It’s a strange time of year, isn’t it? Looking forward to Spring and the new season’s styles while still heading off to work on dark mornings in temperatures that are 20oC less than we’d like. There’s still plenty to do and see in the city and beyond, though. Now’s the time to get out at the weekend and explore the great outdoors, whether it’s a mountain hike, beach stroll, visit to an outdoor play centre or a simple forest walk. Naturally, we’ve been out and about having a go at new things and visiting new places too. Stephen caught up with one of the city's leading bands and Courtney sets her sights on shooting. We’ve found some great new shops and wandered the streets of Schoolhill to see what’s happening on the retail scene. All we need now is a bit of sun, the daffodils and crocuses to come out along the verges and we’re set for spring. We’re just not willing to stop wearing our furry boots quite yet...

One of the commonest causes of injury when you’re just starting to get fit is wearing the wrong footwear. Rob Currie, Head of Strength & Conditioning and assistant rugby coach at Aberdeen Grammar FP advises on the correct footwear to complete your New Years resolutions.
Your trainers may be the wrong size, or just the wrong type for your training. Expert advice and fitting can save a lot of pain and expense later. Do some research online, then try on a few pairs that fit your budget to make sure they are comfortable. Look for a shoe that supports your foot correctly and copes with Scottish weather. If you’re doing a 10K or a marathon, then go to a specialist running
shop for advice. They’ll determine how your feet hit the ground and can then recommend the most suitable shoes. For the gym, make sure your trainers have good cushioning at the heel and ankle and replace them when they become 'flat' with a worn out insole or the outer sole is worn away.

Having suffered from neck and shoulder stiffness for almost 30 years, I jumped at the chance to take a swimming lesson with Sue McGovern at the Ardoe House Hotel and Spa. Sue is one of just 150 instructors worldwide qualified to teach using the Shaw Method, which is derived from the Alexander Technique. Sue explained that the Shaw Method was developed by Steven Shaw, a former competitive swimmer and an Alexander teacher and is designed to allow anyone - even non-swimmers - to feel comfortable and relaxed in the water without any unnecessary muscle tension. It’s ideal for anyone recovering from injury or with residual weaknesses, or experienced swimmers who want to add more power and control to their technique. Sue started my lesson with a dry land introduction to the four basic principles of the Shaw Method followed by a hands on approach in the water during which Sue was constantly monitoring my stroke and breathing and providing gentle encouragement. My technique was videoed, then Sue explained how my technique could be improved using this method and by working with the water instead of against it. The Shaw Method encourages you to be aware at all times of your body in the water and to use your body to lengthen the spine and move through the water with minimum effort and stress. After just half an hour in the water, I felt much more relaxed and comfortable and even managed at one point to lie flat on my back without any neck or shoulder strain. Success. Sue offers both private one to one tuition and group sessions with four to six swimmers in each class. This year I promised myself to make time for all the loved ones and important people in my life, so far I'm keeping to it and I intend to stick to it.

As Naomi says, ‘Botox has been used for more than 20 years by GPs for neurological and skin complaints - it is an extremely safe aesthetic treatment and has numerous applications’. Urban Bar & Grill, Kingswells It can be unnerving reviewing a new restaurant in its formative weeks. It takes time to shake down and run smoothly front of house and for the kitchen team to operate as a well-oiled machine. I’m glad to report that, based on my visit, the Urban Bar & Grill at the Village Urban Resort in Kingswells has made a promising start. There’s no beetroot foam or liquid nitrogen on the Urban’s Public House bar menu, just contemporary no-fuss family favourites. Our teenage son chose the Nachos to start. This was a generous portion, big enough to share - though not in his opinion topped with cheese, sour cream and salsa. My husband was impressed by the Calamari, which arrived with a suitably unctuous garlicky aioli and the Chicken Tenders were succulent and well paired with a BBQ dip. For our main courses, I opted for silky mash-topped Fish Pie served with the veg of the day. This was more literally interpreted than I’d have liked, being accompanied by some freshly steamed broccoli. I was a wee bit envious of the Fish and Chips - a skin-on fish fillet encased in a light, crispy beer batter, accompanied by mushy peas, tartar sauce and fries. Our son reported that the Cheese and Bacon Burger with salad and fries was 'all right' - equivalent to an 8 out of 10 ranking on the teenage gourmet scale.

