Blue Ridge BBQ Blue Ridge Barbecue and Music Festival again proclaimed NC State Barbecue Championship The Blue Ridge Barbecue & Music Festival will once again be the home of the State Championship. Governor Pat McCrory has formally decreed that the Blue Ridge Barbecue & Music Festival held annually in Tryon, “shall be known as a North Carolina State Championship,” and that June 14 & 15 “shall be ‘The Blue Ridge Barbecue Festival Days’ in North Carolina.” The festival is celebrating its 20th year and is expected to attract thousands of people to this small foothills town. Festival Chairman Chuck Britton indicated that there are a number of special attractions to celebrate the 20th anniversary. “We will be hosting the cast and crew of Destination America’s popular TV show, BBQ Pitmasters, during the festival, and our guest will get to watch the filming of an upcoming segment of the show,” said Britton. “And we will have a return visit by the “Great American BBQ Tour,” which made it’s very first appearance here in Tryon five years ago.” Entertainment Chairman Benton Wharton has announced a strong lineup of performers including Friday evening’s headliners Big Daddy Love and Town Mountain, and Saturday’s Donna the Buffalo and The Blue Dogs. Barbecue teams come from all over the country to compete for

more than $20,000 in titles, trophies and prizes. Among the most coveted prizes, according to Britton, is the Governor’s Trophy, the symbol of the North Carolina State Championship, which is awarded to the top finishing North Carolina team. Special competitions this year include the Reser’s America’s Best Potato Salad Challenge and the Smithfield Rib Super Series. An added feature this year is the Western North Carolina Points Chase, in which teams enter three contests — the Blue Ridge BBQ Festival, the Maggie Valley NC Barbecue Festival and the Franklin, N.C. Mountain High BBQ — and the team with the highest accumulated scores of the three contests gets the “winner takes all” prize of $1,000. Festivalgoers are encouraged to wander around “Hog Heaven” and see the cook teams in action. Then they can head to the main field to chow down on award-winning barbecue — as well as grilled corn-on-the-cob, fresh-squeezed lemonade and even items for vegetarians. The Blue Ridge Barbecue & Music Festival is produced by the Carolina Foothills Chamber of Commerce. Proceeds from the Festival help support Chamber operations and the Carolina Foothills Chamber Foundation, which annually distributes grants to a variety of charitable and civic programs.

A festival of firsts
Almost twenty years ago, June 1994, the very first Blue Ridge BBQ Festival was held at Harmon Field in Tryon. Members of the chamber of commerce held the event to raise funds to help support chamber activities. Chamber president Charlie Neff called on Tryon resident Jim Tabb, an internationally respected barbecue judge, to look into having a local BBQ event. Jim took the challenge and has been active behind the scenes ever since. Twenty-four competition cook teams and as many judges participated in 1994, and by all measure, the event was a great success! People seemed to really enjoy eating great barbecue while listening to great music. The first winner was a team from Bellevue, Washington, known as Beaver Castors. (Continued on page 10 )

The second year of the festival saw its first serious rain. That together with some high entertainment and other costs, resulted in a substantial financial loss. Civic-minded business people stepped up to the plate the following year. They individually guaranteed a bank loan that would ensure that the festival would continue. That loan was repaid in full from festival-generated funds by 2000. The first carnival rides were added in 1995. The third year the festival returned to Harmon Field, which is still its home. The Foothills Craft Fair first became a part of the annual festivities that year. When the national barbecue news created the spirit of (Continued on page 13)

