TOOTIE AND JEFF STOEHR, TRYON Tootie: I remember when our entire family came to Cashiers, NC from across the country to spend Christmas time with my parents. We lost power. We had no water, no heat, no electricity… nothing. We had to survive

with whatever we had available. The whole family had to gather up all the clothing we could find to keep us warm. My father wore one of those big Russian-type hats, a scarf, and a bathrobe most of the time until we got the power back. That was a Christmas

memory I’ve always remembered. Jeff: When we were kids from around the ages of 5 to 12, we would go to the Whitney Theater (Hamden, CT) on the day before Christmas. This was so that parents could get organized.

SAM CHAFFIN, INMAN When I was little and living in Texas, we would always have a huge extended family dinner for Christmas Eve. My papa would dress up as Santa Claus and run around in the yard and we’d look out the window and think that was really Santa Claus! We never caught on.

LISA RODRIGUEZ, LANDRUM My family always gets together on Christmas Eve. We have a wonderful dinner that night and then we each get to open one present.

JUDY SMITH, GREEN CREEK I was raised by my aunt in Green Creek. I remember one year, probably in the 70s, we gathered at her house to have a Christmas Eve dinner and it was so warm we had to eat outside. And I also loved that my aunt would sit on the floor with all the kids and read “The Christmas Story” to us. I’ve never forgotten that.

MAGGIE CARTER, LANDRUM When I was in first grade, I got the new “Barbie and The Three Musketeers” movie. We watched it on the couch, and it was snowing. That was special.

GWEN & TIM RYAN, COLUMBUS We got married a week before Christmas last year which makes Christmas one of our favorite holidays ever. We’ll be married one year this Christmas, and we are very excited.

DIANA HERNANDEZ, LANDRUM We moved to the United States when I was four. And during that first year here, it snowed on Christmas day. So luckily, I had my first white Christmas.

BRIDGETT MCSWAIN, LANDRUM When my son was less than a year old, he started to open his presents. He freaked out over the sound of the paper being unwrapped. I just thought that was funny, and I’ve always remembered it.

TANIA SHEALEY, GREER Every year in the ‘70s, my mom would take us to the Omni International Mall (Miami, FL). The mall had this ginormous carousel. We would dress up and get our photos taken with Santa and on the carousel. Those were some of my best years.

CARRI BASS, TRYON When I was a kid, I had this soap called Fuzzy Wuzzy soap. It was a way our parents got us to wash our hands. As you washed, it furred up like an animal. You washed more because you wanted to wash as much as you could because when it was used up, there was a prize!

I and celebrations at my grandmother’s house with our extended family was always love seeing their little faces light up. a favorite event. There were about 40 of us that had meals together and exchanged gifts. We had many happy memories.

STEVE & HARRIET DEROSSETT, SANTA CLARA, CA For sure, the first Christmas with my wife is our favorite memory. We’ve been married 57 years.

ZAREAH HUGHES, BOILING SPRINGS, SC A favorite memory is when my cousins and aunt came over and we would unwrap one present on Christmas Eve. After that, we’d go to Waffle House, come back home, and go to bed. And then we would anxiously await Christmas morning.

KEVIN PARKER & VIOLET, TRYON The first time my mom came to visit us down here in Tryon is a special memory. The Holiday Stroll was going on in downtown Tryon. She was overwhelmed by the sense of community and about how excited and friendly the people were. That was an exclamation point on why we live here.


ANITA SUMMEY, SALUDA Each year Saluda has the Hometown Christmas, which we sometimes call, “The Christmas Stroll.” The downtown is decorated beautifully, the stores are open, carolers are singing, many visitors come. It’s so wonderful to come downtown to experience it all. It’s just a great time each holiday season.

FIFTY YEARS OF JOY THE CHRISTMAS HOUSE

F

or decades, families have enjoyed the astonishing holiday display presented annually at The Christmas House in Inman. It has been a given that generations of families will make the trip each holiday season. In fact, many families come back

two or three times during the weeks that the grounds are open. And while it brings joy to all of those who come through, the joy is also felt by Bill and Sandra Montgomery. It is their home, and they anticipate opening night as much as the thousands of people who will come

VISITING INFORMATION: The Christmas House at 360 Foster Road in Inman opens Thanksgiving night and will close on New Year’s Eve. The displays are on from 5:30 until 10 each evening. There is no admission charge. Donations are appreciated to help keep the lights on, to purchase

through this year. And this season is special – it’s the fiftieth year The Christmas House has been welcoming guests.

