Celebrating Our Roots Teochew cuisine is well known for its use of fresh and quality ingredients to emphasise natural flavours. At The China Club, we have prepared a special Teochew menu just for this quarter. Our 6-course Teochew set celebrates this tradition with a lineup of exquisite offerings, including a gourmet platter with a trio of chilled lobster, shrimp dumpling and soybrined duck. Other highlights include Braised Fish Maw & Crabmeat Soup with Chrysanthemum, Steamed Cod Fillet with Plum Sauce, and Oyster Omelette with Picked Radish & Chives. The traditional and much loved orh nee will also be served for dessert. In September, grab your lanterns and gather your loved ones for a night under the full moon to celebrate the Mid-Autumn Festival. It is said that the moon is the brightest and roundest on this day, symbolising a time of thanksgiving and reunion

with your families. Our special dessert menu featuring Sweetened Peach Tree Sap with Green Apple and Snow Fungus, Aloe Vera Cream with Longan & Ginseng, and Deep-fried Sweet Potato & Egg Custard Dumpling will be the perfect accompaniment to your sweet reunions. In Chinese, there is an idiom 饮水思源 which means to remember where your blessings come from. It also means, in a literal sense, to remember the origins of your water when you drink it. In that spirit, we have included a fun fact about Singapore’s first water source at the back of this newsletter. But more importantly, in the midst of celebrating our roots, let us also approach this season with a heart of gratitude for all that has been given to us and our families.

1819-2019: A City Without Limits As Singapore welcomes its bicentennial year, major plans for the city are underway. The Central Business District where The China Club is located will be undergoing a significant transformation in the coming years. The government has unveiled plans to build more residential homes, hotels and public spaces to enliven the vicinity, and fill the streets with more restaurants, shops and gyms. The Central Business District will no longer just be a place for the corporate. Instead, it will be a vibrant space for families and friends to live, work and play. The streets are going to be busy both in the day and at night, on weekdays and weekends. It didn’t seem that long ago when Singapore was just starting out as an independent nation. Pioneers of that generation will be able to tell you tales

of living in kampongs and drawing water from common taps and wells. Yet today, we have developed some amazing infrastructures, from our iconic Marina Bay Sands to the amazing Jewel Changi Airport, with upcoming plans to further utilise our underground spaces for better urban living. What you see here are the fruits of a forward-looking country. It is important to always keep our eyes ahead in order to prosper and stay relevant. Singapore’s development, while rapid, did not occur overnight. To improve our city for our next generation, we have to stay competitive in a world that never stops moving. We are living in exciting times indeed. At The China Club, we anticipate witnessing this burst of life and flurry of activities from a bird’s eye view on the 52nd storey, and we welcome you to come dine with us in comfort while watching the transformation of our city state to a better tomorrow.

Palest lemon green, Cape Crest Sauvignon Blanc ’17 is all about texture, refreshment and refinement. Grapefruit and lime juice on the nose, with notes of white flowers, quince and cardamom, the wine expands into fennel, currants, elderflower, pears, honey and sweet nectarine on the palate. Ripe sub-tropical fruit is balanced by a long, dry finish with a crisp edge and a floral, delicate lift. Domaine Faiveley Mercurey Blanc 2015 Origin: Burgundy, France GrapeVarietal: 100% Chardonnay

历 史 简 介

Did you know? Singapore’s journey to achieve self-reliance on fresh water supply dates all the way back to the nineteenth century. In 1857, Tan Kim Seng, a wealthy merchant in Singapore, donated $13,000 to the British government for the construction of Singapore’s first reservoir and waterworks. To commemorate this, the municipal commissioners erected the Tan Kim Seng Fountain, which has since been gazetted as a national monument and can be found at the Esplanade Park. Today, Singapore has a total of 17 reservoirs, including the Marina Barrage which holds the island’s largest and most urbanised catchment.