When it comes to fresh flavours and appealing platefuls, the Malmaison’s John Burns delivers every time. We discovered some of his secrets and his recipe for a succulent Surf & Turf platter
HOW WOULD YOU DESCRIBE YOUR COOKING STYLE? I’m keen on simple things done really well, my cooking is classic Anglo-French - or maybe FrancoScottish, with an emphasis on the best natural ingredients.

WHAT HAS INFLUENCED YOUR DEVELOPMENT AS A CHEF? I know a lot of people are influenced by travel and other chefs, but I’m driven by a desire to do well. I’m pretty ambitious and concentrate on getting every detail perfect, so that has been my main driver.
WHAT ARE YOUR OWN FAVOURITE FOODS? AND ANYTHING YOU WON’T EAT? I love French food, with my absolute favourite being a fine Apple Tarte Normande, with a frangipane base and melting caramelised apple slices. Mmm! I also love Japanese cuisine and would happily eat dashi udon noodle soup and nigiri sushi most days. The one thing I cannot stand is plain boiled carrots.
IF YOU DIDN’T WORK WITH FOOD, WHAT WOULD YOU BE DOING? Strangely, my original career choice was to be a policeman. Maybe I was just keen on having a uniform to wear to work! I wouldn’t swap my chef’s whites for a truncheon these days.
INGREDIENTS: 1 whole fresh 650g lobster 2 x 225g fillet steaks Watercress Lemon
You can buy a lobster ready prepared from your fishmonger, though we prepare our own at the restaurant. If you buy a live lobster, the most humane way to kill it is to put it in the freezer for 15 minutes then immediately drop it in a large pan of boiling salty water for 8-12 minutes. Then blanch it in ice cold water.
BÉARNAISE SAUCE: 3 egg yolks 100g butter
Whichever option you choose, once it’s ready, you split the lobster in half, clean out the cavity and crack the claws and knuckles to remove the meat. If you’ve not done it before, have a look online to
20ml white wine vinegar Chopped tarragon (fresh or from a jar) Cherry vine tomatoes
find the best way of doing this. Take the steaks out of the fridge and leave to come to room temperature. Season with sea salt and cracked black pepper,
rapeseed oil then chargrill to your liking. Cooking for 8 minutes will give you a medium-rare steak, with a resting time of 4 minutes. Make a Béarnaise sauce by clarifying the butter, heating it until the fat separates from the milk. Whisk the egg yolks and vinegar over a bain marie until it starts to form ribbons, then remove from heat, and slowly pour in the clarified butter until it becomes thick and creamy add the chopped tarragon. Spread the sauce mixture over the lobster and grill or oven roast until golden. Finish with a squeeze of lemon and plate up with the tomatoes as shown. Relax and enjoy!

When Mike and Carol Smith decided to extend their Aberdeenshire home, they needed a company they could rely on to provide every service required to turn their dream into reality.

Assuming the weather conditions are right and having ensured your borders are well prepared, set all of the plants out before planting. It is worth putting as much consideration into the space they will need to grow when setting them out as you did on your plan. Water plants well and then sit back and look forward to the fruits of your...planning!

As we’ve been discovering, there’s a lot more to Aberdeen’s retail landscape than giant shopping centres and chain stores. Some of the most interesting shops are the small, independent retailers, who combine a passion for quality products with an unshakable customer service. This month, we’ve been braving the cold to explore Upperkirkgate, Schoolhill, Back Wynd, Belmont Street and Rosemount Viaduct for retail treasures. These are some of the oldest streets in the city and there are echoes of history all along the route; just take one step beyond… Start at Marischal College, a magnificently gothic granite confection that always seems rather wasted on the council and head down Upperkirkgate. Here you’ll find Starbucks, Zone Spa, and Games Workshop, home to role-playing, paintbrushwielding lovers of Warhammer.

Not quite as venerable, Andrew Begg have been in business since 1866, starting out as cobblers in New Pitsligo. Five generations later, the family-run business is still loved for its excellent staff and good selection of comfortable, but stylish footwear and a great range of dance shoes. Further down, Pattersons Shoes has a more trend-led selection, with brands like Fly London and Gabor, as well as handbags and jewellery, so it’s a great option if you’re looking to accessorise an outfit.

