PREPARATION
Pad Thai Sauce • In a mixing bowl, mix everything together. Garnish and Condiments • Prepare ingredients as mention above. Before serving • Heat up wok with oil, stir fry shallot and radish till fragrant. • Stir fry egg till foamy, stir fry rice noodles, add water and dark soya sauce occasionally till noodles are soften. • Add in pad thai sauce while stir frying. • Fold in tofu, dried shrimps, bean sprouts, chives and stir fry till well mixed. • Garnish and serve.

Nonya Spice Blend • In a blender, blend all ingredients till smooth. Nonya Paste • In a pot, sweat Nonya spice paste, Knorr South East Asian Spice Paste and lime leaves till fragrant. • Fold in pineapple puree, sugar, tamarind sauce and bring to boil. PREPARATION
Assam Spice Blend • In a blender, blend all ingredients till smooth. Assam Pedas Paste • In a pot, sweat assam spice paste and fish curry powder till fragrant. • Add in Knorr Concentrated Tamarind Sauce, Knorr Chicken Seasoning Powder, Knorr Lime Seasoning Powder powder and sugar and bring to boil. PREPARATION
Prawn • Mix all the ingredients in the mixing bowl and marinate prawns overnight. • Grill the prawns till cooked. Pajeris Sauce • In a pot, stir fry onion, fish curry powder, coriander powder, chili paste, Knorr South East Asian Spice Paste and Knorr Rendang Paste till fragrant. • Add in water and bring to boil. • Fold in pineapple, gula melaka and Knorr Concentrated Tamarind Sauce let it simmer for 8 mins.

Fruity Tamarind Dressing • In a mixing bowl, mix well all ingredients.

Pickled Solution • In a pot, add in all ingredients and bring to boil. • Set aside and cool down.
腌渍酱 • 将全部的食材放入锅中,煮至沸腾。 • 静置一旁,放凉备用。
Pickled Vegetables • In a mixing bowl, put all the vegetables and pour in pickle solution. • Let it soak for at least 2hours.

PREPARATION
Marination • In a mixing bowl, mix well all ingredients and marinate lamb rack overnight. • In a pan, sear the lamb rack till caramelised. Tamarind Tomato Stew • In a pot, stir fry garlic, curry leaf and mustard seed with oil till fragrant. • Add in carrots, potatoes and roast till caramelised. • Add in Knorr Rendang Paste, Knorr South East Asian Spice Paste. Stir fry till fragrant. • Add in Knorr Pronto Tomato Sauce, bring to boil and let it simmer for 10 mins. • Fold in Knorr Concentrated Tamarind Sauce and simmer lamb rack in sauce. • Cook till desired doneness.

Sticky Dates Mixture • In a pot, add all the ingredients, bring to boil. Cook dates till soft. • Set aside and cool down. Butter Mixture • Using a kitchen mixer, cream butter and sugar till smooth. Egg Mixture • Fold egg mixture into the kitchen mixer. Flour Mixture • Gradually add in flour mixture into mixer, mix well till smooth. Sweet Tamarind Sauce • In a pot, mix all the ingredients and bring to boil. • Ensure mixture is smooth. Fig and Tamarind Compote 100gm Dried Fig, diced 100gm Dried Prune, diced 100gm Granny Smith Apple, peeled and diced 75gm Sugar 100ml Water 100ml Knorr Concentrated Tamarind Sauce 100gm Butter 10gm Corn Flour 10ml Water Phyllo Pastry Roll 12pcs Phyllo Pastry 50ml Clarified Butter 50gm Grounded Almonds 50gm Caster Sugar
PREPARATION
Fig and Tamarind Compote • Mix well corn flour and 10ml of water. • In a pot melt and caramelise sugar, add in fruits and stir fry till soft. • Add in water, bring to boil and let it simmer for 5 mins. • Whisk in Knorr Concentrated Tamarind Sauce and add in corn flour mixture. • Bring to boil. • Fold in butter and set aside. Phyllo Pastry Roll • Preheat oven to 175 degree Celsius. • Mix well flour and egg white. • Lay phyllo pastry, brush clarified butter and sprinkle ground almonds. Repeat process till you had gotten 6 layers. • Lay 200gm of fig compote and wrap with phyllo pastry. • Apply flour mixture to seal the corners. • Bake in oven for 20 mins till pastries is cook and golden brown.

做法
糖煮无花果罗望子 • 将粟粉及10毫升的水充分混合,勾成芡。 • 将白糖放入锅中加热使至焦糖化,再放入 水果翻炒至变软。 • 加入清水,煮沸后转小火,煨煮5分钟。 • 缓缓加入家乐浓缩罗望子酱,再加入芡汁, 煮至沸腾。 • 加入牛油后,关火放置一旁备用。 千层油酥皮卷 • 预热烤箱至175度。 • 充分混合面粉和蛋白。 • 将千层油酥皮铺平,刷上一层澄清牛油, 并撒上杏仁粉。重复动作,直到叠上了 6层酥皮。 • 用叠好的酥皮包裹200克的糖煮无花果。 • 再用调好的面糊封口。 • 放入烤箱烤20分钟,直至金黄色。 上菜前 • 切成适当的分量后即可享用。

PREPARATION

Sugar Syrup • Mix in all the ingredients and bring to boil.
罗望子菊花茶 • 将全部食材混合,搅拌均匀。
Chrysanthemum Tamarind Tea • Mix well all the ingredients.

Before serving • Place tea in a shaker and shake well before serving.
