WEIMAR’S DAYS OF OLD
Historical Weimar, Texas COMMUNITY FINDS THEIR PLACE ON THE MAP IN 1873, CONTINUES MOVING FORWARD TODAY
Centrally located on Interstate 10 and US 90 between San Antonio, Austin, and Houston, Weimar is a friendly community founded by mostly Czech and German descendants.
years. It would soon be known far and wide for pecans, dairy, and poultry products. The Weimar Mercury, the first town newspaper that still exists today, was established in 1888.
Weimar was founded in 1873 when it was discovered that the Galveston, Harrisburg and San Antonio Railway was going to be constructed through the area. The town was first named Jackson, after D. W. Jackson, a native Georgian who donated land for the railroad and town site. The name Jackson didn’t stick and the majority promptly chose the name Weimar. An early account says that resident Thomas W. Pierce visited Weimar, Germany, and was favorably impressed, passing on encouragement to others that their new town should be its namesake.
Industry and agriculture continue to dominate the area today. Weimar was well known for leading the area in sheetmetal works, oil field gasket manufacturing, feed, poultry, corn, pecans and beef.
The Weimar post office was established in 1873 and was incorporated in 1875. Weimar started with only a few hundred people but grew to over 1,000 residents in only ten
A strong history of baseball exists in Weimar. Veterans Park - Strickland Field was ahead of its time when it was built in 1948, and was the first lighted baseball field between San Antonio and Houston. Veterans Park remains a state-ofthe-art baseball stadium, having hosted a Babe Ruth League World Series Tournament in 2005.

Whistling Duck Vineyards & Winery is located at 1211 County Road 273 in Weimar.
Housed in the Old Hill Bank building, the Heritage Society Museum of Weimar focuses on exhibits tracing the city’s history, beginning with the original land grant from the Spanish government to Henry Austin in 1831. Surveying tools and personal effects of Weimar’s founder, D.W. Jackson, are displayed. The Main Street area of the museum gives a fascinating glimpse of life into Weimar’s early days. Strolling down “the street,” visitors can view a doctor’s office with a full-size skeleton on a stand beside an old-fashioned examining table. In view is an amputation kit and a wooden leg belonging to Peg-Leg Strunk, an early area rancher. WHISTLING DUCK VINEYARDS AND WINERY began with John and Kari Cooke and Stan and Mary Beth Johnson, who started with 50 vines in 2007. Today, those 50 vines have grown to cover over four acres. The Cookes and Johnsons have worked very hard at creating wines that draw in guests from all around the area - and the word is spreading fast. Although it’s the outstanding wine that keeps guests coming back, it’s also the consistent flow of entertainment that they find at The Duck, an affectionate moniker given by their fans. You’ll find them at 1211 County Road 273. M-G FARM SERVICE CENTER - Just like general stores from days gone by, M-G Farm Service Center has a wide variety of housewares, hardware and tools, lawn and garden supplies, fencing materials, fertilizer in bulk, and feed for all of the critters around your place. Customers always flock to the firearms section because their selection of guns and ammo is by far the best in the area. M-G is also a Stihl dealer, offering the very best in chainsaws, trimmers and supplies. Shoot, they even have a complete garden center/plant nursery and a wide selection of frozen food options. Didn’t we say they have everything? Stop in today and pick up exactly what you’ve been looking for along with a few things you didn’t know you needed. M-G Farm Service Center is located at 201 East Post Office Street in downtown Weimar.

Twisted Steel Design’s PA L AC E T H E AT E R TODD AND DANA SHERRILL SHARE STORIES – THEIR OWN AND THAT OF THE BUILDING THEY RESCUED BY KARA KLEIMANN

