Gordian Knot Rum
Not Your Old Pirate’s Booty Legend said that the one to undo the Gordian Knot would be king. Many tried to untie the intractable weave, and many failed, until a soldier came forward, drew his sword and cut through the knot. In that one bold stroke, the soldier unraveled the rope, untied the knot, and sealed his fortune. When Greensboro native and Executive Chef Mitchell Nicks and business owner Tom Bruce decided to join forces and create the perfect spirit, bourbon was quickly decided against due to the oversaturated market. Their research showed that rum was the next big trend in the spirit business. However, when the partners started working on Gordian Knot Rum in 2016, they did it with one thing squarely in their minds: they did not like rum. As drinkers of scotch, and then bourbon, they found the usual suspects of the rum world to have a unique flavor thanks to its sugar cane provenance, but they ranged from anemic and thin with a hot finish to overly candied and syrupy. Defenders of these rums, those rums with tropical fauna, sailors, and buccaneers on the label, would respond with, “yeah, but it’s good when you mix it with some Coke, ginger ale, or punch”. In order to save the world from subpar rum, the determined and adventurous pair rolled up their sleeves and got busy sampling many of the rums that the Caribbean had to offer. They wanted to find casks with the character and qualities that they wanted in their final rum. When all was said and done, they decided on three rums that they would work with: a 7-year-old rum from Barbados, a 5-year-old rum from Trinidad, and a 3-year-old rum from Jamaica and these 3 rums would be blended together to make the perfect recipe. The results were a spirit that drinks like a bourbon with a weighty mouthfeel, a butterscotch nose, and a long, spicy, smooth finish. Elegant, layered, and very limited in production promises customers a rum experience that they have never had before. Gordian Knot Rum hit the shelves in November 2018 and is currently available in liquor stores, bars, and restaurants in NC, SC, and FL with more locations being added. It earned the Judge’s Favorite Award at the prestigious Miami Rum Festival and is quickly building a strong and loyal following. Continued on page 14

Jeffrey Adams - Eight Years of Delighting Triad Diners! By Kristen Margo Daukas When Jeff Bassett and Adam Andrews opened Jeffrey Adams on Fourth Street in Winston-Salem in October 2012, it quickly became a favorite go-to spot for many diners in the area. Eight years later, and they’re still going strong and slowly getting back to a steady stream of guests after being closed during the close-downs earlier this year. Operating at 50% capacity like other restaurants poses a challenge for all establishments but thanks to things such as The Streatery and college students returning to town, there’s a lot to be smiling about and thankful for. When staff returned after we went into phase 2, it was with mixed emotions and not knowing what would happen - downtown was a virtual ghost town - would people actually come back to eat out? Would diners object to wearing masks? Luckily their fears would subside as they saw traffic starting to gradually increase and things began to show a little resemblance to life before. The Streatery helped get their numbers back up to pre-COVID levels. When they’re able to use the street to serve, they can add an additional 10-12 tables outside with the 10 inside (which is the maximum number of tables they can use due to the 50% capacity rules) as well as the 2nd-floor being used. They found that people who may not have felt comfortable dining inside definitely are coming to eat outside. Like other restaurants and businesses, all of their staff are required to wear masks and guests are required to wear them when not seated at their tables - and for the most part, guests have been good at doing this. Personally, I keep mine out for when a staff member comes to my table so I can slip it back on in an effort to keep them healthy and safe. menu. Guests can expect to see some ‘bigger’ options come back such as their Cowboy Ribeye Steak, New York Strip, and Grilled Duck with Sauteed Apples. Once the cooler Fall weather makes an appearance, they’ll add their “cold weather” pasta dishes and offer both vegetarian and meat versions as well as winter arugula. New desserts include White Chocolate Creme Brulee, Apple Berry Crisp, and a rotation of creative cheesecakes. Due to the fact that they’re only serving dinner currently, many of the sandwiches and handhelds have been removed from the menu, but if you have a hankering for that fabulous chicken sandwich, ask nicely and they’ll probably make it for you! As always, all items are made fresh, in-house with ingredients that come from Andrews Farm (owned by Adam). If there’s a tomato compote or pico de gallo garnishing your dish, you can rest assured that they were made using vegetables that were picked from Adam’s farm - and probably picked that same morning. Other changes you can expect is that currently, the wine cellar is closed which is a shame because until this moment, I had no idea they had a wine cellar and now I need us to get out of this pandemic so I can experience that! There are some incredible new wines and cocktails to explore from a Maple Bourbon Old Fashioned to the Kena Cosmo (named after their very own manager!). They pared the wine list down in order to give their guests plenty of options without it being overwhelming. This also ensures that no wine is on the shelf for too long.

COOPER’S ALE HOUSE Keeping the Fields of Dreams for Sports Alive
It’s a universal fact that one of the things that bring people together like no other are sporting events. And having that very thing largely ripped out of our hands this year is one of the hundreds of things that have made 2020 pretty unbearable. Whether we were watching our favorite sports at home alone, at friends’ houses, or in sports bars like Cooper’s Ale House in Greensboro, Fall just won’t feel the same without being able to do that as easily. There is just something about gathering and watching college ball on Saturdays and binging on NFL all day on Sunday that resonates with almost everyone and while we’re sort of going to have NFL and some college games to look forward to still, those empty stands are a fitting reflection of the emptiness in our hearts that we can’t be there in person cheering our favorite teams on. Since 2017 Cooper’s Ale House has been operating inside the Wyndham Garden Hotel on Swing Rd in Greensboro NC just off of I-40. They have a friendly atmosphere, good times,

great food, and service. Cooper’s provides space for private parties. This is a beautiful location for everybody and their individual needs. They offer a fully stocked bar with 13 beers on tap. They feature an array of craft beers including many NC beers as well as carrying a few local wines. For the sports fan, 30 plus TVs are showing all types of sports all day and they also boast Greensboro’s largest covered patio, which includes 2 outdoor pool tables and 10 TVs for your viewing pleasures. Cooper’s is the location for the Triad’s Dallas Cowboys Fanclub and also play host to a large contingency of Panthers fans. If you’re missing the tailgating piece of fall football, one of their private rooms could just be the thing for you and your friends. With 5 different banquet rooms, there is room for you and 50 - 75 of your closest sports friends to get together safely and they will cater it for you which will save you the room fee! Granted it’s not exactly the same as being in your favorite stadium parking lot, but the camaraderie is what all of us are really after when we get together to watch games. Doesn’t a day filled with football, Cooper’s amazing wings, and other appetizers and a couple of beers sound really good right now?? Their two dining rooms can safely seat 128 people on the inside and approximately 30 on the patio. They are doing karaoke on Fridays and have a DJ on Saturdays until 11:00 PM. They have drink specials Sunday Thursday and while a few items have changed or been dropped from their menu due to logistics, the majority of your favorites are still there! If you’re missing the sheer joy of watching sports with your friends, you definitely need to head to Cooper’s, watch your favorite teams, and make your own crowd noise. We all need that right now.
