For me, it’s that first cold front of the season that sets the mood of the season. The crisp air fills my lungs and I breathe deep. Leaves start to fall fast from the trees and it seems the days on the calendar do, too. The signs seem to be everywhere reminding me that kids in costume will soon be ringing my doorbell, Thanksgiving meal planning must be done now, and there are only a few days left for Christmas shopping. Meanwhile, I cannot deny the feeling in my gut that speaks softly requesting an extra moment to sit awhile in reflection with a hot cup of coffee.

This season is about just that, isn’t it? The passing away of the year begs for time to reflect on what went right and what didn’t go as planned. I ask myself if I have any resentments that need to be addressed with an apology. I smile at the memory of happy times with family and friends that will never occur exactly the same way again. And I contemplate what the next year will have in store for me, God willing.

I used to live by a quote that a mentor told me years ago and I held to it as truth. “The difference between an adventure and an ordeal is in the planning,” he said time and time again. Today, I say, “The difference between an adventure and an ordeal is attitude.” Having a plan in place definitely helps me get more accomplished, but things rarely go as planned. Having an open mind and a positive attitude allow me to adapt to

whatever comes my way. For me, serenity comes not by trying to control life as I had planned it but instead by taking what comes as a potential opportunity. That attitude makes life an adventure.

This season, I encourage you to open up to the opportunity to do something different than you may have planned. You’ll find lots of great options in this edition of the Columbus, Texas magazine. Even if you’ve lived in the area your entire life, like I have, there is still much to be discovered if we simply change the path we take and see this great town with new eyes.

Slow your pace and sit awhile at Blake’s Kitchen and Kocktailz, take a friend or family member for an outdoor experience at Top Flight Hunting Preserve, or shop for yourself for a change at Silver Barn. Relax and read about the inspiring journey that Vertina Jones took down the road of success in her career. And when you plan your holiday gatherings, consider taking time to connect with one of the area’s many welcoming congregations. All that and more is waiting for you in this edition.

I don’t know what 2023 will bring but I do know that I will try my best to keep an open mind and heart, willing to receive what gifts God has in store for me. How exciting it is to not know what is to come! Here’s a toast to life’s adventures …

Must see sites in Columbus

VISITORS WILL WANT TO EXPERIENCE ALL OF THESE COLUMBUS GEMS

The Dilue Rose Harris House Museum at 602 Washington Street is a unique part of the Columbus Historic Preservation Trust’s tour of their historic properties.

This modest tabby home was built in 1858 by Ira and Dilue Rose Harris. During the 1850s there were at least 10 tabby houses and buildings constructed in Columbus, including the County Courthouse and the Baptist Church. A unique type of construction for this area, “tabby” is a mixture of gravel, sand, and lime mixed with water and poured into large block forms fitted together to make walls 12 to 14 inches thick.

Due to deterioration of the home, a restoration was undertaken in 1977. In 1989 the Dilue Rose Harris House was converted into a museum. It is furnished with early Victorian walnut and Texas pine pieces, many belonging to families from the Columbus area. The War Memorial Museum is located along Milam Street, on the courthouse square in downtown Columbus. This old water tower houses a museum dedicated to Colorado County’s veterans of all wars. Visit www.columbustexas.org/fun/museums for more information.

You can’t very well call yourself a Texan unless you’ve shopped for a new hat and boots at a real western store, something that is a becoming a bit of a rarity in most parts. Mom-and-pop shop Potter’s Western Store is one of those rare finds that’ll put a big Texas smile on your face when you walk though the door. Owners Henry and Pam Potter hold true to the belief that customer service is key to their lifelong success and you’ll believe it too when they personally shape a hat for you or slide your foot into an American-made boot that fits just right. Living their lives as strip center sports bar owners for over six years, Blake and Kalli decided it was time for a change. “There just wasn’t any room to grow – we couldn’t really modify and we were kind of maxed out as far as space,” stated Blake. “We had the decision to either update where we were, which was a lease that needed to be upgraded, or start fresh somewhere else.”