mall town single-screen movie theaters (aka picture shows) are largely chronicles of an era replaced by corporate, multiscreen cinemas. While some of the original buildings still stand, many are dark and empty. Fortunately, this is not the case in downtown Weimar. Thanks to new owners Todd and Dana Sherrill, the old Palace Theater is getting her next chance to shine. Since opening in 2019, Twisted Steel Design has already made its mark in Weimar as a unique and artsy retail shop, where customers can find one-of-a-kind gifts and décor. In addition, owners Todd and Dana Sherrill provide art classes for novice and experienced artists alike. A talented welder from a young age, Todd has always had a penchant for creating. His true passion is working with metals; hence the name Twisted Steel Design. Todd’s talent, however, is not limited to metalwork, as can be seen in the current renovations of the Palace Theater building. Though admittedly “crafty,” Dana did not choose art as a career initially. “I refinished furniture when I was young. Then I went to college,” Dana humbly stated, “I got a masters in physics. I was an engineer for twelve years.” Wanting to escape the corporate world, she reconnected with her artistic side. Dana found her passion for restoring furniture came back quite naturally. Needing a larger space to offer art classes, Todd and Dana were encouraged to purchase the old Palace Theater directly across the street from their shop. Todd explained, “I was shown the building; I went and walked through and that was about the extent of it. I called the owner and we worked out a price.” Laughing, Dana chimed in, “the only thing holding the doors closed was a screwdriver.” A fixer-upper, the theater’s chairs had been removed prior to purchase and much of the flooring and walls needed to be replaced. “We had the front entryway re-stuccoed and new tile put down,” Todd described.

Everybody has stories about the old theater
Conversely, the upstairs film room was intentionally left in its original state. In unison, Todd and Dana verified, “The original projectors, picture tubes, strikers, exhaust fan” are as they found them. Todd acknowledged, “some people just want to see the old picture area.” Though dusty, the nostalgic equipment is truly a step back in time.
Top right, view of the theater from an opening in the film room upstairs; above, the original doors (newly restored) of the Palace Theater’s main entrance; set of iron angel wings used as a sample to show results of the patina process
Built in 1932, the Palace Theater functioned as a classic picture show until the late 1980s. After the theater’s closing, the building served briefly as a bar/night club. And, though primarily vacant for two decades, Weimar locals will remember the building periodically being transformed into a haunted house at Halloween and hosting pageants for the Gedenke! Festival. Todd and Dana have been invigorated by locals who want to share their childhood memories. “Everybody has stories about the old theater,” Todd began. “They remember seeing a specific movie or bringing a girlfriend here.” Dana

continued, “people tell us, ‘I ran the projector’ or ‘my mom ran the projector.’” Those stories help to breathe life into the old theater. Though the restorations continue, the building has already held several art classes. The largest of the classes thus far hosted over thirty people who had the joy of creating a pair of unique iron-carved angel wings. This specific class was a true joint effort for Todd and Dana. “I’m the metal guy;” stated Todd. “I cut the wings.” Dana jumped in, “I designed them, and he helped me do the finishing touches.” Class participants were then guided through creating a colorful patina finish of their choice. Twisted Steel Design offers a variety of classes from pour painting to holiday projects to open paint bar evenings. Classes include instruction and all materials to complete a project and take it home. Go see for yourself in the old Palace Theater building at 110 East Post Office Street. Weimar Meat Company KEVIN AND SADIE ELSTNER TALK ABOUT THEIR NEW VENTURE In a perfect world, two quandaries can be solved concurrently with one unified answer. Such was the case when the Elstner and Kasper families found a win-win resolution that advanced everyone involved. When it became difficult for Kevin and Sadie Elstner to find a place to process their cattle, Kevin declared, “I’ll just have to build my own packing house.” After learning at a dinner party that the local processing plant may be for sale, Kevin inquired further. Soon he and Sadie were the proud new owners of Kasper Processing. Out of respect to the Kasper family, Kevin and Sadie attempted to keep the name of the plant. Unfortunately, marketing and
logistics became too difficult, so the name was changed to Elstner Meat Processing LLC dba Weimar Meat Company. For third generation rancher Kevin Elstner, ranching is in his blood. “My grandfathers on both sides were ranchers,” Kevin confirmed. “My father worked for a packing plant back in the 70’s.” During part of his childhood, Kevin’s father was a butcher and his mother wrapped meat at Rubin’s Grocery in Weimar. Sadie, on the other hand, gained much of her knowledge through their children’s activities. “Kaleb and Emily showed junior commercial steers

