Cilantro Lime Rice

Ingredients 1 white onion 3 Tbsp. olive oil 2 cups long grain rice 3 cups hot water 1 tsp. salt Pepper or chili powder 10 sprigs of cilantro 1 lime
Directions 1. Finely chop onion using the SuperSonic Chopper Compact. 2. In the Universal 4.2 Qt. Stockpot, sauté the chopped onion with olive oil on medium-high heat for 3 min., stirring frequently. Add the rice (unwashed) and cook for an additional 2 minutes, stirring frequently 3. Add hot water and salt. Stir, cover and bring to a boil. Reduce to medium-low heat and continue to cook for 16-18 minutes. 4. Turn off heat and allow to stand for 5 minutes covered, then fluff the rice with a fork 5. Add pepper or chili powder, chopped cilantro and lime juice, then serve
