A Suite Life Style maven Diane von Furstenberg has once again, proved her prowess in design – from fashion to interior, with the launch of the DVF Penthouse on Hayman Island. The suite is a breath of fresh air, just like the iconic designer herself.

What inspired your design for the penthouse? Throughout my life, I have always been inspired by nature and by women. In this case, it was more about nature. It was Hayman Island. Even just the magnificent view from the suite itself – it is such an inspiring place. All of the furniture, the fixtures and lighting were made in Australia. I worked closely with Olivier Gelbsmann, Style Director for DVF Home, and we started by thinking about fabric, print, and a colour scheme. Then we started thinking about the island itself and how the suite would fit into it. Then we moved onto floor plan, materials and furniture.

Was the Australian aesthetic incorporated in your design process? I think it really gave me that feeling of being very far away from everything and that comes through in the design – the colours of the sky and the sea were certainly an inspiration, as well as the sunset and the peacefulness.

Do trends influence your designs? I think trends become a part of a collective consciousness and that maybe they are in the back of my mind sometimes. But I do not usually design specifically to be on trend. It is more about who I am and what I am trying to express.

What is your favourite feature of the penthouse? The privacy, the strong combination of print and colour and also the four-poster bed in the master bedroom. I have always loved furniture and this is truly an incredible piece. It was specially designed and custom made in Sydney.

Design-wise, what makes it distinctly DVF? We used our China Vine print, which worked beautifully with the light, natural oak floors. Happiness! I am most proud when something I design reflects who I am and I think this suite really does that. It is the perfect blend of nature – the views, using all of the amazing assets you already have on the island and then accenting that with prints and colour, which has always been my style.

How do you find the experience of designing an entire space? Well, the entire interior had to be demolished and reconstructed, so I suppose that was a challenge! But in the end it was all triumph.

What is special about Hayman Island? The serenity, the beauty, the colours, the luxury… It is such a Ayuthaiya special place.

What do you like most about Australia and how does it relate to your designs? Australia is exotic, but still accessible. Like my design!

How is interior design related to fashion design? I think the two are very related. Both are a reflection of who you are and what you want to reflect in the world. I always say, “Design your life!” Everything, from the picture hanging on your wall, to the food in your refrigerator, to the clothes you are wearing, they should all reflect who you are. With a destination, it is a little different because it is not yours, but it is still about creating a mood and a feeling.

What role does fashion play in travel? I am always on the go, so the way that I design is very much inspired by travel. I refer to it as ‘La Petite Valise’. I always pack lightly and I love the idea that you can take just a few things and that they all work interchangeably. So you arrive at your destination and you see new ways in which what you have packed works together. If you pack lightly, you live lightly!

How does a DVF woman travel and why is the penthouse an ideal destination? She is a global traveller and she has very eclectic taste, maybe she is a little bit glamorous. This is where she comes to unwind and find clarity.

Basic Guide for New and Aspiring Collectors Winston Art Group’s Art Advisor Jessica Hodin shares some useful insights for budding art collectors.

Buying art can be daunting for the uninitiated. When starting down the road to collecting, it is not recommended to travel alone. As with all journeys into foreign territory, it is most useful to have a guide to interpret the new language and culture of this unfamiliar world. An advisor can help an aspiring collector look, listen and learn. Anyone can buy art and on any budget size, but proper consultation, educating your senses, and having the patience not to buy the first thing you like can be the keys to success. The art market is one of the largest unregulated economies, with huge growth in revenue attributed to emerging markets. It is useful to have some guidance so you don’t get swindled. But if you are about to spend as much money on a work of art as you would on a car, it is probably a good idea to seek the wisdom of a seasoned advisor. Some good questions to ask your advisor are whether or not the artist is important, “Do they have solid collectors?”, “Are their artworks in museums?”, “Have they had any solo shows?” or “Do they have a strong gallery representing them?”.

However, even if the answers to these questions are “no,” there may be other indicating factors. Possibly, the artist is overlooked and could become someone who contributes to defining his time and is speaking visually for a zeitgeist or subculture. A good advisor will know that a certain artist is about to have a solo museum show, that they are in negotiations to be picked up by a reputable gallerist, or that their works have been bought by individuals with important collections. The artist gains greater respect and appreciation when the community and its leaders have vetted their work, and therefore higher valuations can be expected to follow. An advisor has a better sense of what could become important in the larger context of the movement, as well as which pieces are strongest in the oeuvre. There is certainly nothing wrong with gravitating towards A-list artists such as Warhol, Richter, and Picasso, but it is sometimes more fun and affordable to “discover” an artist when they are young and grow with their developing career. Advisors have the advantage not only of experience, but also of being plugged into the scene on a regular basis, which is crucial when speculating on the up-and-coming. The majority of the buzz in the art world is generated from underground chatter and insider knowledge from gallerists, critics, established collectors and museum professionals.

f course, the advisor also can provide their expertise in terms of identifying what buzz is worth listening to and what is only buzz. Advisors have the skill set to analyse a work’s condition and the trained eye that is necessary for judging aesthetics. Following the e-commerce trend in other industries, art is now being purchased more and more online, through websites such as art.sy, paddle8 and even at the websites of major auction houses. While we are becoming more and more comfortable with the idea of a jpeg, an advisor may have time to go see the piece in person or may have already seen it at a gallery or art fair! What you spend on an advisor, you gain in a more secure purchase with greater investment potential. A good idea is to have them provide you with a list of 50 artists that are on their radar and choose the ones you appreciate and can enjoy for a long time.