for both Houston and San Antonio livestock shows,” explained Sadie, “and they showed commercial heifers at the Colorado County Fair.” Being involved for many years with the livestock show projects, Sadie learned everything from genetics to beef and carcass quality. “I didn’t realize how much I knew until I owned my own packing house,” Sadie laughed. After several months of renovations and upgrades to meet current standards, the newly owned processing plant was up and running in February 2022. “We kept all the employees that were here,” Kevin stated, including Freddie Blaha who still serves as a main butcher. “We were nervous,”
Sadie remembered, “because experienced butchers are hard to find but to our surprise they agreed to stay with us.” The original packing house began operating over a century ago; in the 1950s another structure was built. And, in the mid-1970s, the current building was constructed. “It’s really amazing,” Sadie marveled, “the architecture that went into planning and building this plant. Our beef is literally twice the size today, and they were prepared then for what we still use.” The original railings and hooks are still in use; the plant has a holding capacity of eighty cows. Opening any business can be risky, but Kevin and Sadie have confidence in the cattle industry, their customers, and their company. “People want to know where their beef comes from,” Kevin verified. Farm to table producers, the Elstners raise and process their own cattle for retail. However, their own products are only a portion of the livestock that comes through the processing plant. “Farm to table is huge right now,” Sadie added, “ninety percent of our customers raise their own beef. We process it, package it, and put their private label on it.” In addition to beef, Weimar Meat Company processes pigs, sheep, and goats. A variety of meat products and retail items are available for purchase as well.
The Elstners’ success is due in no small part to the family’s cohesive work ethic. While ranching is a full-time job for Kevin and Kaleb, Sadie works daily at the processing plant. In addition, Sadie’s oldest son Joshua helps at Weimar Meat Company on weekends and their daughter Emily works in the summer while home from college. Elstner Meat Processing LLC, Weimar Meat Company is located at 2109 W Highway 90. For more information, call 979-725-6203 or visit their Facebook page. Holman Valley Steakhouse WENDEE GALLEYMORE PROVES TO BE MORE THAN YOUR TYPICAL RESTAURATEUR The building Holman Valley Steakhouse and Dance Hall call home has a rich past, a secure present, and a promising future. Over a century after its premiere the entire structure is not only standing, it is thriving. Dating back to 1888, the original building was a general mercantile for the budding community of Holman. Back in the day, at various intervals, the current building boasted a general store, bar/saloon, and dance hall; it also served as a post office and voting precinct. Opened as a restaurant in 1984, Holman Valley Steakhouse was owned and operated by David & Judy Hajovsky for 30 years. Wendee Galleymore purchased the restaurant and property from the Hajovskys in 2014 and currently accommodates a packed house every weekend. More than a successful restaurateur, Wendee is an exceptional person with an enormous heart. As I interviewed Wendee about her restaurant, she did not mention menu items or sales or seating capacity. Instead, she bragged about her employees, past and present, and discussed people she has collaborated with to bring about positive change. In 2017 Wendee was approached by friends wanting to rent the entire restaurant for a rehearsal dinner. Not wanting to close the restaurant to the public, Wendee offered the couple an exciting alternative. “Come here,” Wendee told them, “Let me show you this.” That was the sentence that led to the revival of the dance hall at Holman Valley Steakhouse; the

Having served as a giant storage area for decades, Wendee admitted, “it was literally full of junk, but we brought it back to life.” Since then, the stage has featured such classics as Moe Bandy and Johnny Lee as well as a variety of newcomers and local artists. Being raised alongside a brother with special needs, Wendee is keenly aware of the challenges faced by both special children and their families. WEIMAR NATIVE
Meet Gonzalo Garcia MORE THAN JUST A SPOT ON THE MAP, WEIMAR IS FOREVER HOME TO THIS FAYETTE SAVINGS BANKER Living in Weimar his entire life, Gonzalo Garcia is fiercely loyal to his community. Known since childhood as “Gonzie” by family and friends, Gonzalo attended St. Michael Catholic School and graduated from Weimar High School, where he ran track and cross country. Gonzalo worked at Gindlers department store in downtown Weimar until it closed in 1999, at which time he was offered a job at Flatonia State Bank. In addition to a new job, he was given a new nickname. “My boss gave me the name Gonzo, so that’s my banking name,” Gonzalo laughed. Twenty-five years later, Gonzalo remains passionate about banking, currently serving as a personal banker at Fayette Savings Bank in Weimar.

