DINING ETIQUETTE RULES

Proper dining etiquette has a place whether you’re enjoying a meal at a five-star restau rant, a fast-food joint or at home.

While there are some written rules about social etiquette, there also are unwritten rules rooted in courtesy. By following these guide lines, any dining experience can go smoothly.

PUT DOWN THE PHONE

When dining out or attending a party, direct your attention to fellow guests or dining partners and not your devices. Turn off the ringer, resist the urge to check the sports score, wait to text a friend until you’re done, and devote your attention to the meal.

LET THE HOST LEAD

The host or hostess is responsible for setting the tone of the meal and ensuring everyone is comfortable.

Take a backseat to your host and let him or her guide the meal.

PATIENCE IS A VIRTUE

Restaurant wait times are not an exact science. Restaurant hostesses can offer an estimate, but it’s impos sible to say exactly when you’ll be seated. Do not take frustrations out on the staff. If time is of the essence, dine during off-peak hours or visit a less busy establishment.

GO SPARINGLY ON SUBSTITUTIONS

Restaurants should be willing to cater to certain requests, especially if food allergies are a concern. Howev er, do not act like the establishment is your personal kitchen. Make rea sonable requests.

BE PUNCTUAL

Make and keep reservations,

which help keep the flow of the din ner party going smoothly. Arrive at a home on time, as party hosts likely have timed their foods accordingly and you don’t want to delay or spoil the taste and presentation of the food.

KEEP CHILDREN IN CHECK

Dining out with children presents an opportunity to teach them man ners. To avoid meltdowns, be sure children are well-rested and have had a snack before arriving. Avoid scenes that disturb other diners; take the child outside to calm down if he or she acts up. Call ahead to make sure a restaurant is child-friendly. For a dinner party at a private resi dence, the invite usually will indicate if children are invited and is usually addressed as “and family.”

COMMON BAKING MISTAKES AND HOW TO PREVENT THEM

Baking can be a wonderful hob by or even a successful business venture. Although baking is a relatively easy skill to learn, there are some who lament that they are won derful cooks, but terrible bakers. That’s likely because cooking is much more forgiving in terms of ingredient mea surements and technique, while baking requires more precision.

“Ratios of the staple ingredients can’t be improvised [in baking], but all the flavors certainly can,” says Duff Gold man, Food Network star and expert baker. Baking is a science and ingredi ents combine to form chemical reac tions that ultimately produce the de sired results. This is just one area where baking mishaps can occur. Read on to discover other common issues and how to avoid them and address them if you find yourself in a baking emer gency.

• Improperly measuring: Bakers need to be very precise when they measure ingredients. Always lightly spoon flour into a measuring cup with out packing it down; don’t simply dip the cup into the flour container. Level it off with the straight edge of a knife.

When measuring out leaveners, such as baking powder or baking soda, do the same by leveling off the product.

• Substituting ingredients inten tionally or unintentionally: Don’t have all-purpose flour on hand, so that means you can use cake flour, right? Not exactly. Ingredients serve a pur pose in recipes and every attempt should be made to use what the recipe calls for. You cannot use baking soda and baking powder interchangeably.

• Ignoring recipe instructions: Fail ure to understand a cooking term or what the recipe is relaying could result in costly mistakes. According to Duff, it is a person’s inclination to gloss over di rections that are not easily understood. But people are urged to read a recipe first and then look up any terms they don’t understand before going forward.

• Temperature mistakes with ingre dients: Read the recipe in its entire ty before you start baking. Some call for items like eggs or butter to be at room temperature for light and fluffy “creaming” for cookies or cakes. Other recipes require butter to be cold to en sure flakiness in pie crusts and biscuits and certain cookies.

• Overmixing ingredients: Over mixing batter or overworking dough activates the gluten proteins in flour and will lead to gummy, tough baked goods, according to Grand Central Bakery. The more tender the desired results, the lighter the handling and mixing should be.

• Baking at the wrong temperature: Temperature is often key when baking. You cannot crank up the heat to make something cook faster if that’s not what is specified in the recipe. Some bakers inadvertently bake at the wrong tem perature because they don’t realize their ovens’ thermostats are malfunc tioning. Invest in an internal oven ther mometer to check that the temperature on the display is actually what is being produced inside the oven.

