Coronavirus emergency appeal
The future is uncertain. Things could still get worse before they get better. But the time to plan for recovery is now. For many, the economic and political aftershock of the coronavirus could be more damaging than the disease itself. But together, we can make things better. We know these communities are full of capable, determined people who can build a brighter future. Right now, they still need support to take those first steps - to adapt and recover.

Top tip: Traidcraft’s Helen uses a slow cooker to make her rice pudding, and suggests that the coconut milk, along with the additional time taken to slowly cook, makes for a thicker and even more delicious rice pudding!
Winter Warmer FAIR TRADE RICE PUDDING Recipe
INGREDIENTS
300g cooked Kilombero rice (white or brown) 400ml Ma’s Happy Life coconut milk ¼ tsp salt ¼ tsp cinnamon ¼ tsp ginger ½ tsp vanilla extract 2 tbsp raisins/other dried fruit (optional) 2-3 tbsp maple syrup 1 tsp vegan butter
METHOD
1. Heat a large pan on medium/high. 2. Add all ingredients to the pan. Stir continuously and bring to boil. 3. Turn heat to low and continue to simmer until most of the coconut milk has been absorbed. 4. Add more liquid if you like a softer rice. 5. Allow to cool before serving.