“We decided that starting fresh was the better option, and we kind of swung for the fences and took a took a big bite,” Blake remarked. “Hopefully it pays off down the road.”

Purchasing part of the old Don Morrison Ford Dealership, they are now sitting at 2035 Milam in

Columbus, just a parking lot over from their old location. The building itself was basically an empty shell, full of potential. Blake and Kalli got to work making it their own, while also keeping some of the original features of the building and incorporating nods to the local community in their design.

“The columns supporting the front entrance are actually the car lifts that were here – they are the cylinders from the old original body shop that were used to lift the cars up. The barheight countertop on the patio is wood reclaimed from the Bastrop fires. The high-top tables that we have inside the restaurant are all recycled material from local items like grades from the highway construction company. There are rice grain augers on

those tables, as well. So, it’s got some unique flare from the community,” Blake boasted.

It wasn’t just their location that received an identity change, but their business focus and menu experienced an overhaul as well.

“At our old location we were more of a bar and grill, but moving here we wanted to transition to restaurant and bar,” explained Blake. “At some point I feel like we were mislabeled as a bar, and we wanted to totally break away from that identity and create our own identity here … where everyone felt no doubt that they could come in at dinner and not worry about being at a bar, because it’s not like that here. We have three kids and were ready for that change.”

Order up! Their burgers don’t disappoint, and don’t miss out on their mouthwatering hand-cut fries.

Achieving that transition can be difficult, but Blake and Kalli pulled it off. Focused on balancing the family and social vibe, walking into Blake’s Kitchen & Kocktailz naturally feels like a place where you can enjoy a meal with loved ones, or unwind with friends.

“We wanted to take on a new challenge, so we brought in a mixologist who helped us to incorporate craft cocktails into our menu, doing away with selling shots. We felt like this would elevate the experience here, and offer something Columbus didn’t really have.”

In addition to changing their drink menu, their restaurant menu received a major upgrade with the help of a chef, as well as some of their own unique ideas. Moving away from simple bar food while still offering standard staples like chicken fried steak and burgers, they also offer options like ahi tuna wonchos, fried Brussels sprouts with hot chili honey, and a chicken and waffle sandwich, to name a few.

It’s clear Blake and Kalli had a vision of creating a great dinner scene that was complimented by its social atmosphere. Opening the doors at their new location just this past March, the sky is the limit as far as the growth they are sure to experience in the months and years to come.

LOCAL BANKER SHARES STORY OF STRUGGLE, HOPE AND ACHIEVEMENT PHOTOGRAPHY BY EMILY HENDERSON

It wasn’t easy convincing Vertina Jones, the Columbus branch manager of Lone Star Bank, to let me interview her. This humble lady told me “no” quite a few times before finally agreeing to my repeated pleas to share her story. I knew it had to be a good one, so I persisted. A person can’t help but be curious about someone that exhibits a grace that makes you feel good just being in their presence. A trip to the bank may be a tedious stop on most people’s to-do list but that isn’t the case here. Vertina has a way of turning a mundane errand into something truly extraordinary.

To get to the heart of her story, I had to figure out what started her journey in finance. I got the impression that this wasn’t a path she’d purposefully chosen and that proved to be a solid hunch.

“I tell this story quite often to whoever listens at the time,” Vertina shared. “If you told me 20 years ago that I’d be working in banking, I would have laughed in your face. I actually just happened to come across banking but I wouldn’t say it was by accident. I was led there. I had intentions of going into criminal justice and I was putting myself through school to do just that. I was working at off jobs but I needed something more substantial.

“One day my mother was looking through the local newspaper and she pointed out a bank that was hiring. I said, ‘Oh, Mom, they’re not going to hire me!’ I had been to so many interviews and I was so very discouraged. But my mother stayed on me for a few days. ‘I really feel this is a good fit for you,’ Mom said. ‘Don’t knock yourself out before even trying.’”