• Not-so-fresh ingredients: Leaven ers can lose their potency over time, and eggs whites may not whip up cor rectly if eggs are not fresh. Pay attention to the use by dates on ingredients and discard items that have passed those dates.

Baking requires careful attention to detail and technique to produce the best results.

STOCK UP ON MUST-HAVE KITCHEN TOOLS

Cooking meals is advanta geous for a variety of rea sons. Cooking at home is a budget-friendly way to feed a family, and home chefs have strict control over the ingredi ents they use, which can make it easier to adhere to a partic ular diet and avoid foods that may trigger allergic reactions. Cooking at home also enables families to spend time together preparing meals and then eating the fruits of their labor.

Of course, preparing quali ty recipes at home requires not only having nutritious ingredi ents on hand, but also the right tools for meal-making. A com bination of basic utensils and some other handy gadgets can make crafting winning meals that much easier. Here’s how to stock your cabinets and drawers accordingly.

• Chef’s knife: A quality chef’s knife is one of the unsung tools of the kitchen. Chef’s knives can be used for chopping, dicing and generalized cutting. Choose a knife that feels comfortable in your hand. It should be easy to control and not too heavy but also sturdy.

• Food thermometer: Food borne illnesses are no joke. That means it’s essential to have a thermometer for checking the internal temperature of poultry and meat.

• Various spatulas: Invest in metal spatulas of various sizes to make easy work of flipping everything from burgers to pan cakes.

• Silicone/rubber spatulas: These tools make easy work of scraping down the sides of mix ing bowls or cleaning out food processors.

• Kitchen shears: Sometimes a

knife won’t cut it. Kitchen shears are useful for snipping herbs or trimming fats from meat. Heavy duty shears can cut through bones on chickens for easily di viding up whole birds.

• Food processor/food mill: Grind up foods or chop them easily with a food processor. You can invest in a separate appliance, or some multipur pose blenders that tackle food processing duties in addition to mixing.

• Cast iron skillet: Pots and pans are made from various ma terials that speak to their dura bility and nonstick nature. One of the more versatile materials is cast iron. It heats evenly to high temperatures and retains heat for a long time. Cast iron also goes easily from stove top to oven. Caring for pans properly will help them last a lifetime.

• Nonstick skillet: These pans are ideal for scrambling eggs or making pan-fried dishes. Look for ceramic coatings, which are better for your health than chemical coatings.

• Spoons and ladles: Having a variety of spoons and ladles at the ready can simplify scooping and stirring.

• Slow cooker: This appliance is ideal for cooking meals slowly. They’re easily set in the morning and can be returned to in the evening for a fully cooked meal.

• Air fryer: One of the newer gadgets on the market, air fry ers cook by circulating hot air around food. They create the texture and taste of deep-fried foods without extra grease or fat.

POPULAR RESTAURANT DINING STYLES

Dining out provides an oppor tunity to try many different foods that people may not normally prepare at home. It also introduces individuals to various themes and styles of dining.

Broadening one’s culinary hori zons can contribute to well-rounded adults and children who are likely to adapt well to various social situ ations. New dining experiences also may serve as the basis for making conversation or even developing new relationships.

Dining styles vary depending on the type of restaurant. The follow ing rundown is ideal for diners who want to try new things and eat a great meal at the same time.

HIBACHI

Hibachi restaurants provide both a meal and a show. Hibachi is a Japa nese style of cooking and the word translates to “fire bowl.” Hibachi in volves cooking foods on a high-heat metal cooking plate, according to Shinto Japanese Steakhouse & Sushi. The cooking plate often is built into a table that diners sit around. The chef

prepares the food while engaging the customers in the experience.

TAPAS

Tapas style features several small plates of food. Tapas are small, savory dishes, but can be quite filling when several dishes are chosen. Tapas traces its origins to Spain, but has become a notable restaurant trend in many dif ferent countries. Eating tapas enables diners to try many different things and share plates with others.

