Holiday Parades

Small town Christmas at its charming best! A

rea towns will be celebrating the holidays with Christmas parades this month. The Towns of Columbus and Tryon and City of Landrum all host Christmas parades, filled with area floats and displays making their way through the decorated downtowns. The parades are all hosted downtown with the community invited to attend to see the various fire trucks, church floats, veterans, marching bands, organizations that decorate for the holidays and of course, Santa Claus. Both Landrum and Tryon hold their parades at night with the downtowns lit up for the holidays. Columbus’ parade is during the day, always on the first Saturday of the month. Saluda does not have a Christmas parade, but does have a hometown Christmas. Tryon and Landrum also have Christmas strolls. For more information about the parades or how to enter, contact the town or city hall.

COLUMBUS PARADE Saturday, Dec. 2, 4 p.m. Kicking off the season in the Foothills area is the Columbus Parade, organized by the Columbus Fire Department, and covering ground from the Food Lion plaza to Mills St. downtown. Santa will be on one of the fire trucks, and you’ll also see floats from churches, civic organizations, schools, and you might catch a glimpse of some superheroes! LANDRUM PARADE Thursday, Dec. 7, 6 p.m. Dignitaries include the parade’s grand marshal who is the Lions Club’s Citizen of the Year, local elected officials and, of course, Santa. The route begins on N. Trade Avenue between the Depot and the fire station, continues down N. Trade Avenue, turning left on E. Rutherford and progressing to Redland Road with a right turn at O.P. Earle Elementary School. The parade ends at Landrum Middle School. TRYON PARADE Wednesday, Dec. 13, 5 p.m. (rain date Dec. 20) Santa will make his third swing through the Foothills for Tryon’s Christmas Parade. Shops and businesses in downtown Tryon also welcome you this holiday season with the annual Christmas Stroll, Friday, Dec. 1, 5-8 p.m. SALUDA HOMETOWN CHRISTMAS Friday, Dec. 8, 6-8 p.m. Saluda’s businesses will host a community-wide open house and music on Main St., Greenville St., and across the bridge. Saluda shopkeepers will greet you for the holiday with refreshments and music.

HOLIDAY CLASSIC Spend a night in and watch a classic Christmas flick you’ve never seen before. Streaming movie services often put classics and obscure titles into rotation during the holiday season. 4. CHRISTMAS CONCERT Host a gathering of children where they can sing or perform their favorite tunes for an audience. Take it on the road to a nearby nursing home. 5. DINE OUT Take a break from cooking, shopping and hosting and stop into a restaurant you’ve been meaning to try. Keep it local to support nearby businesses. 6. ADOPT A CHILD/FAMILY Volunteer with a charitable organization that provides for less fortunate

SCAVENGER HUNT Plan holiday-themed trivia questions and hide small trinkets for children to find. 17. SURPRISE BOX Put a gender and age nonspecific gift into a box. On Christmas Eve or Christmas Day, the person who finds a hidden gift tag under their chair at dinner gets to open the box. 18. FAMILY PORTRAIT Wear your holiday finery and pose for a portrait that actually will be printed and framed.

SET AN EXTRA SPACE AT THE TABLE In Portugal, the Christmas feast is called consoada or “reunion of the families.” At the feast, the host sets an extra place at the dining table for relatives who have died. The offering of respect is said to bring forth a prosperous new year. CHRISTMAS DAY DIP Have a pool, lake or pond nearby? Why not take a splash on Christmas morning? Afterwards enjoy a nip of brandy.

SINGING SANTAS Get a group of men from your neighborhood together to dress as Santa or elves and go caroling with their own (maybe in tune, maybe not) versions of Christmas carols. SILLY SOCKS We’ve all seen the wild and wacky Christmas sweaters, but what about Christmas socks? They’re not hard to find, they’re a great conversation piece, and they keep your feet warm while you’re making cookies, watching TV or trimming the tree. HIDE THE PICKLE! A late 19th Century American tradition, it all revolves around a Christmas tree decoration in the shape of a pickle. For Christmas morning, a pickle shaped ornament is hidden on a branch and then the children try to find it. of the holidays RUDOLPH-TINI INGREDIENTS 2 oz. vodka 1 oz. hazelnut liqeuer 1 oz. coconut flavored rum 1 oz. half and half cream 2 cinnamon sticks 1 cherry DIRECTIONS Pour vodka, hazelnut liqueur, rum and cream into a cocktail shaker over ice. Shake until the outside of the shaker has frosted. Strained into a chilled martini glass. Garnish with cinnamon sticks to look like antlers, with the cherry on the rim between to look like a nose. CINNAMON CANDY APPLE INGREDIENTS ¾ oz. sour apple schnapps ¾ oz. cinnamon whiskey or tequila red food coloring

