The history of Christmas stockings Just when the excitement of opening presents abates after the last of the packages under the Christmas tree have been torn open, children and adults alike may discover that there are more treats to be had nestled inside of stockings hung on the mantle. The hanging of Christmas stockings is a tradition with an extensive history. Several legends attribute the hanging of stockings to different people or events. Here is a look at some of the stories that have made Christmas stockings so popular. ST. NICHOLAS DAY Rather than hanging stockings on Christmas, many countries celebrate Saint Nicholas Day on December 6, and this is when stockings are proudly left out for treats. The small, inexpensive trinkets are later unwrapped and enjoyed on Christmas Day. DUTCH HERITAGE One tradition says that, in 16th century Holland, children kept their clogs filled with straw in front of the hearth for Santa’s reindeer to find. They also left treats for Santa Claus. In return, Santa would leave gifts in the clogs. Over time, stockings were swapped out for clogs.

MERCHANT’S FAMILY STORY A popular tale tells the story of a merchant, his wife and three daughters. After the wife falls ill and dies, the man becomes devastated and squanders all of his wealth on frivolous things to mask his sadness. When it comes time for


the daughters to marry, the man does not have money for a dowry. St. Nicholas hears of the plight and knows the man would be too proud to accept charity. Therefore, St. Nicholas anonymously tosses three bags of gold coins down the chimney. The man’s daughters had done the laundry prior and left their stockings hanging by the fireplace to dry. The gold landed in the stockings, thus starting the Christmas stocking tradition. ITALIAN GOOD WITCH One stocking story does not attribute the tradition to Santa, but to a kind-hearted Italian witch named “La Befana.” La Befana arrives on a broomstick the night of January 5 and fills the stockings of good children with sweet treats and toys. Bad children are awarded lumps of coal. La Befana is also credited with being the old woman who the wise men ask for directions to Christ’s manger in the Christ child’s story. After turning down an offer to accompany them, La Befana later carried gifts in search of Christ. Christmas stockings have become part of holiday traditions, and this beloved tradition has its own unique history.

Ceramic Tile Coasters Refocus plain ceramic tiles as snappy coasters. Blogger Brittany Moser of darkroomanddearly.com made these Polaroid-inspired drink rests from color photos and square tiles (a steal at 98 cents apiece). First, trim a photo to 3 3/4”W x 3 1/4”H. Using a foam brush, spread Mod Podge on the back of the image; then position it on a tile, leaving a 1/4-inch border at the top and sides, and a 3/4-inch border at the bottom. Let dry for 30 minutes. Spread Mod Podge over the photo and exposed tile borders and let dry for one hour; repeat two to three more times. Spray with clear sealant and let dry for 24 hours. Finally, affix adhesive felt pads to the underside corners of your picture-perfect tiles.

A Cheap and Chic Pouch Stitch together a handful of zippers to form one seriously cool case. Step 1: Place seven 7-inch-long zippers facedown on your work surface, positioned horizontally with the long sides touching. Each zipper pull should be on the opposite end of the one before. Step 2: With right sides facing, pin together the top edge of the bottom zipper and the bottom edge of the zipper above it. Working up, repeat this step until all the zippers are pinned together to form a rectangle. Using matching thread and removing the pins as you go, machine-stitch the zippers together, leaving a 1/8-inch seam allowance. Then, snip away any excess thread and iron the seams flat. Open the center zipper one inch. Step 3: Cut a 6”W x 8”L rectangle of coordinating fabric. Position the zipper rectangle on the fabric, right sides facing. Pin all four edges, then sew, leaving a ¼-inch seam allowance. Trim away the zipper tape ends and any excess fabric. Finally, fully open the zipper from Step Two, turn the bag right side out, and iron the seams flat.