Venue can be a strategic move. Auction houses sell “secondary market works” with some exceptions if works come direct from the artist’s studio, whereas galleries sell both “primary market works” (direct from the studio) and some also deal in secondary market or artist estates. When buying secondary, the price could have either balanced out to its most stable point (a fair market price reveals what the demand is and what the open market is willing to pay) or been through several “markups” before reaching the current sale. Buying primary means being able to develop a relationship with the artists themselves, but galleries charge high retail prices. Since galleries do not reveal prices paid for other works, it is always best to consult your advisor to find out if you are getting a good deal. And they might even be able to get you a better one!

Visiting the international art fairs is also a great tactic. By seeing a massive amount of art at once from all over the globe, a beginning collector can really learn what he/she is drawn to the most. Also beneficial is that the exhibitors generally expose artists they are most excited and confident about in order to justify spending a large sum of money on a booth and fair expenses. Additionally, at Art Basel, the largest international art fair, there is a curated section called “Art Positions”, which places the spotlight on innovative artists gaining traction. This is a good strategy for checking out artists that are being reinforced by the international curatorial community. Just make sure you like their work and could live with it for at least 10 years! The limited liquidity of art means that collectors should buy what they like. Living with art, appreciating the ownership, displaying and caring for the piece, is value in its own right, even if a resale never ensues. Collecting can become addicting, so make sure you find works that interest you both aesthetically and conceptually, and for which you have a spot to display. Good quality artworks will outlast the fashions and taste of the moment. Aspiring collectors should always keep quality in mind over quantity and style. An advisor can help fill in the questions of lasting value and influence and whether you paid the right price.

Young Philanthropists BERNARD RENNELL from HSBC Private Bank and Private Wealth Solutions delves into the new face of philanthropy and explores the potential of the generation’s younger donors.

The topic of young donors is heatedly debated and often misunderstood. Numerous articles discuss how to nurture the next generation to be effective philanthropists. However, many of us underestimate their contribution right now – believing that they don’t have much to give back. The fact is that some younger philanthropists are spearheading new ways to raise and distribute financial and other resources for social benefit. Research studies on young donors show variable results. In the US Millennial Impact Report 2012 survey of 6,500 people, 20 to 35 shows that 75 per cent made donations albeit in small amounts. A recent British study found the “gap in general donations between the over-60s and under-30s has widened sharply during the last 30 years”. Why is this debate of interest to us? What can we surmise about young philanthropists? We need younger donors to continue to innovate the ways in which we approach philanthropy. Global challenges such as hunger, generation-to-generation poverty, human slavery and trafficking, and environmental degradation are entrenched and require a longitudinal focus.

Risk of information overload The most obvious difference between the generations of donors today is the unprecedented and timely amount of global information available about social and economic developments. Thousands of charities are registered each year. This may seem an advantage to a donor, but information overload may contribute to a state of inaction. Young philanthropists appear to be masterful in filtering the information most relevant to the cause or issue of interest at the same time recognising the systemic nature of entrenched social problems. They are more likely to have a theory of change and can express the salient factors or root causes of a problem. Interviews with these donors demonstrate their experimentation and cultural sensitivity, such as the sponsor of an education program in Vietnam providing bags of rice to the family during the harvest season in order to keep the student in school. Or the donor who wishes to support play therapy or fund a rock band for street youth. They are not alone in seeking interventions that have proven to work elsewhere and to choosing high performing charities or enterprises. A distrust of some traditional charities is not unheard.

Younger donors have a keen interest in social enterprises and social impact investments Many are also entrepreneurial and embrace a range of business-centred approaches to redress pressing social and environmental issues. They take more risk and reference venture philanthropy. The possibilities of scaling-up towards achieving sustainability, promoting social entrepreneurship as one of the ways to drive innovation and demanding evidence of social impact are important. A key driver is measurable social change. Too often, donors are unclear what difference their social investments have made. The tech savvy and entrepreneurial next generation may ask about metrics and best practice.

Spearheading new ways to raise and distribute donations Many younger donors use social media to build awareness of issues towards online crowd-funding. Giving circles are one of the fastest growing ways to connect like-minded philanthropists. Today, many meet in affinity groups to network, build alliances, and collectively donate.

Young people seek a ‘voice’ to feel connected We are often asked how to reach out to younger givers especially from family leaders with established charitable foundations. The most important first step is real dialogue and engagement. Interviews with young family members is not uncommon in our philanthropy advisory service in order to ascertain their philanthropic interests. We build-in practical ways for engagement, such as junior boards and funds and active participation through site visits and foundation meetings.

