Celebrating Disability Awareness Month, the SMILE on Down Syndrome organization has paired self-advocates with local celebrities to model fashions from Dillard’s at Eastland Mall in Evansville as par t of a fundraising event March 12 at 6 p.m. Craig’s mom Julie says last year Eddie walked with Evansville Mayor Lloyd W innecke. This year, Craig will representing Princeton and walking the red carpet with Mayor Brad Schmitt. “Eddie is ver y excited — such an outgoing guy — and ready to meet people,” Julie Craig said. ith hands over hearts and ball caps removed, the national anthem is a mainstay at American sporting events. It’s a tradition that Oakland City University student Madison Brooks proudly brings to every home game. You can hear Brooks singing at home Oakland City men and women’s basketball games, enjoying a passion she says came at an early age. “I started taking lessons at four years old and could successfully sing the National Anthem at age five,” she said. Brooks says the National Anthem isn’t just another song to showcase her vocal talents. It holds special meaning — and now more than ever — people should embrace it. “It’s not really a song to show off your voice, I feel it is more about showing respect for our country,” she said. “The world can be a scary place and having a song to represent what the United States stands for, I feel, is very important. Not only should we know the words of the song, we should understand the meaning as well.” Brooks says she doesn’t throw in a lot of frills when performing the song. She simply expresses the meaning of the lyrics as they are. “It’s a strong song on its own, you don’t have to change it.” Even though she has been singing nearly all of her life, Brooks says she still gets nervous every once in a while. “I sang at Ellis Park last summer and that was very nerve-racking because there

Her first husband, my 5X great grandfather Daniel Sisk, was killed in the Battle of Kings Mountain in North Carolina, said to be the turning point of the Revolutionary War. fter the Mona Lisa, Italy’s most beloved and enduring gift to world culture might be the meatball. But talk to any two Italian cooks about which ingredients actually comprise a meatball and you’re going to get an argument. Fine. I took this contentiousness as a license to concoct a meatball recipe of my own using the best tips from Italian friends and colleagues. Let’s start with the meat in this meatball. Ideally, it should be an equal mix of beef, pork and veal, allowing each one to contribute its own unique flavor and texture. If you can’t find ground veal at your supermarket, opt for the meatloaf mix, which contains all three meats. If there’s no ground veal and no meatloaf mix, you’ll be fine with half pork and half beef. To amp up the flavor to an even higher level, I’ve prescribed several umami bombs: prosciutto, Parmigiano-Reggiano and tomato paste. And of course, minced garlic. Tradition requires meatballs to be cooked well done, which can make them dry. Accordingly, I’ve combined the meat mixture with a panade. Panade, a paste made of breadcrumbs soaked in milk, keeps the meat juicy as the meatballs cook. Of course, when you make meatballs, you want them to retain their shape. A raw egg helps to bind the ingredients, but you also want to be sure to mix them rigorously, either in a stand mixer or with your hands. Refrigerating the meatballs for 30 minutes before sauteing them also helps. The finishing touch is to simmer the meatballs in the

tomato sauce. This process allows for an exchange of flavors. Indeed, I think of it as a marriage. Both the meatballs and the sauce benefit greatly. This hearty dish is tailor-made for a blustery late-winter dinner. There won’t be much argument at the table about its deliciousness.
BETTER MEATBALLS Start to finish: 2 hours, 15 minutes (1 hour, 15 minutes active) Servings: 6 3/4 cup fresh bread crumbs 1/2 cup whole milk 1/2 pound ground beef (85
percent lean) 1/2 pound ground pork 1/2 pound ground veal
2 ounces prosciutto, inely chopped 2 ounces inely grated Parmigiano-Reggiano, plus extra for garnish 1 large egg 2 tablespoons tomato paste 2 teaspoons minced garlic 3/4 teaspoon kosher salt 1/2 teaspoon black pepper 3 tablespoons vegetable oil plus extra for cooking the little patty 1/2 cup all-purpose lour 1/2 cup red wine Marinara Sauce (recipe below) or 5 cups storebought marinara 1 pound spaghetti Chopped fresh parsley for garnish In the bowl of a stand mixer, soak the bread crumbs in the milk for 20 minutes. Add the ground beef, pork, veal, prosciutto, ParmigianoReggiano, egg, tomato paste, garlic, salt and pepper, and using a paddle attachment, beat the mixture for 1 minute or until it is very well mixed. (Note: If you don’t have a stand mixer, just mix all the ingredients well with your hands for about 3 minutes.) Pinch of a little bit of the meat mixture, form it into a patty and in a small skillet saute it until it is cooked through. Taste and add more salt and pepper, if desired. Scoop out the mixture, preferably using a 1-ounce ice cream scoop and
roll into balls. (If you don’t have an ice cream scoop, roll the meat into walnut-size balls.) Chill for 30 minutes. In a large skillet heat half the oil over medium-high heat. Toss half the meatballs in the lour, shaking of the excess and add them to the hot oil. Reduce the heat to medium and cook the meatballs, shaking the pan and turning them gently until they are browned on several sides. Transfer them to a paper towellined plate. Repeat the procedure with the remaining lour, oil and meatballs. Add the wine to the skillet and simmer it, scraping up the brown bits, until it is reduced by half. In a large saucepan combine the meatballs with the marinara and the reduced wine. Bring the liquid just up to a boil, turn it down to a simmer and simmer it gently, stirring occasionally, for 20 minutes.

