Br e akfast Whether you want to wake your family on Christmas morning with savory or sweet scents, these following recipes will make getting out of bed on cold winter mornings so much easier.

Goodwin’s breakfast casserole This is a good recipe to prepare over the holidays. It can be put together in the evening, refrigerated overnight. Breakfast is a snap on Christmas or New Years morning. Use a 9x13 baking dish. Ingredients 1 lb. sausage (I use hot) or you can use ham 6 Eggs 2 Cups milk 1 tsp. salt 1 T mustard (sometimes I use regular, spicy or dry, depending on what I have) 3 slices bread (or more), cubed to cover the bottom of the pan. 1 cup grated sharp cheese Directions Sauté sausage and drain. Pour over the bread cubes. Beat eggs with milk, salt, pepper and mustard. Pour over sausage. Refrigerate at least four hours or overnight. Bake 350 for about an hour. Happy eating! This warms up very well. Also after the casserole is cool cut it into serving size pieces, wrap and freeze. – recipe submitted by Fran Goodwin

Whole wheat pumpkin oatmeal pancakes Love making up a batch of flapjacks for the whole family to enjoy on Christmas morning? How about taking it up a notch with this recipe by adding pumpkin for a boost of flavor and oatmeal for texture. Ingredients 2/3 Cup whole wheat flour 2/3 Cup rolled oats 1 1/2 tsp baking powder 1/2 tsp baking soda A few shakes of cinnamon Pinch of salt 1/2 tsp vanilla 1/3 Cup canned pumpkin puree 1 tsp pumpkin pie spice 1 1/3 Cup low-fat milk Directions Preheat and lightly grease a griddle. Combine flour, oats, baking powder, soda, cinnamon and salt. In another bowl, whisk milk, pumpkin and vanilla together. Slowly combine wet ingredients with dry ingredients. Pour batter, about 1/4 cup at a time onto the griddle. Cook for 2-3 minutes, until bubbly then flip and cook for another 2 minutes. Serve warm with maple syrup and butter.

Crowd Pleasin’ Casserole Ingredients 1 pound sausage – cooked and drained 3 cups grated cheddar cheese 3 eggs, slightly beaten 1 cup cooked grits 1 package Jiffy corn muffin mix 1¾ cup hot milk ½ Cup butter, melted Directions: Preheat oven to 350 degrees. Grease a 2-quart casserole dish. Layer sausage and 1 cup cheese. In a bowl, combine eggs, muffin mix, milk, butter, and grits. Pour over sausage and cheese. Top with remaining cheese. (May be refrigerated at this point.) Bake at 350 degrees for 40 minutes or until middle is set.

Warm backed oatmeal Ingredients 2 cups uncooked quick-cooking oats 1/2 cup packed brown sugar 1/3 cup raisins 1 tablespoon chopped walnuts 1 teaspoon baking powder 1 1/2 cups fat-free milk 1/2 cup applesauce 2 tablespoons butter, melted 1 large egg, beaten Cooking spray Directions: Preheat oven to 375 degrees. Combine the first five ingredients. Next combine milk, applesauce, butter and egg. Add this to the oat mixture and stir. Pour into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.

Scrumptious breakfast frittata Ingredients

6 eggs, beaten 1 bell pepper, fine diced 1 onion, fine diced 4 -5 pieces bacon, fried and crumbled thickly 2 -3 pieces flat sausage, fried and crumbled 1/4 Cup cold milk 1/4 T salt 1/4 tsp. cayenne pepper 1 tsp. garlic, fine diced Cheddar and colby cheese, shredded salt and pepper Directions: Put oven on broil. Fry bacon and sausage and drain. Use some of the bacon grease to saute peppers and onion. Halfway through, add garlic and salt and pepper. While this is cooking, beat the eggs together with the milk, cayenne and 1/4 T salt, add fresh ground pepper. When onions and peppers are done, crumble sausage and bacon and mix back into the pan. Pour the egg mixture over all of this and use a rubber spatula to spread egg mixture and even everything out. Add about 1/2 cup shredded cheese mixture onto top and let cook over medium heat for 3-4 minutes. Take off burner and add immediately to oven under broiler. Let cook until cheese is melted and slightly browned. Push sides of frittata with a wooden spatula or spoon to help loosen from the pan. Plate up with oregano or parsley sprinkled on top. ** You can change this up to suit your tastes by adding mushrooms, spinach or even asparagus. Saute vegetables first to soften.