Philanthropy is linked to family unity, continuity and harmony Foundation work is a forum for collective decision-making and stewardship of wealth that is vital to the continuity of business families. It’s also a way to pass along shared values, a meeting point and connects a family to its local or global communities. Families wish to leave a philanthropic legacy and to counter ‘affluenza’. Some parents think their children are not better off with sizeable inheritances and do mentor charitable giving and volunteerism. Intellectual capital is not confined to any group – young philanthropists with their world-class educations and fresh outlook to solving social and environmental problems will inevitably bring a new dynamism to philanthropy.

But as the months ahead are brimming with potential, resist the urge for any negative notions and instead, take this moment to start the year with a clean slate. WORDS BY BRENT LEE

Last season was not only about the Yuletide spirit, but also about the kind that comes in a bottle. After all that merry making, your body may have accumulated unwanted compounds that cause undesirable effects. Fortunately, there are numerous methods available to help preserve your wellbeing the natural way. Take time to rejuvenate and enter the new year with a renewed spirit starting with wellness routines that you can accomplish at home. Think of it as a way of letting go of the negative elements that hold you back and making room for new opportunities.

Morning Cleanse. How you start your mornings sets the tone for the rest of the day. After stretching, develop the habit of drinking lemon water for your daily, natural dose of Vitamin C. Simply squeeze the juice of half a lemon in a cup of warm water and drink the mixture before having breakfast. Not only does this help boost your immune system, it also aids in digestion and promotes healthier skin. Another variation is the salt water flush, which is particularly effective in cleansing the colon. Pour two teaspoons of natural sea salt with a litre of warm water and consume first thing in the morning to regularly flush out toxins.

Diet. As the adage goes, “you are what you eat”, so whatever goes inside your body will manifest in one way or another. Needless to say, you should eat food that is good for you. But everyone has different needs and goals. Offering tailormade programs based on your blood type, the Cohen diet is a good means of maintaining a balanced diet. Although it is often recommended for weight loss, it works without food deprivation. The natural option is always more favourable, so steer clear of processed food as much as possible. If you notice an ingredient in the label that doesn’t sound familiar, it’s probably not good for you. While a juice fast is certainly challenging, it’s still one of the best ways to cleanse the body without limiting the palette as the juices are made of different combinations of fruits and vegetables. Normally lasting for three days, the program involves a diet of fresh, natural juices that will help eliminate toxins and increase your energy levels among many other benefits. Other alternatives are the Macrobiotic and Pritikin diets that offer meal plans high in fibre, which greatly benefit the heart.

Meditation and Exercise. A strict diet almost always never works without the proper fitness routine. You can further elevate your massage treatments by incorporating aromatherapy. The scents of essential oils will stimulate your olfactory nerves and promote harmonious brain function. Urban Meets Culture

O

ne minute, we were enjoying a clear blue sky and the vibrant foliage that line the peaceful channels of the Danube River; the next, we were at the heart of the busy city centre navigating our way through the thick crowd of tourists gathered on the streets. The Austrian capital was the former seat of power for the Habsburg royal family and Holy Roman Empire. Located at the centre of Europe, it is a culturally diverse metropolis and an important transfer hub for the region. From its gothic architecture and grand imperial palaces, to the modern buildings and cool cafés along the Ring Road, Vienna beautifully melds old-world charm with contemporary culture.

What a delight it was to stay at the urban chic Do & Co Hotel, right at the heart of Stephansplatz, the home of the gloriously gothic St. Stephen’s Cathedral. I loved the studio-type suite with its great view of the vibrant square and the many souvenir shops, coffee houses, fountains and fiakers (twohorse carriages). Waking up to the breathtaking sight of the historic church – with its ornately-patterned roof and stained glass windows – and eating a hearty breakfast while the church bells rang out and horses clip-clopped by was a very special experience. If you’re in need of some retail therapy, just take a short walk to Graben and Kohlmarkt Avenue for high street and high-end boutiques. Just a few steps away is the neo-baroque Hofburg Palace – the winter residence of the Habsburg imperial family – on Michaelerplatz, where the Spanish Riding School and Burggarten (huge palace garden) are also located. Also close are the near identical Museums of Art History and Natural History, which stand opposite one another in the Maria-Theresien-Platz. Österreichische Galerie Belvedere houses the largest collection of famed Austrian symbolist painter Gustav Klimt’s artworks, including his most well-known painting, The Kiss. It was quite overwhelming to see this enormous, gilded masterpiece, along with personal letters and other esteemed works like Judith I and Judith II.

Schönbrunn Palace

Seeing Green Named the world’s most liveable city three times in a row, Vienna not only prides itself on its high standard of living, but also for promoting a sustainable lifestyle. The cityscape is made up of plenty of green spaces, including 280 imperial parks, gardens, tree-lined avenues and a wide stretch of woodland. There are also a growing number of socially responsible shops that practice fair-trade and carry organic, eco-friendly products. The bike lanes, hiking trails and campsites around the city also encourage people to live a more active life and there’s just no better way to experience the beautiful, green city than to walk its streets. Our first stop was the Schönbrunn Palace, the Habsburgs’ summer home. The yellow rococo architecture, with its white and gold stucco ornamentations, parquet floors and magnificent ceiling frescoes in the Grand Gallery, truly reflect the opulence of court life. We were charmed with an exclusive tour of the rooms once occupied by Emperor Franz Josef, his wife Empress Sisi and the “great-grandmother of Europe” - Empress Maria Theresa. Furniture, paintings and exquisite décor dating back to the 18th century were also on display. Behind the palace are the magnificent baroque-style gardens in a symphony of colours; there’s the beautifully asymmetrical Great Parterre that leads to the Neptune Fountain, then atop the hill is the world’s largest and most popular gloriette that provides a picturesque scene of the hedge maze, Botanic Garden and Schönbrunn Zoo. The scene was so inviting that it made me want to join joggers circling the grounds.