Cooking Tip: Jim Tabb’s Beef Brisket Start with a full brisket (approximately 11 pounds). Before you do anything else, study the meat while it is raw to determine how to cut it when you’re ready to serve. You want to cut cross grain, and it’s hard to tell once the meat it done. A smart trick is to cut a notch in the meat before cooking that will remind you of the grain direction. Smear it with Kraft’s yellow mustard (so the dry rub will adhere) and then put the Pig Powder (BBQ Dry Rub) all over it. You can use the rub of your choice but, of course, I use only Trim Tabb’s Pig Powder BBQ Dry Rub. Refrigerate overnight. Before cooking, take the brisket out of the refrigerator and allow time for it to warm to room temperature before cooking. Don’t wrap it. Just put it in the smoker. Use a non-direct heat BBQ smoker, such as the Webber Smoky Mountain Smoker. It will need to cook from 12 - 14 hours at approximately 225 degrees. You’ll have to tend your fire, and the temperature will go up and down, that’s OK — just make it average 225. It will be done when the internal temperature reaches 185-190 degrees. Don’t panic if the meat thermometer seems to stick at, say, 160 degrees. Don’t feel you have to up the smoker heat. It just does that — then all of a sudden it’ll move up some more. About 2 to 3 hours before it’s done, at around 9 hours of cooking time, remove the brisket from the cooker and spray it with apple juice (I use a little garden spray bottle). Then smear the whole thing with apricot preserve. Wrap it in aluminum foil and replace it in the smoker for the remaining 2 to 3 hours, or until the internal temperature reaches 185-190 degrees. Slice (according to what your little notch tells you) and serve. Be sure and save the juice that collects in the aluminum foil and pour over the meat after it’s sliced. Add the sauce of your choice if you wish, but it shouldn’t need another thing.

barbecue award in 1999, the very first winner was the Blue Ridge BBQ festival. What is so special about the “spirit” award is that winners are chosen by the cook teams that participate in competitions all across the country. The first festival fireworks were added in 2004. As the festival grew, parking problems were alleviated by adding the first ever tram transport from parking fields to the main gate in 2000. Then chairman Andy Millard is credited with this and a number of other ideas that have made the event so successful. In 2004 the first all-girl BBQ team the Wood Chicks, led by Lee Ann Whippen, won the grand championship. This was a proud moment for Lee Ann’s
father, who just happens to be the festival’s founder, Jim Tabb. In 2008 (our 15th anniversary) when the Kansas City BBQ Society launched its “Great American BBQ Tour,” Tryon was its very first stop. The tour visited BBQ festivals across the country giving cooking demonstrations and BBQ tips to the crowds that gathered around its colorful mobile RV/stage. They’ll return this year to help celebrate the 20th anniversary. Last year, the first teenage cook team participated. Two 14-year-olds, Madison Arrowood and Allison Hembree formed the team called Hawgs and Kisses. The ambitious duo entered every possible category and scored two second place awards — dessert and whole hog. That would have been considered a great outcome for some of the most experienced teams.

In 2012 the Blue Dogs, after 25 years of playing shows and releasing nine CD’s and two DVD’s, continue to perform up to 100 shows a year, from clubs, festivals and colleges to corporate events, private parties and fundraisers. They've been playing primarily in the southeast, but still traveling wherever they are called, to New York, DC and Virginia, Texas, Louisiana, Florida, and of course Georgia and the Carolinas.

Leave the Bottle comes highly recommended.” Always contributing to the evolution of the bluegrass form, they toss influences as varied as surf-rock, gospel and honky-tonk country into their field of play. Banding together in 2005, Town Mountain is Phil Barker on mandolin and vocals, Robert Greer on lead vocals and guitar, Jesse Langlais on banjo and vocals, Bobby Britt on fiddle, and newest member Jon Stickley rounds them out with his steady bass and rock-solid guitar and vocals. One listen to their instantly memorable songs, and it’s plain to see why Grammy-winner Mike Bub would align with the group to produce Leave the Bottle as well as 2011’s Steady Operator, both through Pinecastle Records. Banjo player extraordinaire and longtime member of the Sam Bush Band, Scott Vestal, also joined the team by engineering the new album, which was recorded at Digital Underground Studio in Nashville, Tenn. the interplay between the twin lead instruments – Stratocaster riffs and soaring Allman-esque slide guitar on the one hand, and electric and acoustic fivestring Scruggs / Fleck style banjo picking on the other – leads the charge. Supported by a rhythm section that is equally at home in a groove or driving the bus with country, swing, funk or straight ahead rock, the musicians create a striking instrumental dynamic that ranges from bombastic assaults to soothing grooves. Above the mix, fiery lead vocals and soulful harmonies call attention to the good-natured, yet thoughtful sincerity of the words. Tryon keeps ‘em coming back for more by Samantha Hurst There’s just something about this place – the scenery, the camaraderie of competition, the people – that draws barbecue competition teams back to Tryon year after year. Donnie Weddington of Oink, Cackle and Moo is one of them. Weddington set up his site for the first time 20 years ago and has hardly missed a trip since. “The people are nice, they take care of you and they’ve got a beautiful site over here to have the competition,” Weddington said. “You know you are going to be taken care of here.” Danny Sneed and King’s Cookin team from Shelby, N.C. set up shop at the first Blue Ridge
Barbecue and Music Festival. His team’s traveled all over the United States competing too, but has been chasing Tryon’s Grand Championship for the past two decades. “We have won a first place over the 20 years time but have never put them all together to get the grand champion, so I guess that’s one thing that brings us back is trying to put everything we have into winning Tryon.” Weddington too knows about chasing though he takes a more laid-back approach to competitive barbecuing. “More often then not you don’t know what you are going to get – some people like to (Continued on page 27)