Christmas morning muffins Ingredients Makes 12

1 1/3 Cups All-purpose flour 3 tsp. baking powder 1/2 tsp. baking soda 1/3 Cup sugar Freshley grated nutmeg Juice of 1 or 2 clementines or small oranges 1/4 Cup milk 1/4 Cup unsalted butter, melted 1 Large egg 5 Ounces dried cranberries Topping: 2 tsp. sugar 1/2 tsp. cinnamon Directions: Preheat the oven to 400 degrees. In a large bowl, combine the flour, baking powder, baking soda and sugar, and add a generous amount of fresh nutmeg. Set aside. Take a liquid measuring cup, and measure 1/4 cup milk. Then add freshly squeezed orange juice to the milk until the liquid reaches the 2/3 cup mark. Add melted butter and the egg, and

beat to combine. Pour the liquid mixture into the bowl of dry ingredients, and stir until the ingredients are just combined but lumpy. Fold in the cranberries and chocolate chips, if using. Divide the batter among 12 muffin cups. In a small bowl, combine the sugar and cinnamon. Sprinkle over the tops of the muffins. Bake for 10 to 15 minutes, or until golden brown.

Holiday Barn Tour The 2012 traditional FENCE Holiday Barn Tour to be held this year on Saturday Nov. 24, and will feature exhibitions of the equestrian lifestyle of our foothills. Come to the FENCE Horse Show facility covered arena at 10 a.m. on Nov. 24 (the Saturday following Thanksgiving) for a fun filled and interesting day that will start by viewing performance horses and elegant riders. Exhibitions include Barrel Racing by Vickie Smith & Skeeter, Open Jumping by Sara Ketcham and her Vodka Bay, FEI level dressage performance by Whitney Penney Mical and Donnizetti, three ridden mules, in western tack with Holly Fisher, dressage with Sandra Hyder & English with Amy Gee, driven Friesan pairs with Caroline Whittle-McSwain, and Tot Goodwin and the Green Creek Hounds. This special and informative fox hunting presentation by Green Creek huntsman Tot Goodwin will include an opportunity for attendees to pet these friendly hounds and learn about the job they do (fox hounds are usually somewhat aloof, but Tot’s hounds love attention). There will be a narrative with each exhibition and

a short period for the performers to answer questions from the audience. Under cover and next to the performance area there will be plenty of places to sit, with tables, or stand while viewing the exhibitions and food will be available for purchase at FENCE from Foothills BBQ. Following the exhibitions, maps and detailed directions will be available for ticket holders to go on a self-guided tour of three nearby and completely different barns. The Derbyshire barn is a new, state of the art boarding facility intended for the use of Derbyshire land owners. Sara Lyter’s Hulinn Dalur is a charming private barn housing Sara’s Icelandic horses. Lyter will be riding her horses all afternoon for visitors to watch. The Icelandic’s unique gait the “tolt” is of special interest. The third barn on the tour is Wendell and MaryAnna Haymon’s breeding farm Marydell. Here visitors will see foals galore by the award winning Grand Prix dressage Hanoverian stallion Don Principe. The short driving route to these three barns takes visitors very close to our three sponsoring vineyards, Green Creek Winery, Parker-Bins Vineyard and Over Mountain Vineyard all of which are open and they welcome all ticket holders for tastings and tours. Tickets are can be purchased at FENCE, The Farm House, Little Mountain Farm Supply, The Hay Rack on Hwy 9 in Green Creek and Hwy 14 in Landrum or the day of the event. TFAC celebrates in English style The fourth annual TFAC Christmas fundraiser continues the international tradition for this seasonal event celebrating “Holidays Around the World” and wishing the community “Happy Christmas.” On Friday, Nov. 30 at 6:30 p.m., the Arts Center will open its doors to this delightful event featuring a festive pub atmosphere, English cuisine creatively catered by Pat Strother, traditional carols and music, and a silent auction with an astounding variety of items. Dianne Joyce, chair of the event, is planning the festivities with the help of TFAC’s Special Events Committee members Lisa Stokes, Judy Warden, Liz Norstrom, Jean Pettigrew and Sue Truitt. “We will have an authentic English bar and back bar with all of the trimmings, and a candle lit fireplace dressed for the season with garlands, wreaths and holiday charm,” Joyce said. “Put on your seasonal best for this party and help support the operations of TFAC. ” British furnishings which call to mind the warmth and gaiety of an old English Pub will bring color and richness to the Arts Center lobby.