Marigold, Honey, and Oatmeal Soap These creamy cleansers aren’t just beautiful, they also pamper your skin: Marigold soothes, honey moisturizes, and oatmeal gently exfoliates. A pound of melt-and-pour Castile base yields about six 3-ounce soaps. After drying marigolds, follow these steps: Step 1: In a large pot, melt the soap base according to the package instructions. Meanwhile, in a small, microwave-safe bowl, microwave three tablespoons honey for 15 seconds on low, until the honey is slightly runny. Stir into the melted soap base. Step 2: Add five tablespoons dried marigold petals, four tablespoons coarse oatmeal, and 10 drops mandarin essential oil. Stir to combine, then remove from heat. Step 3: Grease a six-cavity metal tartlet tin with sweet almond oil. Evenly divide the soap mixture among the cavities, then gently tap the tin against your work surface to release any air bubbles. Let the soaps set at room temperature for four hours; carefully run a knife around the edges to release.

Friday Black Friday marks the unofficial start of the

holiday shopping season. Come Black Friday, shoppers strive to get the lowest prices on gifts for their loved ones. Much of the focus of Black Friday is on finding the best deals, but it can be interesting to take a breath and learn how this phenomenon developed and how it has evolved over the years. “BLACK FRIDAY” The term “black Friday” was originally associated with gold prices and manipulation on the part of speculators Jay Gould and James Fisk. This scandal occurred in September 1869. Commodity prices plummeted 50 percent as a result, and the term “black Friday” was coined to refer to that drop. The phrase “black Friday” also became famous for all the wrong reasons in 1966. Philadelphia police used it to refer to the Friday traffic jams and crowding in downtown stores from tourists and shoppers who flooded into the city in advance of the Army-Navy football game held the Saturday after Thanksgiving each year. Bigger crowds and rowdiness contributed to long hours and stressful shifts for local police.

BLACK FRIDAY REINVENTED The retail industry started using the term “Black Friday” in the late 1980s. Spin doctors turned previously negative connotations into positive ones by associating the phrase with stores turning a profit and moving accounting ledgers from “red to black” thanks to big year-end sales. Retailers and consumers rallied around low-cost “doorbusters” and other discounted prices. Interestingly enough, according to the National Retail Federation, Black Friday really hasn’t been the most lucrative day for retailers over the years. In fact, greater profits and larger crowds are often seen on the last Saturday preceeding Christmas. SHOPPING WEEKEND EVOLVES While Black Friday may have been the catalyst, in recent years shoppers have made the entire weekend of Black Friday a lucrative one for retailers. Many stores now open on Thanksgiving and extend sales through the entire weekend. Small Business Saturday and Sunday promote patronizing mom-and-pop stores. Cyber Monday emerged when online shopping became a popular way to grab deals, and it marks the close of the opening weekend of the holiday shopping season. In 2017, Black Friday weekend attracted 174 million shoppers who spent an average of $335.47, according to the NRF.

Light it up! Stay safe when stringing holiday lights

Lighting displays are one of the many things that help make the holiday season a special time of year. Often awe-inspiring, holiday lighting displays present a perfect opportunity for communities and individuals to showcase their festive sides. Safety should always be a priority when stringing holiday lights both inside and outside a home. The National Fire Protection Association notes that, between 2009 and 2014, fire departments in the United States responded to an average of 210 home fires that started with Christmas trees per year. Lighting displays strung on home exteriors also can pose safety risks if homeowners do not exercise caution. Fortunately, various strategies can help homeowners safely decorate their homes’ interiors and exteriors this holiday season. CHOOSE A FRESH TREE. The NFPA recommends celebrants who prefer natural Christmas trees choose ones with fresh, green needles that do not fall off when touched. Dry trees are more likely to catch fire than freshly cut trees. Adding water to the tree stand each day will keep trees fresher longer. When placing the tree, avoid placing it too close to heat sources, making sure it is at least three feet away from fireplaces, radiators, candles, heat vents, or lights. 32

CHECK ALL LIGHTS BEFORE STRINGING THEM. All lights, including those going on trees inside a home and those being strung outside, should be inspected prior to being strung. These colorful creations add wow factor to humble brown paper packages. HONEYCOMB ORNAMENTS: Cut 1 ½” and 2 ½” half circles from honeycomb paper. Hot-glue one side of folded half circle to package; unfold and glue other side of sphere to box. Use a silver paint pen to draw ornament hangers. PAPER STRAW CHRISTMAS TREE: Use a pencil to draw a triangle on the top of package. Cut paper straws in graduated lengths to fit horizontally within triangle. Adhere with hot-glue. Cut two 1” pieces of straw and glue vertically at base to form a trunk. Weave a piece of string down the length of tree, adhering with dots of hot-glue along the way. Glue small buttons along length of string. YARN POM-POM: Twirl yarn around four fingers 50 times. Cut excess yarn and slide loop off fingers, making sure that it doesn’t unravel. Cinch at middle with yarn. Use scissors to cut loops and fluff with fingers. Wrap package with coordinating yarn, using ends to tie on pom-pom.