No less magical, is Flower Vogue, one of the city’s best-established florists and Wordies Ale House, which does a robust pub lunch and majors in real ale. Nearby, Haig’s is a good option for lunch on the go or deli treats, while O’Caykx offers perfect patisserie. Take a left onto Back Wynd for Alex Scott, a traditional kilt maker, then a trio of foodie shops. Nick Nairn’s Cook School, offers quick two hour classes, as well as day-sessions and a shop filled with culinary gadgets, utensils and ingredients, while Aberdeen Aga is beloved of country cooks. MacBeans specialise in tea and coffee, grinding beans to order. Winter sports fans will appreciate White Stuff, while bibliophiles may turn up an interesting volume or two in Oxfam’s book shop. If you’re in need of sustenance, Ninety Nine Bar and Kitchen combines a relaxed atmosphere with some excellent and interesting cooking, while O’Neill’s Irish Pub is good for traditional bar meals.

If you’re just after a coffee or a sandwich, Books and Beans and Blue Mountain both have a laid back lunchtime vibe. Or head into the Academy Shopping Centre which houses Rye& Soda, Nando’s and Wagamama depending on whether you fancy something Anglo-American, Piri-Piri or Oriental. Cocoa Ooze offers delicious hand made chocolates and yummy hands on workshops. On the last Saturday of each month, Belmont Street is filled with stalls for the Farmer’s Market.

Back on Schoolhill, Aveda at James Dun’s House - one of the oldest houses in the city - offer great hair and beauty services, while the Art Gallery offers a respite from shopping and a bit of culture - at least until you hit the gift shop or the café. Head up to Rosemount Viaduct, passing HMT and the Central Library, which has fabulously helpful staff and a great local history section and pop into Plan 9, worth a visit for its comprehensive collection of comics and graphic novels and tons of cute merchandise. What newborn doesn’t need a Superman Babygro? Further along, you’ll find upmarket clothier Kafka, the rose embellished frontage of Rosemount Tattoo and a sprinkling of charity shops. Taking a left onto Skene Street, you’ll find Nargile, purveyors of delicious Turkish and Middle Eastern dishes and Odyssey Hair, where Lee has a great reputation for colour and cuts. Back on Rosemount Viaduct, Gordon Bell’s delightful piano shop will make you wish you’d stuck to practicing. Next up in a trio of beauty and hair salons, then the Rusty Nail, a decent neighbourhood pub and the Masada Bar, where the unpretentious frontage hasn’t changed in decades. Along a little more, you’ll find The Sailors’ Society charity shop and Teasel & Tweed, which has brilliant hand-made furniture, art and gifts all made in Scotland, as well as wonderful waffles and teas. On the opposite side of the road, head for The Breadmaker, a brilliant little bakery and café. This social enterprise does a great sourdough, a moreish cheesy bread and some lovely traybakes and cakes, while providing training and jobs for people with learning disabilities. In this stretch, you’ll also find Avril Oenone, a St. Martin’s trained fashion and textiles graduate who moved into millinery. Avril’s designs have been to more stylish weddings than Liz Taylor and Zsa Zsa Gabor combined. Next door is Bride’s Delight and two more hair and beauty salons - Eden Beauty and the Embassy of Beauty. Moving past Skene House Serviced Apartments, a computer repair shop and Bestpets, you’ll come to Leadside Road, home of the misleadingly named Georgian Dress Hire. There’s not a Georgian frock coat in sight but they do have a great selection of masculine formal dress and highland wear for sale or hire. Nearing the top of the hill, there are more hairdressers and you’ll also find Fabrimake, which is a little shop selling fabric, gifts and reupholstered furniture that makes the uphill trek worthwhile. They also run reasonably priced workshops so you can finally work out what to do with that sewing machine that’s been living in the loft!