T

he famous Prater Park also provides a world of entertainment for both thrill-seekers and casual tourists. The amusement park features 250 attractions like roller coasters, go-karts and the Prater Tower, the world’s highest chairoplane. But, based on the long queue, the Riesenrad (Ferris wheel) is still the most popular among visitors; there’s just something so peaceful and nostalgic about the slow ascent, plus the panoramic view of the city, the Danube and even the Alps will just take your breath away. The Hauptallee, the long boulevard framed with chestnut trees, leads to another area of the park called Green Prater. This expansive nature leisure zone is made up of woodlands with horse-riding trails, sprawling lawns perfect for a picnic and paths you can jog or bike around. An interesting way to cool off is by heading to Danube Island, a manmade island that separates the New Danube from the main Danube for a relaxing swim or boat ride. We opted for a paddleboat and cruised through the calm water to admire the idyllic sunset. We also visited the Danube Tower, the tallest freestanding structure in Austria, and soaked up the landscape.

The Palmenhaus

Guten Appetit! You won’t go hungry in Vienna, that’s for sure. The city is so famous for its cakes and coffees that UNESCO recognised the Viennese coffee house culture as an “intangible cultural heritage.” So don’t forget to order a cup of java – traditionally served with a free glass of water – and sample the pastries, especially the original Sachertorte, the famously delicious Viennese chocolate cake. It’s also worth noting that even water from the tap and public drinking fountains are fresh, mountain spring water. On our first night, we drove to the outskirts of the city to dine at Mayer am Pfarrplatz, former home of Ludwig van Beethoven, and now a well-known Heuriger (wine tavern). We sat in the small open courtyard next to locals singing and playing the accordion and tucked into traditional Viennese cuisine, including schnitzel (deep-fried beef escalope), an assortment of sausages and apple strudel. We also enjoyed a relaxed dinner at Hollmann Salon, a culinary gem specialising in organic food that is tucked away in one of the oldest buildings in the old town. Then at Österreicher im MAK, we had what was described as a “traditionalexperimental” dinner from the kitchen of Helmut Österreicher.

“Vienna is a stunning place to have your fill of culture, arts, nature and best of all – good food served with a slice of Viennese charm.” The Palmenhaus is worth a visit too. The former imperial greenhouse, which faces the beautiful Hofburg manicured garden has been converted to a Jugendstil (art nouveau) restaurant, decorated with palm trees, and now serves modern Austrian dishes. But if you’re in the lookout for unobstructed views of green meadows and the Vienna woods (think The Sound of Music here), drive to the hilltop restaurant Oktogon Am Himmel (meaning “in heaven”). We recommend pairing a grape spritzer with your main course and after a delectable meal, check out the symbolic Life Tree Circle. You will find 40 trees of over 20 different species, which correspond to different calendar dates and personal characteristics (my tree happens to be the willow). Having seen and experienced what the city has to offer, we all agree on one thing. Vienna is a stunning place to have your fill of culture, arts, nature and best of all – good food served with a slice of Viennese charm.

Rediscovering Shenzhen A recent trip to Shenzhen brought me to a realisation that the city promises so much more than just retail therapy. On your next visit, look further than the tempting boutiques and shops for an unexpected treat of relaxation and romance. WORDS BY ELLA MOSELEY

A

sk any expat in Asia for the lowdown on Shenzhen and you will probably be met with two words – handbags and shopping.

Located 43 km from central Hong Kong, Shenzhen is a hopon/hop-off hotspot for Hong Kongers, tourists and expats alike. And well, they are all here for exactly that – handbags and shopping. Leaving behind the overcrowded confines of China border control at Luohu Station, we finally emerge in to the Southern China daylight, which is all too quickly overshadowed by the towering concrete structure facing us. Amidst a sea of locals, my English-rose skin and blonde hair soon become a magnet for local touts ushering us towards the solid fortress ahead. This is Luohu Commercial Centre – the famed shopping mall that visitors seldom escape. But the purpose of my trip is to resist the relentless temptation and explore further afield in search of Shenzhen’s rumoured secret splendour and all necessary ingredients for a romantic interlude. And so, off I set; retail therapy to the back of my head, physical therapy to the fore and with requisite boyfriend in tow, to sample what Shenzhen can offer us à deux.