Vertina’s mother was right. Determined to show her daughter her worth, Mom’s words finally rang true. Vertina took a chance.

“I filled out the application,” Vertina said. “They called me back the next day. I had an interview on the third day and by the fourth day, I was hired. That was back in 2006.”

Vertina would go on to finish her degree in criminal justice, but her love for banking grew and so did her love for her customers.

“I love the people I take care of here in Columbus,” Vertina added. “It’s really motivated me and I feel like I have a responsibility. Some people think that just because they don’t have a lot of money that they’ll be treated differently than others. I know that I wasn’t always treated with smiles in the past. I often felt like just a number passing by. Due to this, I have always made a point of treating all of our banking customers the way I would want to be treated. It doesn’t matter to me if you only have one dollar in the bank … you’re going to get the same

red carpet.”

Never forgetting where she came from or how she got there, Vertina knows for certain why she’s where she is today.

“I’m not going to throw my religion or anything like that, but I will tell people in a minute that I feel like God put me in the right place at the right time,” Vertina said. “I know it is because of Him that I got into banking and have been able to fulfill my position. God puts you where you’re supposed to be. There’s no shame in my game. I believe in the Lord. He protects us and guides us and without that, we’d really be lost. You have to be open to receive it. That’s how I feel … open to receiving and to giving.

“I’m a banker, but I’m a banker with a heart. It’s not always about the money. Sometimes it’s about what you can do for that person. I’m here to help wherever I can.”

Top Flight Hunting Preserve

LEON RANDERMANN STILL SHARES HIS PASSION FOR HUNTING AFTER 35 YEARS

There’s an old adage we’ve all heard that carries a clear message: do what you love and the money will follow. However, sometimes it isn’t about the money at all. There’re a few people still left in this world that do what they love simply for the joy of doing it. Leon Randermann of Top Flight Hunting Preserve is one of those people. With a passion for hunting instilled at a young age, Leon is a holdout in an industry that is quickly becoming a rich man’s game.

“My parents didn’t have a lot of money,” Leon shared. “If we hadn’t had a place to hunt, I probably wouldn’t have grown up loving it as much as I do.”

At the age of three years, Leon started duck hunting with his father and guiding waterfowl hunts at the age of 15. After high school, he started working as a welder and in the early 80s, the whole market crashed and he got laid off from several jobs.

“So, I started guiding that summer in Alaska. What was to be a one-year adventure ended up being 18 years of guiding hunting and fishing up there. In 1986 I started Top-Flight in addition to guiding waterfowl hunts in the winter. It grew into a full-time job and 35 years later here I am.”

Since Leon’s main interest was bird hunting, that facet of the venture got most of the attention. It’s liberated birds, of course. There are no native pheasants or chukars in Colorado

County. Leon learned his craft quickly but he saw a potential for change. He would soon implement his ideas and turn into a successful operation to be enjoyed by many.

“My goal was to work with released birds while keeping as realistic of a hunting experience as possible,” Leon said. “I also wanted to keep it affordable. A lot of people thought I was crazy. When I first started, it was hard to find quality birds, so we started raising our own. Today we raise anywhere from 50 to 70,000 birds a year: quail, pheasant and chukar. In this way, we control the quality and have improved the quality over the years. We have better flying birds with better genetics. In addition, I have always tried to keep (bird hunting) as affordable as possible so that everybody could have an opportunity.”

Over the years, Leon saw his hard work take to the skies as he grew Top Flight into a favorite hunting destination.

“Times have changed,” Leon added. “I started Top Flight in 1986 with two dogs and a pickup and, at times, I’ve had as many as 30 dogs. Today it’s grown in popularity that now, when you talk to people about shooting liberated birds, you don’t get eyes popping out of the back of their heads.”

The preserve is situated on 400 acres divided into ten hunting areas. Each area consists of a carefully maintained combination of brush land and open field. This varied terrain provides perfect cover for birds, as well as a variety of hunting situations. The end result is an upland game hunting experience that is as close to wild bird hunting as possible.

