above average sizes. The big tides saw a drop off in the bread and butter fish such as Bream and Flathead also the whiting took a holiday, so on the 17th to the 21st of December I went to the Burnett River mouth at 4.30am, dead low tide, and threw the net for bait. Low tide is the best time to get bait with a net. As I was going on holiday on the Saturday (22nd) I finished collecting bait on the Friday morning at the end of the five days I had about 45 zip lock bags of Sprat, Poddy Mullet, and Hardy Heads. One cast on the Wednesday morning saw a good haul of a dozen decent sized Mullet all around 50cm. As I am still on holiday this will be a shorter report than normal, I am currently writing this in between fishing trips, however, I will, in the next report, hopefully include some pictures of me and my mate Bill and of course some fish. For the start of the New Year 2013 the best dates for fishing will be early mornings and late afternoons on the 8th of January to the 13th. Fish the mouths of all rivers for some good Flathead and along the rock walls and bridge pylons for Jack and Bream. Best baits for Flathead and Mangrove Jack are live Poddy Mullet or Sprat. Micro Mullet lures are deadly for Flathead in pink with a silver stripe or green and yellow. Try fishing for Whiting across sand at the bottom of the tides. Best bait is yabbies or fresh chopped prawn, you could also try for Bream along the rock walls and drop offs with the smallest lure you can buy and whilst you are at it, it’s great fun catching Whiting and Bream on miniature poppers. These lures are the best fun you can have, the strike rate is phenomenal. All the river systems are the go for Mud Crabs so make sure you carry at least a couple of pots with you. At the mouths of all rivers there are reported catches of Tuna and schools of Mackerel running up the coast, all though the big ones are not that plentiful. The reef fish are a bit scarce unless you are prepared to travel a 100 kilometres or so out. I went out twice in December 45 kilometres and 600 kilometres and never lost bait, so to speak. Let’s hope it picks up soon. Young Brodie Charteris, a Bundaberg Sports Fishing club junior, nailed himself a good Sail fish just before Christmas just outside the Burnett; I don’t know who had the biggest surprise the Sailfish, young Brodie or Brodie’s dad, Kevin. This month look out for the schools of Tuna chasing small baitfish. Mackerel should also be on the chew. The Barjon wreck should produce some good fish this month as the Cobia move in on it. The Kolan Patch also fishes well in January producing Red Emperor, Pinky Snapper, Largemouth Nanigai. The end of January should see some prawns appear, especially if we get some rain, so get your cast nets ready. If you don’t know

If you plan to visit one of the dams any weekend, you will find that they are all fishing pretty well nothing outstanding to report just lots of Barra, most around the 60cm to 70 cm, with the odd rod breaker thrown in, like the 134cm, 44.62 kilo Barra that Dennis Harrold caught on December 22, 2010. This monster had a girth of 107cm would you believe? A world record is pending because Dennis caught it from his Kayak!!! So if you are going to Monduran Dam, also known as the Fred Haig Dam, stay alert, you could be next. As a lot of you have told me that they have lost a few anchors around the mouth of the Baffle I have included a system to make sure you don’t ever lose another anchor (shown below). Simply drill a hole in the plate of your anchor, fasten the end of the chain to it, lay the chain along the anchor and fasten the nearest link with a zippy tie, if the anchor gets stuck under a log etc., simply drive off, the zippy tie will break and the anchor will pull out backwards.

Queensland’s Australian South Sea Islander students are invited to apply for scholarships on offer at four of the state’s universities for study next year. The Member for Burnett Stephen Bennett, said the scholarships are available for study at James Cook University, Central Queensland University, University of the Sunshine Coast and the Queensland University of Technology. Mr Bennett said the scholarships, offered through the Australian South Sea Islander Community Foundation, are for students undertaking an undergraduate degree and are open to all ages. “These scholarships provide assistance of $5,000 per year for students studying full-time and $2,500 per year part-time,” Mr Bennett said. “The scholarships are a great opportunity to assist students who wish to undertake further study but might not be able to due to financial constraints. “Interested students can apply directly through the four listed universities with applications closing Friday, February 8.” Since 2002, 38 scholarships have been awarded