FAMILY STYLE

Family style of service is common in Italian and some Greek restau rants. It falls in between buffet din ing and more formal plated sit-down dinners. According to the food and dining resource Grooving Gourmet, family-style involves wait staff bring ing food to the table in large serving dishes. These items are passed around for each person to fill his or her plate. Family-style is reminiscent of dining at home, where one to three differ ent foods are offered and guests serve themselves.

BUFFET

With buffet dining, diners visit a centralized food station and serve themselves foods from various plat ters or chafing dishes. Sometimes food is spooned or served by person nel staffing the buffet table. Buffets let people try a variety of foods in sizable amounts.

CAFÉ OR BISTRO

Café or bistro style service involves food served from a counter. Items may include coffee, espresso, pastries, and sandwiches. These restaurants are known for their relaxed and intimate settings.

FAST CASUAL

One increasingly popular dining trends is fast casual, which is more up scale than fast food but equally as con venient. Open kitchens are popular at fast casual chains. Foods tend to in clude gourmet breads and organic in gredients, among others. Panera Bread is an example of a fast casual chain.

MATCH FOOD TO YOUR FAVORITE BREWS

The rise of craft and home brew ing has created more beer flavor profiles than ever before. In fact, there’s likely a beer for everyone, whether

you’re a novice or connoisseur.

The Brewer’s Association, a trade as sociation that represents small and inde pendent American craft brewers, reports that, in 2018, small and independent brewers collectively produced 25.9 million barrels and experienced a 4 percent total market growth. The BA also states that these small brew ers achieved a collective retail dollar take-in of $27.6 billion.

While wine will always have its enthusiasts, beer is fast on its heels as a popular mealtime bev erage. Much in the way wines are paired with certain foods, it has be come the natural course of action to pair certain foods with particular styles of beer. “Beer is a great match for food because of the complexity of its flavors, its ability to provide re freshment and to interact with many food flavors,” says Marc Stroobandt, a master beer sommelier for the Food and Beer Consul tancy, UK. Although each person has his or her preferences, here

is a brief listing of generalized pairings, courtesy of the Brewer’s Association and CraftBeer.com.

• American Amber Lager: Creamy ri sotto, wild rice, polenta

• American Pale Ale: Game birds, such as duck and quail

• Belgian-style Dubbel: Pork chops, sausage, tenderloin

• Belgian-style Flanders: Grilled rib eye, root vegetables

• Blonde Ale: Chicken, salads, salmon, nutty cheese

• Dark Lager: Barbecue, sausage, roast ed meat

• Hefeweizen: Weisswurst, seafood, sushi

• Imperial Stout: Smoked goose, foie gras, strong cheeses

• IPA: Spicy foods, curries

• Porter: Roasted or smoked foods, blackened fish

The Brewer’s Association recommends matching delicate dishes with delicate beers and strong dishes with assertive beers. Commonalities, like aromas and sub-flavors, also work together. A beer with roasted notes may pair well with chocolate, for example. Opposites also attract, in that a spicy food may taste best when paired with a sweet beer.

Pairing might once have been limited to matching wines with certain foods. But the booming craft beer business has popularized pairing flavorful beers with foods to make meals even tastier.

IMPROVE COMFORT WHEN DINING OUTDOORS

Warm weather entices people to enjoy long hours outside basking in the sun or relaxing on balmy eve nings. Many of the activities people once reserved for indoors when temperatures were chilly, including dining, are moved outside as the weather warms.

Even though outdoor dining can be quite enjoyable, certain factors need to be considered to ensure that each experience is as pleasur able as possible. This means focus ing on comfort whenever meals are taken out-of-doors.

ADDRESS INSECTS

Insects are equal opportunity in vaders. Once they smell sweet or savory food items, they quick ly descend for an easy bite. This means extra steps are necessary to dissuade insects from coming by.

Invest in citronella candles, which can be placed around the patio to repel flying bugs. Clean up crumbs and spills promptly. Bees and wasps can be lured away with sweet traps placed around the perimeter of the property.

OFFER SHADE

Too much sun can make outdoor meals less enjoyable. A patio um brella, pergola or canopy can cut down on glare and make the din ing area more comfortable. Check to see that the shade source can be adjusted to guard against the sun as it moves across the sky.