CHRISTMAS PUNCH INGREDIENTS 8 oz. vodka 2 oz. orange-flavored cognac 8 oz. pomegranate juice 4 oz. lemonade 4 oz. orange juice 8 oz. cup soda A dash or two of cinnamon Frozen berries, such as blueberries, blackberries and/or strawberries DIRECTIONS Mix all ingredients together in a punch bowl, stir and serve. CHRISTMAS LIGHT’S OUT INGREDIENTS 3 oz. vodka 1 ½ oz. bourbon 1 dollop of maple syrup ½ tsp. vanilla Top with milk

DIRECTIONS Pour the sour apple schnapps into a shot glass; color the cinnamon liquor with red food coloring; layer the cinnamon liquor over the schnapps by pouring it slowly over the back of a spoon.

DIRECTIONS Mix all ingredients with ice.

EGGNOG MARTINI INGREDIENTS 1 ½ oz. vodka ¼ oz. Allspice Dram 1 whole egg 1 tsp. powdered sugar 1 tsp. brown sugar 1 dash vanilla ½ oz. heavy cream DIRECTIONS: Combine all ingredients into a shaker and shake vigorously for 30 seconds then strain into a chilled martini glass. WARM BLENDER EGGNOG INGREDIENTS 2 cups heavy cream ½ cup of sugar ¼ tsp. nutmeg 4 eggs ¾ cup brandy DIRECTIONS Bring the heavy cream, sugar and nutmeg to a simmer in a pan. Blend the eggs on low speed for one minute, then gradually add the cream mixture and blend until frothy. Add the brandy and blend to combine. Serve warm.

Hot Cocoa

LAURA BUSH’S HOT COCOA Forget those envelopes of powdered hot chocolate when you can have the real deal, as shared by First Lady Laura Bush.

INGREDIENTS 6 tablespoons unsweetened cocoa 6 tablespoons sugar 1⁄8 teaspoon salt 2 1⁄2 cups milk 2 1⁄2 cups light cream 1⁄2 teaspoon vanilla Whipped cream, cocoa powder and/or fine orange zest for garnish. DIRECTIONS Mix cocoa, sugar, and salt. Add milk. Heat to dissolve. Add light cream and vanilla. Heat to just under boiling. Mix very well and pour into mug. Garnish with whipped cream, cocoa powder and fine orange zest, if desired.

LEMON GIN PUNCH INGREDIENTS 1 cup water ½ cup sugar ¼ cup honey 1 cup club soda ¾ cup fresh lemon juice ¾ cup of gin

SPICY BLOODY MARY

DIRECTIONS In a saucepan, bring the sugar and one cup of water to a simmer. Remove from heat and stir in the honey. Let cool. INGREDIENTS 3 cups tomato juice ¾ cup vodka 2/3 cup fresh lime juice 2 tsp. Worcestershire sauce 1 tsp. horseradish ½ tsp. celery salt kosher salt and black pepper to tast ½ tsp. habanero pepper hot sauce DIRECTIONS In a pitcher, combine all ingredients and serve over ice. Garnish glasses with a celery stalk and a slice of jalapeno.

Recipes for a gathering

Easy overnight turkey This recipe takes the guesswork out of cooking turkey and works great with or without stuffing. Just pop it in the oven overnight and it comes out juicy and tender. INGREDIENTS 1 turkey size Reynolds oven cooking bag One pan large enough to hold the bird (approximately 9” x 12” up to 16” x 13”) sides must be 2 to 3 inches tall. 3/4 to 1 stick of butter 1 teaspoon of minced or powdered garlic, or 2 garlic cloves cut up half an onion cut into pieces salt 1/4 teaspoon of pepper 2 teaspoons of sage