It was Sandra’s parents, James and Doris Blackwell, who first started the tradition in 1973. Little did they know that what was their humble

Cornish Game Hen with Kale Sweet Potato Salad Prep time: 20 minutes Cook time: 1 hour, 10 minutes Servings: 4

1 package (6 ounces) stovetop stuffing 2 cups chopped apples, divided 4 Cornish game hens (20 ounces each) 1/2 cup butter 2 teaspoons Italian seasoning, divided 1 teaspoon paprika 1 teaspoon salt, plus additional, to taste, divided 1/2 teaspoon garlic powder 1/4 teaspoon black pepper 2 large sweet potatoes, peeled, cut into 1-inch cubes 2 tablespoons olive oil

1 package (10.9 ounces) Fresh Express Sweet Kale Chopped Kit Heat oven to 350 F. Prepare stuffing according to package directions. Add 1 cup apples and fluff stuffing with fork; cool 15 minutes. Remove anything inside hens, rinse cavity with cold water and pat dry. In small saucepan, melt butter over low heat. Add 1 teaspoon Italian seasoning, paprika, 1 teaspoon salt, garlic powder and pepper; mix well. Remove from heat. Fill cavity of each hen with apple stuffing. Place hens in 13-by-9by-2-inch baking dish. Tie legs together and tuck wings under. Baste with butter mixture. Bake 50-60 minutes,

or until thermometer inserted in thickest part of thigh reads 165 F and stuffing temperature reads 165 F. Baste with butter mixture every 1520 minutes. In bowl, toss sweet potatoes with remaining Italian seasoning and olive oil. Arrange in single layer on sheet pan. Sprinkle with salt, to taste. Bake with hens 25 minutes, or until tender. Remove from oven and cool. Tent hens with foil and let rest 10 minutes. Place greens from salad kit in large bowl. Add remaining apples and sweet potatoes; mix well. Toss with salad dressing. Add toppings; toss to combine. Serve Cornish game hens with sweet potato kale salad.

Sweet Potato Rounds Yield: 16-20 rounds 2 medium sweet potatoes 2 teaspoons olive oil salt, to taste 2 tablespoons butter 1 bunch fresh sage, stems removed 4 ounces goat cheese 8 slices Prosciutto di Parma, halved Preheat oven to 425 F. Line baking sheet with foil or parchment paper. Peel and slice sweet potatoes into 1/2-inch rounds. In medium bowl, toss sweet potatoes with oil and lightly season with salt, to taste. Arrange rounds in single layer on prepared pan; bake until sweet potatoes are lightly browned

and tender, about 20 minutes, flipping halfway through. In small skillet over medium heat, bring butter to simmer. Add half the sage leaves. Cook until crispy, 2-3 minutes. Remove to paper towel and season lightly with salt, to taste. Repeat with remaining sage leaves. Reserve 2 teaspoons butter. In small food processor, combine goat cheese and reserved butter; whirl until smooth. To make rounds, remove goat cheese to plastic zip-top bag. Cut off one corner and pipe small dollops of cheese onto each round. Top with half slice prosciutto and one crispy sage leaf.

asparagus in pot 2-3 minutes. While asparagus is cooking, fill large bowl with ice water. After 3 minutes, plunge asparagus in ice bath and let cool. To soft-boil eggs, bring pot of water to boil. Gently place room temperature eggs in water and simmer 3-4 minutes. Remove eggs with slotted spoon and cool under running water. Serve asparagus and eggs alongside baby carrots, radishes and little gem lettuce. Drape prosciutto slices over some vegetables and between others. To make dip: In small bowl, whisk miso, lemon juice and water until smooth. Add yogurt, herbs and salt. Season generously with cracked pepper, to taste; mix and serve with platter.

To make cran-raspberry layer: In medium bowl, stir cranberry sauce, orange juice and orange zest. Gently fold in raspberries. To assemble: In 10-cup trifle dish, layer 1/3 quinoa mixture, 2 tablespoons almonds, 1/3 cran-raspberry mixture, 1/3 vanilla cookies and 1/3 yogurt mixture. Repeat layers twice. Garnish with remaining raspberries and almonds.

Pumpkin Pecan Rice Pudding Bars Prep time: 10 minutes Cook time: 40 minutes Servings: 4-6 1 bag Success White Rice 1 cup pecans 4 cups coconut milk 1 can (15 ounces) pumpkin puree 3/4 cup brown sugar 2 teaspoons pumpkin pie spice 1/2 teaspoon salt 3 eggs 1/2 teaspoon vanilla extract 1 cup heavy whipping cream 2 tablespoons maple syrup Prepare rice according to package directions. Preheat oven to 350 F. Spread pecans on baking sheet and toast 8-10 minutes. Cool then chop. In large saucepan over medium-high heat, combine milk, pumpkin, brown sugar, pumpkin pie spice and salt. Bring to boil, stirring constantly. Slowly add about 1/2 cup hot liquid to eggs and beat well. Stir egg mixture back into saucepan and cook over medium-high heat 2 minutes. Remove from heat and stir in cooked rice, vanilla and pecans. Pour mixture into greased 13-by-9-inch baking dish. Bake, uncovered, 30 minutes, or until knife inserted near center comes out clean. Whip heavy cream to soft peaks then add maple syrup and continue beating until peaks form. Serve with warm pudding. Tip: For sweeter pudding, increase brown sugar to 1 1/2 cups.