Top Flight also offers duck, goose and the occasional sandhill crane hunt. Being located in the middle of Colorado

county puts them square in the middle of some of the finest waterfowl hunting the state of Texas has to offer. In addition to their own properties, Top Flight works closely with several of the area’s premier waterfowl clubs. This enables them to provide the best early morning action available. COLORADO VALLEY VETERINARY SERVICES PRACTICES LOVE FOR COLUMBUS, TALKS OF FUTURE PLANS

It’s a classic love story that stands the test of time. Dr. Michael Ridlen and his wife, Kathie, share a visible affection for each that is unmistakable. Although most couples might find it a bit challenging to work alongside their spouse day in and day out, these two make it look easy.

When I walked in for their interview, I wanted to know more than how they built Colorado Valley Veterinary Services into a booming veterinary practice on the outskirts of Columbus. What I was really curious about was their love story.

“We were high school sweethearts in Santa Fe, Texas,” Mike said. “We met in algebra class. I was a senior and she was a junior. My best friend wouldn’t take her to prom but I felt this young lady should go to prom and it was my last year to go. I asked her to go with me and we started dating. We were married eight-and-a-half years later.”

Mike has a way of knowing what his heart wants and then putting in the work to be successful. The same was true for how he found his way into veterinary medicine.

“I love veterinary medicine,” Mike shared. “I love people. I love animals. In this small town, my clients are also my friends. They are my neighbors and the people who teach my kids. The people I see in this office are the same people that I run into at the grocery store or at football games. I was cut out for a rural, small-town practice. This makes me the happiest.

“My dad was the son of a farmer in Iowa. He grew up raising pigs, cows and chickens as a vocation. Naturally, I also grew up with lots of animals including horses, cows, ostriches, emus, and prairie dogs. While I was very young, I would see the veterinarian come out to work on some of our horses and I looked at him and said, ‘I want to be that guy.’ I’ve never regretted one minute of it. It’s a great vocation.”

Kathie would soon discover that there was a place for her, too, in this dream they shared.

“After our daughter, Katie, came along, I found that I really had a desire to be a stayat-home mom,” Kathie said. “I found it really hard to go back to work as a teacher. I was blessed to be able to do that. When we started the veterinarian practice, I could just see there were things that he couldn’t do all by himself. He couldn’t answer the phone and treat a dog at the same time.

I started jumping in and it just kind of evolved. As we grew, we were blessed over the years with really great staff.”

“I learned a long time ago that Kathie is my wife, not my employee,” Mike added. “We’re partners in this deal.”

When the time came for Mike to build his own veterinary practice, Columbus was an easy choice. The Ridlens would soon discover that this community possessed a heart as big as theirs.

“Neither of us are from Columbus but we’ve been accepted into this small town,” Mike shared. “We’re grateful for how everyone supports us. There are great people here. We’re extremely appreciative of the community and the support we get. We try to give back by either serving on boards or giving of our time. I’ve been involved with Columbus Little League for over 20 years now. I’ve seen generations of

kids come through that program.”

“We’re super blessed that God put us here to raise our kids,” Kathie added. “They thrived here and did really well. Columbus is a big part of our story. God was putting the right people in the right place at the right time for us.”

But times haven’t always been easy. Adversity tests everyone and the Ridlens were no exception.

“We had just moved in April when I went in for a regular doctor checkup,” Kathie shared. “When the results came back, I had a cancer diagnosis that just rocked our world. I was diagnosed in 2004 and finished all of my treatments in 2005. Thankfully, I’ve been free and clear for some time now.”

“Our promise to each other was a covenant before God,” Mike said. “We both take that very seriously and it hasn’t always been easy. Marriage is never a cakewalk the whole way. This is unconditional love.”

Always looking forward, together the Ridlens are implementing their ideas for the future to better serve the community that has been a cornerstone for them.

“We have plans for a new veterinary clinic that will be built on this property,” Mike said. “If things go well, like they should, we’ll probably be breaking ground within the next month. CVVS is definitely ready

for more than one veterinarian providing services.”