The Christmas celebration will feature live music as carolers greet partygoers and stroll in and around the decorated venue, adding distinctive sparkle and warmth to the evening. Chairing the silent auction for a second year is Lisa Stokes who has put together a list of gift ideas with minimum bids ranging from $9 to $4,500. A wide variety of local artists and merchants, such as Christine Mariotti, Kevin Bradley, Sue Spiegel, Carruth Furniture, Essence Day Spa and Tryon Mountain Hardware, are supporting the arts with more than 100 unique gifts. The 2012 collectible Morris the Horse Christmas ornament is currently on sale. These ornaments, individually designed by local artists and produced by the Charleston Mint in 24 karat gold on jewelers’ brass, are sold to benefit Tryon Fine Arts Center operations and programs. These ornaments are shipped around the world and many people own every one made since Tommy Thorne-Thomsen produced the first one in 1991. Thorne-Thomsen designed the ornaments through 2002 and since then local artists Paul Koenen and Kathleen Carson have provided designs for the annual decoration. This year’s design by Carson offers a whimsical Morris decorating a tree of Christmas presents. In a small saucepan, combine the sugar, water, star anise and cinnamon sticks over medium heat. Bring to a boil, reduce the heat and simmer, stirring occasionally, until the sugar has dissolved, about five minutes. Remove the pan from the heat and allow the syrup to cool, about 1 hour. Strain the syrup into a large pitcher and refrigerate until ready to serve. Slowly pour the beer into the pitcher. Stir and serve.

Eggnog For the eggnog: 12 large eggs yolks (reserve the whites) 2 cups granulated sugar 1 liter bourbon 1 quart (4 cups) whole milk 1 cup heavy cream 3/4 cup Cognac or brandy 1/2 cup Myers’s dark rum Pinch fine salt To serve: 12 reserved egg whites 1 1/2 cups cold heavy cream Ice (optional) Freshly grated nutmeg Directions: Place the reserved egg whites in a very clean and airtight container and freeze until the eggnog is ready to serve. Combine the yolks and sugar in a large bowl and whisk until well blended and creamy. Add the the remaining ingredients and stir to combine. Transfer the mixture to a 1-gallon glass jar and tightly seal the lid. (Alternatively, you can bottle it.) Place in the refrigerator for at least 1 week and up to 3 weeks.

Care Kitchen still serving during holiday sesaon The Polk Baptist Association “Care Kitchen” continues to feed those who come by each week to enjoy hearty meals. The kitchen is open every Friday, including the Friday following Thanksgiving, Nov. 23 and Friday following Christmas, Dec.. 28. The facility is very grateful for contributions and donations of food, which enable the volunteers to prepare different menus and tasty dishes. Some recent donations include a wonderful upright freezer by Cooper Gap Baptist Church and paperware by Mountain First Bank employees. Pizza, ice cream and paper supplies arrived from the Midway Youth Revival in October, as well as many delicious cakes, pies and breads by area ladies almost every week. The Care Kitchen offers free lunch every Friday from 11:30 a.m. to 12:30 p.m. in the dining room (basement of Polk Baptist Association) located at 208 Blanton Street, Columbus. All are invited and are welcome to receive delicious home cooked foods and fellowship. Sometimes there is even live music by the young guys of Mountain Valley Baptist Church. Outreach Angel Tree making Chrismas happen In addition to providing grocery cards for Thanksgiving and Christmas, Thermal Belt Outreach “Angel Trees” will be distributed to families, businesses, churches and others interested in purchasing a gift for a needy child or senior citizen. The first name, age, gender, desired gifts and measurements of the “angel” are placed on a tree cut out of wood that is painted and decorated with paper angels. Multiple angels can be adopted by those wishing to purchase gifts. “To date, more than 432 angels have been qualified and are in the process of being adopted,” said Michelle Reedy, client services coordinator. “We fully expect this number to increase the closer we get to the Christmas holiday.” There is still time to participate in Outreach’s Holiday Program. When your family has had enough of the turkey and dressing these recipes will offer you some new ideas to feed the crowd of people visiting your home.