Much of the focus of each holiday season is on giftgiving, but all those gifts will eventually need to be wrapped. Stacks of presents just waiting to be covered with paper and ribbon can overwhelm gift givers, prompting them to put off wrapping gifts until the last minute. Hesitant wrappers with a pile of gifts to wrap can use these tricks to make the process go smoothly.

COVER PRICES To enable easy exchanges or returns, do not cut off the price tags of gifts. Instead, place a festive sticker over the dollar amount, but leave the scan bar visible. This way the gift recipient can return the gift with ease if necessary. KEEP SUPPLIES AT THE READY Devote a bin or bins to wrapping supplies and tools. Having scissors, paper, tape, ribbon, and more in a designated spot will cut down on having to hunt and peck when it comes time to wrap. Martha Stewart suggests getting a rotary cutter to cut long straight or decorative edges on wrapping paper. Rotary cutters may be easier to use than scissors, especially when paired with a ruler. WRAP ON A FIRM SURFACE Devote a table or counter to wrapping gifts. This will keep the paper taut and neat and make it easier to cut and position. FOR THIS COOL-WEATHER TREAT

Many nuts get plenty of fanfare, from the almond to the walnut to the peanut — which isn’t even a nut at all! However, without the familiar holiday tune “The Christmas Song,” many folks may not even know about a relatively obscure nut that tends to only turn up around the holiday season. When Nat King Cole sings “chestnuts roasting on an open fire,” he’s referring to the starchy, sweet and flavorful chestnut, which is an edible nut from a tree native to the northern hemisphere. Chestnuts belong to the beech or Fagaceae family of trees, which are native to the mountainous forests of China, Japan, Europe, and North America. Chestnuts were once staples of North American diets because they could be found quite readily along the Eastern seaboard, where many early settlers first landed their ships. Chestnuts were once were the most popular ingredient in 18th and 19th cuisine and became widely linked to Christmas dinner. Early American chestnuts were small and flavorful and were abundant in late fall. Chestnuts once had a sweet flavor when eaten raw. However, they took on a nutty

essence when roasted. Chestnut street vendors could be found sending off wafting aromas of inviting chestnuts from corner to corner. Unfortunately, a chestnut tree blight in the early 20th century decimated nearly all American Chestnut trees, leading to the demise of the domestic chestnut industry — and perhaps contributing to a declining interest in chestnuts with winter meals. Today, most chestnuts are imported from Korea, China and Italy. The Agricultural Marketing Resource Center reports that American chestnut production is less than 1 percent of total world production. The United States has 919 farms producing chestnuts on more than 3,700 acres. There may be hope for reviving interest in chestnuts as new research is trying to prevent the Asian blight that wiped out trees long ago. Chestnuts traditionally pop up in stores during the holiday season. Unlike other nuts and seeds, they are relatively low in calories or fats, but are a rich source of minerals, vitamins and dietary fiber. They can be incorporated into many different meals and are worthy additions to a healthy diet.