DIRECTIONS Place one tablespoon of flour in the bag and shake. Place the bag in the pan. Preheat oven to 185 degrees. Pull giblets out and set aside. Wash turkey and blot dry. Stuff the turkey with your favorite stuffing recipe (optional). Place the turkey in the bag. Melt most of the stick of butter and set aside. If not using stuffing: Cut the leftover butter (about 1/4 of the stick) into 3 or 4 pieces and place inside the turkey. Place about half the pieces of onion inside the turkey. Either place one clove of cut up garlic inside the turkey or sprinkle the inside with 1/2 teaspoon of minced or powdered garlic. Sprinkle the inside with: 1/8 teaspoon of pepper 1/4 teaspoon of salt 1 teaspoon of sage Whether using stuffing or not prepare the outside of the turkey as follows: Cover the turkey with the melted butter – remember the bottom. Sprinkle the outside of the turkey with: The rest of the cut up onion The rest of the garlic, pepper and sage Salt liberally Close the oven cooking bag using the plastic closer provided and cut three 1-inch slits in it to allow steam to escape. Place in preheated oven and allow to cook for 8 to 10 hours until pop up indicator pops up. Another indicator of the turkey being fully cooked will show on the drumsticks – they will begin to fall away from the bone. Remove turkey from oven. Cut bag away from the top of the turkey. Baste turkey with its juices and return to oven at 350 degrees for 2 minutes. Repeat once or twice until turkey is brown in color.

Homemade cornbread stuffing Moist, flavorful cornbread stuffing that is easy to stir together, this stuffing can be put in a turkey or baked alone. INGREDIENTS Large mixing bowl Baking dish at least 3 to 4 inches deep and approximately 9” x 9” 1 pan of cornbread torn into small pieces less than 1 inch Approximately 1/3 to 1/2 a loaf or so of regular bread (this can be rolls,

bread, hamburger buns, sandwich bread, etc.) torn into small pieces less than 1 inch 2 garlic cloves or 1 teaspoon of minced garlic or garlic powder 1/4 onion minced 1/2 cup celery pieces (optional) or use 1/2 teaspoon of celery salt

1/2 teaspoon of parsley salt 1/4 teaspoon pepper 1 tablespoon of ground sage 1/2 teaspoon of oregano 1 egg 1/2 stick of butter 1/4 cup turkey drippings 1/2 cup of water

DIRECTIONS Preheat oven to 350 degrees. Beat egg. Add torn up bread and cornbread and mix. Add garlic, onion, celery or celery salt, sage, pepper and oregano and stir until well mixed. Add butter and turkey drippings and stir. Add water until the mixture is slightly moist or until mixture sticks together a little. Add salt to taste. Bake stuffed into a turkey or pour into a pan and bake at 350 degrees until sides are brown (approximately 30 – 45 minutes).

Easy turkey giblet gravy from scratch This gravy is lump free and takes 10 minutes or less. INGREDIENTS Giblets from turkey – cooked and cut into small bite-sized pieces (optional). To cook giblets – boil on the stove for 45 minutes to 1 hour. 1/2 cup of flour 1 cup of water 3 to 4 tablespoons of turkey drippings 10 to 12 inch skillet – preferably iron salt and pepper

DIRECTIONS Place turkey drippings in skillet. Heat on stove at medium temperature. Begin to add flour approximately 1 to 2 tablespoons at a time. Stir continuously allowing flour and dripping to form a paste like consistency. Continue to add enough flour until all the drippings are made into the paste. As soon as paste is formed, begin adding water a tablespoon at a time stirring continuously. Turn the temperature down to medium low. Continue adding water, stirring constantly until desired thickness. Salt and pepper to taste. Add giblet pieces and serve. Too increase the yield, simply increase the amount of turkey drippings used and add water to create the paste like consistency.

Homemade Pumpkin Pie This recipe makes two rich, flavorful pumpkin pies. This recipe can be made with coconut, almond or soymilk instead of cow’s milk.

INGREDIENTS 2 pie pans 2 flour pie crusts – do not prebake 2 cups (16 oz.) of pumpkin 4 teaspoons of pumpkin pie spice 2 cups of milk if using non-dairy milk use 1 ½ cups 1 cup of sugar 4 eggs beaten 1/2 teaspoon salt DIRECTIONS Preheat oven to 450 degrees. Beat eggs in large mixing bowl. Add sugar and beat. Add pumpkin, spice, salt and milk and mix well. Pour into unbaked pie shells. Bake at 450 degrees for 10 minutes (15 minutes if using non-dairy milk). Cool oven down to 350 degrees and bake for 30 minutes or until a knife inserted into the center of the pie comes out clean. Cool before serving.

HORSE TREATS SWEET FEED HORSE COOKIES INGREDIENTS Powdered sugar 4 cups sweet feed 1/4 cup brown sugar 3 cups molasses 2 grated carrots 2 grated apples 1/2 cup flour DIRECTIONS Preheat oven to 400 degrees. Mix together all ingredients, except powdered sugar. Form into large balls and press flat onto greased cookie sheet. Bake for 20 minutes. Cool, then sprinkle with powdered sugar. HORSE CARROT/APPLE CAKES INGREDIENTS 1 carrot 1 apple 1 cup molasses 2 1/2 cups oats 2 Tablespoons oil DIRECTIONS Preheat oven to 300 degrees. Grate the carrot and apple. Mix together all ingredients. Place mixture in baking tray. Bake for 40 minutes or until golden brown. Cool for four hours in refrigerator.