Slow-Cooker Bratwurst with sauerkraut and potatoes Ingredients 1 ½ pounds red potatoes, sliced in half if large 32 oz sauerkraut, drained 1 large onion sliced thinly 1 cup low-sodium chicken broth ½ cup white wine Kosher salt and black pepper 2 pounds beer soaked bratwurst links ¼ cup chopped fresh parsley Toasted dark bread (such as pumpernickel), butter, and wholegrain mustard, for serving Directions In a 4- to 6-quart slow cooker, mix together the potatoes, sauerkraut, onion, broth, ½ teaspoon salt, and ¼ teaspoon pepper. Nestle the bratwurst in the vegetables. Cover and cook until the potatoes are tender, on low for 7 to 8 hours or on high for 4 to 5 hours (this will shorten total recipe time). Sprinkle the bratwurst, potatoes, and sauerkraut with the parsley and serve with the toast, butter, and mustard.

Spinach Lasagna Ingredients 16 ounces Ricotta cheese 2 cups Mozarella cheese 1 egg 1 package frouncesen chopped spinach, thawed 1 teaspoon salt 1 teaspoon oregano dash pepper 3 cups spaghetti sauce 9 uncooked lasagna noodles Directions Mix Ricotta, one cup Mozarella, egg, spinach, salt, oregano and pepper. In a greased 9x13 inch pan, layer one cup sauce, three noodles and half the cheese mixture. Repeat layering. Top with remaining noodles and sauce. Sprinkle with remaining cheese. Pour water around edges of pan and cover tightly with foil. Bake at 350 degrees for one hour. Uncover and bake an additional 15 minutes. –recipe submitted by Lynn Montgomery

Festive Chicken Salad Ingredients 4 cups cooked chicken meat, shredded 1/2 cup mayonnaise 1/4 cup plain greek yogurt 1 teaspoon paprika 1/2 cup dried cranberries 1/2 cup grapes halved 1 cup chopped celery 2 green onions, chopped 1/2 cup minced green bell pepper 1 cup chopped pecans salt and pepprer to taste Directions In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, halved grapes, celery, bell pepper, onion, and pecans. Add shredded or chopped chicken, and mix well. Season with black pepper to taste.Refrigerate 1 hour.

Spicy Shrimp Orzo Ingredients 2 tablespoonsp. olive oil 1/2 cup onion, small diced 3 garlic cloves, crushed and minced 1 tablespoon red pepper flakes 1 cup of diced tomatoes, slightly drained 1 pound of shrimp, peeled and deveined 2/3 cup feta 8 ounces orzo Directions Preheat oven to 400 degrees. Saute onions in olive oil over M/H heat about 5 mins, until soft. Add garlic and red pepper, continue to saute for 30 seconds. Add shrimp, continue to cook for three minutes, or until shrimp begin to firm up, add tomatoes for the final two minutes. Transfer to oven-proof dish, bake for 10 minutes. Sprinkle with feta, and cook for an additional five minutes. Serve over orzo.

