HISTORY
Explore Historical Schulenburg Schulenburg, Texas is called a “railroad town,” “halfway to everywhere,” the “musician town,” “home of the painted churches,” “gateway to the rolling hills” and many others. It was founded when the Galveston, Houston and San Antonio Railway reached here in 1873. At that time the many people in the communities of Lyons and High Hill moved to the new railroad town of Schulenburg.
SCHULENBURG WAS NAMED AFTER LOUIS SCHULENBURG, WHO DONATED THE LAND FOR THE CITY. Schulenburg was named after Louis Schulenburg, who donated the land for the city. The community was granted a post office in 1874 and incorporated in 1875. Before the town of Schulenburg was born, English, German, Czech and other European citizens settled this area, bringing with them their religion beliefs, tools and way of life. Another land donor, John Christian Baumgarten Sr., was one of the original “Forty-eighters” from Germany. Baumgraten built a cottonseed-crushing plant in the community and also operated a lumberyard, planing mill, sash and door factory, and cotton gin. In 1883, he opened the Schulenburg Oil Mill, which manufactured Baumgarten Process Allison Flour from cottonseed.
In 1884, the community had 1,000 inhabitants, two churches, a bank, schools, thirteen general stores, and four saloons. Schulenburg had electric lights by 1896, and in 1900 the community had 1,149 inhabitants. By 1914, it had Baptist, Catholic, Lutheran, and Methodist churches and the G. E. Ruhman plant, which manufactured steel furnaces and wire goods. The population of the town rose to 1,246 in 1920, 1,640 in 1930, and 1,970 in 1940. In 1945 Schulenburg had 112 businesses, including two manufacturing companies, three cotton gins, a machine shop, and the Stanzel Company—a model airplane factory. Today you can learn more about the Stanzel Company at the Stanzel Museum in Schulenburg. The population of the town continued to increase in the postwar period, reaching 2,207 in 1960, 2,347 in 1980, and 2,455 in 1990. The population was 2,699 in 2000 and 2,945 in 2015. Schulenburg has a rich musical heritage, especially polka music, and has had several orchestras. You can learn more at the Texas Polka Music Museum.

ROCKY CREEK CORN MAZE
Historic artifacts of the development of Schulenburg are on display. The Schulenburg Historical Museum was established by John and Karen Wolters. John is the great-grandson of Robert A. Wolters who started a mercantile business in Schulenburg and became one of its more prominent citizens. The building housing the current museum exhibits was the old Wolters Mercantile built in the early 1900s. The museum has been housed in this building since 1988 at the largesse of the Wolters family, but in December 2014 the Wolters estate gift-deeded the current building, and the building next door, to the museum. 631 N. Fall fun for the whole family every October and November. Over 2.5 miles of paths in an eight acre field of corn. Everyone will also enjoy games, food, activities, and a petting zoo. It’s good farming fun for kids, parents and grandparents. TEXAS POLKA MUSIC MUSEUM The Texas Polka Music Museum is dedicated to preserving the history and legacy of polka music in Texas by honoring Texas polka bands and musicians of Czech, German and Polish ancestry. Docents gladly share their knowledge of the exhibits in the three museums. The tour begins with a multimedia presentation showing the history of flight and how it passionately influenced Victor and Joe Stanzel. The factory wing of the Museum gives visitors an opportunity to experience the development and manufacturing of model aircraft in an era when aviation and rocket technology was in its infancy. It’s been decades since the old-fashioned meat market and butcher shop was a fixture in every small town in Texas. Rows of prepackaged meats at the local grocery store have taken misguided customers away from skilled meat cutters. Fortunately for Schulenburg, two specialty meat markets are thriving by offering products and selections that draw customers back time and time again. CITY MARKET Founded in 1945, City Market at 109 Kessler Avenue in Schulenburg is on its third generation of family ownership. Today, it is a father and son operation comprised of Roy Smrkovsky and his son, Lukas. “In high school, I wanted to do my own thing,” said Lukas. “I worked at City Market for my dad during the summer and after school but I didn’t discover an interest in it until after college. My wife and I are happy to be back in Schulenburg and raise our kids here. I never thought sausage making would be a passion of mine, but I take a lot of pride in making a good product that people enjoy. We focus primarily on sausage making and we are proud to make sausage for other meat markets and barbecue joints all over Texas. I like to describe City Market as mostly a sausage company that has a little barbecue restaurant attached to it.” At City Market, barbecue customers are welcome to go out to the pit room to order and watch their meat cut right in front of them on a butcher block that Lukas says is probably older than he is.

