PIECE OF A WHOLE Turkish Food Team presents “MY MOTHER’S RECIPES” Here we share a new concept of recipe book with you; “My Mother’s Recipes”. In this book you will find recipes recommended by the parents of our students. Some of our students tried to cook these recipes with their family at home. And here are the works. Firstly, Cemre prepared “Haricot Bean (Kuru Fasulye)” which is a typical and well-loved Turkish food. It is usually served with pilaf (rice). Secondly, Beril prepared “Meat Pasty (Mantı)” with her mother. Mantı is known as to be demanding food. But it is so 1
nutrituous and popular. You can find it in convenience food hall in supermarkets in Turkey, also. Finally, Sude prepared “Bulgur Pilaf (Rice of Wheat Grains)” for you. Bulgur is a nutrituous alternative for rice pilaf in Turkey. Sportsmen who loose weight prefer “Bulgur Pilaf” to keep their muscles by the help of protein it consists. We hope you try and like all of them. HARICOT BEAN (Made by Cemre Gülbel)
Ingredients: -Onion -Haricot bean -Oil -Tomato sauce -Pepper paste -Water -Salt 2
Directions: Fry onion with oil. Add tomato sauce and pepper paste.
After a
while, add haricot bean (that is soaked the nigth before), salt and water. Wait till it is cooked.
MEAT PASTY (Made by Beril DurmazoÄ&#x;lu)
Ingredients for dough: -Flour -Salt -Water
Ingredients for soil mixture -Mince 3
-Onion -Parsley -Salt -Black pepper
Ingredients for outer surface -Yoghurt -Garlic -Butter -Tomato sauce or red pepper powder -Mint
Directions: Get a dough as thick as an earlobe by mixing flour, salt and water. Roll out the dough which is turned into small puffs by the help of a roller. Cut the rolled dough into small squares. Mix the ingredients for soil mixture. Put the soil mixture on the small squares little by little and infold them. Then boil them in a saucepan filled with some water. Take the boiled mant覺 into a serving dish and put yoghurt over them. At last serve it by pouring mint and oil.
BULGUR PILAF (RICE OF WHEAT GRAINS) (Made by Sude Yanarada)
Ingredients:
-2 water glasses bulgur (cracked wheat) 4
-2 onions -1 carrot -1 tea glass of peas -1 spoon of butter -1 tea glass of oil -2 spoon of tomato or pepper sauce -1 little spoon of salt -5 glasses of water
Directions: Put oil in the pot. Chop and put the onions into the oil and fry till they turn pink. Chop and put the carrot into the put and go on frying. Add sauce and bulgur. After fring for a while, put water, salt and peas. Cook it for 15-20 minutes till the water drains. Enjoy it.