Directions Break the carcass in pieces and remove all the stuffing. Add water to just cover, simmer two hours with celery and onion. Then remove bones, strain and add beef extract, then the rice which should have been previously cooked in boiling salted water. Lemon lime pork tenderloin

Ingredients 1 (16 ounce) package uncooked spaghetti 1/2 Cup butter 1/2 Cup all-purpose flour 3 Cups chicken broth 2 Cups milk 1 2/3 Cups grated Parmesan cheese 4 cups chopped cooked turkey

Ingredients 1 Pound pork tenderloin Juice and zest of one small/medium lemon Juice and zest of one lime 1 T olive oil 2 garlic cloves, finely chopped 1 tsp. dried oregano 1/2 tsp. freshly ground black pepper 1/8 tsp. kosher salt

Directions Preheat oven to 350 degrees and lightly grease a baking dish. Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes or until al dente. Drain, and place in the baking dish. Melt butter in a medium saucepan over medium heat. Stir in flour. Mix in chicken broth and milk. Cook and stir until the mixture comes to a boil. Stir in about 1 1/3 cups Parmesan cheese, and remove from heat. Mix chicken broth mixture and turkey with spaghetti. Top with remaining cheese. Bake 1 hour in the preheated oven, until surface is lightly browned.

Directions Remove fat and silver skin from tenderloin. Whisk lemon juice, lime juice, lemon zest, lime zest, oil, garlic and oregano in a small bowl. Add salt and pepper. Place pork tenderloin in a gallon-size zip-topped bag. Add lemon-lime mixture, seal bag. Place bag in refrigerator for four hours. When ready to grill, remove pork tenderloin from the refrigerator. Preheat contact grill to medium high or regular grill to indirect medium heat. Grill tenderloin for 8-10 minutes on the contact grill, and 16-20 minutes on a regular grill. The pork is cooked once the temperature reaches 145 - 150 degrees Fahrenheit using an internal thermometer. Allow pork to rest for 5-10 minutes before slicing.

Chicken Pot Pie Ingredients 2 cups water 14 ounces boneless skinless chicken breasts cut up into ½” pieces 2 carrots, peeled and cubed 2 celery stocks, sliced 1 medium onion chopped 2 tblsp chicken bullion (I prefer “Better than Bullion) ¼ tsp black pepper ¼ cup butter 4 tblsp cornstarch 1 tblsp flour 1 cup heavy whipping cream 1 cup frozen peas Crust: 2 cups flour 1 tsp salt 2/3 cups shortening 5 tablespoons very cold water (use more as needed) Directions Filling: Combine water, chicken, carrots, celery and onion

Apples & cheese Ingredients 1/2 cup sugar 1/4 teaspoon salt 1/4 cup butter 7 apples peeled and cut into slices 6 tablespoonspoon water 1 tablespoonspoon lemon juice 1 cup shredded cheddar cheese 1/2 cup flour Mix flour, sugar and slat. Cut in butter til crumbly. Toss with apples, water and lemon juice. Spoon apples into lightly greased 8 inch dish. Sprinkle with flour mixture. Bake at 350 degrees for 35 minutes. Sprinkle with cheese and bake for 5 more minutes.

Butternut squash casserole Ingredients 4 cups mashed, cooked butternut squash 1/3 cup white sugar 1/2 cup packed brown sugar 1/4 cup melted butter 8 ounces can crushed pineapple with juice 1 teaspoon ground cinnamon 1 teaspoon vanilla extract 1/8 teaspoon ground nutmeg 1/3 cup chopped pecans Combine the butternut squash, white sugar, brown sugar, margarine, pineapple, cinnamon, vanilla and nutmeg. Pour into a greased 2 quart dish and sprinkle the top with pecans. Bake at 325 degrees for 40 to 45 minutes.

Ingredients 6 tablespoons unsalted butter, plus more for baking dish Coarse salt and ground pepper 1 pound medium pasta shells 1/4 cup all-purpose flour 1 teaspoon dry mustard powder 4 cups whole milk 4 ounces sharp white cheddar cheese, coarsely grated (one cup) 4 ounces Havarti cheese, coarsely grated 4 ounces Muenster cheese, coarsely grated 1 teaspoon Worcestershire sauce 6 slices white sandwich bread Directions Preheat oven to 400 degrees. Bring a large pot of water to a boil. Butter a baking dish (oval or 9x13” rectangle); set aside. Salt boiling water; add pasta. Cook. Drain pasta, and return to pot. Melt butter in a large saucepan over medium. Transfer two tablespoons melted butter to a small bowl; set aside for topping. Add flour and mustard powder to remaining butter in saucepan. Cook, whisking, one minute (do not let flour darken). Whisk in milk. Bring to a boil; reduce heat to medium-low, and simmer until sauce is thickened, two to three minutes. Remove sauce from heat. Whisk in cheeses; add Worcestershire sauce, and season generously with salt and pepper. Add sauce to pasta, and toss to combine; transfer to prepared baking dish. Break up bread or pulse in food processor (you should have about three cups). Add reserved melted butter, and pulse just to moisten. Scatter crumbs over pasta in baking dish. (If making ahead, cover and refrigerate up to one day.) Place dish on a rimmed baking sheet, and bake until topping is golden and sauce is bubbling, 15 to 20 minutes. (If refrigerated, bake for 15 minutes or so longer.)