“I’m glad we’re here,” Kathie added. “I wouldn’t want to be anywhere else with anybody else.”

CYNTHIA SUTTON-STOLLE TELLS STORY OF LOVE, ADVENTURE AND FINDING HER HOME

It’s been many years since I first strolled into Silver Barn in Columbus. I was hooked from the first walk through the door. Cynthia Sutton-Stolle has always had an eye for selecting pieces that would turn out to be exactly what I was looking for … even if I didn’t know what exactly that was myself. Although the iconic Silver Barn now calls a new storefront home, the experience remains unchanged. I always leave with something very special in hand and a smile across my face.

“We’ll be here 15 years in March,” Cynthia shared. “Originally, we were in the EhrenwerthRamsey-Untermeyer building and that was a great place to start. We started small and slowly expanded.”

Cynthia found Columbus when she reconnected with a man from her college days. The conversations were easy but the distance between them was difficult. This local chap would soon convince her to make a move to country living.

“I’m originally from Texas,” Cynthia shared. “We both went to Texas Lutheran. He was older and had long hair … I thought he was an obnoxious fraternity boy. We had a few English classes together and he would critique my writing all the time. We were both English majors but he was more English. My goal was to be a White House correspondent and he wanted to be a teacher. We sort of didn’t mesh.

“Fast forward years later and, while I was driving my daughter to college in Texas, I passed through Columbus and thought, ‘Hey, I used to know a guy that was here.’ We had a class reunion coming up and I decided to write to him and see how he was doing. At the time, I was traveling all over the country doing morning talk shows and things of that nature.”

As fate would have it, Cynthia and her husband-to-be would find that it was easy to pick up just where they left off all those years prior.

“So, I came down and met Bill and it was different,” Cynthia said. “It was kind of nice. I don’t know how else to describe it. It was like putting a hand in a glove. We just matched. We started seeing each other and I came down whenever I could and, whenever he could, he came to see me in Chicago.

We were married on March 27, 2004 and I moved to a country life here in Columbus.”

What followed was all a matter of the right pieces falling together at the right time.

“I’d been in retail and television all my life,” Cynthia added. “I’d always been on the marketing side, not the buying side. But when the Untermeyer building became available, I decided to open the store. Although my husband thought I was crazy at first, he could see that I had a real passion for it. I had always wanted to open a retail store.

We named Silver Barn after a Quonset

barn because I’d never seen one in my entire life until I came here. There was a Quonset barn on my husband’s place and it was the coolest thing I had ever seen … so neat, unique and clever. So that’s how Silver Barn got its name!”

Soon Cynthia’s passion for Silver Barn would prove contagious and she found her new husband was right by her side in this new venture.

“My husband was definitely along for the ride,” Cynthia shared. “We’ve done this together. He spends just as much time working at it. He’s gone to market a few times and come up with some of the best products for guys that we’ve had. He has a way of seeing things with a different eye.”

Today, as always, Silver Barn remains a rare find in a community the size of Columbus.

“You’re going to find things that you won’t find anywhere else in town,” Cynthia said. “I try to be trendy without being trendy-trendy. I pay attention to what’s happening in the marketplace. I strive to make Silver

Barn a unique shopping experience. I try to have products that are broad scope and I handpick everything in the store. I want to know the story behind the merchandise and I want to know the person behind the story.”

Never forgetting the community she serves, Cynthia is big on giving back whenever she can.

“Columbus has been so very good to us,” Cynthia said. “We have to support each other … there’s no ifs, ands, or buts about it. It just makes this town even better. I think that’s why Columbus is so successful; everyone gets involved and does what they need to do.”

More than just a bed and breakfast, guests experience true Texan hospitality when they stay at The Carriage Step. Amber Burris Becerra provides service with a personal touch, along with unique perks like historic architecture, helpful local recommendations and one-of-akind rooms that are only a short stroll away from all the best spots in Columbus.

