Ingredients 2 cups butternut squash, chopped ¾ cup onions, chopped ¾ cup carrots, chopped ¾ cup celery, chopped 1-2 cups potatoes, chopped 1 cup brown lentils, uncooked 3 cloves garlic, minced 1 tsp. herbes de Provence ½ tsp. salt 1 (14 oz.) can crushed or diced tomatoes Directions 3 cups vegetable or chicken broth

Add after cooking ¼ cup olive oil 1½ cups kale, chopped

1. Place butternut squash, onions, carrot, celery, potatoes, lentils, garlic, spices and broth in a Freezer Mates Plus Container, place in freezer. 2. Thaw soup and place in the Microwave Pressure Cooker, seal and lock and microwave for 20-25 minutes. 3. Allow pressure to release naturally and add olive oil and kale, cover and let sit for 5 minutes, stir and serve.