“The barbecue side is something my grandpa and dad did for years,” added Lukas. “Back in those days, barbecue wasn’t that popular – it was a way to sell undesirable meat. Now barbecue is all the rage but the way we prepare it hasn’t changed. We’ve done it like this a very long time and we have fun with it. It’s something we can do to give back to the community that has done so much for us.” In addition to sausage and barbecue, City Market also offers their own bacon and jerky, as well as fresh meats, raw steaks - prime and choice grade. Customers will also enjoy their marinated items that include rib eyes, fajitas and chicken. Ask for their homemade wieners made from a recipe that goes back to the 1940s. WILLIE JOE’S PROCESSING
Paddy is proud to offer a lot of custom cuts that a lot of other places don’t offer. They also vacuum pack all of their meats for freshness. Willie Joe’s distributes jerky all around the US but offers customers a walk-in meat counter, grass-fed and grainfed beef, custom processing, deer processing, and smoked meats. “Everything we make here is smoked in our plant,” added Judy Thompson, plant manager at Willie Joe’s. “We’ve been growing so fast,” said Paddy. “People keep finding this little shop in High Hill. We’re going to keep serving our customers the best way we know how.” “It’s all about the smiles on our customer’s faces,” said Judy.
Paddy and Kaaren Magliolo are the husband-and-wife team at Willie Joe’s Processing at 2218 Krischke Road in Schulenburg. Butchering is in Paddy’s blood – his grandfather was a butcher and ran a meat market in South Dakota in the 1940s. “I was an animal science major at Texas A&M,” said Paddy. “I was also in the restaurant business for 12 years before this, mostly with barbecue. I’ve always been interested in meat and cattle and worked as a ranch manager for a big ranch here in Schulenburg. Growing up, I spent a lot of time working on my grandfather’s cattle ranch. The meat industry really caught my attention after going into the restaurant business and I wanted to go further. When Willie Joe Svetlik approached me that he was ready to retire, it was a perfect fit. My wife and I are raising our kids in Schulenburg and this has been great for us.”

HONORING THEIR HERITAGE
Svetlik Farm BY EMILY HENDERSON
Svetlik Farm is a rustic and elegant wedding and event venue located in High Hill, Texas. This special place holds cherished family history, dating back over 70 years. The beautifully renovated venue you see today used to be a full-functioning barn, where the Svetlik family lived and worked. The Wick sisters, Jackie, Shelly and Debbie, granddaughters of Willie and Louise Svetlik, had a vision of transforming their grandfather’s old hay and livestock barn, into an event venue that exudes elegance - all while honoring the Svetlik name and heritage. “From the beginning, our hope for this venue was to preserve the Svetlik name,” said Erica Strickland, Debbie’s daughter-in-law and social media manager for Svetlik Farm. “We want to share this special place with newly married couples and their families so they, too, can have memories that they will cherish for a lifetime. What better way to honor our beloved family than to have an abundance of love and celebration under one roof for years to come?” The barn was built in the 1950s after their family purchased the property. “Grandpa and Grandma Svetlik lived off the land, raising cows, chickens, pigs, and turkeys,” shared Debbie. “The field adjacent to the once lived-in farmhouse, now a bridal suite, boasted a three-acre private garden which fed the family. When there was a surplus, locals came to pick for their own tables. The back pastures were used for cash crops, which the family worked together.” Mother of the sisters, Delores Wick, was the oldest of five children. One of Shelly’s favorite stories, as told by her mother, reveals why they chose the windmill as their logo. “It’s a symbol of bringing their family together,” Shelly said. “Mom told us they would be working in the fields and grandma would cut Top, a couple enjoys a dance at Svetlik Farm; bottom, the Svetlik sisters stand proudly in front of their remodeled family farm.

the windmill on when it was time to eat. That’s how they knew lunch was ready.” The sisters fondly recalled stories of spending weekends on the farm with their grandparents while growing up. Grandpa Svetlik was a family-centered man and wanted to live within walking distance to a church. This way, they could always get to Sunday service even if he had to stay behind to work the farm. That was the motivation behind buying this specific plot right down the road from Saint Mary’s Catholic Church, in High Hill. The sisters chuckled as they recalled wearing their grandpa’s boots to go feed the pigs, whose pens were where the parking lot is now located. “They came all the way up to our hips and we would get stuck in the mud, so we would tumble out and stomp all the way back to the house barefoot – covered in muck,” shared Debbie.
Grandma Svetlik was a wonderful baker, and the family has great memories of enjoying her delicious kolaches, cookies, homemade noodles, and bread. Their grandmother was a classic matriarch, and the sisters’ fondness of her poured out as they spoke of her.
“
From the beginning, our hope for this venue was to preserve the Svetlik name. “Our grandma would milk the cows, and she would squirt the barn cats,” Jackie stated while laughing, endearingly. “After her five children were grown, she would always bring the family together again for Christmas on the farm.”