Facing page, from top, the street view of Fayette Savings Bank of Weimar; Gonzalo Garcia is ready to help the next customer at Fayette Savings Bank. Left, the friendly staff at Fayette Savings Bank; above, personal banker Shannon Rosenauer and lobby manager Jennifer Moring check their totals before making deposits. “I enjoy helping people,” Gonzalo stated, “I especially like helping our Hispanic customers. They can relate to me because I speak Spanish and they’re comfortable with me. A lot of them will even ask for me to wait on them. It makes me feel good.” Gonzalo’s passion for helping people is easily witnessed outside his workday. Active in many community endeavors, Gonzalo is a committed member of Weimar Rotary Club. Named in honor of the rotary member who started the project, Gonzalo talked about the David McCoskey Memorial Coat Drive. “I help set up the annual coat drive. We put barrels out at the school and at city hall and here at the bank,” Gonzalo explained. Working in conjunction with Weimar FFA, the donated coats are distributed to children and adults in need. By choice, Gonzalo has remained in his hometown because he loves the friendliness of the small town. “Weimar always
seems to come together,” Gonzalo said matter-of-factly. Gonzalo shared examples of tragedy and of joy – a family needing funds for their son’s burial and students needing financial assistance to go on a high school band trip to Disney World. Whatever the situation, Gonzalo confirmed, “when someone needs something, people in Weimar step up.” Gonzalo’s current boss, Jennifer Moring, describes Gonzalo as an amazing and caring person. “I can always count on him to get the job done,” Jennifer affirmed. Because the two had worked together at a previous bank, Jennifer recalled, “When this job (Gonzalo’s current position) came open, he was the first person I thought of. Gonzalo is a great worker, and I was happy to fill the position locally.” Gonzalo Garcia can be found during banking hours at Fayette Savings Bank in Weimar, 709 S Eagle Street. The bank is online at fayettesavings.com.

Weimar’s Gedenke! Festival
Loosely translated from German, the word gedenke means think of or remember; thus the festival is held in hopes local residents will remember their hometown and attend the festival. The festival includes games for all ages, a biergarten, several live bands, a parade, arts and crafts, a barbecue cook-off, and a 5k fun run/walk. There is no charge for admission or parking. Our beloved festival grew from the combination of several local festivals and is now the city’s main celebration each year on Mother’s Day weekend.

COMING HOME
Jim Sanders of Cavender Auto Country WEIMAR NATIVE SHARES HIS PASSION FOR HIS HOMETOWN “Living the dream” is everyone’s goal. Happily, Jim Sanders is doing just that, but his “dream” went through a few revisions before reaching full fruition. Jim Sanders sold his first vehicle thirty years ago. “The first car I sold was a 1994 Honda Accord special edition,” Jim began. “It was Heather Mist which I remember because my sales manager told me ‘This is a hard color to find so we have to hold the price.’ I hung in there and somehow convinced the customers to buy it. I was happy; they were happy. I was hooked,” Jim laughed. “I’ve loved the car business ever since.”
28 | WEIMAR, TEXAS
Born and raised in Weimar, Jim is a 1984 graduate of Weimar High School. “I moved away after high school and went to school at UT Austin,” Jim shared, “I was a voice major and became an opera singer and sang opera professionally for a couple years.” Then, Jim went into the restaurant business. “I helped open the first la Madeleine in the Houston area,” Jim confirmed. While he was successful on the opera stage as well as in the restaurant business, he did not encounter his true passion until he was hired by Gillman Honda in 1994. Starting in Rosenberg, and ending up in San Antonio, Jim had found his niche in the car business. In 2014, Jim began his career with the Cavender dealerships. Five years later, Jim was delighted when he was offered a new opportunity. “Stephen Cavender
called and said ‘I’ve got a surprise for you. How would you like to take over Brasher Motor Company in Weimar?’” Jim admitted, “It was a dream come true. I was going home.” Shortly after moving back to Weimar, Jim and his family purchased and moved into the house his grandparents had called home throughout his childhood. “About eight months after moving to town,” Jim explained, “my grandparents’ house went up for sale. I bought it the same day.” Actively involved in his community, Jim is a member of the Rotary Club, Lions Club, Economic Development Council and the Chamber of Commerce for Weimar. Jim also proudly serves on the Weimar ISD School Board. “I have three children in the Weimar schools.
29 | WEIMAR, TEXAS
I got on the school board because I want to make sure our school system is following the same path it has been. I’m very happy with the Weimar schools,” Jim confirmed. “I love the teachers. I love the culture … even back when I graduated, the school system did a lot to prepare me for the world … I felt almost an obligation to give back to the school. I’m a Weimar Wildcat through and through.” Jim Sanders is the general manager of Cavender Auto Country at 1700 I-10 East in Weimar, and online at cavenderautocountryweimar.com. Facing page, Jim Sanders stands in the Cavenders showroom with a new convertible Corvette Stingray; above, one of Cavender’s mechanics works under the hood of a GMC Acadia.