BUTTERY ROASTED CHESTNUTS Ingredients

Instructions

2 pounds fresh unshelled chestnuts 2-3 sprigs rosemary 1/2 cup (1 stick) unsalted butter, melted 2 teaspoons (or more) kosher salt Pinch of freshly grated nutmeg Freshly ground black pepper

1. Preheat oven to 425°. Place a large sheet of foil on a rimmed baking sheet. Place chestnuts, flat side down, on a work surface. Using a utility knife or a sharp paring knife, carefully cut through the shell on the rounded side of each chestnut to score an X. Soak in a bowl of hot water for 1 minute (this helps them steam while roasting). 2. Drain chestnuts and pat dry; place in a medium bowl. Add rosemary, butter, 2 teaspoons salt, and nutmeg. Season with pepper and toss to thoroughly coat. Arrange chestnuts in a single layer in center of foil (a few might overlap) and gather up edges of foil around chestnuts, leaving a large opening on top. 3. Roast until the peel begins to curl up and chestnuts are cooked through, 30-45 minutes, depending on size and age of nuts. 4. Transfer chestnuts to a platter, using a spatula to scrape in any butter and spices with them, and toss to coat. Season with more salt, if desired. Serve hot or warm.

Ingredients 12 tablespoons (11⁄2 sticks) unsalted butter, softened 1⁄4 cup packed fresh flat-leaf parsley leaves, chopped, plus 4 whole sprigs 1 large sprig fresh rosemary, leaves chopped, plus 2 whole sprigs 1 tablespoon chopped fresh thyme, plus 4 whole sprigs 15 leaves fresh sage, chopped, plus 3 whole leaves 3⁄4 teaspoon kosher salt, plus more for the turkey 1⁄2 teaspoon freshly ground black pepper, plus more for the turkey 1 15-pound turkey 1 lemon, quartered 8 shallots, peeled and halved 1 head garlic, cloves separated and peeled 4 cups low-sodium chicken broth or stock 2⁄3 cup dry white wine 3 tablespoons all-purpose flour

Instructions 1. In a small bowl, combine the butter, chopped parsley, chopped rosemary, chopped thyme, chopped sage, salt, and pepper, and mix well. 2. Position a rack in the bottom third of the oven and preheat the oven to 450 F. Sprinkle the main cavity of the turkey with salt and pepper. Place the whole sprigs of parsley, rosemary and thyme and the sage leaves into the cavity. Add the lemon, 4 shallot halves and half of the garlic cloves. 3. Starting at the neck end, carefully slide a hand between the skin and the breast meat to loosen the skin. Spread 3 tablespoons of the herb butter over the breast meat under the skin. Tuck the wing tips under the skin, and tie the legs together to hold the shape. Season the turkey generously all over with salt and pepper. 4. Place the turkey on a wire rack set in a large roasting pan. Rub 4 tablespoons of the herb butter over the turkey. Roast about 30 minutes, until golden brown, and reduce the heat to 350 F. Baste the turkey with 1⁄2 cup of the broth. Cover only the breast area with a sheet of heavy-duty aluminum foil. Scatter the remaining shallots and garlic cloves in the pan around the turkey. 5. Continue to roast the turkey for about 11⁄2 hours, basting with 1⁄2 cup of broth every 30 minutes. Remove the foil from the turkey breast. Continue to roast the turkey, basting with pan juices every 20 minutes, about 1 hour longer, until it’s golden brown and a thermometer inserted into the thickest part of the thigh registers 165 F. Transfer the turkey to a platter and brush with 1 tablespoon of the herb butter. Tent it loosely with foil and let it rest for 20 minutes before carving. 6. Using a slotted spoon, transfer the shallots and garlic from the roasting pan to a plate. Transfer the pan juices to a medium bowl, then skim off and discard the fat. Set the pan over two burners on medium-high heat. Deglaze the pan with the wine and 1 cup of chicken broth, scraping up any browned bits. Bring the sauce to a boil, reduce the heat to medium, and cook until it’s reduced by half, about 4 minutes. Pour the sauce into a large measuring glass. Add the degreased pan juices, and broth, if necessary, to equal 3 cups of liquid. 7. Blend the flour into the remaining herb butter until combined. Pour the broth mixture into a medium saucepan and bring to a boil. Gradually whisk in the herb-butter mixture. Add any accumulated juices from the turkey platter and boil until the gravy thickens enough to coat a spoon, whisking occasionally, about 6 minutes. Add the remaining shallots and garlic to the gravy and simmer for 1 minute. Taste and adjust the seasonings, if necessary. Serve the turkey with the gravy.