gamble, I barbecue,” Weddington said. “I heard an ol’ woman one time who said, ‘A man is going to chase something,’ I guess I chase barbecue.” Weddington travels from Tullahoma, Tenn. and he said it’s hard to explain why he makes the effort every year to pack up the RV with all the needed cooking essentials and head several hours east to Tryon. “I had been normally cooking competitions that were sanctioned by the Memphis in May network. This seemed like a more enjoyable event to take part in,” Weddington said. “I like the blind judges and not the on-site judging of other competitions.” Sneed said he loves the competition at Tryon for a couple of reasons. “They always draw in competitive teams, it’s well-organized

and the facilities are great,” he said. “It’s great to see some of the same guys year after year. We keep in touch with Carl Wharton throughout the year and see Jim Tabb and his wife at other competitions.” The King’s Cookin team used to travel to about 15 competitions a year but has slowed down to about eight or nine in recent years. He said they’ve always kept Tryon on their list.

Third annual Classic Car Show at 20th BBQ Festival On Saturday, June 15, classic cars will return to the Blue Ridge BBQ & Music Festival in Tryon. Proud owners will display their beautifully and meticulously restored cars and trucks, and all will be hoping for the glory of winning prizes and trophies. Dennis Nagle, who chairs the Festival Car Show Committee, said the event grew in its second year last year, and hopes are high for a record number of cars this year. “We could easily see up to 200 vehicles at the Festival on Saturday,” he said. “Car club members we have talked with are excited about coming and bringing their families.” Entry fee is only $20 per car and includes admission for two people. Green River BBQ in Saluda is sponsoring the event, which is hosted by The Carolina Classic Car Club (Spartanburg, SC). Registration is from 10 a.m. until 1 p.m. Winners will be announced at the awards ceremony
which begins around 5 p.m. Best of Show Car and Truck will be chosen, and trophies will be award to the top 20 cars and trucks (plus GM, FOMOCO, MOPAR and Non Big 3). NOPI Motorsports will award a trophy to the first place winner as well as a certificate to join the “NOPI Regional Winners Circle” at the NOPI Nationals in Atlanta, Sept. 21-22. There will also be a 50/50 drawing and door prizes. If you have questions about displaying a car at the festival, contact the BBQ office, at 828859-7427. Saturday’s special events include the Classic Car Show and two “Hawg” Runs (motorcycle poker runs), one originating in Greenville and the other in Asheville, both ending at the Festival. It was Chuck and his beloved brother, Gerald, who played pickup gigs for some artists while they were off contract in the south such as Mel and Tim, Otis Clay, The Kelly Brothers and many more. This gave him his first chance to play in a real band. Still in high school, Chuck recognized that music was his true calling. A member of the North Carolina Jazz Ensemble, Chuck utilizes his knowledge of gospel, jazz, and the sounds of the Delta to draw out the best of Chicago Style Blues. The result is music as rich as Muddy Waters, and as down and dirty as Howling Wolf. Backed by some of the best in Blues musicians, Beattie commands the stage with his booming voice and classic old school charm. Based in the Asheville, NC area, storyteller and musician Aaron Burdett shares an appreciation for the simple pleasures of life through his music. Burdett released his 4th album, Breathing Underwater, on September 11th, 2012. Building on the traditions of the finest performing songwriters such as John Hiatt,
James Taylor, Cat Stevens, and John Prine, Aaron’s music blends folk-rock, bluegrass, and blues with pop sensibilities. His honest songwriting pours in between hammer-on chord changes and rolling crosspicking rhythms, all the while keeping at the forefront his own unique sound and authentic voice.