The Secrets of Fution The recently revived Fution district is quite obviously a bastion of wealth, boasting a strapping skyline that is now home to a host of new five-star hotels, all equipped with top international kitchens. A vibrant hangout for the resident ‘gweilo,’ the canton clearly combines the very best of luxury lifestyle with local traditions, making it the ideal playground for a romantic getaway. Through the sparkling panorama of 30-plus floors of sheer glass and steel frames, reminiscent of the western sights of New York or London, a taste of true China lies below; an assortment of local vendors, impressive automobiles and high speeding taxis zigzagging around each other. It’s a delight to be welcomed by the comforts of the sumptuous surroundings of the Fution Shangri-la. On entering the 40-storey building, the stereotypical Shangri-la look, spanning over 40 years of luxury hospitality, is immediately obvious – the lobby’s marble and glass features glisten, bathed in natural light and the towering ceilings above overpower you with a sense of grandeur. But for a property of such scale, the finite attention to detail at this particular residence is one of note. The breakfast experience also presents an appetising a la carte menu that is complemented by the range of fresh produce, both western and traditional on display. A rainbow of colourful, homemade detoxifying juices and handfilled glass jars of natural yoghurts with various toppings are just the beginning to a smugly healthy breakfast for two.

The Grand Hyatt’s fine-dining Belle-Vue and La Terezza restaurants also come highly recommended. For a more authentic dining experience, Shang Garden offers Huaiyang and Cantonese cuisine in a contemporary bistro setting complete with red hanging lanterns. Combined with the chef’s innovative tasting menu, the restaurant provides a warm ambience for a starry-eyed date. Before embarking on the bright, neon lights of Bar Street for a few nightcaps, head up the 38 floors to The Penthouse Bar in The Grand Hyatt. Whilst the buzz of the business district of Fution may be too corporate for some, Nanshan offers a relaxed and more authentic approach to Shenzhen’s tourism. Located in the heart of the district, Shenzhen’s ultimate tourist hotspot, ‘Window of the World’ is a popular draw for couples seeking the world’s most romantic landmarks (think Eiffel Tower and Leaning Tower of Pisa) in a single location, and the quaint, picturesque OCT Harbour and Mall on the water’s front propose some of Shenzhen’s most popular shopping and eating spots. Nanshan may be quieter, but there is certainly no compromise on luxury. The Kempinski Hotel overlooks Shenzhen Bay and is set in the heart of the city’s new commercial development zone – testament to the money being poured into the area. The same can be said for the six-year-old hotel, which paid over USD 642,000 just on their telephone number. The easydial figure consists of eight eights – the ultimate lucky Chinese numerical combination. This extravagance extends to their 28 Executive Salon Rooms at 66 sqm each. The beds are immense, the pillows perfectly plump and the personalised butler service is on hand for every beck and call. No dollar, or even RMB, is spared when it comes to the amenities either, including pillow and aroma menus, massage oils and even an electric nail dryer – perhaps a little over the top for a hotel with its own spa downstairs, but no stone goes unturned.

Relaxing Retreats The necessity to make visitors feel tranquil and pampered lies in the vast spa market for which Shenzhen is famous. The province offers a range of cheap, warehouse-style constructions accommodating hundreds of spa addicts, hungry for their next fix. But just a few establishments offer the finer luxury synonymous with five-star hospitality. In my view, there are three abodes, which merit a couple’s consideration. Unsurprisingly, the Kempinski and Shangri-la spas are among them, but a hidden gem can be found in the Heavenly Spa at The Westin Hotel, also in Nanshan. The Kempinski Spa is reflective of the in-room amenities with a multitude of lotions and potions. The intimate spa doesn’t boast a huge menu, but the massage treatments are good and can cater for couples. Alternatively, The Westin’s Heavenly Spa has an extensive treatment list ranging from the classic massages and facials to the more ‘niche’ hydrotherapies. All are performed in the state-of-the-art, 750 sqm holistic centre, complete with Vichy centre, whirlpool, herbal steam cave and juice bar. Finally, boasting a 900 sqm space inclusive of double treatment rooms designed as a spa-within-a-spa, the Shangrila retreat is an obvious choice for couples. The signature Deluxe Aromatherapy massage combines Swedish techniques with aromatherapy, and is an excellent choice for men and women alike – one hour is just too short, so be sure to stay as long as you like!

Retail Revelry Once you’ve immersed yourself in retreating and relaxing, there is only one thing left to do in Shenzhen; retail. Whilst I promised myself I would resist the lure of Luohu Commercial Centre, I find myself back in a zigzagging taxi en route to sample the endless shops. This is, after all, where all the locals themselves seek out Shenzhen’s best shopping. In one single structure, there is everything you could need, and don’t need – the very best of tailors, willing to stitch the most intricate wedding dresses to lounge suits to honeymoon kaftans, a parlour of pearls waiting to be strung into necklaces, and leather goods pouring out of shops, boxes and ceilings – it’s just far too tempting to resist. Well, at least I tried. Over the years, Shenzhen may have been famous for just handbags and shopping – but nowadays, it delivers so much more, even a surprisingly good dose of romance!