Zucchini Bread Ingredients

3 Slightly beaten eggs 1 Cup vegetable oil 2 Cups sugar 2 Cups peeled, grated zucchini 1 tsp vanilla 3 Cups flour – sifted ½ tsp baking powder ¾ Cup nuts – chopped 1 tsp. baking soda

Directions Mix first five ingredients blend in sifted flour, baking soda and baking powder. Add nuts. Bake in two loaf pans (greased), at 350 degrees for 1 hour.

Oven-crisped Eggplant 1/2 Cup Saltines 1/4 tsp. oregano 1/2 tsp. paprika 1/2 tsp. salt Two small eggplants

Ingredients

Directions Crush into fine crumbs (I use blender to do this): ½ cup saltines (10 doubles) - I use double this amount. I also use panko instead, sometimes. Mix the crumbs with ¼ teaspoon oregano, ½ teaspoon paprika, ½ teaspoon salt Peel and cut lengthwise into 6 or 8 segments each: Two small eggplants - (I have found it easier to cut the eggplant into circular slices) Dip pieces in 1 egg mixed with 1 teaspoon water. Then dip pieces in crumb mixture. Place in shallow pan. Drizzle with ¼ cup melted butter. Bake at 400 degrees for 20 minutes or until eggplant is tender. You can see that I play with the recipe. Simplest BottleTree Beer Bread Ingredients: 2 (12 fluid ounce) BottleTree Belgian Blonde Beers 3 cups self-rising flour 1/3 cup white sugar Dierctions Preheat oven to 350 degrees. In a large bowl, mix together the sugar and flour. Add one 12 ounce BottleTree Blonde beer and continue to mix, first using a wooden spoon, then your hands. Batter will be sticky. Pour into a 9 x 5 inch greased loaf pan. Pop open the other BottleTree Blonde to sip as you let the dough sit for 30 minutes. Bake at 350 degrees (175 degrees ) for 50 for 60 minutes. Brush with butter and sprinkle with garlic salt half-way through baking and repeat after removing from oven. The top will be crunchy and the insides will be soft. Cranberry Squash Casserole Ingredients 4 cups cooked, mashed squash (butternut** or acorn) 2 eggs, beaten 3 Tablespoons melted butter 1/3 cup sugar 1 1/2 cups halved raw cranberries 1/2 teaspoon salt, or to taste Nutmeg Directions Halve cranberries and mix with sugar. Let stand. Beat squash with eggs and melted butter. Stir in cranberrysugar mixture. Add salt and pepper. Spoon into greased 2-quart casserole. Sprinkle lightly with nutmeg. Bake, uncovered in 400 degrees oven for 30 minutes. Serves six.** Two medium butternut will yield four to five cups. –recipe submitted by Lynn Montgomery

Scalloped Tomatoes Ingredients 1 pint or more fresh tomatoes, peeled and quartered (if large, I cut into eighths) 1/2 teaspoon basil 4 tablespoons Brown sugar 1 teaspoon salt 3 cups (or more) bread cubes 1/3 cup margarine Directions Prepare tomatoes and place into large saucepan. Add basil, brown sugar, and salt. Cook for 15 minutes over medium heat. In large frying pan, stir bread cubes into melted butter and sauté a few minutes. Mix bread into tomatoes. Pour all into 8x8 casserole and bake at 350 degrees for 40-50 minutes. If tomatoes are extra juicy you may want to use more than 3 cups of bread cubes. Prince of Wales Salad Ingredients 1 Small package lime jello 1 Package cream cheese (room temperature) 1 Cup chopped maraschino cherries 1 Small can crushed pineapple ½ pt. whipped cream 8 oz mini marshmallows