Combine the cream, butter and garlic in a medium saucepan and bring to barely a simmer over medium high heat. Remove from the heat. While the mixture is heating, peel the potatoes and slice them very thinly. Combine the cheese, thyme, salt and pepper in a small bowl. Spread out half of the potatoes in the prepared baking dish. Let stand for 10 to 15 minutes before serving.

But at the new Smithsonian National Museum of African American Histor y and Culture, a modest exhibit devoted to a small farming community in southern Indiana has generated buzz. communities still going. There were a million black farmers in the USA in 1920, according to a U.S. Depar tment of Agriculture repor t, but by 1982 there were just 30,000. The political climate for black farmers improved in 2010 following President Barack Obama’s announcement that $1.25 billion would be made available to fund any unfiled claims from a class-action lawsuit settled in 1997. The lawsuit, filed on behalf of 400 black farmers, alleged that the USDA had denied them loans based on racial discrimination. In 2012, the USDA counted 44,629 black far mers, a 12 per cent increase since 2007. Even so, blacks make up just 2 percent of the countr y’s farmers compared with 14 percent a century ago. MOUNT VERNON — On a chilly but sunny Friday in late January, the last barber in Posey County closed up shop for the final time. The way Steve Burris tells the story, his decision to retire probably wasn’t unexpected to anybody, except his wife Mary Ann and maybe himself. Customers and friends had been occasionally asking him about it for years, Burris said, but he never had an answer. Until he woke up on that January morning. “My wife was already up. I walked down to the kitchen and I said, ‘I opened in January 1971. I think I’ll close it in January 2017,’ ” Burris said. “She said, ‘When are you going to do it?’ and I said, ‘About noon today.’ ” Downtown at his barber shop, Burris closed the blinds and hung a sign on the window. It said: “After 52 years in business and 46 years at 200 Main St., I am retiring effective January, 27, 2017.” That was the extent of his plans. “Now that I’m gone there are no barbers left in Posey County,” he said. “When I first came to Mount Vernon, there were seven barber shops just in Mount Vernon, and at least dozen barbers. I’m the only one of those barbers still alive.” Although Burris has been slowly removing the memorabilia and personal items that made it his shop, the chairs and equipment that make it a barber shop will remain. “I hope somebody comes in here and keeps this a barber shop,” he said. Building owners and law partners Trent Van Haaften and Adam Farrar operate their legal practice from an office next door. They would like to see the space continue as a barber shop too.

They are optimistic that downtown Mount Vernon, with its redone riverfront park, is on the upswing. Burris returned to the shop at the corner of Main and Second streets recently to talk about barbering and being a downtown business owner. “For 46 years I was in this same place. I never went anywhere else. I never did anything else,” Burris said. Burris’ barber shop was an oasis of calm while downtown Mount Vernon changed around it. Across the street a vacant lot offers a glimpse into that past. A pharmacy and a dry goods store once stood there, Burris said. Later owners divided it up and called it a “mini-mall.” When that dried up the building stood vacant until it was demolished. “Downtown has changed tremendously in the last 50 years,” he said. “It used to be that from Water Street down to Fifth Street every building was full of businesses. People lived upstairs in apartments.” Burris said he would like to see
that return to Mount Vernon, even though he won’t be observing it from the window of a barber shop. “Mount Vernon has made a turnaround. Hopefully another barber will look at it from the same window I’ve been looking at and see Mount Vernon grow again,” he said. Burris was born in Mount Vernon but grew up and attended school in Evansville. After graduating high school, Burris decided barbering was an appealing career. “It fit my personality,” he said. Graduating from the now closed Henderson Barber College in 1965, he went to work at the Lawndale Barbershop on Evansville’s East Side. Soon, however, Burris returned to his native Mount Vernon to work in local barber Clyde Straw’s shop on Fourth Street. “I worked for him for five years. He taught me a lot, but I was ready to leave when I left,” Burris said. “I was ready to get out on my own and this building had recently become available. It had been a Farmer’s Home Loan Administration building.” Burris negotiated rent with the owner and rounded up some talented friends to help him build cabinets and a knee-height wall around the barber chair area and put in the proper plumbing and electric service. In January 1971 he opened shop. “I was the only one working here. I brought two chairs with the anticipation of hiring another barber, but after awhile I quit looking for anyone else,” he said.