STICKY CHOCOLATE GINGERBREAD Makes an 8-inch cake

Ingredients

21⁄3 cups dark molasses 6 ounces dark chocolate (60 to 70 percent cocoa solids), grated 13⁄4 cups all-purpose flour 2 teaspoons ground ginger 5 ounces whole pieces preserved stem ginger, drained and roughly chopped 1 stick (8 tablespoons) unsalted butter, softened 1⁄2 cup plus 2 tablespoons dark brown sugar, sifted (to remove lumps) 2 medium eggs, beaten 1⁄2 teaspoon baking soda 2 tablespoons milk, warmed A pinch of salt Extra-large crystallized ginger pieces, to scatter (optional) A deep 8-inch square cake pan or 8 x 6 x 3-inch oval cake pan

Instructions

Preheat the oven to 325 F. Grease and line the base and sides of the cake pan with nonstick parchment paper. Put the molasses in a pan and heat gently until hot, but do not allow it to boil. Remove the pan from the heat and add

the chocolate. Stir until melted. Sift the flour, ground ginger and salt together in a bowl. Add the stem ginger and toss it around in the flour until every piece is coated. Using an electric mixer, cream the butter and sugar in a large bowl. Beat in the eggs, then the molasses and chocolate mixture and finally the flour mixture. Dissolve the baking soda in the milk and gradually beat this into the batter. Pour into the prepared cake pan, scatter with the crystallized ginger, if using, and bake for 45 minutes. Reduce the oven temperature to 300 F and bake for another 30 minutes. (If using the oval pan, cook for about 45 minutes at the higher temperature, then about one hour at the lower temperature, as it will be deeper.) A metal skewer inserted into the center should come out clean. Let cool for five minutes in the pan, then turn out onto a wire rack and let cool completely. When cold, store in an airtight container for at least a couple of days to mature and become sticky. Don’t worry if it sinks a bit in the middle — this is normal.

Ingredients 1 pint fresh strawberries, washed, trimmed and halved 1 store-bought (or homemade) chocolate cookie pie crust 2⁄3 cup sugar 1⁄4 cup cornstarch 2 tablespoons unsweetened cocoa powder 1⁄4 teaspoon minced crystallized ginger 1⁄8 teaspoon ground nutmeg Pinch of kosher or sea salt 6 large egg yolks 21⁄2 cups half-and-half 6 ounces bittersweet or semisweet chocolate, chopped 1⁄2 tablespoon rum extract 1 teaspoon vanilla extract Additional strawberries for garnish (optional) 42

Instructions 1. Place the strawberry halves in a single layer in the bottom of the pie crust. 2. In a medium saucepan, whisk together the sugar, cornstarch, cocoa powder, ginger, nutmeg, and salt over medium heat. 3. Whisk in the egg yolks to create a thick paste. Gradually whisk in the half-and-half until the mixture thickens, about 5 minutes. Bring to a boil and cook for 1 minute. Remove from the heat. 4. Add the chocolate and whisk until combined. Add the rum and vanilla extracts. Cool the mixture for 4 minutes. 5. Pour the filling over the strawberries and up to the top of the crust. Chill the pie for 2 hours or until set. 6. Garnish with additional strawberries, if desired.

Instructions 1. Preheat oven to 425 degrees F. Wrap beets in a large piece of foil and bake until easily pierced with a paring knife, 35 to 45 minutes. When cool, peel and cut into wedges. 2. Toss together bread and oil on a baking sheet; arrange in a single layer. Season withs alt and pepper. Bake until golden brown 8 to 10 minutes. 3. Toss together romaine, cabbage, cauliflower, cucumbers, sunflower seeds, beets, toasted bread, and 1/2 cup Pan-Dripping Vinaigrette. Season with salt and pepper. 4. Serve with remaining vinaigrette alongside.