While updating the barn, the family aimed to keep the structure’s original details, highlighting its history and sentimental significance. The beams overhead, as well as the visible tin roof, are its authentic mid-century materials. All of the design choices were handled by the family, truly making it a product of love. There are many folks behind the scenes who help keep the Svetlik Farm wheels spinning and they are the definition of a real family-owned business. To give you some perspective – from the electrical work, to lawn-mowing, and even building the farmhouse tables and silo bar – all of this work is done by the family. There’s a hub of activity at Original Kountry Bakery in Schulenburg every morning, all the way through lunch. The rich scent of baked goods radiates to the welcoming front porch - you’d be hard pressed to find anything that smells better than fresh baked kolaches. Lynn Heller is carrying on a family tradition started by her parents, Clarence and Evelyn Besetsny, in 1979. “Mom was Czech and she started baking at home,” said Lynn. “Growing up in the country, I recall taking her baked goods into town to people. My dad, who is of German descent, was a farmer but that really wasn’t going well. They decided to purchase this house and turn it into a bakery. Mom and Dad both mixed the dough and baked, along with the help of the Schoeneberg ladies. I was nine years old when they opened the bakery up and so my first job was making boxes. In high school, I went to school half a day and then I would come here and work. After I
graduated, I ended up staying here and working up front. When Mom retired, we got into baking pies and birthday cakes.” Conveniently located right along Highway 77 in Schulenburg, Original Kountry Bakery is easy to find and a known hot spot amongst travelers. “People from all over were quick to find us,” added Lynn. “We get a lot of travelers from Houston on their way to San Antonio and, to this day, people will come in and say, ‘You know, we can’t pass Schulenburg without stopping here.’” Today, Lynn is hands on, running the bakery and working alongside her tenured employees.

“We really appreciate our customers,” said Lynn. “We hear so many good things from the customers and we just want to keep it going. We plan to update the inside soon, but nothing major. I want to keep it the same because why mess up a good thing? Original Kountry Bakery is a legacy to my parents and we wouldn’t be here without them. We will be serving fresh baked goods and lunches to our customers for years to come.”

With an estimated population of nearly 3,000, Schulenburg is far from being considered a metropolis. Although some people leave small town life for big city dreams, Roland Proske decided to return to the area he called home and take his trade, along with his family, to settle in Schulenburg. With his hard work and perseverance, the iconic Schulenburg Printing was established in 1978 with partners Adolph Proske and Jerome Pavliska. Today, Schulenburg Printing is still a family affair. Roland’s son, Jeff Proske and Adolph’s sons, Randy and Chris Proske, sit at the helm, along with their wives, Terry, Phyllis and Emma and extended family who all work alongside their long-tenured employees. As a team, they offer the experience of dealing with virtually every aspect of the printing, office supplies, office furniture, promotional item and janitorial products business. “My father moved us back here in the ‘70s when I was a freshman in high school,” shared Jeff. “It was a hard move but also
actually a pretty good time – it was the best move. Dad and his partners started the business in a central location and Schulenburg is conveniently located between Houston, San Antonio, and Austin … and close enough to Moulton, where he and Adolph grew up. I actually ran a press for him, cleaned up around the place and did whatever he needed.” The rest is family history. Randy joined Roland in the move to Schulenburg to be a pressman, and after Jerome left the business, Randy became a partner, eventually climbing to president. Chris joined the business in 1982, and Jeff in 1984 after graduating from college. Both became partners in 1984. And it didn’t take more than a nudge to convince Jeff’s son, Doran, to come home after college and settle in Schulenburg three years ago. He already works for Schulenburg Printing and it looks like he’ll

