Wild Thyme chef wins national award

Craig Palmer, Head Chef at Wilde Thyme, which is part of the Entier family, the awardwinning Aberdeen based catering, events and hospitality company, is celebrating winning ‘Scottish Chef of the Year 2023’ at the recent Scottish Culinary Championships held in Glasgow.

Craig commented, ‘It was such an incredible honour to be recognised and make it to the finals let alone winning. Over 200 hours of research, development and preparation went into creating the menu that was presented to the judges.’ The menu include roe deer from the Findrack Estate and seawater from Cove which was mixed with dry ice to form a haar when the dish was presented.

Entier’s 19-year-old chef apprentice, Ross Jamieson was awarded a silver medal and best in class for the sustainable fish dish.