The Carriage Step is spacious yet cozy. There’s plenty of room for families to spread out and get comfortable. And it’s just those qualities that originally drew Amber to the home. You see, Amber also runs Schneider Hall, a historic dance hall that is available for event rental.

“I needed a bridal house,” Amber said. “I was already sending my brides here, so when the previous owners were looking to sell The Carriage Step, they approached me to see if I might be interested. One thing led to another and here we are.”

Amber was quickly enamored with the house and, although it was already beautifully decorated, she added a few personal touches to elevate the space even more.

“I love this house,” Amber shared. “It has such a great history here. It’s called The Carriage Step because of the big, strange concrete step out front. The decor is a really nice mix of antiques with a little bit of mid-century and a touch of modern. All I had to do was put my own personal tweak on things.”

A Columbus native, Amber found herself returning to her childhood home after her family suffered a great loss with the passing of her mother, Kathy Burris. Kathy was an integral part of Columbus, touching many people during her life. Her passing changed Amber’s course.

“I had been living in different cities across Texas, but moved back here in 2013,” Amber added. “My mom passing away made me not want to stop. I wanted to open the hall as a wedding venue. I didn’t want it to just sit there because my mother had such a vested interest in it and she loved the place. I quit my corporate job and moved back to Columbus. I wanted to carry on Mom’s legacy. I felt I needed to be back home and it was a really great move. My husband and I are now raising our daughter here and live right next door to my dad.”

Today, Amber feels like what she’s accomplishing is indeed her life’s calling.

“I took a big chance,” Amber said.

“At first, I had no idea what I was doing. But, with my family and the community’s help, it has all proved to be well. I’ve put a lot of heart and soul into it. The Carriage Step is an integral part of the community and especially the downtown area.”

Schneider Hall, which has been in Amber’s family for almost 100 years, is nestled on Highway 71, just a few miles south of Columbus. Originally a Texas Dancehall that operated throughout the 1930s, it was run by the Schneider brothers; Fred, Jim, Willie, and Jake. They hosted regular dances at the hall and many town events including the 1939 Farmers League Rally Day which was reported to have had over 1000 people attend. The hall officially closed its doors in 1942, but still hosted events and parties throughout the 1950s. Today it is a charming place to hold a wedding, family reunion, business meeting, or just a party for party’s sake.

Festivities begin at 6 p.m. with a glass of Prosecco, tasty Hors d’oeuvres by Urban Cowboy of Austin, red and white wine, beer, a special “Cowpoke Punch,” “Luck of the Draw” wine pull, and opportunities to donate to the Big Board of Wishes and bid on silent and live auction items. Santa Claus Museum

Known as the only Santa Claus Museum in the South, this one-of-a-kind stop originally was established by the Columbus Historic Preservation Trust in 1990 as a way to showcase Mary Elizabeth Youens Hopkins’ Santa Claus collection that she began in 1913. Today, there are almost 3,000 versions of Santa Claus on display.

Welcome to the Columbus 200 Celebration! Columbus is the oldest surveyed and platted Anglo-American town in Texas. That is something to be proud of and worth celebrating.

Everyone is invited to the scheduled events that celebrate the heritage of Columbus. Plans are underway for a parade, dignitary reception, dinners, memorials, and spectacular events to celebrate Columbus.

The community is encouraged to contribute to the Bicentennial by submitting recipes for the “Columbus 200 Collection” cookbook. Submit your favorite family recipes for inclusion in the cookbook to columbustx200@ gmail.com by November 1.

November/December: Christmas on the Colorado: 200 Years of Happy Holidays  A lighted Christmas parade in downtown Columbus is planned for November 29th at 6:00 pm. The route will start at the First Baptist Church and end at Spring Street on the courthouse square. Enjoy the lighting of the Christmas Tree, music, refreshments, and visits with Santa.

The Griswold Spectacular Decorating Contest is open to both residential and commercial entries. Business owners and homeowners are encouraged to decorate in the theme of “200 Years of Happy Holidays”. There is no entry fee, cash prizes will be awarded, and the deadline to enter is November 23 by calling the Chamber at 979-732-8385.