From teenage tennis prodigy to coastal engineer, Kate Steenhauer’s diverse career path has taken a new turn, working as a fine artist producing award winning pieces based on Scotland’s industrial landscape. ‘I was always passionate about art, but I didn’t really have the time to develop it. As a teenager

I’m particularly fortunate in having the support of Energy Consultancy Tymor Marine, who have provided a studio space for me to work from. ‘I draw from direct observation. I then use oil paint and intaglio printmaking techniques to create final pieces

'Having released three EPs we thought, let’s concentrate on a full album - it was a natural progression,' said Donald. 'I think we have got something that is quite different in terms of sound. People often come up to us and say they don’t know how to pinpoint us, which I quite like.'
The unlikely trio forged their friendship back in their school days when vocalist Donald Barclay (the tutor) and drummer pal Hamish Gordon (the nurse) began jamming together. With a bit of persuasion they convinced Fraser Henderson (the engineer) to join them as a bassist.
'Our first gig together in Drummonds in 2010 was enough to win Fraser around,' laughed Donald. 'Hamish has always been a big performer and for me it’s the buzz of playing - we just gel really well.' Keeping the day jobs on the go - for now hasn’t come in the way of the band’s drive to succeed. With a collection of EPs already under their belt they released their new single Pride & Wonder in December. They are now putting the finishing touches to their first album ahead of an eight date tour of Scotland later this year.
Their music has attracted the attention of Don Broco, Big Country and The Maine who asked them to support them on tour while they were named Kerrang band of the week in April 2014. ABERDEEN’S HAUTE COUTURIER Aberdeen has a new star when it comes to couture evening wear and bridal dresses. Fresh from working behind the scenes at Marchesa, Daniel Crozier is bringing his unique style to his home city. We found out what inspires his work and his plans for the business... ‘I’ve been interested in clothes and costume for about as long as I can remember. My mother and grandmother used to make costumes for me when I was younger, then I developed an interest in period clothing and costume, and that led through to couture,’ Daniel began. ‘I studied textile design at Gray’s focusing on embroidery design, but my tutor suggested switching to a fashion degree, because I was concerned primarily with the cut and silhouette of a garment as opposed to the textile itself. ‘I’m concentrating on the evening and bridal market, reflecting my passion for outright glamour and sophistication. I love to experiment with the cut and silhouette of a garment, and typically incorporate haute couture techniques including hand draping, corseting, beadwork, and embroidery. I would describe my designs as typically romantic and opulent, with a sense of elegance and refinement. I will never produce more than one of any garment. I want each and every piece to be totally unique to my client and to be something they will be able to treasure forever. ‘I have always admired the work of Christian Dior, Versace and other couturiers. I have a great love of film, especially those with a period or fantasy slant, which is least partially responsible for my design taste and flair for the dramatic!
‘When I graduated from RGU, my goal was to work for Marchesa and I decided to do whatever it took to intern for them. I worked with the senior designer, creating garments for fashion shows, private clients, and celebrities. Though I was initially with Marchesa for six months, I returned to assist with fashion show preparations a further three times, giving me a very worthwhile insight into the most important period in any fashion brand’s year!' Daniel continued, ‘For the past year, I’ve been in the process of setting up Atelier Daniel Crozier. I have received financial support from the Prince’s Trust, business support from Business Gateway and Enterprise North East Trust, both of which were made possible with the guidance of St James’s Place Wealth Management. Through my experiences at Marchesa, I’ve developed a fairly wide network of fabric merchants throughout the world, and family connections have led to my using some very exclusive fabric, including my signature pure Thai silk. ‘I am planning on designing and making twice-yearly collections. My current collection is inspired by fairy tales, especially the Cinderella story. I have been using metallic gold and pinks to illustrate this theme, and have come across an iridescent organza with a glasslike texture, perfect for a modern runway ballgown! ‘I’d love to have a boutique in Aberdeen, enabling me to stock a selection of evening dresses, as well as giving me a base from which to oversee my couture business. I’m also hoping to have an online store after my collection launches where customers can purchase one-off show pieces. ‘My dresses vary from £1,500 for cocktail dresses up to £15,000 for bridal ball gowns. It is an accepted fact of life that women like to put their own unique stamp on things, so it should be no surprise that one very clever woman has taken a traditionally male pastime and turned it into a proper girlie affair. Mhairi Morris of JOMM Events discovered a gap in the shooting market and suddenly Scotland’s first ladies shooting club was born, aptly named Glad Rags and Cartridge Bags.
Under Richard’s gentle but informed tutelage, I eventually discovered that the secret to shooting success, apart from keeping both eyes open, is letting the world slip away until there is nothing left but the ‘bird’ and you. Once you find that place, the clay pigeons literally start to explode out of the sky, and that is a feeling that you have to experience to appreciate.
The Glad Rags girls held their first organised clay pigeon shoot in late 2014 and already there are waiting lists for upcoming events. Needless to say, I was excited when invited to partake in their second shoot at the stunning Raemoir House Hotel.
Aside from the relaxed camaraderie that often characterises ladiesonly events, I was also struck by the power of an occasion like this to bring together such a diverse group of women. Though there were some rather enviable tweed jackets on show, the real focus here is on shooting and socialising.
Upon arrival, I was greeted with a warm breakfast and an even warmer reception, and made to feel very welcome despite having never held a gun before. After being divided into groups based on ability, I and my fellow ‘Ducks’ followed our instructor Richard out to the first trap where we were given a full briefing and shown how to handle the semi-automatic Beretta shotguns, designed specifically for ladies.