Singapore: Asia’s Rising Star of Culinary Treats The city of Singapore is a treasure trove of many pursuits. Many come here to have their fill of sights, shopping and entertainment. As for me, I come to the city to satisfy both my hunger and curiosity for gastronomic delights in Asia’s culinary capital. WORDS BY AILENE MANZANO-LITONJUA

ho says nobody can create the perfect city? The moment this nation with the highest per capita GDP in Southeast Asia sets its consciousness to a goal, failure is very unlikely. Mind you, this city-state occupies a land mass of only 707 sq km, yet it trumps most of Asia as its per capita income equals that of the Big 4 of West European countries. All the while, the world looks on with bated breath, awed with the country’s headstrong will and seamless execution. How the government religiously maintains the robust trees around the city despite the humid climate is telling of the nation’s determination to nurture its land. A lot of Asian parents have been coming to the Garden City not only to enroll their children in top schools that have established partnerships with renowned educational institutions like MIT, Yale, INSEAD and NYU, but also to seek first-class medical attention in top hospitals. In the arena of food and gastronomy, it seems that the citystate is also at the forefront offering a provenance of richness and variety. When Sir Stamford Raffles banned slavery in the early 1800s, people from Kerala to Canton flocked to Singapore. Chinese, Indian and Malay food have since been part of the palate of its ethnically diversified people. This is evident in the food found at the hawkers’ stalls selling bak kut teh (pork rib soup), fluffy naan breads and satay skewers. In fact, statistics show that the average Singaporean would rather go out to eat than have a meal at home. They love their hawker fare. They also troop to mom-and-pop restaurants for signature dishes such as clay pot rice, Peranakan joints for laksa-infused dishes, and Mandarin Oriental Hotel for the famous chicken rice.

To further develop the culinary scene in the country, the International Enterprise Singapore, together with its tourism board, put up the Singapore International Culinary Exchange (SPICE), which kicked off last March 2011. The goal was to host international events that will bring a taste of Singapore to nine international cities and to have a global exchange of culinary ideas between local and foreign chefs and restaurateurs. This undertaking seems like a success judging from the quality of restaurants dotting the city nowadays. A burgeoning number of international chefs have come to Singapore to join the merry fray, putting their money where their mouth is. Andre Chiang, a Taiwanese-born French Nouvelle cuisine chef decided to make the city-state his home. After training under the tutelage of Pierre Gagnaire and Joël Robuchon and helping Jaan at Swisshotel Singapore gain recognition, he finally put up a restaurant showcasing his Octa philosophy. Andre’s signature is excellent dishes made of fresh produce, which are labelled in his menu with descriptive words like ’pure’, ‘terroir’ and ’artisan’ to name a few. The derring-do paid off as he garnered praise and his restaurant is now touted to be one of the best in Singapore. Mario Batali, Daniel Boulud, Tetsuya Wakuda, Guy Savoy and Wolfgang Puck are some of the industry titans who have also come to the country. In the list of The World’s 100 Best Restaurants, four Singapore restaurants are found – Iggy’s at number 26, Jaan at 39, Les Amis at 78 and Gunther’s at 84. During my last visit, I was able to dine in two of these revered restaurants. Let me narrate my experiences as I soak in Singapore’s modern dining scene.

The Brave World of Iggy’s When Iggy’s decided to relocate at the third floor of the Hilton Hotel along Orchard, it made sure to infuse its signature style in the ambience – all USD 1.6 million of it. The place reeks of world-class, modern elegance and quiet sophistication reflecting the Singapore of today. The dim-lit foyer that greeted me is decked with colourful glass icons of butterflies, cats, apples and even the Merlion, which was a proud reminder of my whereabouts. The cosy waiting room is in eyepopping, primary colours just like in the movie ’Pulp Fiction’, what with a befitting modern painting to boot. Beside it is an impressive Japanese-looking bar cum dining area presenting itself as the perfect place to chill. The corridor to the main dining hall, quite long and narrow, gives an air of mystery through the subdued lighting of a modern, archetypal, multilevel chandelier with a massive, stone sculpture behind it. The dining area is laid out perfectly, giving a view of the kitchen through an opaque-now-clear-later glass door (achieved through a motion-sensitive on-off lighting) allowing a peek at the heroes and heroines of the place; an ensemble of 16 chefs masterfully whipping up my food. Dramatically, the light to the kitchen stage turns on a few seconds before the staff brings out the dishes to the diners. The feast starts with an appetiser of oyster duo; one is poached with oyster ponzu jelly and the other, cooked omelette-style with sago pearls. It was interesting in an Asian-eclectic way. The sushi that came next was hirame with ginger flower, one with ponzu-merengue crunchies that’s interesting to the bite. Paired with sake, I am reminded that Iggy’s was originally a bar restaurant.