to Australian South Sea Islander students in Queensland. Figures from the 2011 Census show more than 76 per cent of respondents who identified as Australian South Sea Islanders live in Queensland. “Australian South Sea Islanders have contributed significantly to Queensland’s economic, cultural and social development. “They are a distinct cultural group with a unique history marked by disadvantage and discrimination. These university scholarships help address areas of need identified by the community including education and employment. “Next year also marks the 150th anniversary of the arrival of the first South Sea Islanders to Queensland - a significant event not only for the Australian South Sea Islander community but for all Queenslanders,” Mr Bennett said. In any situation in life, in any relationship we have, there is only one person you can change in that relationship. And that is you. Bargara Beach Holistic Health Centre has recently purchased the latest in technology – Iridology Camera and software packages based on the most up to date research in Iridology. Toni Miller, Iridology researcher, has written the first Iridology text book in 25 years, and has been involved in the design of this software program. This form of Iridology is called ‘Integrated Iridology’ and brings together concepts from various Iridology researchers in history as well as current research. Iridology is the study of health via an examination of the structure and colour of the iris, pupil and the sclera. “The iris is estimated to contain over 28,000 individual nerve fibres. Medical science has, so far, found no function for these fibres that seem to end blindly in the stroma. It is here possibly, that Iridology had a reason to be born.” (Reference available on request) The iris is the most complex external structure in the human body. It has a reflex connection to every organ and tissue of the body by way of the nervous system. There are no two irises exactly alike. It is now understood that an iris is more individual than a fingerprint. The colour and pattern of the iris fibres will determine underlying inherent weakness, which may or may not be activated according to diet and lifestyle. Iridologists assess colour and fibre structure variations which assess the constitutional strengths of your physical body, as well as personality aspects which can influence emotional patterns. Genetic information going back three generations can also be reflected in the eyes. Iridology can be used to determine potential health problems and an early stage and allow you an opportunity to prevent illness. Iridology is not new, and even as far back as 1813, an Opthamologist wrote in his publication, ‘Textbook of Eye Disease’, “Everything that affects the organism of an individual cannot remain without effect on the eye and vice versa.” (Reference available on request) It was in the 20th century that doctors and scientists from the US, Europe and Australia brought Iridology into worldwide recognition. In the last 20 years, further research has been conducted. This non-invasive method has been used by many doctors in Greece, Italy, Germany, Russia and many other countries as a source of detection of function and disease. Iridology will be used during appointments and will alternate with appointments for the Urine Biochemistry Testing, so the information can be combined. This will give you written information about all signs and structures within your iris, pupil and sclera and assess physical, emotional and mental attributes, as well as look at hereditary factors. Tech Talk & Tips Well it’s only been a few days since we began the year 2013,and AMS computers has seen lots of people with computers that, they themselves have tried to set up, and now have to be set up again. Because they have tried to set them up themselves and caused all sorts of problems they end up costing more to redo, than if AMS had done the job from the beginning. Even if you purchase elsewhere, AMS Computers will still set your new computer up for you. Some, supposedly cheap bargains can, and do, end up costing more. If the customers had received good advice, and purchased from AMS Computers fully set up and installed, the costs sometimes is only a few dollars. Remember a computer tower, bought from AMS Computers, carries a 5 year limited warranty, which means they stand behind their product, because they build each computer individually, part by part, in store. Lots of customers that have purchased computers elsewhere from multi franchise companies etc., go to AMS Computers and complain that their computers are slow, sometimes slower than their old computer. You can’t expect to pay $12,000 for a brand new car and expect it to be like a Holden Calais or a Ford XR8, you only get what you pay for and cheap and nasty in computers is exactly that. Add to that the fact that you then had to literally spoil your Christmas trying to set them up, copy two or three recovery discs, remove loads of add programs etc. You have to ask yourself was it worth it? At AMS Computers you talk to technicians and people with knowledge, not slick sales people who have to sell to you, then upsell to build their commissions. Most times you may know more about computers than the sales person! Think about it, AMS Computers’ main business is computer repairs, mobile repairs, looking after businesses with networking and point of sales problems etc. They have the most technicians, the biggest most modern upto-date, state-of-the-art workshop in the Wide Bay, and they sell computers as a service. So you now have your new computer time to have some fun, and now you can line up your computer with your TV and home theatre, let’s give it a try shall we? First you will need the appropriate hardware, mainly a video card (check to make sure you have one), you can then use the Media Centre of Win 7 to display DVDs plus pictures and maybe play music, all through your stereo system. To connect to computer based videos, DVD’s images and files on your TV, run a HDMI cable from the HDMI output port on your computer video card (at the back of the computer) to the HDMI input port at the rear of your TV. Older computers and TVs may need an S-Video connection. To now listen to your computer based music sound files through your stereo system use a double cable with red and white connectors from the ports at the back of your sound card to the corresponding ports (input jacks) on your stereo receiver of your sound system. To run a Television to a computer you will need a TV tuner, it’s an external device that receives the incoming TV signal you can use this to watch TV, record TV programs right to your computer, you can then plug in a TV cable to your TVs tuners Jack, or you can use RCA cables or maybe an S-Video cable from the TV output jack (check first to see if your TV has them) into the corresponding ports on the TV Tuner. Next edition we might look at remote controls you can buy to control the whole media centre or perhaps go into a wireless device that transfers signals from a remote computer and sends it to your TV, or we may just concentrate on the Windows7 Media Centre and what you can do with it. Nut out your Sedge weed problems Your monthly gardening guide brought to you by ‘Bundaberg Wholesale Palms & Plants’