HORSE CARROT CRISPIES INGREDIENTS 3/4 cup oatmeal 1/3 cup molasses 1/2 cup water 3/4 cup flour 3/4 cup bran 1/2 cup brown sugar 1 apple 2 carrots DIRECTIONS Preheat oven to 400 degrees. Grease muffin tin. Shred apple and carrots. Mix apple and carrots with molasses. Add brown sugar, water, flour and oatmeal. Scoop dough into muffin tin and sprinkle each muffin with brown sugar. Bake for 30 to 45 minutes. OAT CARROT HORSE COOKIES INGREDIENTS 1 cup uncooked oats 1 cup flour 1 cup shredded carrots 1 teaspoon salt 1 teaspoon sugar 2 teaspoons vegetable oil 1/4 cup molasses

DIRECTIONS Mix ingredients in bowl. Make small balls and place on greased cookie sheet. Bake at 350 degrees for 15 minutes or until golden brown.

APPLE AND OAT CHEWIES INGREDIENTS 1 1/2 cups unsweetened apple sauce 1 cup oat bran cereal or ground oatmeal 1/2 cup all purpose flour DIRECTIONS Preheat oven to 350 degrees. Oil a 9” x 9” square baking pan. Spread the batter evenly in the cake pan and bake for 20 to 30 minutes until firm to the touch. Keep unused treats in the refrigerator. HORSE COOKIES INGREDIENTS 1 cup oatmeal 1/4 cup molasses 2 carrots or an apple 1 tablespoon sugar 1 cup flour 1/4 cup water Pinch of salt DIRECTIONS Preheat the oven to 350 degrees. Roughly chop carrots or apple and mix with dry ingredients. Stir in all wet ingredients and the fill a baking sheet. Score into sections and spray with a small amount of oil. Bake for 15 minutes. Exploring the

s r o l o c of Christmas

S

everal theories exist as to why red and green became the hallmarks of Christmas. One such theory is that the colors evolved from pagan celebrations similar to the evolution of Christmas traditions. Prior to the arrival of Christianity, many cultures viewed the color green as the symbol of life. It is believed that, during harsh winters, evergreen trees were cut

down and brought indoors to symbolize that life still exists and thrives despite the cold and darkness of winter. Other pagan holidays featured the use of green, red and gold, including the festival of Yule. As Christianity spread across Europe and eventually other parts of the world, red and green were linked to Jesus Christ. Green still represented life, but now this was the eternal life offered by Christ. Red was said to symbolize sacrifice, namely the blood of Jesus when he died on the cross. Some Christians believe that Jesus wore a crown of holly thorns whose berries were originally white. As Jesus’ blood touched the berries, they turned red. Some theorize that the red of the holiday season represents the apples on the tree of paradise in the Garden of Eden. Around the 14th century, the faithful would put on Paradise Plays on December 24 to share the story of creation with those who could not read. It is nearly impossible to find a fruit-bearing apple tree in the winter, so a pine tree adorned with red apples was used instead. Bishops also wore red robes, further tying the color red to religious masses and celebrations. Gold is frequently used in holiday decorations as well. Gold can represent the sun and light, both important ways to ward off the dark winter. In addition, gold was one of the gifts brought to baby Jesus, making it a color of significance within the Christian faith. Red and green poinsettias also are a symbol of the holiday season, but they didn’t start the colorful tradition. Poinsettias are a relatively recent addition to Christmas symbolism, as they were only first introduced to America in 1828, when they were brought back from Mexico by Joel Poinsett. The holiday season is filled with many different colors that brighten up homes and businesses. Combined with the many twinkling lights used on displays, red and green decorations can add vitality to the dark days of December.