What came next was a dish reminiscent of Mugaritz called edible stones. Andoni Luis Aduriz was a guest Chef at Iggy’s, I later found out! It looked like how it was named – stones that you can apparently eat. However, it is actually potato covered with coulis made to perfection with Époisses cheese. An outstanding duo of foie gras came next, for what rightminded restaurant will not serve this. One is pan-fried with fig on a toast and the other is done creatively chawanmushistyle with onion, salt and champignon. The taste of the latter registers highly in my memory banks what with the strongly contrasting flavours. Duck rillette with pasta, cucumber water and orange rind came thereafter. The smoked butter with Parmesan cheese was a delight. Nasi lemak, a truly classic Singaporean dish followed. The white foam is made of fish mousse and underneath is a treasure of coconut rice, white bean and pandan. The kinmedai fish was served with spring vegetables, ginkgo nuts and sodachi followed shortly by Wagyu beef with mustard leaves. Then, the star came; winter black truffle served with ladies’ spinach, providing a silky finish to the cheese, as the mushroom beside it enriched the texture. Such contrast and richness in taste make this the most outstanding dish. During dessert, the sweetness of the white chocolate Logan shot lingered in my mouth. Much to the delight of my palate, peach, plated beautifully, followed. Then, the Grand Cru Araguani chocolate served with caramelised banana and wood sorrel came. It was a befitting last dish to conclude the incredible, modern dining experience that Iggy’s offers. Dining in Iggy’s is all about food re-interpreted with a luxe and modern flair. Ignatius Chan, the owner, is not a chef, which is quite a surprise in the exacting world of starred chef-owned restaurants, but he has earned many years of experience having been a hotelier and sommelier. Before Iggy’s, he had already secured a good spot in the industry with Les Amis, a restaurant with chefs of Vietnamese, Swedish and Indian descents. Le Amis also made it to the list of the world’s top 100 restaurants a year after it opened. Sure enough, Iggy’s added another feather to Ignatius’ cap and has since made its own mark in the world of gastronomy.

rench lamb with potato gratin cooked in its jus and creatively served with asparagus, done tempura-style soon followed. The jus seasoning was superb as it had strength but was balanced, giving the dish its aroma. Havana rum raisin ice cream and apple tart with fine crushed almonds made for dessert. The apple tart was delicious. Petit fours of canelo, dark chocolate and thin crispies were also presented for our picking.

A Fresh Idea Called Gunther’s Gunther, a Bruges culinary graduate from halfway across the world, decided to put up his own restaurant after some time of running one in Singapore. His five years of experience under world famous Alain Passard of Paris paid off. In 2009, two years after opening, his eponymous restaurant won New Restaurant of the Year at the World Gourmet Summit Awards of Excellence. Gunther was also voted as San Pellegrino’s Chef of the Year consecutively in 2009 and 2010. Being an advocate of natural cuisine, it was no surprise that my lunch experience featured fresh delights of the purest ingredients. We were seated comfortably when we were handed our menus. True to the Chef’s philosophy, ‘The Day’s Picks’ were then offered. It included lobster from Brittany, Wagyu beef, artichoke, bamboo shells, corn, melon and the gold of the gastronomic world – black truffles. We chose the baby rack of lamb on top of the set lunch.

As the meal ended, we soaked in the nice, quiet and subtly sophisticated ambience of Gunther’s. The wooden accents give the place a homey feel. The ambient effect of the modern pin lights is perfect amidst the grey and blue walls. While enjoying the relaxing vibes of the restaurant, a charming man with a beguiling smile appeared. It was Gunther, who, with passion in his eyes, was kind enough to oblige for a photograph. It’s a morning well spent, indeed. Iggy’s and Gunther’s are just two of the many wonderful dining places in the city. I would definitely like to try the other gourmet places in Singapore on my return. Whether it’s the no-name clay pot pork house in Chinatown, the laksa place in Kalantan Lane, the chicken rice joint in Tiong Bahru, or the starred restaurants like Jaan, Waku Ghin, Cocotte and CUT, I will make my way back excitedly. The journey of a threehour plane ride from Manila to taste good food in Singapore is worth it, as the adventure of the palate knows no bounds and brings immeasurable pleasure. I am sure you agree.

Through my first dish, I was able to finally taste the famous cold angel hair pasta with Oscietra caviar in truffle oil. It did not disappoint with its umami flavour, which is dubbed as the fifth taste following sweet, sour, salty and bitter. The kumbu or dry seaweed gave the pasta its savoury character. Indeed, it’s a perfect signature dish and one that is worth revisiting. The poached egg, carpaccio of celeriac and Spanish ham went harmoniously with chives and truffle. The bamboo shell with grilled mushroom from France was sweet in its freshness. Then, there’s the seafood; sublimely fresh and delectable, it was a clear favourite of mine. The carabinero gambas, toasted to perfection and served with tomato risotto was a good calorie shot, as I simply cannot leave the shrimp head unattended. The tomato rice complemented the dish so well. Red on red was the theme for this dish – a memorable combination for me as I never had prawns seasoned that way that went so well with the tomato.

Time for Taiwan Considering its size, it’s hard to believe what marvellous attractions Taiwan packs in and around the sweet potato-shaped island. From unspoilt, mountain ranges to highly urbanised cities, there’s an array of different activities for tourists of all persuasions. The secret lies in its diverse topography making it enjoyable for city dwellers, beachcombers and everything in between. It’s the perfect solution when you’re torn between mountain hiking and luxury shopping. WORDS BY SJ ROXAS