The Columbus Elementary School and St. Anthony’s Catholic School have been working together on preparing a time capsule. In 1973, during the Sesquicentennial, the Columbus Elementary School buried a time capsule, and the schools will unearth the 1973 capsule and bury another one.

A Valentine’s dinner theatre at the Stafford Opera House is planned for February 11. The event will include an evening of glamour, dinner, and performance of “The Great Gatsby” by Fayette County Community Theater. Everyone is encouraged to dress in period costumes for the evening.

March: Hail Dear Red and White: Sports Past and Present Plans to honor and recognize our hometown sports players from college sports, NBA, NFL, or MLB are underway, and there might be a “friendly little game” of softball between local first responders.

First Baptist Church was started during a Sunday School movement soon after Texas won her independence from Mexico in 1836. Later, it was admitted into the Colorado Baptist Association in 1855. The “Concrete Church” was built in 1859 on the corner of Washington and Live Oak, including a bell tower housing a gifted iron bell. The church was the largest building in town and was shared by other denominations and various organizations in the community.

In 1909, a new church building was erected on Walnut and occupied in 1910. The bell was brought to its new home and was rung every evening during WWII to remind people to pray. In 1965, the church was moved to its present location, 1700 Milam. The beloved bell now has a special place on the church lawn.

Today, it is our desire to reach people for Christ and help them grow in their relationship with Him. We strive to accomplish this in several ways. We offer Sunday School classes for children and adults of all ages, ranging from babies to Senior Adults. Our children’s ministry includes programs such as AWANA and Sunday Night Kids. Our Youth programs include Devoted and Ignite. Vacation Bible School, along with Kids’ and Youth camps, are also offered during the summers. Our Adult ministry offers weekly

bible studies, Men’s Prayer Breakfast, Ladies’ Prayer Meeting, Extra Special People, and Woman’s Missionary Union.

Our church also has service ministries where we reach out to others in need in our community such as the Clothes Closet and Men’s/Women’s Jail Ministry.

It would be our honor to have you join us as we gather each week to worship, fellowship, and spend time in God’s Word!

Santa’s Cookies

COOKIES: Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Beat butter and sugar in a large bowl until creamy. Add egg and vanilla, beat until completely combined.

Add flour, baking powder, and salt.

INGREDIENTS

COOKIES

1 cup unsalted butter, softened

1 cup white sugar

1- 1/2 tsp vanilla extract

1 large egg

3 cups flour, all purpose

3/4 tsp baking powder

3/4 tsp salt

ICING

1 lb powdered sugar

1/4 cup egg whites

2 tbsp corn syrup

1.5 tbsp water, plus more as needed

Start mixing slowly, then beat until the flour is incorporated – it will be clumpy. Dust work surface with flour, scrape dough out of bowl. Pat together then cut in half, then shape into 2 discs.

Roll out to 1/8” (for thinner, crispier cookies) or 1/4” (for thicker, softer cookies), sprinkling with flour under and over the dough so it doesn’t stick.

Use cookie cutters to press out shapes and use a knife or spatula to transfer shapes to prepared baking sheets. Bake for 10 minutes, swapping trays halfway, until the surface is pale golden and the edges are just beginning to turn light golden.

Allow cookies to cool completely on trays (they will finish cooking on the trays).

ICING: Place icing ingredients in a large bowl and beat for 1 minute on speed 5 until smooth and glossy (start on low then speed up).

Divide icing into different bowls for colouring. Add food dye and mix – keep adding colouring until you achieve the colour you are after. If icing gets too thin, add more icing sugar. Transfer icing into disposable piping bags or ziplock bags.

Snip the tiniest bit off the corner. Smaller hole = better detail in icing. Remember: You can cut hole bigger, but not smaller! You may also use a very thin piping nozzle. Pipe decorations on cookies as desired. Be creative! Serve with ice cold milk.