Polk County Toy Run Saturday, Nov. 25

he 2017 Polk County Toy Run is scheduled for Saturday, Nov. 25, rain or shine. The motorcycle parade begins at the Saluda Fire Department with registration from 11 a.m.–1:30 p.m. There will be a 50/50 drawing, door prizes and Santa Claus. Toy run T-shirts are also available for purchase. The parade begins at 2 p.m. and will go through Saluda, Tryon, Columbus and Landrum and will end at the Polk County Courthouse in Columbus. A barbecue lunch is provided for bikers who bring a new $10 toy or give a $10 donation. All donations will benefit underprivileged children in Polk County. he holiday season can be hectic, and thanks to that sometimes frenetic pace, it can be easy to put things on the back burner. While it’s OK to put off some things until the holiday season has come and gone, shipping gifts to loved ones does not fall into that category. Below is a handful of ways to ship smart and save both time and money. Ship directly to the recipient. Last-minute shoppers who are buying online can save money by shipping gifts directly to the recipient. While shipping directly to the recipient may seem less personal than sending a gift you wrapped yourself, many online retailers allow shoppers to send gift-wrapped items directly to another person. Ship early. Waiting to ship all gifts at the same time may be more convenient, but it can prove more costly as well. If you typically finish your holiday shopping just a few days before Christmas, then waiting to ship everything will cost more money than shipping gifts as you buy them. The longer you wait to ship gifts, the more you can expect to pay if you expect those gifts to arrive on time. Shipping gifts as you buy them, especially if you get much of your shopping done early, can save you short-term or overnight shipping fees, which can be significant. Comparison shop. Much like you can save money by comparison shopping for holiday gifts, you can save by comparing shipping costs as well. Pack-and-ship companies compete for consumers’ business during the height of the holiday shipping season, so compare the costs between the various pack-and-ship companies, including the postal service, to see which offers the best deal. Insure the items you ship. The holiday season is the busiest time of year for the pack-and-ship industry. While the industry is

often remarkably effective at delivering gifts intact and on time, items are sometimes lost or damaged. By insuring your packages, you’re ensuring you won’t be out of luck should your package be lost, damaged or stolen before it reaches its destination.

TubaChristmas is a fun start to the holiday season Saturday, Dec. 2

I

t was 20 years ago that Dr. and Mrs. Stan Howell introduced TubaChristmas to the Foothills of the Carolinas and since that time it has become a Christmas tradition for many people. This year we will again bring in the season with the grand,and mellow sounds of the big brass – tubas, euphonia, sousaphones and baritone horns – at the Polk County High School, on Dec. 2 at 1:30 p.m. This is a free concert, free to

players and audience, alike. TubaChristmas has a much longer history with the first performance being in 1974 at the rink in Rockefeller Center, in New York. It was created by Harvey Phillips to honor all the composers and artists who have made these instruments a special part of the music of the season. The program of carols and other songs of the season will be performed in over 300 cities, not only in the United States,

but in other countries. Players will range in age from 8 to 90. Included in the local program will be special numbers by a soloist and a small group from a local college. amie Laval’s Celtic Christmas captures the beauty and atmosphere of Scotland, Ireland, Brittany and Iceland during the holidays. An entertaining and thought-provoking family holiday experience, the show weaves a tapestry of music, dance, poetry, and stories which hearken back to the ancient Celtic celebrations associated with the Winter Solstice and Christmas. Headlining the show is Tryon-based violinist and storyteller Jamie Laval who in 2002 won the U.S. National Scottish Fiddle Championship. He has performed for Her Majesty The Queen, appeared on the NBC Today show, and presented a TEDx Talk. Laval’s recent album “Murmurs and Drones” won the popular vote for “Best World Traditional Album” in the 2012 Independent Music Awards. Laval performs with a

Rudolph the red-nosed reindeer

A

dults and children alike are familiar with the tale of “Rudolph the Red-Nosed Reindeer.” As the lyrics of the song illustrate: Rudolph the red-nosed reindeer had a very shiny nose / And if you ever saw it, you would even say it glows. Popularized by the song written by Johnny Marks and sung by Gene Autry, Rudolph the Red-Nosed Reindeer dates back to 1939. A copywriter named Robert L. May created the story of the misfit reindeer in 1939 when working for Montgomery Ward. The retail giant was producing marketing holiday coloring books for children and wanted to come up with a clever character. Although Rudolph is now beloved, May’s original ideas included Rollo and Reginald. Also, Rudolph’s famed red nose almost didn’t come to be. Because a red nose at the time was viewed as a sign of alcoholism, Montgomery Ward was hesitant to be on board with the bulbous, red snoot. A blue nose was considered, but later changed. In its first year of publication, Montgomery Ward had distributed 2.4 million copies of Rudolph’s story. The catchy tune came thereafter, followed by a cartoon short in 1948. In 1964, the stop-motion animated television special further propelled Rudolph to celebrity and became the most recognizable Rudolph adaption. Today, Rudolph is known across the globe as the reindeer responsible for navigating Santa’s sleigh through tricky weather on Christmas Eve.He continues to be loved by many, young and old.