Instructions 1. To marinate the shrimp, combine the olive oil, red wine vinegar and garlic in a large bowl. Stir to combine. Add the shrimp and allow to sit, covered, for 1 hour. Stir occasionally. 2. Prepare a medium fire in a charcoal or gas grill. Soak the skewers in water for at least 30 minutes to prevent them from burning. 3. To make the tomato sauce, bring a medium pot of water to a boil. Place one or two tomatoes at a time into the boiling water. Watch them and, as you see the skin split, remove with a slotted spoon and place in a bowl of cool water. At this point, it will be very easy to slip off the skins. 4. Cut the peeled tomatoes into a small dice. Put the cut tomatoes into a large bowl. Add the onion, garlic, salt, pepper, and honey. Stir gently to combine. 5. Skewer the shrimp, 3 per skewer. Grill the skewered shrimp for 1 to 2 minutes on each side, until they are pink. Sprinkle lightly with sea salt and a couple grinds of fresh pepper. 6. Just before serving, add the basil leaves to the tomato sauce. Taste and add more salt if necessary. 7. Ladle the tomato sauce onto a serving platter and arrange the skewers on top of the sauce. Garnish with more basil leaves and enjoy!

To prep husks: Soak corn husks in hot water. Place heavy pot on top of husks to keep submerged at least 1 hour. Once pliable, rinse each corn husk. To make dough: In large bowl, mix corn flour, baking powder and sea salt. Using hands, mix in warm vegetable broth to make firm dough. In mixer, cream butter and shortening until fluffy then add dough in small amounts until well mixed. Continue mixing at lowmedium speed 5 minutes, scraping dough off sides of bowl. Reserve dough. To make filling: In large skillet over medium heat, heat olive oil; saute red onion and garlic until translucent. Add zucchini and mix 1 minute. Add tomato, dried oregano and sea salt; continue mixing 1 minute. Add corn and chopped cilantro. Stir and continue cooking about 2 minutes more; zucchini should be cooked but al dente. Remove filling to heatresistant bowl. In small bowl, combine enchilada sauce and Tabasco pepper sauce. Add half of sauce mixture to filling; mix

well. Reserve remaining sauce. To assemble tamales, spread 2 tablespoons dough onto wide end of each corn husk. Dough should extend across corn husks, except 1 inch on sides and about 3 inches from narrow end. Scoop about 1 tablespoon zucchini and corn filling into middle of dough. Add 1 teaspoon reserved sauce over filling and one strip cheese on top. Fold right side of corn husk over filling and seal closed with dough. Fold over left side of corn husk tightly and fold narrow end of corn husk up. Cut strips from extra corn husks and tie around each tamale to secure. Place tamales vertically, filling-side up, in steam pot with enough water to steam 40-45 minutes. Cover tamales with extra corn husks to trap in steam; place lid on pot. Tamales are ready when masa dough separates easily from husks. Add water to pot, as necessary, for longer steaming. Let tamales rest 10 minutes before unwrapping. Remove corn husks before serving.


LASAGNA WITH BROCCOLI AND THREE CHEESES Instructions

Ingredients 1 15-ounce container ricotta 1 pound frozen broccoli florets — thawed, patted dry, and chopped 21⁄4 cups grated mozzarella 1⁄2 cup grated Parmesan Kosher salt and black pepper

1 16-ounce jar marinara sauce 1⁄2 cup heavy cream 8 no-boil lasagna noodles 2 tablespoons olive oil, plus more for the foil 4 cups mixed greens 1 tablespoon fresh lemon juice

Heat oven to 400 F. In a large bowl, combine the ricotta, broccoli, 2 cups of the mozzarella, 1⁄4 cup of the Parmesan, 1⁄2 teaspoon salt, and 1⁄4 teaspoon pepper. In a small bowl, combine the marinara sauce and cream. Spoon a thin layer of the sauce into the bottom of an 8-inch square baking dish. Top with 2 noodles, a quarter of the remaining sauce, and a third of the broccoli mixture; repeat twice. Top with the remaining 2 noodles and sauce. Sprinkle with the remaining 1⁄4 cup of mozzarella and 1⁄4 cup of Parmesan. Cover the lasagna tightly with an oiled piece of foil and bake until the noodles are tender, 35 to 40 minutes. Uncover and bake until golden brown, 10 to 15 minutes more. Toss the greens with the oil, lemon juice, and 1⁄4 teaspoon each salt and pepper. Serve with the lasagna.