Well, that’s if he can convince his dad to reluctantly retire. “We’re very fortunate to have a generation behind us,” said Jeff. “I’m very fortunate that my son decided to come back and I know he did it for my father. He was really close to him and I know he didn’t want to see what he built go away. Plus, he wanted to live around here and loves being in a small town, which is unusual for most these days. Within the next 10 years I would hope to retire but with my son coming along, that has given me more energy. I want to help him build something that can sustain him, his family, and their employees. I’ll work here until I feel like I don’t want to. I give a lot of credit to my father for building this company the right way and instilling in all our employees, myself, and my two cousins the work ethic and what’s important about taking care of your customers.” Recognizing his community, Jeff is quick to voice an appreciation for their support. “I love what I do,” shared Jeff. “I don’t know what else I’d do. Home of the Painted Churches The Painted Churches are located in the communities of Dubina, High Hill, Praha, and Ammannsville. They appear unassuming as you approach them, but as you enter the front doors prepare to have your breath taken away by the incredible beauty found inside.
A tour unlike any other. Schulenburg’s Painted Church Historic Tour is one of the top destinations in the world! The churches are all active and do conduct services on Saturdays and Sundays. You may tour the churches Monday-Saturday 9 a.m. to 4 p.m., but please be respectful of any events or services that you may encounter. In addition, the church at Praha requests that all visitors be out of the church by 3 p.m. on Saturdays. Romantic rooms in a vintage farmhouse and rustic cabin, aglow with the patina of lovingly restored collectibles, welcome guests and invite them to get cozy. The front porches offer breathtaking views of wide open pastures that give way at night to a sky full of sparkling wonder. It’s the picture most people conjure when they imagine renting a place to escape the big city lights. And it’s an accurate portrait. You’d be hard pressed to find a more peaceful place to stay on your next visit to Schulenburg. “Both places are peaceful and quiet,” said Joey Gooch of The Farmhouse and Cabin at Freyburg. “We have a lot of repeat customers who have enjoyed staying here for the tranquility, giving people a serene getaway. And we’ve
been at it awhile. My mother and I started doing this over 30 years ago.” Keeping the traditions that his mother, Lucille Gooch, originally instilled in him, Joey takes great pride in making sure his guests have a comfortable place in the country to enjoy. “The Farmhouse boasts a big, back deck with plenty of privacy,” added Joey. “There’s also a propane barbecue pit, a large fire pit with firewood supplied, and a walking trail where guests can enjoy viewing wildlife in their native habitat along with a variety of birds and butterflies. And the best part? There’s no wi-fi, only a regular TV. It’s an opportunity to unplug and unwind.

“The cabin overlooks a large area where guests can enjoy cattle in the pasture, as well as deer and sometimes wild turkeys. At night, when the stars come out, guests will want to sit out on the porch and take in the cool breeze. Schulenburg, Texas is a friendly, vibrant community and the perfect stopping point during that trip from Houston to San Antonio on I-10 or when you travel State Highway 77, the shortest route north or to the Texas Valley. Thanks to a railroad depot that was built in 1873, Schulenburg was quickly put on the map. Since then, the population has more than doubled and the town is now surrounded by the many open fields within Fayette County where you can easily spot cattle and wildflowers. Being the home of the Shorthorns, Schulenburg has a public school system, a Catholic elementary school and a Blinn College campus. Meet the Neighbors WEIMAR - Weimar’s picturesque downtown bustles with businesses, shops, great eateries, antique shops and a tavern where locals play dominoes and German card games. Wildlife Park where unparalleled adventure awaits the entire family. “We don’t utilize small cages,” shared Dean Robicheux, one of the owner/operators at the park. “Our animals are running free and interacting with each other in their own unique environments and habitats over four separate ranges. We have the Dunes that is rocky and arid, Lower Grasslands Range that is like the African savannah, Sahel which is a transition in Africa between the Sahara and the Sudanian savanna where our giraffes reside, and Lowland Forest where you’ll find a swampy, forested area. In the Lowland Forest area, you can walk among the animals along a three-quarter mile elevated wooden boardwalk for a unique experience unlike any other.” Hatari Wildlife Park is located at 1145 CR 218 in Weimar or online at HatariPark.org.

FLATONIA - A charming town proud of their Czech and German heritage with beautiful landscapes, ranches and countryside surrounding the town. There are a wide variety of antique and gift shops, a pharmacy, and an old-world museum. Flatonia is still a well known and scenic spot for train watchers, boasting one of Texas’ longest standing, manually operated railroad switching towers with North-South, East-West cross rails. The 9-hole course at the Flatonia Golf Course facility features 3,056 yards of golf from the longest tees for a par of 36. The fairways are narrow and the greens are elevated. Flatonia Golf Course is located at 1245 East US Highway 90. HALLETTSVILLE - Their annual Kolache Festival every September offers a full day of family entertainment. The day starts off with the Kolache Fest Parade on the town square, then moves to the Hallettsville Knights of Columbus Hall for the domino tournament, kolache bake-off, polka music, arts and crafts booths, kolaches and more! LA GRANGE - La Grange is nestled along the Colorado River and features history, beauty, festivals, museums, concerts, antiques, air shows, feasts, and an annual county country fair.