Metro Haunts Start your sojourn in the island’s most progressive city, Taipei. Amid towering buildings, make your way to the National Palace Museum for one of the most spectacular collections of Chinese artefacts. Paintings, calligraphy, ceramics, bronze and other pieces from as far back as the 10th century are on display to brief you about China’s glorious history. Your next stop is the Longshan Temple, which holds more stories from the past having survived World War II and a number of earthquakes. Built in 1738, this place of worship has undergone several necessary renovations but still exudes a pleasant energy that draws you in. From a short trip to bygone eras, go back to the present by circling the Xinyi district. Among the most notable structures in this cosmopolitan area is Taipei 101, once the tallest building in the world. Aside from having the headquarters of numerous international corporations, the skyscraper also houses many establishments for shopping, dining and entertaining. Ding Xian 101 is a restaurant you must visit besides the famous Din Tai Fung. Perched on the 86th floor, enjoy authentic, Taiwanese, gourmet fare in lavish baroque interiors while looking out to a breathtaking cityscape. Xinyi is also known for boutiques that are festooned with the most coveted designer wear. The Taipei 101 Mall alone is home to Louis Vuitton, Prada and other luxury labels. Bellavita also houses signature stores such as Gucci and Bvlgari plus L’Atelier de Joël Robuchon, a restaurant by world-renowned Michelin starred chef that blends with its posh surroundings perfectly.

The Shilin Night Market is where you continue shopping well into the wee hours of the night in covered and air-conditioned sections. Lakeside Escape Taiwan is a force to be reckoned with when it comes to technology, but it seems to be also doing a good job in preserving its scenic natural attractions. The Sun Moon Lake is one spot that has maintained its enchanting beauty despite having yachts and smaller boats sail through its waters on a regular basis. Locals and tourists gather around the area especially during the Mid-Autumn Festival, but the lake is left untarnished. The best time to visit is early in the morning, before the arrival of a throng of tourists from other cities. It’s better if you can make it at dawn to wait for the sun to rise behind the mountains at the opposite side of the misty lake. It’s like watching a painting come to life. Sightseeing here is a treat what with the majestic views and serene atmosphere, but you can also bike or hike around the peninsula and stop by temples and pavilions. For even more awe-inspiring views, take a cable car and look out to the expanse of the lake on your way to the Aboriginal Village.

Dom Ruinart Rose 1998

The maison’s unique take on excellent Chardonnay grapes, a bottle of the 1998 Rose promises an enchanting experience to its drinkers. It is an exquisite blend of 85 per cent Grand Cru Chardonnay and 15 per cent Pinot Noir. The champagne is elegantly coloured, with a bright rose and coral shade and golden pink reflections. It releases an elegant bouquet of floral aromas, red plums, red currants and forest fruits once uncorked. Later on, it opens up to hints of cream, fruit jam, white chocolate, grapefruit and a distinctive pinch of honey. The initial taste is soft and delicate on the palette, and caps off pleasantly with an intense and structured finish. Refreshing flavours of pink grapefruit and sweet rhubarb linger long after your last swig, which pairs well with dishes like king prawns, veal cutlets and caramelised sweatbreads.

Dom Perignon Vintage 2003

Despite the severe frosts of a dry winter followed by a scorching summer, the maison miraculously produced a harvest of mature and healthy grapes with a characteristic intensity, which is now labelled the Dom Perignon Vintage 2003. The prized vintage boasts a soft, floral bouquet, which later on emits hints of candied fruit and grass. It develops to an intense honey aroma, liquorice root and spices with hints of vanilla. On the palette, it has the signature textural finesse with a vibrant citrus taste and mineral flavour. The full-bodied champagne is rich with powerful structures and ends nicely with a fresh and elegant finish. Dom Perignon’s latest pride, the 2003 vintage is a perfect accompaniment to caviar and foie gras.

Calibre de Cartier Chronograph Watch 1904-CH MC Movement Boldness through strong aesthetics defines the Calibre de Cartier watch in rose gold with an 18-carat pink gold case and a faceted sapphire adornment. The assertive design has its centre on these design codes: the three o’clock and nine o’clock counters, a graduated rail-track in the fluted bezel, and an oversized XII numeral above the counters. Two chronograph push-pieces on the crown reinforcement accentuate this design. Underneath is beauty still: through its transparent sapphire-crystal case back, traditional Côtes de Genève decorative patterning adorns the upper bridges and oscillating weight. Ingenious systems guide the chronograph functions: the column wheel precisely coordinates the start, stop, and return-to-zero functions (visible at the back) and a vertical coupling system that eliminates the traditional jumps of the seconds hand and minimises energy consumption. Audemars Piguet Grande Complication Royal Oak Offshore Titane For a sophisticated outdoor look, the Royal Oak Offshore Grande Complication offers a contemporary 44mm titanium and ceramic watch with a rubber strap featuring bold lines. Born in 1993 as a design by Gérald Genta, the 20th year redesign features Grande Complication movement: beyond offering a standard time display, the watch also allows timekeeping operations and reading off intermediate or “split” times to be performed. Also housed within the charming case: a minute repeater mechanism and a perpetual display of calendar indications, including lunar cycles. This modern interpretation of a classic watch set forward by Audemars Piguet features exemplary finishes: sandblasting is used to highlight the traditional beveling and hand-drawn flanks, as partially seen through the transparent sapphire dial and a fitted exhibition back, the latter of which shows the solid gold oscillating weight with a black coating for accentuating the watch’s contemporary feel. The Royal Oak Offshore Grande Complication is a three-piece limited edition, horological work of art made individually by a single artisan who will devote above 700 hours of craftsmanship to every watch.