Directions Melt butter and sugar. Spread saltines out on multiple cookie sheets (usually four or five) pour mixture over saltines and bake for five minutes in a 350-degree oven. Take out and sprinkle chips over pans (or melt chips and pour over). Put back in oven for five more minutes. Let sit out of oven for at least five minutes before trying to remove.

Directions Make jello, let thicken slightly. Beat until frothy – add cream cheese. Beat until dissolved. Add cherries, pineapple, & marshmallows. Beat whipping cream separately and add to salad. Pour into bowl and chill in refrigerator until firm.

Directions Preheat oven to 325 degrees F. Grease one 9 x 13 inch pan. Mix together cake mix, two eggs, and 1/2 cup melted butter. Press into pan. In another bowl, Beat cream cheese until smooth. Add 1/2 cup melted butter and two eggs. Slowly mix in the confectioner’s sugar. Pour over the cake mix mixture. Bake time: 1 hour. – recipe submitted by Leasa Hall

Whisk together pudding mix and milk; add Cool Whip, stirring until mixture thickens. Spread half of the pudding mixture over the graham crackers. Repeat layers with one-third of the graham crackers and remaining pudding mixture. Top with remaining graham crackers. Spread chocolate frosting over the top. I microwave the frosting gently so that it will pour over the top. Cover and chill for at least eight hours. Note: You can lighten this recipe by using reduced fat graham crackers, skim milk and light Cool Whip.

Cherry Cheese Cake Ingredients 2 -8 ounce packages cream cheese 2/3 cup sugar 1 teaspoon almond extract 3 eggs 3 tablespoons sugar 1 teaspoon vanilla 1 pint sour cream Directions Blend cream cheese, two to three cups of sugar, almond extract and eggs with electric mixer until smooth, about three and a half minutes. Pour into a greased (buttered) pie plate and cook at 325 degrees for 50 minutes. Take out of the oven, let sit while you prepare the following: Mix together 3 tablespoons sugar, vanilla and sour cream and pour onto center of hot cake. Spread not quite to the edge. Return to oven and bake 15 more minutes. Let cool, then place pie in refrigerator along with a can of cherry pie filling, chill two or more hours. Holiday Pumpkin Cheesecake with fresh cranberry relish This is the simplest dessert recipe I know, not to mention my favorite recipe involving pumpkin! We always served it at the restaurant during holiday time and actually sold them whole for people’s holiday meals. It was created out of boredom with traditional pumpkin pie. This is not a traditional NY style cheesecake, but rather fluffy and light. The cranberry relish can be served in place of canned, congealed sauce. Once you make fresh cranberry sauce and see how easy it is to do so, you’ll never go back to the canned kind.

Directions: In a Kitchen Aide or like mixer combine cheese, sugar, spices, and vanilla and cream until smooth and fluffy light with paddle attachment. Reduce speed to low and add eggs one at a time until incorporated. Add pumpkin and cream until incorporated. Crust 1.5 C. Ginger snap cookies 3 T. Sugar 1/3 C. Melted butter Directions: Combine all in a bowl and mix until incorporated. Press into a foil wrapped 9-inch non-stick springform pan. Pour in cake mixture. Bake in a water bath at 350 degrees until set (center just barely jiggles like jello). Let cool on counter to room temperature then place in fridge to completely cool before removing from spring form pan.

Cranberry Relish ingredients 2 C. Fresh Cranberries 1 C. Fresh Squeezed Orange Juice 1 ea. Cinnamon Stick .5 C. Sugar 1 t. Pure Vanilla Directions: Combine all in saucepot and simmer until the cranberries have busted and formed a sauce.