Mullumbimby Couch (Cyperus brevifolius) is a species of sedge that can be found in warm regions around the world. It is a rhizomatous perennial herb growing one to several erect stems to heights up to about half a meter, but often much shorter. It produces tiny inflorescences of a few spikelets each which in total are less than a centimetre long. It is a weed in wet areas such as drainage lines, poorly drained soils and over shaded sites. Nutgrass (Cyperus rotundus) is a perennial plant, which may reach a height of up to 40 cm. The name nutgrass is derived from its tubers, that somewhat resemble nuts. Cyperus rotundus is one of the most invasive weeds known, having spread out to a worldwide distribution in tropical and temperate regions. The safest and most effective solution for Sedge control in your lawn is Sedgehammer. Sedgehammer is a water dispersible granule formulation containing the active ingredient, Halosulfuron methyl (750g/kg), used to kill and remove Nutgrass and Mullumbimby Couch without affecting your lawn, Sedgehammer can be safely used on lawn varieties including Bent grass, Buffalo, Couch, Kikuyu, Perennial Ryegrass, Qld Blue Couch and Tall Fescue. Sedgehammer is a group B herbicide and works by inhibiting ALS (Acetolactate synthase). ALS is a key enzyme in the production of branched chain amino acids. Sedgehammer is absorbed into the leaf tissue within 24 to 48 hours and enters the plants vascular system. It travels to the base of the leaves where the growing point is located. Critical amino acid production within the plant is then halted. Yellowing and browning of leaves usually occurs within 10 to 14 days. It may take an additional 2 weeks before the Nutgrass or Mullumbimby Couch dies. If the Nutgrass is not actively growing or is stressed in any way, this process may be delayed or interrupted. Apply in Spring or Summer when Nutgrass leaf growth is greater than 5cm, or when Mullumbimby leaf growth is greater than 2cm. To obtain best results, apply when weeds are actively growing. With mature Nutgrass plants or high populations repeat applications may be required. Apply via a knapsack sprayer at a rate of 1.3g per 100m2 of lawn. The water volume required per 100 m2 should be between 4 litres to 8 litres. The addition of a spray adjuvant may improve weed kill. For best results, do not apply after the onset of frosts. Watering or rainfall within two hours of application will reduce kill. Do not mow for two days after application to gain best result. Sedgehammer may damage newly established lawns or lawn weakened by physical damage or weather conditions. Bundaberg Wholesale Palms and Plants have Sedgehammer in store at 50% less than the RRP. RECIPES OF THE MONTH Ingredients:

Flavour of Summer With Mangoes Prawn & Mango Salad

750g cooked large king prawns 6 green onions (green shallots) 2 egg yolks 2 tablespoons lime juice 1 tablespoon Dijon mustard pinch salt grind black pepper

1/2 cup (125ml) peanut oil 1/4 cup (60ml) sweet chilli sauce 150g mixed baby salad leaves 3 large (1.8kg) ripe mangoes, peeled, sliced 1/4 cup lightly packed fresh coriander leaves

Method:

1. Peel and devein prawns, leaving tails intact. Cut the white part of the onions into long, thin strips. Place in a bowl of ice cold water. 2. Meanwhile, place egg yolks, juice, mustard, salt and pepper in a medium bowl. Using a whisk or electric hand beaters, beat until well combined. Begin to add oil, a few drops at a time, until it is well incorporated and the mayonnaise starts to thicken. Then, add oil in a thin stream, whisking constantly. Stir in sauce; season to taste. 3. Arrange salad leaves, mango and prawns on a serving platter. Drizzle with the sweet chilli mayonnaise, mostly on the prawns, then top with drained onion and coriander leaves.

Ingredients:

Mangomisu

500g mascarpone cheese 600ml thickened cream 1/3 cup (50g) icing sugar 2 egg yolks 1 vanilla bean, split, seeds scraped 1/2 cup (125ml) Grand Marnier Juice of 2 oranges

300g savoiardi (sponge finger biscuits) 3 mangoes, flesh sliced 1cm thick Raspberry sauce 1/4 cup (55g) caster sugar 250g fresh or frozen raspberries Juice of 1 lemon

Method:

1. Line the base of a 22cm springform cake pan with plastic wrap or baking paper. Place the mascarpone, thickened cream, icing sugar, egg yolks and vanilla seeds in the bowl of an electric mixer and beat on high speed until thick and well combined. 2. Combine the Grand Marnier and orange juice in a separate bowl. Dip half the sponge fingers into the juice mixture and layer in the base of the cake pan. Spread with a third of the mascarpone mixture, and top with a third of the mango slices. Repeat the process, and then top with the remaining mascarpone mixture, reserving the remaining mango slices to serve. Cover the cake and chill for 2 hours or until firm. 3. Meanwhile for the raspberry sauce, place the sugar and 2 tbsp water in a small pan over medium heat, stirring to dissolve the sugar. Cool slightly, add the berries and lemon juice. Whiz in a food processor until smooth and then pass through a sieve. Chill until ready to serve. (You can store the sauce, covered, in the fridge for 3-4 days). 4. To serve, carefully remove the sides and base of the cake pan and transfer the mangomisu to a platter. Decorate with curls of the reserved mango, then slice and serve with berry sauce.
