Spruce Street Garden is open after months of renovations in Downtown Winston-Salem by Alex Hollowell and Georgia Kontos. Alex is a veteran Triad bartender and wants to support the local community. He has been in the restaurant business since he was 16 and was most recently the bar manager at Outwest Steakhouse in Kernersville. Anyone familiar with the building that Alex opened the restaurant in will notice that the entrance has been moved leading into a brand new room complete with custom made bar and tables separate from the restaurant area. The bar area has daily drink special and will soon have live music. Spruce Street Garden is working with local food businesses for ingredients for both the restaurant and bar. They serve top quality American cusine and craft cocktails. SMOHK’D Family Style Barbecue, Competiton Inspired & Driven by Craft By Rob Ainbinder The idea for Smohk’d, the 165 seat smokehouse restaurant on North Elm Street had been cooking in the heart and mind of Aaron Bray, for 7 years. Bray, who is a marketing consultant for Performance Foodservice, spent his time on the KCBS barbecue competition circuit before the team for Smohk’d formed. “We take pride in being as fresh as possible, hand slicing all orders. We approach barbecue like race car teams, trying to get a little more out of it with each cook. And we wanted to honor the craft of barbecue in everything we do.”, Bray says. In addition to eight freshly prepared Hickory smoked meats available daily. Smohk’d feature 11 fresh-made sides, desserts and a family-style menu that allows a little bit of everything to be enjoyed with each visit. Completing the “more than just a barbecue restaurant concept” are touches of elegance in the decor as well as 20 TVs, a full bar, a spacious terrace with outdoor seating, and a private meeting room for up to 40 people. All designed to elevate a patron’s dining experience. Mike Reid, the GM of Smohk’d who spent 12 years at Outback Steakhouse and time at Smokey Bones, says of their brisket, “A lot of people from Texas have been in and say it’s the closest thing to home that they have. We take that (brisket) point. We cube it up and we mix it with our sauces. And we do the burnt ends, which are really good.” Reid said of their prep and seasoning, “We use around one five-pound box of competition rub a week and all 11 of our meats 6 |

are cooked on our Southern Pride cooker. For brisket, we start with two to three briskets for lunch that have cooked overnight. And when we come in we put briskets on for dinner service.” Reid continues, “The reception has been really good. We had a soft opening, which was good because we could perfect the process because it’s a brand new concept. The road being shut down helped give us time to get things ironed out. Any leftover meats are used the next day for our $5 sandwiches or donated to a local charity. he Big Eat has been a Downtown Winston-Salem staple for more than a decade. Our Local & Piedmont Local Magazine has been organizing the Big Eat for the last few years. You may ask oneself, what is The Big Eat? The Big Eat is a collective of restaurants in downtown Winston-Salem where participating restaurants, taking 50% off signature menu items they intend to highlight, showcasing what the culinary scene in the Downtown area is all about. Being in it’s third year, there will be an added bonus! On February 29th (1p-6p) there will be the Big Sip Beverage Festival / Mac & Cheese Cook-Off at the Benton Convention Center, where many of the Big Eat participating restaurants will compete for who has the best Mac and Cheese in the Piedmont, plus live music. In addition, there will be craft beverage tastings featuring local breweries, wineries, and distilleries, including Old Nick Distillery, Foothills Brewing, Fiddlin Fish, and many more. You may have heard about a certain restaurant but haven’t ever eaten there. You don’t know if you’d like it. You don’t know if the food of that restaurant is priced right for your budget. The Big Eat offers you the opportunity to try it and see if it’s the one for you. Or, perhaps, there’s a restaurant that you are familiar with, but you’ve never gotten to that one menu item as you didn’t think you’d enjoy. Well, that particular item so happens to be on The Big Eat menu and here’s your chance to try something new. Then there’s the scenario where you don’t know about going Downtown Winston-Salem at all. In speaking of his business Robert recounts his college education in Hospitality Management from App State and his first job in Restaurant management with a Steakhouse chain for almost a decade. NC WINE TRAVELER WINE SPOTLIGHT RAYLEN VINEYARDS AND WINERY-MOCKSVILLE, NC

The history of RayLen Vineyards and Winery goes back to 1998 when the property which was a Dairy farm for a century was acquired by the Neely Family to start a vineyard and create wine. Their wine-maker was Steve Shepard who had worked in several wineries first in W. PA and later in the Yadkin Valley NC and he continues to work today after 25+ years to ensure the quality of their wine. The first wine was produced in 2001 and they have won many medals for their wines in various competitions. A signature wine CAT 5 after a decade won a Best of Show at the NC State Fair Competition in 2011 with their blend of wines to include: Red Blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Shiraz and Petite Verdot. It is believed that as long as they produce this wine it will keep any CAT 5 Hurricanes ‘away from NC’ and it has the distinctive symbol on it’s label and SO FAR , it has worked for almost a decade. CAT 5 Wine also was featured on the TODAY Show in December 2011 as a featured and recommended wine from NC. Besides the proximity to the TRIAD near Winston-Salem NC and Interstate 40 ; Raylen has many family-friendly events to include Festivals, free Music, Dog days, Craft Shows, Book reviews and other activities for its visitors and club members.