4 eggs 2 cups sugar 16 ounces pumpkin 1 1/2 cup vegetable oil 3 cups flour 2 teaspoon baking powder 2 teaspoon baking soda 1 teaspoon cinnamon 1 teaspoon salt 12 ounces mini chocolate chips

Directions Beat eggs, sugar, pumpkin and oil. Combine flour, soda, baking powder, cinnamon and salt; add to pumpkin mixture; mix welll. Fold in chocolate chips. Fill muffin cups 3/4 full. Bake at 375 degrees for 20-25 min. Cool in pan 10 minutes before removing. (No need to cool 10 minutes if using liners. Creamy Coconut Candy Ingredients 16 ounces cream cheese 1 cup powdered sugar 1 cup pecans 7 ounces shredded coconut 1 package of almond bark Mix cream cheese with coconut, pecans and one cup of powdered sugar. Refrigerate one hour. Melt almond bark in microwave, check every minute or so until completely melted. Take the cream cheese mixture and form into balls, then dip into almond bark. Allow to cool on baking sheet covered in wax paper. Refrigerate until ready to serve. Makes 25-50 pieces.

Sweet Potato Pie Ingredients 2 cups mashed sweet potatoes (about 1-1/2#) 1/2 cup butter or margarine 1 cup sugar 2 eggs 1 teaspoon vanilla 1/4 teaspoon nutmeg 1/8 teaspoon cloves 1 teaspoon cinnamon 1/8 teaspoon salt 1 cup evaporated milk 2 regular or 1 deep dish pie shell (thawed) Directions Preheat oven to 375 degrees Blend potatoes, butter, and sugar. Blend in eggs one at a time. Add the rest of the ingredients and mix well. (Note: More or less spices may be used to suit your own taste.) Round Browns Ingredients 1 can Eagle Brand sweetened condensed milk (fat free is okay) 1 - 12 ounce bag chocolate chips 3 tablespoon butter or margarine 1 cup flour 1 cup chopped nuts (I use pecans) Pinch of salt Directions Melt chocolate chips in condensed milk in top of double boiler. Add salt and butter. Stir until all melted. Add flour and nuts. Drop by small teaspoonfuls onto cookie sheet. Bake at 350 degrees for 10 minutes. Remove from cookie sheet onto waxed paper after baking. Makes about three and a half ounces.

Mud Cake (fun for the kids) Ingredients 1 ½ Cups flour – sift once Add: 1 Cup sugar 1 tsp baking soda 1 tsp salt 3 Tbsp Cocoa and sift together with flour. 5 Tbsp vegetable oil 1 Tbsp vinegar 1 tsp vanilla 1 Cup water Directions Pour dry ingredients into a 9 x 13” cake pan. Make three “wells/pockets” and add one liquid to each (in order). Pour the cup of water over top of the whole cake. Stir all ingredients until no dry flour shows. Bake at 350 degrees for 30 minutes.

Toasted Marshmallow treats Ingredients 1 white or whole wheat bread slice 1 tablespoon creamy peanut butter ½ cup miniature marshmallows 12 to 15 candy-coated chocolate pieces Directions Spread one side of bread slice with peanut butter, top evenly with marshmallows. Arrange chocolate pieces in a smiley face pattern over the marshmallows. Place bread on a baking sheet. Broil bread 5 ½ inches from heat (with electric oven door partially open) 1 minute or until the marshmallows are golden brown. Serve on a Christmas plate. Gently press fudge out of molds to serve. Makes 6 large servings Variation You can use an 8-inch square pan instead of the cookie cutters. Line pan with foil, and pour the fudge into pan. Holy Cow Butterfinger cake Ingredients 1 German Chocolate Cake Mix 1 8-oz jar caramel topping 1 14-oz can sweetened condensed milk 2 large Butterfinger candy bars, crushed 1 16-oz container of whipped topping (Cool Whip) Directions Prepare the cake mix (as directed on the box). Pour into a 9 x 13 baking pan. Bake according to the instructions. After baking and cooling in the pan, poke the cake full of holes with a wooden spoon handle. Mix caramel topping and condensed milk in a bowl. Pour over the cake, letting the mixture soak down into the holes. Sprinkle the top of the cake with ½ of the candy bar crumbs. Spread with Cool Whip. Sprinkle with remaining crumbs.