All from that pig.” The community’s farming future is uncertain. In a time of large-scale farming done by corporations, the farms of L yles Station remain small, most of them in the 150- to 200acre range, not enough to support a family. Most of the far mers are par t-timers, hobbyists, who rely on 40-houra-week jobs in nearby factories for their living. A half-dozen families still own 1,000-acre tracts. But in at least two cases the descendants have moved away and are renting their land to corporate interests. The future may be cloudy, but with the new museum, at least L yles Station’s past is secure.

Trio of Purdue students launches aeroponic appliance BY ANDREA HOWE

PRINCETON — Three local Pur due students have a vision of aeroponic garden appliances as mainstays in kitchens of the not-so-distant future. Scott Massey of Evansville, founder and CEO of Hydro Grow LLC, is a senior studying mechanical engineering technology at Purdue. Ivan Ball of Owensville, is a Purdue senior studying electrical and computer engineering technology. John Kissel, of Fort Branch, is a math, physics, actuarial science and business management major at Purdue. The trio is working to turn a hobby into a business that Massey said he believes can eliminate dependence from grocer y stores for most produce. They’re working to license the prototype Gropod, finalizing manufacturing operations. “Retail sale is about a year away,” Massey said Friday. “We’re finalizing our manufacturing operations before we receive that capital investment.” Southwestern Indiana communities are ripe with summer produce, but Massey said he sees the Gropod as a way for people to have heirloom tomatoes in their home in the of f-season. “They’re genetically bred to be delicious ... but there is ver y little shelf-life,” he said of the winter grocer y produce. Massey said he worked at Purdue Hor ticulture college with Ball as an engineer for the past year on a NASA funded research project to create a aeroponic system for future space colonies, and applied that experience to the Hydro Grow LLC venture to create the
aeroponic appliance. He’s working on the second generation model, which uses artificial intelligence to itemize a database of all plant species variables of fered by Hydro Grow LLC’s pods to compile, and automatically adapt to the optimal medium pH levels, nutrient levels, temperature, humidity, and light cycle for optimal plant growth for produce varieties. He said the aeroponic system uses 90 percent to
95 percent less water than traditional farming techniques. “Not only does it reduce water consumption through recirculation, it can also grow food without any fungicides, pesticides, or herbicides in a controlled environment. Aeroponically grown plants ar e completely organic, which costs 47 percent more on average. Often times, aeroponic systems can grow food two to three times faster than traditional farming
techniques. If conducted in a controlled environment, aeroponic growth systems can be replicated as a continuous process independent of the current season throughout the year,” he explained. The Gropod appliance uses advanced ar tificial intelligent algorithms to eliminate user maintenance, with an added benefit of adding at least two weeks of shelf life to produce by growing food in the home, without the
need for transpor tation. “This accelerated growth rate spanned over 45 grow sites equates to the user having two full heads of leafy greens ever y single day,” he said. Initially a self-funded launch, Hydro Grow LLC won $35,000 in star tup grant/investment funding in the past month at three competitions: First place of $5,000 at the Innovation Connector’s Big Pitch Competition, First place of $5,000 at Purdue University’s Schurz Innovation Challenge and a $25,000 investment from Purdue University’s Agcelerater Competition. Massey lear ned last week that Hydro Grow LLC is chosen as a final pitch contestant at Purdue University’s Bur ton D Morgan Business Plan Competition, the Indiana Mira Awar ds, and the Forbes Mixing Bowl event in New York City. He said Hydro Grow LLC of fers memberships to customers who buy the Gropod that includes mailed seed pods to grow in their Gropod. “This is a ver y similar business model to Keurig, with huge profit margins on the seed cups that provide continuous cash flow,” he said. He expects an online presence will be expanded into an organic blog, where users can specify their favorite produce variety to order, share recipes and share growing techniques.