The rise of craft and home brewing has created more beer flavor profiles than ever before. In fact, there’s likely a beer for everyone, whether you’re a novice or connoisseur. The Brewer’s Association, a trade association that represents small and independent American craft brewers, reports that, in 2018, small and independent brewers collectively produced 25.9 million barrels and experienced a 4 percent total market growth. The BA also states that these small brewers achieved a collective retail dollar take-in of $27.6 billion. While wine will always have its enthusiasts, beer is fast on its heels as a popular mealtime beverage. Much in the way wines are paired with certain foods, it has become the natural course of action to pair certain foods with particular styles of beer. “Beer is a great match for food because of the complexity of its flavors, its ability to provide refreshment and to interact with many food flavors,” says Marc Stroobandt, a master beer sommelier for the Food and Beer Consultancy, UK.

Commonalities, like aromas and subflavors, also work together. A beer with roasted notes may pair well with chocolate, for example. Opposites also attract, in that a spicy food may taste best when paired with a sweet beer. Pairing might once have been limited to matching wines with certain foods. But the booming craft beer business has popularized pairing flavorful beers with foods to make meals even tastier.


Come the holiday season, hot toddies are ideal for entertaining, providing spirited fun and a means to chasing away the winter chill. Hot toddies have been around for centuries. Usually a mix of a spirit — either whiskey, rum or brandy — hot water, honey and spices, some believe the word “toddy” comes from an Indian drink of the same name that is produced by fermenting the sap of palm trees. Other sources say the hot toddy was created by Dr. Robert Bentley Todd, an Irish physician who prescribed a drink made of brandy, white cinnamon, sugar syrup, and water. The drink was dubbed the “hot toddy.” Hot drinks embellished with alcohol were long used for medicinal purposes. While alcoholic beverages are no longer used as medicine, hot toddies can still chase away a chill. “Grog” is another name given to hot alcoholic drinks, or any drink in which unmeasured amounts of spirits are mixed with other ingredients. Grog may also refer to a water-and-rum mixture that sea merchants once drank. The water kept the merchants hydrated, while the rum prevented the water from spoiling during voyages. The classic hot toddy can be a versatile drink used to keep guests comfortable and cheerful. This warm libation is soothing and savory, mixing citrus, honey and spices, which each have their various health benefits. Gingerbread cookies and houses are one of the many symbols of the holiday season, alongside Christmas trees and twinkling lights. In fact, few confections symbolize the holidays more so than gingerbread. Many a child (or a child at heart) has spent hours carefully trying to create decorative gingerbread houses. Although gingerbread recipes span various cultures, gingerbread houses originated in 16th century Germany. The fairy tale “Hansel and Gretel” helped solidify the popularity of gingerbread, which became part of Christmas traditions. Even though gingerbread houses can be fun to make, there’s no denying it can be exacting work — especially for those who strive for perfection. Prepackaged kits attempt to take some of the guesswork out of the equation, but those who are crafting from scratch can employ these tips as they build their gingerbread houses. • Go for form and not flavor. Few gingerbread houses ever get eaten, so focus on finding a dough that will bake up rock hard as opposed to one that tastes good. • Get the right icing texture. Pastry artist Catherine Beddall says royal icing is the preferred “glue” to adhere gingerbread pieces. Beddall says icing should be thick like 52

peanut butter and not runny. • Mind the dough. Do not roll out the gingerbread dough too thin or it may become brittle after being cooked. Always cut out shapes before the gingerbread is baked. Let the baked pieces sit overnight to cool completely before using them to build. • Patience is key. Allow the icing to dry for at least a couple of hours after adhering each piece and before moving and handling the house, says Beddall. Work in stages so that individual items can be decorated and allowed to dry. Then the walls can be put together, followed by the roof pieces. • Kids likely will need help. Children may not have the patience or steadiness to handle complete gingerbread construction. They can decorate the separate pieces of the house while the components are laying flat, which is easier for kids. Adults can do the main assembly later on. • Utilize a template. Free-handing may not be easy. Cut out templates using cardboard or posterboard for various gingerbread pieces. One of the most important tips is to have fun. Don’t take gingerbread house making too seriously as a novice. Rather, enjoy the experience and the centuries-old tradition.