DRUM CASTLE These days, the offering of an engraved gold watch might seem perfectly adequate, even extravagant in recognition of many years of loyal service to an employer. But in the 1300s, such a noted honour could result in
extension, which blend together seamlessly despite
a much more ostentatious reward, perhaps even a castle with its own ancient woodland - particularly if the employer was King Robert the Bruce.
their unique trademark architectural features. Though the interior is grand to say the least, there is still the feeling that this was very much a family residence. Despite its proximity to Aberdeen, Drum Castle is a complete departure from city life and offers much for the countryphile. There are marked walks through the Old Wood of Drum, a walled garden to explore and the impressive Garden of Historic Roses, which showcases rose gardens as they would have been in each of the last four centuries.
Drum Castle takes its place in history in exactly that way. Gifted to William de Irwyn by Robert the Bruce in 1323 for loyal service as armour bearer and aide, Drum Castle would remain home to 24 generations of the Irvine family over the next 650 years. Like other family homes, it has expanded over that time and today is a beloved attraction, in part for the insight that its distinct sections give us into the architectural evolution of Scottish castles. At its core, Drum Castle is a 13th century tower house, with walls three metres thick and a battlement on top that provides a magnificent lookout. The later additions are a Jacobean mansion house and a Victorian

In the consultancy’s bid to raise £10,000 on behalf of the Trust and to increase awareness of the incurable disease, Lymphangiomatosis, the team has organised a series of fundraising activities, see the highlights below. 1 | Local eight year old Alfie Milne was diagnosed with the incurable disease Lymphangiomatosis at only eight months old. 2 | The ThinkPR team launched the campaign with a pancake delivery run on Shrove Tuesday and a Strawberry Drop that marked Wimbledon. 3 | ThinkPR’s Halloween Bake Sale saw hungry visitors from across the City drop into the office to try a selection of delicious homemade cakes in return for generous donations. 4, 5 | The consultancy’s Trivia Night was a great success which featured some fantastic raffle and silent auction prizes. The evening raised over £5,700 for the campaign. 6 | A brave group of five from the ThinkPR team completed the 5km obstacle race, Glack Attack. 7, 8, 9 | At the end of last year ThinkPR held a glamourous, fun-filled Ladies Night at Dusk to raise further funds. Gordon Thomson is a big Aberdeen rugby man, all 6ft 7in of him - and he’s a man with a mission. BT is pumping megabucks into a Scottish Rugby Union club and academy structure designed to nurture home-grown talent from the age of 14 and produce top players for club and country. Peter Mitchell became a valued Trend columnist nearly six years ago after 37 years on the Press and Journal, latterly as a Diary writer. For Trend, he has interviewed lots of prominent people including TV’s Angela Rippon. He is also much in demand as an amusing MC and after-dinner speaker.
‘This is a plea from the heart,’ says Gordon, the chairman and honorary secretary of Aberdeen Grammar Rugby. ‘I would like the whole rugby community of the North-east to pull together to make this initiative work. ‘In a nutshell I am trying to get across the need for our clubs to develop business
enjoyment, achievement, engagement and respect from playing the game. As well as developing physically they mature in an environment that is inclusive and stimulating’. And he points to the fact that more than 1,000 young people in the Aberdeen area are learning the game and crucial life skills at clubs such as Mackie, Deeside, Garioch, Ellon, Aberdeen Wanderers and Aberdeen Grammar.
