Late Mail Luncheon attracts who’s who of racing Considered one of the hottest tickets during Spring Carnival in Melbourne and Perth, the Medallion Homes Late Mail Luncheon is coming to Adelaide. An intimate gathering of racing elite and special guests, SA’s first Late Mail Luncheon will be held on Friday, May 4 at the Intercontinental Adelaide to celebrate and preview Centrebet SA Derby Day (May 5), and will be followed by an Official After Party that evening. The Adelaide event will be attended by a host of legendary names including the trainers of Black Caviar, Mark Ricciuto, Anthony Cummings, Tony McEvoy, Leon Macdonald and Hall of Fame legend John Letts, as well as official Luncheon Ambassadors Olivia Nunn and Emily Kristina Santic (daughter of Tony Santic owner of Makybe Diva) and many more. Funds raised at all Late Mail Luncheon events across Australia help fund emergency cardiac intervention laboratories. Just 100 tickets are available to the general public. Tag Team scouts out and about Those who attended the King William Road Street Party in January may have noticed fashion scouts of a different kind. Wearing jockey silks and boots, The Races ‘Tag Team’ has been combing the streets of Adelaide in search of the city’s best dressed guys and gals, challenging them to translate their street style into racewear by entering Fashion at The Races. With only seven of the 26 participating race meetings remaining before the SA Fashion at The Races Final in May, the ‘Tag Team’ is ramping up its search this festival season at events around Adelaide. Last time we caught up with Fashion at The Races Ambassador Kate Freebairn she was busy juggling media and MC duties at the Melbourne Cup Fashion at The Races event. Since then big things have happened. In January Kate married her long time beau Pete looking stunning in a custom Alexis George gown at a ceremony in Port Elliot. She also slotted in a well deserved break on her honeymoon in Thailand. Congratulations Kate and Pete!

Melbourne Cup A touch of horse racing history has come to town with the Bay Discovery Centre showcasing the 1888 Melbourne Cup to coincide with the lead up to this year’s Adelaide Casino Adelaide Cup. On loan from the National Gallery of Australia, the Centennial Cup features three magnificent horses cast in silver weighing 800 grams, and mounted on a large silver plated base. The Bay Discovery Centre is only a short tram ride away from Morphettville, so head down to Glenelg to see this beautiful piece of horse racing history for yourself until Tuesday 13 March 2012. Black Caviar
– will she, won’t she?!
When Black Caviar powered to her 19th straight victory on Lightning Stakes Day at Flemington (Feb 18), crowd numbers at the two-day carnival soared from a usual 13,000 to more than 22,000. Now rumours are spreading thick and fast that Australia’s modern day Phar Lap will run at Morphettville this Autumn before heading overseas during our Winter. We can’t confirm whether it’s true, but we can confirm that if it is, it will be bigger than Ben Hur! Watch this space.

nyone who’s ever dined in a marquee on Adelaide Casino Adelaide Cup Day will have fond memories of the delicious food and flowing beverages. But have you ever considered what happens behind the scenes to ensure thousands of hungry racegoers can dine in style? We spoke with the South Australian Jockey Club’s Executive Chef Pepe Reyes to learn what’s involved in bringing together SAJC’s day of days.
What are you serving at this year’s Adelaide Casino Adelaide Cup? We are serving a five course menu on Adelaide Cup Day plus an assortment of dishes for the cocktail and buffet menus. This year we’re serving mainly chicken, seafood and beef dishes with lots of seasonal fruits and vegetables incorporated into sides, accompaniments and desserts. The cocktail and buffet menus include plenty of seafood including king prawns, oysters and smoked salmon, as well as a variety of antipasto and meats, local cheeses, artisan breads, fresh pastries and more.

What does Adelaide Cup day entail for you and your kitchen staff?
You cook to set menus at work, but what do you like to make at home?
Adelaide Cup Day and Melbourne Cup Day are our two biggest days of the year in the kitchen. For the Adelaide Cup food preparation generally starts a full week before.
Anything I can find in the fridge! But I always use fresh, local produce – anything from the market like spinach, mushrooms, broccolini. When it comes to spices I stick to cumin, pepper and salt. That’s it. I don’t believe in messing around with food.
On the day we have around 110 staff working in the kitchen so it’s a really big job to organise it. The day before we come in to make sure everything is ready and then on Cup Day the first brigade arrives at 4am. By 10am the whole team is here. Everything is cooked fresh on the day. And then we have to clean up! So you’re usually in need of a holiday after the Adelaide Cup? I can’t take a holiday yet! We have a lot of big events coming up through Autumn so I’m saving my holidays for June!
What are your favourite Autumn ingredients? We are so lucky in this country with seafood, and I’m Spanish so I love my seafood! It doesn’t matter what time of year, I love serving prawns and oysters or anything that’s freshly caught. People also don’t appreciate the meat in Australia. We are the luckiest people in the world with the quality of meat available. I love cooking with beef. Autumn 2012

Best pub meal or favourite place to go for a drink with friends and why? The Bellum is hands down the best pub meal in Mount Gambier. They do the best schnitzels and burgers in town and it’s great for a few drinks with friends. You will not be disappointed. And will not be leaving hungry, that is for sure!
Who does your hair/make up/nails before race day?
Best thing to do and/or best tourist activity an on a weekend in Mount Gambier and why? One must-see tourist attraction in Mount Gambier is the beautiful ‘Blue Lake’. It is a lovely walk around the Blue Lake and also the surrounding area. Another of my favourite things to do in the area is to go for a drive to the surrounding beach towns such as Carpenter Rocks, Port MacDonnell, Robe and Beachport.
My favourite salon in Mount Gambier is Vanity Make-Up Bar & Body Lounge. It is the best beauty salon in town. They offer a wide range of services such as make-up, nails, massage, facials, pedicures and much more. If you’re wanting to get anything like this done before race day, this is the place to come. They are always busy, especially on race day, so be sure to make an appointment to be pampered and look fabulous.
